Coffee trees were imported in Brazil by a Portuguese Lieutenant, in 1727. During his mission in Cayenne, he succeeded in robbing a few coffee cherries stolen by the Cayenne Governor’s wife. Maragogype coffee beans are the biggest beans in the World (2 or 3 times bigger than any other kind of coffee beans). The name was inspired by a Brazilian city: Maragogipe.

Columbia In the 19th century, in order to punish the believers who did

admit faults during confession, clerics let them plant some coffee trees. Obviously coffee trees became abundant so quickly!

Grano de Oro (Golden Bean) is the name given by Costa Rican people to their coffee beans. Coffee trees would have been brought by English people in Costa Rica.

C

offee roaster master creates home blends with a very secret work and in a way very close to the methods used by fragrances creators or by oenologists. Home blends are created by gathering green coffee beans from several origins before the roasting process. The temperature of this roasting process is not necessarly identical for all the different kind of green coffee used in the blend. It explains why the dedicated roasting process is so complex, and why several years of research are needed in order to create a new home blend. Nowadays, less than 10 roasters are still working this way in France.

Biaspresso - 100% Arabica Exceptional arabicas blend for a very flavoured and subtle coffee.

Lisboa - 50% Arabica, 50% Robusta Inspired from the taste of Portuguese coffee, Lisboa is a strong home blend, very popular for a professional use.

Topspresso - 80% Arabica, 20% Robusta Dedicated to B2B (Bars, Hotels and Restaurants), Topsresso presents a great harmony.

Italian Blend - 100% Arabica Tricky combination of 3 arabicas for a sweet coffee, remembering italian espressos.

Maora - 90% Arabica, 10% Robusta The robusta pinch creates an original and tasty complexity, with any intense cocoa favours.

Belmonte - 70% Arabica, 30% Robusta Belmonte is a small city un Portugal. As for Lisboa, our roasting master looked for aromas discovered in the beautiful Portuguese countryside. A very balanced blend.

iacelli created the most rare coffee in the World: Golden Bullet. Biacelli acquires the entire production of a very small and secret plot. Each coffee bean of this production is manually coated by a golden leaf by a gilder. A few kilos only are produced each year, and they are proposed to shorlisted customers. Each kilo is offered in a wooden box on which is carved the name of the lucky purchaser.

M

indfull with any details in order to reach perfection in their restaurants, Chefs holding Michelin stars are always proud to announce the whole menu is done on their own. For instance, some of them are cooking themselves their breads. For many years, Biacelli has observed that one domain was remaining blank in their amaizing menu: coffee. It is quite astonishing, as it is the last impression they will leave to their customers. After having offered their all imagination, energy and passion, Chefs still took the risk to leave a last disappointing impression at the end of the meal.

T

hus, in 2013, Biacelli launched a great adventure with several Chefs holding Michelin stars: le Café des Lumières (the coffee of the lights): Biacelli proposed to help them creating their own coffee reference. Then, they can proudly say: “I’m doing everything on my own. Thanks to Biacelli’s Roasting Master, the coffee you are savouring, was done by myself.”

E

ven if you do not hold any Michelin star yet, do not hesitate to come and discover a part of the French gastronomy that we often neglect. Yes, you can... create your own coffee.
