Dr. Meaghan Kirschling Hello everyone! I hope that everyone is having a wonderful summer full of memory making activities and healthy choices. I am extremely excited for the July publication because it is all focused on food. I think so many of the time we look for a medication or supplement to improve health when many of the times we should be looking no further than our dining room table. Much of our health is dependent on what is being put on our fork (or what is not being put on our fork). And I have to be honest, this has been a tough concept for me. I have spent years, and a lot of money, to study the latest and greatest in both nutrition and traditional medicine. The reason that I am on the continually quest for this kind of knowledge is because there is so much information out there and I want to help as many people as possible. But the more and more that I study, and the more and more I have been in clinical practice, I realize that no matter what medicine we are practicing, it can not (and should not) take the place of a healthy lifestyle. And nothing is more important than the food that we eat everyday. I have seen cysts go away due to dietary changes. I have seen joint pain go away from improving a diet. And I have witnessed couples conceiving by only changing their dietary choices. Food is powerful and what we eat day in and day out can either fortify us to be stronger or trigger us to have problems. Now I can’t say all of this without also saying that I do think that food is meant to be enjoyed. Therefore, the purpose of this publication is not to say that you can never have another delightful dessert or cheeseburger again. The purpose of this publication is to teach you how you can feed your body the correct way everyday and the importance of eating right. And you can save treats for special occasions. That is the way that food is meant to be. First feed the body. Thanks so much to everyone for reading our publication. Recently we had Kathryn Kemp Guylay on Beyond The Basics Health Academy Podcast to talk about her new book, Give It a Go, Eat A Rainbow. In this book, she takes an engaging and fun approach to having children eat more nutrient dense foods. 7
Healthy Diet is more important than ever. As a society, we see the effects of poor diet at a younger and younger age. Let’s first look at the eating behaviors of most kids • Most U.S. youth consumes less than the recommended amounts of vegetables, fruits, whole-grains, dairy products and oils. • And according to recent data, 91% of Americans don’t eat the daily recommendation of vegetables. • Most US youth eats more than the recommended maximum daily intake of sodium by over 90%. • Empty calories from added sugars and solid fats contribute to 40% of daily calories for children and adolescents aged 2–18 years, affecting the overall quality of their diets. Approximately half of these empty calories come from six sources: soda, fruit drinks, dairy desserts, grain desserts, pizza, and whole milk. • Adolescents drink more full-calorie soda per day than milk. Males aged 12–19 years drink an average of 22 ounces of full-calorie soda per day, more

than twice their intake of fluid milk (10 ounces), and females drink an average of 14 ounces of full-calorie soda and only 6 ounces of fluid milk.
Statistics that help support why kids should eat more fruits and vegetables
(All of these are from the CDC, Center for Disease Prevention or fitness.gov) • Childhood obesity has more than doubled in children and quadrupled in adolescents in the past 30 years. • In 2012, more than one-third of children and adolescents were overweight or obese. • Only one in three children is physically active every day. • Children now spend more than seven and a half hours a day in front of a screen including TV, video games and computers. • There is a huge difference depending on socioeconomic status. Nearly 45% of children living in poverty are overweight or obese compared to 22% of children living in households with incomes four times the poverty level. • Obesity-related illness, including chronic disease, disability, and death, is estimated to carry an annual cost of $190.2 billion. Projections estimate that by 2018, obesity will cost the U.S. 21 percent of our total healthcare costs – $344 billion annually. • Obesity is also a growing threat to national security – a surprising 27% of young Americans are too overweight to serve in our military. Approximately 15,000 potential recruits fail their physicals every year because they are unfit. • Overweight and obesity are the results of “caloric imbalance”—too few calories expended for some calories consumed—
and are affected by various genetic, behavioral, and environmental factors. • Kids eat on average more sugar than adults, almost double, even though they weigh, on average, a third of what adults do.
Benefits of Healthy Nutrition for Children • Healthy eating in childhood and adolescence is essential for proper growth and development and can prevent health problems such as obesity, dental caries, iron deficiency, and osteoporosis along with reducing the risk of developing chronic diseases such as heart disease, cancer, stroke, obesity, and diabetes. • Eating a healthy breakfast is associated with an improved cognitive function (especially memory), reduced absenteeism, and improved mood.
Consequences of a Poor Diet • A poor diet can lead to energy imbalance and can increase one’s risk for becoming overweight and obesity. • A poor diet can increase the risk certain cancers, such as lung, esophageal, stomach, colorectal, and prostate cancers. • Individuals who eat fast food one or more times per week are at increased risk for weight gain and obesity. • Drinking sugar-sweetened beverages can result in weight gain, overweight, and obesity. • Hunger and food insecurity (i.e., reduced food intake and disrupted eating patterns because a household lacks money and other resources for food) might increase the risk for lower dietary quality and undernutrition. In
turn, malnutrition can negatively affect overall health, cognitive development, and school performance.
These alarming trends have been a catalyst for Kathryn Kemp Guylay to create a fun and engaging book for young children called Give It A Go, Eat a Rainbow. “Over the last decade, I have been teaching kids and parents how to live more energized lives by eating healthy meals and snacks,” explains the bestselling author and certified nutritional counselor. “One of the easiest ways to boost the nutritional value of meals and snacks is to incorporate more fruits and veggies,” explains Kemp Guylay. Super Easy But Super Healthy Beet, Carrot, and Cabbage Salad This is one of my go-to salads because it is easy to make, easy to store, and great on the body. It is geared towards supporting the liver and detoxification but also has high antioxidant powers. It is rich in many vitamins and minerals such as magnesium and will feed your body and mind.
Ingredients • 2 Large organic Beet Peeled • 4 Large organic Carrots Peeled • 1 Cup Fresh Parsley • 1 Head organic Cabbage Chopped • 1/2 Cup Flax or Chia Seed • 3/4 Cup Pomegranate Juice • 1/2 Cup extra virgin olive oil • 1/4 Cup Honey • 1 tbsp apple cider vinegar • 1 tbsp Dijon Mustard 12

any times in research with rats, aflatoxin is used to induce an inflammatory state. Aflatoxins are naturally occurring toxins that are produced by a specific species of fungus called Aspergillus. The toxins released from this fungus are very potent and lead to cell death, interference with DNA signaling, decreased protein synthesis and break down the cell membrane leading to cell damage. Because of these effects, there are effects on various organs and leads to liver and kidney impairment, decreased protein and fat utilization, and organ shutdown.
Turmeric, also known by the botanical name Curcuma longa, is a bright yellow aromatic powder that is a root from the ginger family. It has been used for centuries in the Middle East and Asian cultures for its medicinal and cooking purposes. Lately, it has been brought to light the many effects it has on decreasing inflammation and promoting optimal health and wellness throughout life. To some, it is known as the most powerful herb because of its ability to fight disease.
There are over 6000 published research reports on turmeric and research suggests that turmeric may help in treating many inflammatory diseases, including heart disease, high cholesterol, indigestion, liver concerns, Alzheimer’s disease, joint pain, and even some cancers. This research, like many of the other research studies on turmeric, revealed the undeniable benefits of turmeric. Even though the rats were exposed to high levels of this carcinogenic agent, turmeric, if they were also given the protective agent of turmeric than they had documented better levels of kidney and liver function. This showed that there were protective properties of turmeric most likely due to the anti-inflammatory properties of turmeric. Every day we are exposed to environmental toxins. We can not always decrease or limit these exposures. Therefore, it is important to make sure that we have the proper antiinflammatories that will reduce the response to these toxins. Research time and time again reveals the many benefits of turmeric.

Food Additives To Avoid
1. Artificial Sweeteners
For years now we have embraced the positives of a zero calorie beverage. However, we might have been quick to believe these are good for us. There is now research that these pseudo-sweetened beverages might cause calorie confusion and lead to weight gain and other concerns. 2. Artificial Colors
Food manufacturers use 15 million pounds of artificial food dyes into different foods in the US every year. We know that these additives are potentially carcinogenic, behavior-altering and found in foods with little nutritional value to begin with. Nine of the food dyes currently approved for use in the US are linked to health issues ranging from cancer and hyperactivity to allergylike reactions. The presence of an artificial dye often indicates the absence of healthful ingredients, so it’s best to skip them entirely, especially those listed here. Blue No. 2, Citrus Red No. 2, Green No. 3, Red No. 3, Red No. 40, Yellow No. 5, Yellow No. 6
3. Nitrites and Nitrates
Sodium nitrite is a synthetic preservative added to meats, such as hot dogs and deli meats, to facilitate a nice sellable pink color. This additive easily combines with an amine to form a known cancer causing agent called nitrosamine. Nitrosamines inflict cellular damage and have been linked to cancer, typically in your colon, bladder, stomach, or pancreas.
4. Potassium Bromate
You might not be aware of this, but nearly every time you eat bread in a restaurant or consume a hamburger or hotdog bun you are consuming bromide, an endocrinedisrupting chemical commonly used in flours. It directly

competes with iodine and therefore, can severely affect the thyroid and thyroid function. The use of potassium bromate as an additive in commercial breads and baked goods has been a huge contributor to bromide overload in Western cultures. Bromated flour is “enriched” with potassium bromate. Studies have linked potassium bromate to kidney and nervous system damage, thyroid problems, gastrointestinal discomfort, and cancer. Potassium bromate is banned for food use in Canada, China, and the European Union (EU).
5. Butylated Hydroxyanisole (BHA) and Butylated Hydroxytoluene (BHT)
Both BHT and BHA have been known to gave tumors and carcinogenic growths in animals. Butylated hydroxyanisole (BHA) is a preservative that affects the neurological system of your brain, alters behavior, and has the potential to cause cancer. It can be found in breakfast cereal, nut mixes, chewing gum, butter spread, meat, dehydrated potatoes, popcorn, chips, and beer, just to name a few. BHA may also trigger allergic reactions and hyperactivity. BHA is banned from infant foods in the UK and is banned from use in all foods in certain parts of the EU and Japan. In the US, the FDA considers BHA to be a GRAS additive. While BHT is not considered a carcinogen like BHA, it has been linked to tumor development in animals along with developmental effects and thyroid changes..
6. Aluminum additives
Sodium aluminum phosphate, sodium aluminum sulfate, and many other aluminum additives are found in processed foods as stabilizers. This metal can accumulate and persist in your body, especially in your bones, and animal studies show aluminum may cause neurological effects, including changes in behavior, learning, and motor response. A link between Alzheimer’s disease and other neurodegenerative disorders and aluminum exposure may also exist.

hole Foods Market (WFM) was caught in a blatant, brazen lie today after Natural News published a report that showed Whole Foods joining with Monsanto to support a GMO “fake labeling” bill in the U.S. Senate. The proposed new law would outlaw GMO labeling nationwide for up to two years, then roll out a GMO labeling “compromise” that would allow companies to use QR code (machine language) labeling that isn’t readable by humans.

The proposed law, in other words, is a fraud. It would not require any sort of GMO labeling that’s readable by human beings, and it would destroy the only existing labeling law that requires real, honest labeling (the Vermont law). As news of the betrayal spread across the internet, the Whole Foods Big Lie machine went into action, deliberately spreading false and misleading information via social media to deny the fact that Whole Foods’ own CEO, Walter Robb, is on the record openly supporting this Monsanto-engineered GMO fake labeling law (see below). Today, in response to a widely publicized article on Natural News that quoted a breaking story from Food Democracy Now, Whole Foods posted the following lie on its Facebook page: There is no truth to these claims. We have always advocated for more transparency in the marketplace, because we believe people have a right to know what’s in their food... Our commitment is to true transparency, and our policy will not accept QR codes or 1-800 numbers as valid ways of identifying foods that may contain GMOs.

Pat Roberts and Debbie Stabenow for coming to an agreement on a national solution during a panel discussion at the Aspen Ideas Festival. “It’s not perfect, but it’s progress not perfection,” said Dunn, who noted that Campbell’s was the first major food company to voluntarily label its products. “It’s a step in the right direction.” [Walter] Robb said it was an “incredible thing” that the senators came together and compromised during a dysfunctional time. He said he hopes that lawmakers can soon move on to other things. ...Kass, who has already lauded the Senate for the compromise, said he’d prefer onpack labels, but argued that advocates got 75 percent of what they wanted and the deal should be supported.

create some sort of a reasonable standard that manufacturers can... and gives the customer a lot more information is a pretty good thing. Walter Robb, in other words, loves the idea that the new federal mandate would “give manufacturers choice” instead of requiring mandatory, clear labeling. And he praises the compromise just as Monsanto operatives do. It’s a huge WIN for Monsanto, and Whole Foods CEO Walter Robb just can’t praise it enough!
Question: What’s your take on is this a bill that should get passed or not? Whole Foods CEO Walter Robb: My view on the bill is that, and I’m pretty intimately aware of it, is that I think it’s an incredible thing that Sen. Stabenow has put together with Sen. Robert, when you take a look at the atmosphere up there on Capitol Hill, that this much was accomplished together. Whether it passes or not is an open question of the next couple of weeks. The alternative is that Vermont goes into effect and then there’s a number of other states behind that, it makes it difficult for manufacturers to be able to label and label to that different standard... and frankly the Vermont bill while it’s... the national bill would have never happened if Vermont had not passed. There just wouldn’t have been the pressure... it’s a very imperfect bill. It doesn’t cover a lot of products, there’s gaps and inconsistencies that ultimately are probably better addressed through some sort of a national standard. And I think the way she’s put the bill together, which is to give manufacturers choices, is I think the marketplace and the customers will take it from here... so obviously, I think she’s done a great piece of work... we are already are out there further with our commitment to full transparency by 2018. We’re not gonna... we’re looking at how these two live with each other, but we’re already past that, but I think in this day and age, to come together, to

It gives food manufacturers “choices” to use nonhuman-readable labels that can only be read by bar code scanners. This allows food companies to hide the truth about GMOs behind digital machine code. It does not require the GMO labeling of meats or dairy products from animals raised entirely on GMO feed.

It allows the USDA to arbitrarily decide what percentage of GMOs in a food item trigger a required GMO label (or bar code). This level could theoretically be set at 50% or even 90%. The proposed law was masterminded by Monsantoinfluenced lawmakers as a way to destroy state GMO labeling laws while falsely claiming to have a “national GMO labeling mandate” that’s pure fraud. Whole Foods CEO Walter Robb fully supports this proposed law, calling it an “incredible thing” that was “accomplished together.”
The Whole Foods LIE MACHINE goes into overdrive while betraying its own customers over GMO labeling As is obvious here, Whole Foods own CEO Walter Robb is on the record supporting the GMO fake labeling “compromise” that was pushed through the Senate by Monsanto. This is undeniable. Yet the Whole Foods social media liars and deception artists ridiculously proclaim “There is no truth to these claims. We have always advocated for more transparency in the marketplace...” It’s complete B.S., of course, but that’s what Whole Foods is peddling these days. Remember: This is also the same retailer that trained its managers to lie to the public about GMOs, all while selling protein powders containing alarming levels of toxic heavy metals (and refusing to do anything about it). Whole Foods has a long history of being so deceptive about GMOs that some people now call it Wholesanto. The truth on this is simple: For the last two decades, Whole Foods has been selling unlabeled GMOs, heavy metals and pesticides to health-conscious customers who now demand honest labeling. And now when Monsanto twists the U.S. Senate into advancing a law that would outlaw the existing Vermont GMO labeling law, Whole Foods’ own CEO Walter Robb publicly praises it, followed by the Whole Foods propaganda liars denying any such thing ever happened. Just WOW.

The truth about Whole Foods is finally coming out: Pro-Monsanto, anti-labeling and LYING to its own customers at every opportunity Now we finally see the truth come out as Whole Foods joins Monsanto in supporting a GMO labeling bill that would deny consumers the right to know what they’re eating with clear, human-readable labeling. Not only is Whole Foods joining forces with Monsanto to destroy the courageous, pioneering Vermont labeling law, it’s also blatantly lying to its own customers and denying any of this is true. As an investigative journalist and food lab science director, the one thing I’ve learned about Whole Foods over the last few years is that Whole Foods has long abandoned integrity and seeks only profit via deception. In other words, Whole Foods is just like Monsanto. Except that instead of selling poisons to farmers, Whole Foods is selling GMO poisons to the end customer, all while working hard to support a law that would destroy Vermont’s existing GMO labeling law. I think I’m going to write an entire chapter about the lies and deceptions of Whole Foods in my next edition of Food Forensics, coming out in 2017.
