Winner of the Ramen Champion Tasting Competition 2015, Tonkotsu Ikkyu brings something new to the table. Their special tonkotsu ramen now comes in White ($15.80), Red (spicy, $16.80), Green (spinach, $16.80) and Black (black garlic oil, $16.80). All are topped with cha shu (pork collar slices cooked sous vide style), black fungus, soft-boiled egg and spring onions. We recommend the Black, which features a satisfying smoky and earthy flavour. A steamy affair

Yes, you can have a steamboat meal at a coffeeshop for $20 a person but dining in this heat? We would rather work up a sweat at the air-conditioned Parkway Mini Steamboat restaurant over their addictive tom yum soup base (choose chicken as the other soup base or opt for both). Mull over 100 ingredients on their a la carte menu including the really fresh pork balls ($8), fish glue ($5), Kurobuta pork belly ($10) and live prawns ($10). The homemade sauces (including a kick-ass chilli) add to the lipsmacking experience. Whether you call it a popsicle (U.S.), ice lolly (U.K.), paleta (Latin America) or even freezer pop, the humble frozen liquid on a stick is recognisable around the world. While juice and fruits are the usual fillings, we explored options like vegetables and yoghurt to jazz things up—and the results were as good as professional. Read on for tips when making your own.

TomatoEs Technically a fruit, tomatoes are a sweet, healthy alternative to fructose-heavy fruit. Be sure to get very, very ripe tomatoes for this, and cut them into thin slices for a better texture. A basil-scented lemonade provided the base liquid for this adventurous combo.

Gin & tonic Go ahead, be naughty. Mix a little Hendricks gin, tonic water and lime juice together, and pour into popsicle molds filled with slices of cucumber. Gin (or any alcohols) don’t freeze well, so bear in mind these pops will melt quicker than usual. Substitute gin with straight up tonic water to go alcohol-free.

Strawberry & Banana A natural thickener, banana adds creaminess to popsicles. In this pureed banana and chunky strawberry combo, pineapple or orange juice is perfect as a sweetener and lightens the texture.


Mini ‘watermelon’ slices

raspberry & Yoghurt Use natural full-cream yoghurt as is, but thin out Greek yoghurt with a little milk to make it pliable. If pairing with tart fruit like raspberries, mix honey to taste into the yoghurt. Smash up the raspberries (or use raspberry jam) instead of dropping it in whole—otherwise the rock-hard frozen berry won’t be pleasant to bite into.

We couldn’t resist the idea of these Instagramable summer treats—made with jelly but looking like a slice of fruit!

+ 10 large limes + one packet of red Jello (or agar-agar)

chilli powder $2.50/250g

* Preparing the limes is the trickiest part. Get the largest you can find. Cut the limes in half, juice them for other use (like popsicles!), and then carefully scrape out the lime membranes. Don’t be too rough or scrape too deep, as the pith is bitter and will transfer its flavour to the jelly. We used scissors and a paring knife to get the lime halves ready. * Place the lime ‘cups’ standing upright—if you have several muffin pans, these are easier to use than lining the limes face up together on a flat surface. * Prepare jelly according to instructions. We couldn’t find watermelon flavour, so we used cherry Jello, which gives a nice deep red colour. Pour jelly into the lime ‘cups’ as neatly as you can, filling all the way to the top. Be prepared for some spillage or leaky limes. Place into fridge and chill at least four hours. * When ready, cut each lime ‘cup’ into two or three slices with the sharpest knife you have. Slice very carefully to keep the jelly from ‘bleeding’ over the rinds.

mango & Chilli Use a sprinkle of cayenne and very fine chilli powder for this. Blend fresh mango chunks with the chilli until smooth (add water if need), then add lime juice to the mix to heighten the natural flavours. Reserve some mango cubes for texture if you like.

Kiwi One of the easiest recipes to pull together. Puree fresh fruit, mix in sugar syrup and lime juice to taste, and pop into the freezer. Leave some whole fruit chunks for texture, or add in any other fruit to the mix.

Verdict Pretty and refreshing—an instant hit at the party! The trickiest part is hollowing out the lime without exposing too much of the bitter pith, and ensuring that the lime cups are fully filled with jelly while standing upright. We’d do it again, but might try using a variety of grapefruit and lemon ‘cups’ next time. Most online recipes included vodka but we stuck with water.

Wolfberry The superfood status of this little berry is the howl of town, but there is nothing feral about it. Its Latin name ‘Lycium Barbarum’ may have been confused with the word ‘lycan’, which means wolf. EXTRA: Tomatoes—known in Latin as ‘Solanum Lycopersicum’—is interpreted as wolf peach in certain countries. BONUS: Hot dog The famous sausage in a bun is linked directly to the Germans, famous for their love of the food and the small, long and skinny dog breed: Dachshund. Did you know: Cartoonist Tad Dorgan made famous the doodles of a vendor shouting ‘get your red-hot dachshund sausages’ and drawing the dachshund dog in a bun with the caption ‘get your hot dogs’.

Horseradish Bad neigh-m pronunciation has led to the German name ‘meerrettich’ (sea radish), being desecrated by the English to become ‘mareradish’. Ironically, this plant is poisonous to horses.

Chickpea The pea cries fowl for its name is taken directly from the French pronunciation ‘ciche pease’. It originates from the Latin word ‘Cicer Arietinum’ which actually means small ram, as the pea resembles a ram’s head. Snake beans Slithering vines that produce 35-75cm bean pods have an obvious association with the cold-blooded reptile. EXTRA: Snake beans are a variety of cowpea, which is named for being fodder for cows.

Bird’s eye chilli Tear ducts well up when you chew on this spicy fruit. Its name relates to the small round shape, and not for any special sight powers.

Dragon fruit With a leathery surface and leafy skin representing scales awash in fiery colours, the dragon connotation is commonly derived from various cultures: Chinese ‘Long Zhu Guo’ (dragon pearl fruit), Vietnamese ‘Thanh Long’ (green dragon) and Thai ‘Kaeo Mangkon’ (dragon crystal).

Snake fruit ‘Salacca Zalacca’ is the actual botanical name, but is popularly shortened as ‘salak’ in Malaysia and Indonesia. The Chinese name ‘She Pi Guo’ translates to snakeskin fruit, referring to its scaly and rough skin.
