Boosting Your Balance As we get older, it can be frightening to think about losing our balance. Learn tips & tricks to improve or maintain your balance as you age. The class is taught with guest appearances by a Licensed Physical Therapist Assistant from St. John’s Lutheran Ministries Outpatient Rehab Services that specializes in balance, Parkinson’s Disease & Osteoporosis/Spine disorders. Patty Cooper is one of the most familiar faces at the Billings Community and Senior Center and that would likely be because she has been visiting the center since before 1977. Patty started coming to the Center long before she was a Senior with her mother, Ann. Before she retired, Patty worked as a busser and did dishes in the Logan Airport Café. Since she was so familiar with that type of work, she has helped serve, bus, and do dishes for the Adult Resource Alliance in the BCC kitchen for years. Patty visits the Center almost every day and is usually one of the first people through the doors to tell all the staff to “Get to work!” in her joking manner. In 2018, Patty volunteered 972 hours and makes so many of us smile with her daily antics and laughter. When asked what she loves about the Senior Center, Patty responds, so simply and genuinely, “I love everybody!” When Patty isn’t at the Center volunteering or playing her favorite games, Shanghai Rummy and Rummikub, she can be found enjoying some of her other hobbies. Patty and her husband, Ron, are die-hard Billings Mustangs fans and almost never miss a game. If the Mustangs are not playing, you will likely find them watching a scary movie at their house. Patty is also a big animal lover. She speaks fondly of the 5 birds and 3 dogs that she no longer has and in their former neighborhood the children tell tales of Patty feeding and talking to the chickens. Needless to say, Patty has a heart as big as her smile and she brings so much joy to the Billings Community and Senior Center.

Ingredients ½ cup + 2 tablespoons coconut oil 1¼ cups coconut sugar ¾ cups + 2 tablespoons unsweetened cocoa powder ¼ teaspoon salt 1 teaspoon vanilla extract 2 large eggs ½ cup almond flour 1 cup dark chocolate chunks (optional) For the chocolate topping 1 cup fresh strawberries diced ⅓ cup coconut oil ⅓ cup cocoa powder 2 tablespoons maple syrup Instructions • Preheat oven to 325ºF. Line an 8-by-8-inch baking pan with aluminum foil leaving overhang on the sides, spray with cooking spray • In a large microwave-safe bowl, combine coconut oil, coconut sugar, cocoa powder, salt, and heat on high power to melt, about 45 seconds. Stop to stir, and heat in 10-second bursts until mixture has melted and can be stirred smooth. Whisk for about 30 seconds to help dissolve the coconut sugar into the oil. • Add the vanilla, eggs, and stir vigorously until batter is thick, shiny, and well blended. • Add the almond flour and stir until combined. Pour the batter into the prepared pan and spread evenly. • Bake until a toothpick in the center emerges slightly moist with batter, about 22-25 minutes. -Check with a toothpick - it should come out with moist crumbs attached. • Spread the strawberries evenly over the brownies. In a small bowl, whisk together the coconut oil, cocoa powder, and maple syrup. Pour evenly over the strawberries. Refrigerate for at least 1 hours before cutting. 9

I’m certain that I’m not writing a good-bye note because I hope to stay involved with Senior Services and the Billings Parks and Recreation events; however, I am writing to say “See you later.” I’ve been given the opportunity to become the Executive Director of the Yellowstone Valley Animal Shelter. Although I will always have a passion for working with Seniors, I believe its time for me to use my talents and time to help animals in our community. For the last two years, this Center has been an amazing place to work. I want to thank all of you for letting me into your lives. I have learned so much from each of you and have enjoyed the opportunity to serve you. One of the greatest gifts I have received in this position is how each of you has welcomed my family in with open arms. My teenage daughter has learned so much from spending time at the center. I believe Winnie the Pooh said it best, “How lucky am I to have something that makes saying goodbye so hard”. Anyone is welcome to join me for Cookies and Coffee at the Center on February 6th from 1:00 pm – 3:00 pm.

It continues to be our goal to provide life-enriching programs and services that enhance emotional, social, physical, and spiritual wellness for the over 30,000 seniors living in our beautiful city of Billings. Plans are already underway to hire a new Senior Services Specialist. We look forward to the opportunity to bring a new Parks and Recreation professional to the Community and Senior Center. Our new Senior Services Specialist will provide many new opportunities for our seniors, while continuing the great work and progress we have seen over the last few years while Triniti Halverson was here.
