And oftentimes life itself can feel like a giant balancing act. According to the Oxford dictionary, as a noun, the word “balance” is defined as: 1. An even distribution of weight enabling someone or something to remain upright and steady. 2. A condition in which different elements are equal or in the correct proportions.
If you ask 10 people what it means to have a balanced life, you will most likely get 10 different answers. Some will include time at the lake. Some will include spending time with family, volunteering, or enjoying their favorite hobby. And everyone’s “correct proportions” will be different. Your personal answer to this question will be about what is important to you.
However, a truly balanced portfolio is not just a variety of investments. It is a part of a bigger picture, one designed around what it means to have balance in your life and throughout your life. It has been a joy to fill these pages for you. What you see on these pages today, is not just a pretty photo shoot, in a pretty house with pretty faces. These are the faces of people I have met along the way. They have cooked food for me (and you!), they have shared food with me, they have taken my picture, and they have made me laugh, a lot. This isn't just another photoshoot. To me, this installment of “Food Stuff” is a real holiday party centered around celebration and thankfulness. Rachel set a beautiful stage for a delightful meal, everyone gushed over Stephanie’s gnocchi, Connor made us laugh, Kiky always brought us back to the idea of community, and I couldn’t stop making toasts and firing off words of affirmation to everyone. Thank you to Hannah and Caroline for always saying “yes” to my ideas, and for giving me the chance to share local stories. Thank you to my mom for teaching me the ABC’s. That really came in handy all of these years later. Thank you to my dad for editing every single story. Thank you to all of my pasta date guys. I hope you and your new girlfriends are very happy together. I’m sincere about that, and still very single, for anyone keeping track. Thank you to all the Mexican restaurants for sharing your stories with me. Thank you to my friends who have shared food with me, helped me write these lines, and listened to me babble on for an hour about French fries. Thank you to every restaurant owner, manager, chef and server in Bismarck and Mandan. You are feeding this community, and many of you have your own ways of giving back to others and for that, I am very thankful. CONNOR Connor was the first person I knew I wanted at my party. He has taken every picture for “Food Stuff�. To be honest, getting my picture taken and knowing it will be printed in a magazine isn't my favorite thing to do in this world, but Connor always made it fun. Before the photo shoot started he would help me pick out my shoes, and once it was over he would share the leftover food with me. In between all of that, Connor would ease my nerves, help me come up with ideas for the next issue, and listen to me wax poetic about wanting my blemishes airbrushed.

STEPHANIE Stephanie is the owner of Butterhorn. When I first reviewed Butterhorn’s butterhorns, I described them as everything I was looking for in a bread and a husband. But I could say the same for the restaurant as a whole as well...it’s clean cut and pretty, filled with laughter and good conversation, serves me comforting food and cowboy whisky (in a classy way), and the dishes disappear without a whimper. I will keep going back to Butterhorn until I find a husband. I knew I wanted Stephanie at the party for roughly 119 reasons, but I don’t have that much space so I’ll give you three. 1. Stephanie is a cool, hard working chef. Period. 2. Butterhorn was exactly what Bismarck needed when it opened its doors. 3. Stephanie’s butterhorns are what inspired me to start writing about food.

KIKY Every interaction with Kiky from Kobe’s is a delight... and I’m not the only one who says so. Whenever Kobe’s comes up in conversation, someone always says “Kiky is so kind!” I wanted Kiky at my party because he went above and beyond during my kid friendly food review, and in the most sincere way possible. It’s obvious that he wants his guests to have a good experience. He cares about the food on the table and the community of people around it. Inviting Kiky was my simple way of saying, “thank you,” from all of us.

RACHEL I had not met Rachel prior to the dinner party, but how could you not invite the person who decorated the house for the holidays?! The house was beautiful, she was a wonderful addition, and we were all glad she was there.

THE EMPTY SEAT This holiday season, I’m leaving a seat open at the table. This seat represents the high schooler who helped me review my very first food item two years ago, but couldn't come to the party due to Covid, It represents my neighbor who read every one of my stories but passed away shortly before this shoot, and it represents the hardworking individuals I wanted there who couldn't step away from their businesses. The empty seat reaches far beyond this photoshoot. It represents the many people who work on the holidays while everyone around them celebrates, it represents those who are alone during the holidays though they desire to be with others, and it represents those who go without necessities on a daily basis in our community. Everyone has a seat at the table. This year, due to Covid, you may find yourself with more empty seats around the table than normal. I hope your holidays are full of love and joy and the comforts of being surrounded by family and friends, all while being socially responsible. Maybe this isn't the year to fill your house with dozens of people, but maybe you can fill it with a few. Maybe this is the year to start something new. The food on this table may not look like your traditional holiday feast, but I am encouraging you to see it as such. This is just a tiny sample of the flavors of our community. Who’s to say that your holiday meal can’t include sushi, tacos and a corn souffle? I tried it, and it was amazing. I have taken one item from each of my food reviews to give you a holiday menu - a mix of both cooked and catered foods. The cooked at home food stems from midwestern tradition and hospitality, while the catered food ties together a community of people whose traditions span many cultures.

CHOCOLATE COVERED STRAWBERRIES Dipping strawberries in chocolate is my favorite way to cook. Only one kitchen appliance needs to be turned on, you can eat them while you make them, the cleanup is minimal, and the end result is fancy. I take chocolate covered strawberries to every party I can. Trust me...they are an instant crowd pleaser! I make mine with Baker’s Dipping Chocolate which can be found at any local grocer. Like lutefisk, they are best served fresh. If you want to be extra fancy this football season, you can add football stitching with white frosting. I have attempted this roughly 33 times but I’ve never been able to get them quite right and eventually just call them upside down footballs as I pass them to the host.
MIGHTY MISSOURI COFFEE I am hereby declaring Mighty Mo as the official coffee of the holidays. Who gave me this authority? Just me, but no one said I couldn't make sweeping declarations. I have never been a coffee drinker, but I would like to be. It’s much cheaper than my latte addiction. If you haven't heard, Mighty Mo has a coffee subscription and it makes the perfect gift...even for this latte drinker.

As snow starts to fall, driving becomes trickier. While traveling in the winter can be frustrating, there are various preparations you can take to ensure you are ready to handle whatever weather North Dakota throws at you. We were able to chat with Rachel Gietzen, president and owner of Bismarck and Mandan Tire Centers. She shared several insights on driving safely in ice, snow, or slush. WHEN RUBBER MEETS ROAD One of the best preparations for winter driving is making sure you have good tires on your vehicle. “People think tires are just black and round, but they are one of the biggest key features to your safety,” says Rachel. Over time as a tire wears down, it loses tread causing problems in winter when stopping at intersections, driving uphill, or braking in snow. Ensuring that your tires can handle low temperatures is also important for traction. Most people have all-season tires, so be sure to check what the lowest temperature those tires can handle is. However, there is another kind of tire that can make all the difference. “Snow tires are a great option for our area up here,” asserts Rachel. Snow tires create enhanced traction and maneuverability. They also improve braking and work to avoid hydroplaning. Tests in snowy 54
conditions have shown that a vehicle with snow tires stopped around 28 feet sooner than that exact same vehicle did with all-season tires. If you are hoping to give your tires even better grip, some snow tires can be studded for extra grip. North Dakota allows tires to be studded from October 15th - April 15th. THE BEST DEFENSE IS A GOOD OFFENSE Before heading out on the roads, there are a few important things to review. First, ensure your tailpipe is clear of blockage whether in ice or snow form. Also, check your antifreeze strength. At Bismarck and Mandan Tire Centers, they will do this for you as a part of a regular inspection, free of charge. Also, consistently keep your tank at least half-full, and as always, track your maintenance schedule to avoid your car breaking down in the middle of a blizzard because of a preventable issue. IN CASE OF EMERGENCY The most crucial aspect of safe driving is being proactive. “Don’t wait until the first snowfall,” advises Rachel. “Be prepared ahead of time because it can save you from that accident.” This means getting your car in for an inspection before the season’s first

blizzard. Packing a winter survival kit is also important. Make sure this includes thick gloves, first aid, food, water, and jumper cables. Other items that are good to include are blankets, warm clothes, a shovel, flashlight, and window scraper. This winter, don’t let the harsh weather catch you off guard. Bismarck and Mandan Tire Centers offer free inspections to help you safely get to wherever you need to be. As winter approaches, their schedules fill up faster and faster, so make sure to schedule as soon as possible to ensure your vehicle is equipped to handle whatever winter will hold. Salt lamp: The lamps give off a beautiful warm glow that has healing and detoxing properties. Flax wraps: Flax Wraps by The Smart Seed have been a best seller for years. They are a locally made product and are great because you can warm them or freeze them. They are great for pain and recovery after surgery. A back ache, muscle pain, stomach ache, little boo boos for kids, too. You can add essential oils to them and the outside is also washable. Gift Cards: Gift cards are always a great idea because then someone can pick out the products that are just right for them. Plus you are giving the gift of health! What is your favorite part of the holiday season? Now that I have a son who is 15 months old it really makes these holidays more special and fun. I look forward to introducing him to my favorite Christmas movie The Grinch and driving around looking at Christmas lights. And of course enjoying Thanksgiving and Christmas feasts.
