As an adult, Ethan embarked on a successful career in the clean energy sector, although he continued to be nagged by a basic question, “would we continue to raise and eat animals in such staggering numbers if a delicious and perfect plant-based replication of meat existed?” When he met Fu-hung Hsieh and Harold Huff at the University of Missouri and began working with the novel platform they’d developed over the course of a decade, Ethan knew he was on to something. After several years of collaboration with the University of Missouri, The University of Maryland, Kleiner Perkins Caufield & Byers, and The Obvious Corporation, Beyond Meat® was born. Beyond Meat®’s product line, consisting of Beyond Chicken Strips and Beyond Beef Crumbles, embodies the Company’s obsession with crafting delicious plant-based proteins that truly replicate the sensory experience of meat. With a culinary background from in Classic Pastry Arts from The French Culinary Institute in New York, as well as a graduate of Notre Dame and the prestigious Wharton School of business, Caitlin is a shining example of the type of people that are pushing Beyond Meat® forward to new heights each day. Caitlin’s culinary experiences have taken her from Coast to Coast, from Amy’s Bread in New York, to Chez Panisse in Berkeley and she brings her wealth of knowledge and experience to Beyond Meat® where on any given day, she might create 30 dishes for a photoshoot in the morning, a tasting menu for a meeting in the afternoon and finish the day off by coordinating the events and activities of the Beyond Meat® Street Teams. “My interest in working with Beyond Meat® came from working at Chez Panisse in Berkeley and feeling the need to be involved in the food industry in a way that makes both us and our planet healthier. ½ teaspoon onion powder

3 tablespoons celery, diced small

½ teaspoon garlic powder

1 avocado, halved and mashed

½ teaspoon rubbed sage

1 small vine tomato, sliced

½ teaspoon kosher salt

Fresh black pepper

¼ teaspoon black pepper

Step 1 Preheat oven to 400 degrees Step 2 In small bowl, toss together the Beyond
