Acrylic Painting for Beginners
Acrylic paint is a great, inexpensive medium that will allow you to create a beautiful project in a minimal amount of time. In this class, you will learn to mix colors, care for brushes, apply paint using a variety of brush strokes, and more! No previous experience necessary. Nicole will demonstrate a variety of techniques to build your painting vocabulary, so you can confidently further explore painting on your own in the future! Students are encouraged to bring their own sketching materials and brushes (if you own some), or instructor will have basic materials on hand during the first class. Basic Embroidery: Introducing Sashiko
Embroidery is a beautiful handcraft that has been around for ages. Almost everyone has at least one embroidered towel or pillowcase tucked somewhere in their home. If you are interested in trying it out for yourself, join us! From hoops to needles, floss and fabric, you will get started right away. This class will specifically show you Sashiko, which is a striking hand-sewing technique that originated in ancient Japan. In Japanese, its name means “little stabs” – a reference to the plain running stitch that makes up sashiko’s geometric, all-over patterns. Beginning Quilting
Always been interested in learning to quilt but had no idea where to start? This class is for you! Bring your sewing machine and we will cut, piece, and sew a bargello baby quilt. Kathleen has designed and sewn over 200 quilts in her lifetime and is delighted to share her knowledge with you. Participants should bring their own sewing machines with to class. Basic sewing knowledge is recommended. It’s time to discover crochet! In this class, you’ll learn the foundation of crochet from the chain to the double crochet stitch. Eco Chic Rag Rugs
Learn three different methods of creating rag rugs from recycled tee shirts, or brand new fabric. Start collecting those old tee shirts and learn how to crochet a rag rug, braid a toothbrush rug and make a “hairy” rope rug, all simple techniques! You will need to work between classes in order to finish a project or if you learn the techniques you can complete a rug on your own. Introduction to Basic Watercolor Painting
Begin to explore a whole new world with watercolor painting! In this class, you will learn the basics, as well as learn about materials and application techniques. These basics will allow you to further build skills on your own and help you really take your art to the next level. No previous art experience is necessary! Mixed Media Collage
Collage art can really be anything, and creating one with mixed media simply means using a variety of materials, including multiple types of paint and drawing media. We will use these techniques to alter and add visual texture and color to a variety of papers, which will then be used to create collages that will be an inspirational jumping off point for more art! Tunisian Crochet for Beginners
Learn a new way to crochet – a little bit of crochet and knitting – no prior knowledge of both needed! Tunisian or Afghan Crochet is a crochet technique which uses a longer than average crochet hook, leaves loops on the hook (like knitting leaves loops on the needle), then taking the loops off in the next instead of working one stitch at a time as in other crochet stitches or techniques, and can create a variety of textures depending on the stitch, you can even create a knit looking one! You will learn to chain, Tunisian Simple Stitch, Tunisian Full Stitch and Tunisian Knit Stitch. This type of crochet can be used to create dish or washcloths, shawls and even blankets. This class gets you familiar with the basics of Tunisian Crochet and you will have a sampler of the above listed stitches and a shawl by end of class. Culinary Arts Aaahh-Lefse!
Fresh homemade lefse has a warm, snuggling hug for your taste buds, and is traditionally made from potatobased dough that is hand-rolled. The most popular way to enjoy it is called “lefse-klining” – the simple delight of adding butter and sugar, then rolling it up. Lefse is often served alongside lutefisk, another traditional Norwegian delicacy, though one with more of an ‘acquired’ taste. Join us to learn more, because there’s no end to all the ways you can enjoy traditional lefse! A supply fee of $10 is payable at the time of class registration. Baking bread is an art that requires patience, strength and practice with simple ingredients. Flour, water, yeast, and salt are the only ingredients in French bread, resulting in a glorious crust and a sophisticated interior. Sweet or savory strudels are a delightful and easy meal if you have the right touch. Come and practice the basic technique, and then experiment with fillings. Nothing warms the soul (and stomach) more than traditional meals with recipes passed down through generations! Kumla, sometimes referred to as Klubb, is a hearty, dense, potato dumpling cooked in a ham broth and is a Norwegian cultural food. Mediterranean Cooking on the Prairie
The research continues to roll in: eating like a Mediterranean has been shown to reduce your risk for heart disease, cancer, and diabetes, aid in weight management, and protect you against dementia, depression, and Alzheimer’s disease. Chef Duane Ehrens and his wife Karen Ehrens, a Registered Dietitian, share background on the diet, recipes, and meal suggestions to help you eat more like a Mediterranean here in North Dakota. Duane and Karen will share practical information about how to include more whole grains, vegetables and fruits, beans and quality fats and oils in your diet. Healthy Living Anyone Can Run a 5k!
5k races are everywhere, and are continually increasing in popularity. They sound like fun, but how do you get started? It’s time to get off your couch and get training. In a multi-night workshop, you will learn how to build up stamina, how to take care of your body as you prepare, plus tips and tricks on how to achieve your goal. It’s time to get out there, have some fun and cross that first 5k off your bucket list! Participants should wear athletic gear and tennis shoes. Krumkake is a delicate, beautifully imprinted Norwegian specialty cookie baked on a special decorative two-sided krumkake iron. Typically this delicacy is found in NorwegianAmerican homes at Christmas time, but because these cookies are so unique and lovely, it is a shame to restrict them to a single holiday. That’s why it’s great to pull out the krumkake iron whenever a special occasion arises! Join us in making this delicacy and take the treat home for your family. T’ai Chi is a centuries old Chinese martial art that promotes calming, centering, and self-control. A combination of meditation and physical exercise, T’ai Chi can increase energy, flexibilit , balance, muscle strength and reduce stress. While learning about the twenty-four forms of Yang Style, you will experience meditation in motion. This is a beginner class, no experience necessary! Please wear comfortable clothing to class.

Want a well-behaved dog? Want to know how to train your dog “pawsitively”? Learn the basics of obedience training in this class. You and your dog will receive instruction in a detailed manner so that everyone attending will benefit, and so that the transfer of information to dogs and family members will be incorporated into everyday life. Lessons given in a how-to style include: sit, down, controlled walk, come, wait, stay, leave it, and more. Behavioral situations are addressed based on group and/or individual needs. Pawsitively Puppy
Increase your puppy’s confidence, respect, trust, and interaction skills “pawsitively.” In this class for you and any puppy 6 months and younger, learn the basics of puppy behavior and simple obedience. Each session will be divided into five segments: 1) Puppy 101; 2) behavior issues including mouthing, biting, and chewing; 3) obedience instruction such as “focus,” “sit,” and “down”; 4) a controlled confidence activity, such as tunnel play or hoops; 5) playtime for positive interaction with other dogs and people. The tasks listed above are just a sample of what will be discussed! Each week, a new concept will be introduced and previous concepts reviewed, so that you and your puppy build its skills. Did you miss out on the opportunity to go to horse camp when you were a kid? If you did, then this is your opportunity to see what you missed! In this five week course, you will learn the basics to gain confidence around horses. Instructor Cherie Sanstead will pair you with a horse you can work well with to help you develop a trusting relationship. Songs that make History come alive will offer a brief review of the songs that help us understand, interpret and just get a feel for the music that shaped our history. Songs can be used to offer everyone an opportunity to experience the times that produced them, songs can even be used to see how music can shape history itself. What the Hell is Happening Part II -Great Decisions
Due to the popularity of the ‘What the Hell Is Happening?’ course held during the summer session, this course will dive deeper into some of the world’s greatest foreign policy challenges and dilemmas. We will examine a set of issues facing policy makers and the potential ramifications for the world in the years to come. The Mexican War (1846-1848) as Prelude to the Civil War
Texas declared independence from Mexico in 1836 and remained the Republic of Texas until 1845. In 1844, James K. Polk ran for president on an expansionist platform to increase the United States at the expense of others, come what may. As predicted, his annexation of Texas resulted in war with Mexico (1846-48) and added to the United States the future states of Texas, California, Arizona, New Mexico, Utah, Nevada, and parts of Colorado and Wyoming. Resolving Workplace Conflict
Today’s business environment presents new and growing challenges forcing organizations to continually increase productivity, improve quality, shorten cycle time, and reduce costs. Survey after survey confirms that people are working longer and harder at jobs that are more complex and have a wider range of responsibilities. At the same time, the way people work and communicate with one another is changing, creating added stress and complexity. The homogenous, single-function, co-located group is being replaced by dispersed, cross-functional teams with diverse areas of expertise. An unfortunate but natural byproduct of these challenges is conflict. While conflict can lead to discoveries such as new ideas and innovative breakthroughs, it can, if allowed to escalate, result in damage to critical working relationships. FREQUENTLY ASKED QUESTIONS Will I receive a confirmation? If you register yourself online, you will receive an email confirmation within 24 hours. If you register by mail or call in, you will receive confirmation after we process your registration. Please review your confirmation, which will detail location, special supplies or material fees. What if I cannot attend a course as planned for Enrichment? (OLLI policy, see page 10) If you need to withdraw or change your registration in a class, you must call our registration staff at (701) 224-5600 or (877) 846-9387 at least five (5) business days before the class starts. You will receive a refund according to the refund policy of that class and through the same method in which the class was paid. There are no refunds or transfers allowed if you notify us fewer than five days before the class starts. What is the refund/drop planned for Enrichment? (OLLI policy, see page 10) Refunds granted at the participants’ request will incur a $20 processing fee per class to be deducted from the amount refunded. All refunds are made by mail unless paid with a credit card; in which case the card is credited. Please allow four weeks to process refunds. If cancellation is less than five (5) business day prior to the first session no refund is available. Full refunds are guaranteed if BSC Continuing Education and TrainND cancels a course. Can a class be cancelled because of low enrollment? If we have to cancel a class due to low enrollment, we will notify you as soon as possible before the class is scheduled to begin. You will receive a full refund of your tuition or transfer to another course of your choice, space permitting. How do I know if a course is cancelled? In the event a class must be cancelled, participants will be notified prior to the start of the class. In case of inclement weather, please check local radio and television stations for class cancellation announcements.
