But autumn…fall.. is something entirely special on its own. Acrylic Painting for Beginners
Acrylic paint is a great, inexpensive medium that will allow you to create a beautiful project in a minimal amount of time. It’s time to discover crochet! In this class, you’ll learn the foundation of crochet from the chain to the double crochet stitch. Participants will learn how to chain, the single, half double and double crochet stitches by creating motifs that can be used as coasters or blanket squares. No prior crochet experience needed - just patience and determination to have fun while learning! Mediterranean Cooking on the Prairie
The research continues to roll in: eating like a Mediterranean has been shown to reduce your risk for heart disease, cancer, and diabetes; aid in weight management, and protect you against dementia, depression and Alzheimer’s disease. Chef Duane Ehrens and his wife Karen Ehrens, a Registered Dietitian, share background on the diet, recipes, and meal suggestions to help you eat more like a Mediterranean here in North Dakota. Fresh homemade lefse has a warm, snuggling hug for your taste buds, and is traditionally made from potato-based dough that is hand-rolled. The most popular way to enjoy it is called “lefseklining” – the simple delight of adding butter and sugar, then rolling it up. Krumkake is a delicate, beautifully imprinted Norwegian specialty cookie baked on a special decorative two-sided krumkake iron. Typically this delicacy is found in NorwegianAmerican homes at Christmas time, but because these cookies are so unique and lovely, it is a shame to restrict them to a single holiday. Nothing warms the soul (and stomach) more than traditional meals with recipes passed down through generations! Kumla, sometimes referred to as Klubb, is a hearty, dense, potato dumpling cooked in a ham broth and is a Norwegian cultural food. Pawsitively Obedient
This class is a four week session geared towards dogs over six months old. We will be building on the exercises learned in the puppy class; however, if your dog has not attended a puppy class and is not seriously aggressive towards other dogs this class would be an option for you and your dog. Other arrangements can be made if your dog has “special” issues. Tasks that will be taught using more structured techniques are sit, down, come when called, controlled walk, wait, stay and much more including some Rally and Canine Good Citizen exercises. This is a four week class to train and prepare to test for the CGC test. The first three weeks will be the preparation phase and the fourth class will be the actual test, conducted by Betsy Hamkens, a CGC evaluator for many years. This is a great class to increase your dog’s training knowledge and experiences. The class fee includes the test fee. When he left the presidency on January 20, 1961, critics viewed Dwight Eisenhower as little more than a benign do-nothing president who, in the words of one observer, was “armed with a putter, a winning smile, and little else.” Now, more than 60 years later, Dwight Eisenhower is ranked as one of our greatest presidents. By every measure, President Eisenhower’s accomplishments are formidable: He peacefully ended the Korean War, defused Cold War tensions with diplomacy, refused to use the atomic bomb, stimulated the economy, built the interstate highway system, balanced the federal budget, deployed the military to enforce desegregation, and saved the two-party system by purging isolationists and extremists from the Republican Party. But behind the famous smile and grandfatherly image was a complex man: A sentimentalist who often used a volcanic temper, a cunning and shrewd politician, and meticulous and demanding manager, and a superb general who offered a prophetic warning on the power of the military-industrial complex. Behind the Scenes Tour at the ND Heritage Center and State Museum
A behind the scenes tour of the Heritage Center will provide a look at the collections areas, labs, and work areas that are not accessible to the public. As the federal and state repository for ND, we have extensive collections in archaeology, paleontology, archives and artifacts. The tour will provide a look at some of our most interesting and important collections. What does the Society collect and why? How do we care for the collections that are in storage? This is a treasure hunt behind the scenes at the State Museum. “. . . To Preserve Peace on the Frontiers”: Indian Depredation Claims and Native American Policy, 1796-1920
Fearing frontier violence, in 1796 early national leaders developed a policy to preserve peace on the frontiers by providing a legal mechanism under which settlers and Indians alike could receive compensation for wrongs committed against each other. For the next 124 years, claims filed under this policy chugged their way through the War and Interior Departments, in and out of Congress, and finally before the United States Court of Claims and, on appeal, to the U. S. Supreme Court. Little used by Indians, who infrequently resorted to this alien legal process, white Westerners used the policy to supplement or “insure”—yes, like an insurance policy—their life in the West. Clay Jenkinson is writing a new book of essays about North Dakota and the Great Plains. The book is about many things--spirit of place, roadside attractions, the Geographic Center of North America, the future of North Dakota, and-perhaps most important to Clay--the Problem of Identity in North Dakota. Clay has been traveling all over the plains doing field research for the book. FREQUENTLY ASKED QUESTIONS
Will I receive a confirmation? If you register yourself online, you will receive an email confirmation within 24 hours. If you register by mail or call in, you will receive confirmation after we process your registration. Please review your confirmation, which will detail location, special supplies or material fees. What if I cannot attend a course as planned for Enrichment? (OLLI policy, see page 12) If you need to withdraw or change your registration in a class, you must call our registration staff at (701) 224-5600 or (877) 846-9387 at least five (5) business days before the class starts. You will receive a refund according to the refund policy of that class and through the same method in which the class was paid. There are no refunds or transfers allowed if you notify us fewer than five days before the class starts. What is the refund/drop planned for Enrichment? (OLLI policy, see page 12) Refunds granted at the participants’ request will incur a $20 processing fee per class to be deducted from the amount refunded. All refunds are made by mail unless paid with a credit card; in which case the card is credited. Please allow four weeks to process refunds. If cancellation is less than five (5) business day prior to the first session no refund is available. Full refunds are guaranteed if BSC Continuing Education and TrainND cancels a course. Can a class be cancelled because of low enrollment? If we have to cancel a class due to low enrollment, we will notify you as soon as possible before the class is scheduled to begin. You will receive a full refund of your tuition or transfer to another course of your choice, space permitting. How do I know if a course is cancelled? In the event a class must be cancelled, participants will be notified prior to the start of the class. In case of inclement weather, please check local radio and television stations for class cancellation announcements.

We are part of the North Dakota University System, so many of the terms used on the registration site refer to “student.” This term refers to anyone participating in an Enrichment class.
