WELCOME TO CONTINUING EDUCATION! As much love as I have for summer, there’s something about cooler fall weather and pulling sweatshirts out of storage that just can’t be beat. It is a great time to find something new to keep busy with in anticipation of the long cold days ahead. Fall Enrichment is just one step in helping usher autumn in, and it prepares us to look at September and October on the calendar instead of May or June. Enrichment is a program that we take pride in putting together - trying to find the “right” classes to inspire each of you to step into cooler weather instead of where we would all like to be, at home! This fall catalog is no exception. We have a stellar lineup of courses coming, and we are inviting you to join us to try perfecting your pies before the holidays, pick up knitting or crochet to help fill the cold winter evenings, or get your heart rate up by taking a dance or exercise class. In addition to the fun classes we have put together for Enrichment, make sure to check out our lineup of classes geared toward your professional life. Just as BSC helps traditional students go beyond, here in Continuing Education, we strive to help you and your employees move beyond in their professional lives and your organization move beyond to become a better business. Computers & Technology Learn to use Microsoft Excel, a powerful spreadsheet application and an essential tool for today’s workplace. We will discuss the basic concepts of Excel in this class. Discover how to build, edit and modify spreadsheets, design charts, and create basic formulas and functions. Basic knowledge of Windows is recommended. Essential iPad I: Settings and Safari Love your iPad and want to learn more? This class will discuss how to make Safari work more efficiently and make searching the web a breeze on your device. You will also learn more about the settings on your iPad, including connecting to Wi-Fi and Bluetooth, notifications, control center, general settings setting up passcodes, and the individual App settings. Intro to Computers: Beyond the Basics

Introduction to Windows 10! Windows 10 brings out the best features from Windows 7 and 8, from the scrolling start menu to jump lists and flyout menus and more. In this class, we will also discuss the Cortana search bar, Microsoft’s new Edge web browser, access to the App store from your desktop and newly improved mail and calendar apps. Never used a computer before or new to using a personal computer (PC)? This class will help you with the very, very basics. Join us to learn the basics, including how to turn it on and shut it off. When should you shut down? What does the mouse do, and why are there 2 buttons and a wheel? What are all of those keys on the keyboard? What is the difference between a PC, a MAC, and a tablet? Where Do I Start? MS Office for Beginners

Make the perfect holiday gift and an heirloom that can be passed down. We will create a granny square baby blanket, a versatile pattern that can be adapted for any size. Creative Writing

Microsoft Office is a life changer. From getting organized to creating letters, designing cards to a virtual address book, it has all of the tools to help you succeed. We will review Excel (spreadsheets), Word (documents and letters), Publisher (cards and signs), and Outlook (email, calendar and contacts). The MS Office suite is a “sweet” way to get your life on track! Basic computer knowledge is recommended.

Want to get some writing done this summer? Awardwinning novelist Tempe O’Kun is here to help! This 9-week class is packed with writing exercises and practical advice, without the pressure of a graded course. Each student will complete two full-length short stories for critique. The small class size ensures sharing your work will be less intimidating, but space is limited.

Creative Arts Beginning Quilting

Always been interested in learning to quilt but had no idea where to start? This class is for you! Bring your sewing machine and we will cut, piece, and sew a bargello baby quilt. Kathleen has designed and sewn over 200 quilts in her lifetime and is delighted to share her knowledge with you. Participants need to bring their own sewing machines with to class. Basic sewing knowledge is recommended. The supply fee of $25 will cover the cost of the fabric and batting and is payable at the time of class registration. Crochet 101 It’s time to discover crochet! In this class, you’ll learn the foundation of crochet from the chain to the double crochet stitch. Participants will learn how to chain, the single, half double and double crochet stitches by creating motifs that can be used as coasters or blanket squares. No prior crochet experience needed - just patience and determination to have fun while learning! Dye with Real Indigo and Henna! Henna is a natural dye plant that’s for hair coloration and to create temporary tattoos. It is also used to create designs and coloration on fabrics. In this class, you’ll learn to mix henna paste, prepare tools for application on fabric and skin, select and practice designs, and apply henna paste to several natural fabrics. You may also create a temporary skin tattoo, if desired! Safety, setting color and care of dyed fabrics and temporary tattoos will also be covered. No experience necessary! Sharp wits and sharper banter. And, of course, crimes to be solved. I could tell right away it was the class for me. I only hoped I could sign up before it was too late.

Enameling

Intro to Metalsmithing with a Micro Torch Learn the basic techniques of cutting metal, texturizing metal, soldering with a micro torch, and polishing techniques. You will create a sterling silver ring of your own design that you’ll enjoy wearing for years to come. All tools and equipment will be provided. Introduction to Basic Watercolor Painting Begin to explore a whole new world with watercolor painting! Learn to Color Metal with Electricity: Anodizing Anodized niobium jewelry is colorful, lightweight, and hypo-allergenic. Students will create a test piece to understand the color palette ranging from browns to vivid blues, magentas, greens, and purples. Mosaic Mirrors Create a gorgeous mosaic glass and mirror piece for home or gifting! Using stained glass, ceramic and glass tile, beads, mixed media and much more, we’ll create a mosaic-rimmed mirror you’ll love. We’ll cover design and tile selection, adhesives and proper placement of pieces and mirror elements. Choosing and coloring grout, as well as proper grout application and finishing will be covered. Pysanka Egg Ornament

Pysanka eggs are a Ukrainian tradition you can use to add new beauty to your Christmas tree. Designs are “written” on the eggs using a pen that applies melted wax, resulting in intricate patterns when the egg is dyed. Join us to explore this unique process and create a new tradition! Tie-Dye Traditions (The Art of Shibori on Silk)

Learn an American take on the ancient Japanese dye tradition of Shibori, or “wrapping.” We’ll learn several traditional patterns, altered to fit our American sensibilities, each class period. Beginning Yoga

This Beginner’s Yoga class will guide you through the various yoga styles, the poses, proper body alignment for a safe practice, terminology to understand the instruction, and breathing techniques to help you relax. Learn what you need to know to walk into any yoga class with confidence and not feel out of place. The certified instructor will teach the sun salutation and warrior series. Learn how your body can move into the postures with modifications. Leave the daily routines at the door and come inside the studio to have fun, feel relaxed, and stretch in a comfortable environment. Guided Meditation

Join us for a unique opportunity to experience guided meditation! In this group course, you will be gently guided through a relaxing series of progressive live meditation sessions. Set aside time for yourself, let go of your daily worries and concerns, and relax while you enjoy settling into a more peaceful state of being. After each meditation session, you will have the opportunity to discuss the experience with your instructor and offer both feedback and questions. All participant levels are welcome! Healthy Living

Make better health one of your most important activities this summer, and you won’t regret it! Meeting every Monday and Wednesday for only four weeks, we will start out with 15 minutes of weighted bar routines, 15 minutes of cardio exercises with bands and rags. Take the last 15 minutes for an awesome core workout and stretch. Participants should bring a filled water bottle and wear clothes geared to work out.

Intro to Kickboxing!

It’s all about having time to workout. This class provides a “no excuses” format which gives you three fifteen minute workouts in one powerful 45 segment! We’ll start out with the exercises for strengthening arms, legs and core to improve flexibility. Next, we’ll take it to the bench for some fun heart-rate stepping activity and then slow it down at the end with basic lengthening postures for the back, neck, shoulders, and abdomen. Three different workouts with different goals in mind. You won’t be coming to this class dreading the workout because you only have fifteen minutes before you change exercises! Home & Garden Aaahh-Lefse! Fresh homemade lefse has a warm, snuggling hug for your taste buds, and is traditionally made from potatobased dough that is hand-rolled. The most popular way to enjoy it is called lefse-klining – the simple delight of adding butter and sugar, then rolling it up. Lefse is often served alongside lutefisk, another traditional Norwegian delicacy, though one with more of an ‘acquired’ taste. Join us to learn more, because there’s no end to all the ways you can enjoy traditional lefse! A supply fee of $9 is payable at the time of class registration. A Beginner’s Guide to Kombucha and Fermentation Kombucha and sauerkraut are just two of many fermented foods gaining popularity. Ever wonder why they are considered so healthy? This class will explain the benefits and process of fermentation. Each participant will receive a “mother” to make their own fermented tea with and a quart of sauerkraut to begin their own adventure in fermenting. Christmas Cookie Exchange Feeling strapped for time but need to get some Christmas baking done? Join us for this fun day where you simply bake a double batch of your favorite cookie, share with other participants, and go home with new recipes and a variety of finished cookies! We will provide the basic ingredients (AP flour, butter, eggs, baking soda/ powder, white and brown sugar). You bring your recipe and any special ingredients or equipment. Everyone will exchange cookies and recipes at the end of the day and you will go home with cookies for Christmas! Participants should also bring a container to take the fresh cookies home. Pawsitively Obedient Want a well-behaved dog? Want to know how to train your dog pawsitively? Learn the basics of obedience training in this class. Pawsitively Puppy

Increase your puppy’s confidence, respect, trust, and interaction skills pawsitively. In this class for you and any puppy 6 months and younger, learn the basics of puppy behavior and simple obedience. Each session will be divided into five segments: 1) Puppy 101; 2) behavior issues including mouthing, biting, and chewing; 3) obedience instruction such as focus, sit, and down; 4) a controlled confidence activity, such as tunnel play or hoops; 5) playtime for positive interaction with other dogs and people. The Art of Sourdough

Yeast is the soul of bread. Capturing wild yeast cultures and creating artisan loaves takes a little time and planning, but you can learn how to make a beautiful crusty loaf of bread with four simple ingredients - flour, water, salt and air. Baking your own bread saves money and is a much healthier alternative to purchased breads with incredible amounts of sodium. Even if you have never baked bread before, you will be able to create a kneadless loaf of bread in your own kitchen. Plus you will learn a lot about bread in general and the German from Russia practice of Ewiger Saatz or Everlasting Yeast. FREQUENTLY ASKED QUESTIONS Will I receive a confirmation? If you register yourself online, you will receive an email confirmation within 24 hours. If you register by mail or call in, you will receive confirmation after we process your registration. Please review your confirmation, which will detail location, special supplies or material fees. What if I cannot attend a course as planned? If you need to withdraw or change your registration in a class, you must call our registration staff at (701) 224-5600 or (877) 846-9387 at least five (5) business days before the class starts. You will receive a refund according to the refund policy of that class and through the same method in which the class was paid. There are no refunds or transfers allowed if you notify us fewer than five days before the class starts. What is the refund/drop policy? Refunds granted at the participants’ request will incur a $20 processing fee per class to be deducted from the amount refunded. All refunds are made by mail unless paid with a credit card; in which case the card is credited. Please allow four weeks to process refunds. If cancellation is less than five (5) business day prior to the first session no refund is available. Full refunds are guaranteed if BSC Continuing Education and TrainND cancels a course. Can a class be cancelled because of low enrollment? If we have to cancel a class due to low enrollment, we will notify you as soon as possible before the class is scheduled to begin. You will receive a full refund of your tuition or transfer to another course of your choice, space permitting. How do I know if a course is cancelled? We are part of the North Dakota University System, so many of the terms used on the registration site refer to “student.” This term refers to anyone participating in an Enrichment class. Sue Balcom Sue Balcom, originally from Gackle, is a veteran Enrichment instructor with a wealth of skills. From baking sourdough bread for local farmer’s markets to knitting, crocheting and sewing, to authoring three books, she can do it all! Sue is a Bismarck State College alumni who currently works in communications and marketing for Charity Lutheran Church in Bismarck. She has taught classes for Continuing Education for several years, and is the skill set behind the German Dough Certificate Classes, which include Kase Knoephla (Cheese Buttons) and Strudel, which are both being offered this fall.
