This eagerly anticipated Makan on BiTES session had our participants rubbing their flour-covered hands in glee. Jamie’s Italian has introduced a Pizza and Prosecco Party event ideal for birthdays, hen parties, and team-building. Our 10 readers got a chance to try it out themselves on a lovely evening in May. The session commenced with welcome glasses of Prosecco, before we found our spots at the worktop table where balls of dough along with all the
implements awaited. Chef Edicar Razak briefed us on the ideal pizza thickness before making a demonstration to get us excited. Our session was made more exciting by the aspect of a Masterchef competition, with the best pizza winning a bottle of Prosecco! Within 90 minutes, we picked our ingredients and got to work rolling and laughing away. Reader Jaime Chan was declared the winner with her careful creation of mushrooms, tomato, ham and beef. We savoured our pizza creations with more glasses of Prosecco before calling it a night.

RE-OPENINGS Previously known as Sky View Kitchen, this 150-seater Chinese restaurant is now named Sky View Pavilion. Executive chef Tang Chi Cheung serves signatures such as the live lobster baked with black bean and crispy rice (market price), which wowed with its SKY VIEW PAVILION fusion touch. Pan-fried sea perch fillet ($15 each) and sautéed beef cubes with black pepper ($30) were familiar and well-executed favourites. #01-04 Singapore Flyer, 30 Raffles Avenue. Tel: 6854 5245 Paulaner Brauhaus is back PAULANER after a two-month renovation with a BRAUHAUS new menu. We couldn’t get enough of the Obazda with Pretzel ($16.80), a Bavarian spiced cheese spread with fried onions on top which complements the fresh chewy pretzel. They also do a mean pork knuckle ($31.90), with its trademark crispy skin and juicy meat marinated with Bavarian spices. Leave some space for desserts, as the apple beignets ($14.90) are the next big hit. Fried apple rings boast a crisp wheat beer batter with a generous shower of cinnamon sugar, topped off by vanilla ice cream and berry for an extra ‘oomph’ of sweet and tartness. #01-01 Millenia Walk, 9 Raffles Boulevard. Tel: 6883 2572 From Ann Siang to the cosy neighbourhood of Frankel, Bird Bird has since stripped away its dive bar façade. Quality fried chicken is the highlight—using Sakura chicken and brining it for 12 hours, the crisp fowl is BIRD BIRD moist and tender. Our favourite of three flavours is the Lebanese ($29), seasoned with za’atar, oregano and thyme. Other decadent items include the Milk Braised Pork ($16) featuring succulent pieces of trotters and bellies braised in sapid milk and sage mix, topped with a honey mustard glazed donut that balances the unctuous meat. Share the Durian Softie Pie ($16), where durian pudding and crunchy candied pecans surround the delicate toasted milk softie that’s lightly covered in gula melaka sauce. 7 Frankel Avenue. Tel: 6694 8270 Take Hyde Out, a new concept by halal-certified Hyde & Co, tempts us with a more focused menu of creative modern Singapore fusion fare. We liked The Bomb ($26.90), which is chye poh and prawn tossed together with an omelette, scattered generously on top of a hand stretched pizza base. Fan of spices, the Gnocchi Mee Rebus ($21.90) is a must-try for its pungent spice and huge heaping of gravy. Finish your meal on a sweet note with their “step” kaya toast ($15.90), pandan ganache that is made from scratch over a toasty yet chewy brioche bread, topped with coconut and gula melaka shavings with Anzac cookie ice cream. 785 North Bridge Road. NEW OPENINGS Cheese mix, fresh milk and tea—that’s the brave new approach of LiHo, a homegrown tea brand that’s taking over over 80 stores of GongCha. While the combination might sound odd, it actually works. The umami-sweet cheese mix, which features gouda, gives the delicate tea a pleasant twist and acts like a creamer. Best enjoyed hot is the Cheese Jing Syuan Tea ($4.10/$5.10), where the cheese froth elevates the aromatic floral notes of the tea. Gokoku Bakery is Singapore’s first ‘Wa’ bakery—the concept means harmony in Japanese expressed through healthy yet delicious ‘pans’ (breads). Made with Japanese ingredients, their ‘pans’ include GOKOKU Mochi Mochi Cheese ($2.20) that BAKERY has a generous serving of diced cheese inside while the bread remains chewy. The Butcher has opened its first retail restaurant concept, aptly named The Butcher’s Kitchen. As one of Singapore’s first gourmet Australian butcheries, they naturally offer a wide range THE BUTCHER'S of meats for retail as well as KITECHEN on the menu. Their sausage platter ($18) was outstanding, with peppery beef chorizo; honey, mint and rosemary lamb; and apple, sage and rosemary pork. Catching the attention of passers-by is the gelato counter at the front, showcasing coconut kaya, chilli crab and chendol ($5.80 per scoop) flavours, which you can also enjoy on a waffle ($14.80), with three scoops of your choice. #02-472 Suntec City Tower 1&2, 3 Temasek Boulevard. Tel: 9616 0111 Old is always gold—and it’s even better with a tinge of modern creativity. Leng Leng Ice Cream is a humble creamery that meshes up grandma favourites with trendy millennial grub. Think Sugee Wafflee ($3.50) with a scoop of Thai milk tea ($3.90). The former is denser than your usual waffle with a hint of almond, and complements any ice cream perfectly. We also appreciate the selection LENG LENG of complimentary old-school ICE CREAM toppings like gem biscuits and crushed peanuts. Alternatively, they also offer fluffy rainbow bread or cones to go with your ice cream. Grilled meat specialist Niku Katsumata has introduced a value A4 Wagyu beef set ($38) for petite diners. The five courses include Japanese pork prosciutto, kimchi and seasoned sprout, Chinese cabbage salad with umami seaweed, a selection of five slices of A4 Wagyu, and Japanese curry with A4 beef to finish. Interestingly, the beef is seared on a low-heat crystal NIKU KATSUMATA plate, which cooks it gently. Chef Tsuyoshi Katsumata also offers a fantastic Tataki Wagyu ($20), topped on Japanese rice—add on sea urchin, ikura or foie gras for $5 extra each. Our favourite is Unagi Meshi ($28.80), grilled for a beautiful tender bite, accompanied by onsen tamago with sweet teriyaki sauce. We felt like we were in grandma’s kitchen as we sampled braised pork belly with beancurd and chives ($16.80), smothered with rich prawn paste gravy. Their assorted lotus paste buns ($5.30) are jazzed up for Instagram, in the shape of hedgehogs, piglets or chicks, filled with smooth sweet lotus filling. Marsiling Crescent is home to the historic Marsiling Tunnels, once used by the Royal British Air Force. These tunnels were used as fuel depots, and were later taken over by the Japanese during World War II. AH KEAT PIG’S ORGAN SOUP AND KWAY CHAP (BLK 211) Located near Woodlands Checkpoint, this stall won us over with its affordable price, variety and delightful taste. One portion of kway chap ($3.50) consisted of an egg, steamed fish cake, large and small intestines and braised pig skin, all of which went well with the herbal soup. The vinegary chilli gave the dish an extra kick. SHI MEI ROAST MEATS (BLK 211) Just next door from Ah Keat’s, Shi Mei rolls out mouthwatering Hong Kong Style roast meats. For $4.50, the roast pork is crispy and juicy while char siew was generously portioned. The rice was flavourful and complemented the dark sauce. Definitely worth the journey. YASSIN KAMPUNG SEAFOOD (BLK 210, #01-01) Previously from the now-defunct Woodlands Centre area, this modern joint serves Vietnamese, traditional Malay and even tze char dishes. I’m still learning the ropes from my dad. One of my first tasks was managing our online presence as well as forming partnerships with online food delivery services. My dad always says he is in charge of the kitchen, while I do everything else. I don’t like cooking, but dad has assured my younger brother (he just finished NS and will be going to university) and I that the necessary procedures have been taken so that succession will be easy.
How is it like working for the family business as compared to the corporate world? I did three years in a Dutch creative studio, where I dabbled in social media, photography and content creation. I wouldn’t say I have experience working in the corporate world, as the studio was small and my colleagues were like family. There are pros and cons to working with your blood family. It’s nice that we all have a common goal and everyone is in it together, but there’s no clear line between work and life. Even when we are at home, we are working. During family dinners my dad is constantly talking about ways to improve the business. You mentioned you were initially resistant to joining the food industry. Why? I’ve always done design and prefer creating visuals. In fact, I’m a bit of an addict. There was a period when we were doing our taxes; I felt like I was going to malfunction! (laughs) Plus, when I was 15 years old, I used to help out at our Jumbo Coffee Shop stall after school. I thought that F&B life was horrible—hot, long hours, and constantly smelling like food. I’ve since grown to love it. What are your goals for Bismillah Biryani? Acquiring more shop fronts is one of our focus areas. We have a huge customer base, and while we may have four stores—Jalan Besar, Dunlop, Simei and OneNorth—we hope to be even more accessible to our loyal patrons. How is Bismillah Biryani different from the rest?
We specialise in North Indian dum biryani. Everything is cooked together and it’s served with a side of raita. Singaporeans are more exposed to Malay biryani, which is served with a side of curry. This is why some locals feel that our curry can be a bit dry, but that’s only because they are used to dousing the curry over the rice. Our biryani is prepared in a combi oven to ensure standardisation. (Psst...we’ve tried the biryani first hand and the rice was fluffy, moist and bursting with flavour, thanks to succulent lamb chunks.) How is your relationship with your dad? While I was close to my dad, I grew up not knowing him very well as he was always busy with work. Now that we work together, our relationship has definitely grown. He is extremely calm and patient when it comes to teaching me. What do you do during the weekends? Working in a family business is a 24/7 affair. So on the weekends, I try to have a balance. I either spend time with my family or catch up with friends. In between that, I read the billion e-mails my dad sends me. What was the last movie you watched? Guardians of the Galaxy Vol. 2. I love Groot! If you were described as food, what dish you would be? I’m feisty, but ironically, I can’t take spice. Maybe spaghetti because I love pasta (ponders). I guess I will be a fusion dish, because of my family background— dad’s Pakistani and mom’s Chinese. We are a mix of everything.

Former computer hardware businessman and journalist Arif Salahuddin was motivated to open his own biryani stall after being disappointed with the variants served in Singapore. He took over a naan stall in Jumbo Coffee Shop along Commonwealth Road to sell his biryani.
Arif moved the stall to a full service restaurant at 50 Dunlop Street and named it Bismillah Biryani.
Bismillah Biryani opened a second fullservice restaurant at One-North Nexus, and a food court outlet at NTUC Simei under the name Biryani HQ to remain accessible to his customer base. This was also the year they were awarded the Michelin Bib Gourmand. Daughter Zara joined the business to help her parents.
Islandwide expansion is in their books. To help ensure quality supply of meat going forward, they have put in place plans for Bismillah Halal: The Meat Shop, a butchery to buy and sell the meats used in their restaurants.
