Instead Asia’s best chef will be bankrolling Gaa, a restaurant helmed by his talented former sous chef, Garima Arora, which aims to make the most of ingredients found along the strip of land from Northeastern India to Bangkok. Nothing has been confirmed yet for smartphone users, but it looks like AIS Playbox owners will soon be able to stream Netflix shows, whether it’s Orange is the New Black, Stranger Things or Black Mirror, at 4K Ultra-HD resolution.

Dismissed, mind you, not charged with any crime. While it’s inactive posts all round for their superiors.

Sathorn Unique, the 47-story unfinished building on Charoenkrung Road dubbed “Ghost Tower” since its abandonment during the Tom Yam Kung economic crisis of 1997, has long been a drawcard for adventurous travelers. Twenty years later, Pansit Torsuwan, 46, the low-profile owner of the building, has finally come out to put a stop to trespassing on the property. With Museum Siam this week unveiling an exhibition dedicated to the financial crisis, Pansit defends the tower from accusations it’s a monument to the country’s failure. What actually happened back in 1997? We planned to build a mixed-use property with 600 units and jewelry shops downstairs. The tower was 80-90 percent finished, but we suffered due to the mismanagement of previous governments. We actually weren’t a non-performing loan [NPL] as we’d sold more than 500 units already and had nearly finished construction. We decided to sell The State Tower as we were sure that we could continue managing this building. Unfortunately the trust fund which issued our loan closed down due to the financial crisis, meaning we were lumped in with a number of NPLs. So I oppose anyone who calls this building an “icon of Thailand’s failure” or “the country’s burden.” That’s untrue. If we were treated as an asset and given the green light to continue construction, the building would have been finished. It would today be one of the greatest towers in Bangkok. So why has there been no development since? There have been many lawsuits barring us from doing that. But the main

reason was my father’s intentions— he didn’t want to develop it anymore. Times have changed. Twenty years ago we were selling it at B20,000 per sq meter. Now cost would be much higher to finish the project. We would need at least B1.5 billion to finish the tower, but according to the original contracts, we would only get B600 million from our old clients. For two decades, clients haven’t got anything back from us. So we plan to finally sell it and pay our debts, as well as pay back all our clients. What are you doing now? I’m still running a real estate company, Rangsan and Pansit Architecture with my father. We develop small-scale residential projects both inside and outside Bangkok. I’m also an architecture lecturer at Sri Prathum University. How do you feel about people viewing Sathorn Unique as an adventure destination? I must insist that it’s private property and you can’t get in without permission. But I understand how people feel. There are so many abandoned buildings in Bangkok, but why are

people so interested in this one? That’s because this building is unique with a stunning location and story of its own. Lots of people have wanted to use the tower as a movie location but I have refused them all. I even turned down a Hollywood movie— Superman, I think—because if people recognized it, the tower would become an even bigger attraction. If someone proposed a documentary that I thought would benefit others, then I might say yes. How do you see Thailand’s economy 20 years after the crisis? The crisis really weakened small businesses and SMEs, and that’s still being felt today. The system in its wake has destroyed middle-class power. Now we have a society where elites monopolize every market segment. There is only the cream of the crop and then the grassroots, no middle class. The economy is still ill. The bubble may not burst like last time, but it’s like a cancer that will slowly kill us. Interview by Monruedee Jansuttipan

Secret Escapes Break away from the crowds and head to one of these amazing isolated beaches this summer. By Monruedee Jansuttipan

Located south of Pattaya, Sattahip district is full of natural charms which the built-up Pattaya just can’t offer. Uncrowded beaches dot the coast from Jomtien district down to the end tip of “Ao Tua Gor Bay,” the u-shaped bay running from Prachuap Khiri Khan down to Chonburi province. Thanks to much of the region being under the care of the Royal Thai Navy, beaches like Hat Nang Rum and Hat Nam Sai have remained free from development, with the latter only recently opening to the public. True to its name (which means clear water), beachgoers will discover a flat beach stretching about one kilometer towards the sea, while small reefs on the southern end are perfect for snorkeling (B200 per person for a 30-minute diving trip with navy staff). Just off the coast, you’ll also discover the uninhabited islands of Koh Samae Sarn and Koh Kham, which have the kind of perfect white sands and crystal waters usually associated with much further south. The navy only allows day trips to these islands which charge an entrance fee of B200 for Koh Kham (best for snorkeling) and B300 (B600 for foreigners) for Koh Samae Sarn. At the navy's inland Sea Turtle Conservation Center (038-431-477, www.fb.com/SeaTurtleSattahip) you can feed turtles and, if you’re lucky, release young turtles into the sea.

This Eastern province might be famous for its charming old town, but the coastal area along which runs the beautiful Chalerm Burapa Chollathit seaside road is just as appealing. The newly discovered slab of arkosic sandstone at Kung Krabane Wildlife Reserve and Khung Kraben Bay Royal Development Study Center is best visited from Feb-Jun, when morning and late-afternoon ebb tides fully expose the vast terrace of pink rock. Getting there is no easy feat: you’ll have to trek for one-and-a-half hours along a rocky coast. Nearby, you’ll also find Khung Kraben Bay Royal Development Study Center (039-369-216-8), a free aquarium initiated by the late King Bhumibol that exhibits local marine species. In the same location, take the wooden walkway nature trail through a dense mangrove forest which recently gained social media attention from travel bloggers. A few minutes’ drive further, the Sea Farming Demonstration Unit is home to larger marine species such as seabass, sharks and turtles. If you want to swim, Khung Wiman Beach is uncrowded and occupied by plenty of seafood restaurants including Lighthouse Bar and Grill, the showpiece eatery of Nova Scotia-themed resort Peggy’s Cove (039-460-345, peggyscoveresort.com). Local Chanthaburi dishes include sen chan pad puu (stirfried noodle with crab meat). The nearby Noen Nang Phaya viewpoint has also become popular with couples who attach padlocks to the fence as a sign of their love.

Where to stay: The only accommodation at Hat Nam Sai is the new collection of navy-run rainbow-colored bungalows, which cost B1,400 on weekdays and B2,000 on weekends. If you’re after a resort, check out U Pattaya (033-046-100, www.uhotelsresorts. com/upattaya), which sits on Bangsaray Beach, just north of Sattahip’s navy beaches. Room rates start from B3,824. The newly opened Costa Village Bangsaray (092-019-9555, www.costavillagebangsaray.com) is a Santorini-themed hotel around the same location at B2,500 per night.

Where to stay: Peggy’s Cove Resort imitates a Canadian fisherman’s village, featuring brightly painted weatherboard cottages, rickety driftwood bridges and a lobby styled after the chapel at the real Peggy’s Cove in Nova Scotia. Room rates start from B3,313 for the deluxe category.

Those seeking an isolated, peaceful island should check out the limestone karsts, coral reefs and perfect beaches of Koh Mook. Though easily reached from Trang Province with a B300, 30-minute boat ride, the island remains less well-known than its main attraction, Tham Morakot, or Emerald Cave. Situated northwest of Hat Chao Mai National Park, Trang’s third largest island takes its name from a regional variety of pearl which used to be abundant in the area. We recommend you take a tour with a local operator such as Koh Mook Chao Lay Trang (085-454-4979) or A Koh Mook (080-647-0905 , 089-4683602, www.akohmook.com), which both offer various walking and cycling routes around Koh Mook village before jumping on a boat to learn about the local fishing industry, collect sea crabs and fish for squid. If you're lucky, you’ll get to see sea turtles and dugongs as the area is rich in seagrass—the main food for both species. The highlight, of course, is still swimming through the 80-meter long Emerald Sea Cave. Also head to Hat Farang for sunset while sipping a beer from Ko Yao, an elevated restaurant on the cliff on the corner of the beach. At Hat Hua Laem, you’ll find a spear-head shaped beach that’s perfect for sunbathing, as well as the stunning beach bar of Sivalai Resort (see below). Where to stay: Koh Mook Sivalai Beach Resort (089-723-3355; 088-765-0999, www.fb.com/komooksivalai) offers villas from B5,500, as well as the newly built beachfront family villa at B8,500. Check-in somewhere cheaper at Koh Mook Resort (075-203-303, www.kohmookresort.com), which costs B1,800 for a small villa.

cover story Natai Beach, Phang Nga Though many high-end hotel brands try to position this area as Phuket, Natai Beach is actually in Phang Nga province—but still just a 20-minute drive from Phuket International Airport, which is actually closer than driving into Phuket Town. It also remains super-sleepy despite new luxury openings. There’s another side to Patong that feels like a different world from the main strip’s concrete jungle. Palazzo Pavone Honorary Professor Prayad Pongdam, the late Thai National Artist in printmaking, created this space nearly three years ago as his art gallery and workshop with an attached resort. Sadly, he passed away only six months after the opening, leaving the space to operate as a museum for some 150 cherished art pieces. Mediums vary from prints and oil paintings to sculptures and carvings. They also have a cafe and shop selling souvenirs of his iconic printmaking pieces. Iconic Style Chiang Mai's Maiiam Contemporary Art Museum (081-386-6899, www.maiiam.com) has launched a stunning new fashion-and-art exhibition that showcases the wardrobe of late Thai style icon Patsri Bunnag––the wife of Jean-Michel Beurdeley and mother of Eric Bunnag, who together founded the museum. Patsri was one of Thailand’s first models, a prominent society figure and, together with her husband, amassed one of the world’s most outstanding collections of Thai artwork. The new exhibition, called Mon Art Du Style (my art of style), places garments from Patsri’s stunning wardrobe—including designs by Lanvin, Issey Miyake, Yohji Yamamoto, Yves Saint Laurent, Christian Dior, Nakara, Tirapan and Pichita—alongside matching pieces from the museum’s art collection. Among the featured art pieces are works by Montien Boonma, Pinnaree Sanphitak, Manit Sriwatnijphum and Navin Lawalchaikul. The exhibition runs through Jun 25.

Chowing down on the delicious pork belly bao, there’s no doubting Little Bao’s reputation: the succulent braised pork is slathered in hoisin ketchup, sprinkled with shiso leek salad and sesame dressing, and jammed between a soft, fluffy white bun. The single-page menu reads like a greatest hits of Thai street food, leaping from Isaan sausage to kaprao to various noodle dishes, with some remixes tacked on, too. The most obvious fusion nods are the burgers, which take familiar Thai dishes and slap them between two pieces of a charcoal-toasted Conkey’s brioche bun. Of the three varieties, the Khao Soy Cowboy (pulled pork in Northern-style curry) is the undoubted highlight with its tangy curry complemented by the satisfying crunch of crispy egg noodles. Sesame and Lime Wagyu Beef Upstairs at Mikkeller Craft beer house Mikkeller has opened up the second floor of its Ekkamai home to fine dining. Korean-born chef Dan Bark helms the kitchen—he previously worked as a sous chef at Chicago’s Grace, a bona-fide three-Michelin-star restaurant currently touted as one of the most expensive in America. Bark describes his food as progressive American, meaning a mix-and-match approach to techniques and ingredients unbound by geography. James Bradbury Australian native James Bradbury has cooked for 20 years across the globe. Trained in classical French cooking, he brings his Australian roots and Melbourne’s “world-class cafe culture” to a new brunch menu now available at THE COFFEE CLUB. Here, he tells us about the rise of fusion, his new Bangkok Eggs Benedict, and what it takes to keep brunch moving forward.

Upstairs at Mikkeller

You’re an Australian chef, Frenchtrained, living in Asia. How does that influence what you like to cook? I use my classical French training and experience to underpin my recipes; but in today’s environment you need to be able to adapt to change to customer’s needs. The food l cook needs to be properly prepared, modern, simple, and taste delicious—and it needs to look great on a plate. What was the inspiration behind the three dishes you created for Coffee Club? I decided to take our very popular eggs Benedict and infuse the dish with a Thai taste. But first, the basics. We

use classical techniques, with modern fresh imported ingredients. Our salmon, spinach, mushrooms and butter are all imported, for example. We make our Hollandaise sauce fresh daily, in-store. Now for that Thai touch, we infuse it with roasted chili paste. The result is slightly sweet, spicy and creamy due the imported butter and eggs. It’s going to be our signature dish for sure. How do you feel about the term “fusion”? Fusion is the evolution of food, however it should remain underpinned by classical cooking techniques. Without this knowledge it becomes hard to succeed, it becomes confusing. I still believe in the heritage of cooking and authentic recipes, however l do incorporate local influences into my food, hence the Bangkok Benedict.

What do you think is next for brunch in Bangkok? Brunch in Bangkok will follow the trends of Australia and the UK where the standards are very high: great quality coffee, simple dishes, egg-focused, great tastes, with affordable prices. Bangkok will see even more cafes open in 2017 and 2018, and it will be interesting to see how many last. The surviving ones will be run by chefs who are classically trained and know how to cook and evolve in the global cafe scene.

This Mar 14-16, Tables Grill welcomes French chef Bruno Menard of the three-Michelin-starred L’Osier restaurant in Tokyo. Khua Kling + Pak Sod The crowded and boisterous premises, and occasionally surly service, are a fine match for the unapologetically fiery food at this Southern Thai institution. Khao Jao Khao Jao is a wonderful place, not just for the food, which is delicious, but also for the family-style service, quirky decor and sleek architecture—all this on a dime, in the midst of hip n’ hi-so Thonglor. Expect all the Southern classics—a wonderfully aromatic kua kling (herbal, stir-fried minced pork, B800) and gaeng lueang (spicy soup with shrimp and turmeric, B80) with velvety bamboo shoots—both are the real deal. Phuket Town For something intimate and cozy, try the Sino-Portuguese charms of Phuket Town. Authentic Southern dishes, like pad sataw goong (stirfried stink with shrimps, B180), don’t hold back on the spice or flavor while the kanom jeen nam ya poo (rice noodles with steamed crab, B220) has a rich, mellow soup that’s packed with big chunks

of tender crab meat. Definitely end your meal with the traditional dessert oh-aew (jelly with red bean and red syrup topping, B55), which is hard to find in Bangkok. The Local Aiming to preserve Thailand’s rich culinary heritage, this labor of love offers hard-to-find specialties that are noticeably different from most standard Bangkok fare. Courtesy of the owner’s Southern roots, they’re experts at the likes of moo horng (braised pork belly, B280), on top of the recipes for dishes like gang run juan (beef in spicy herbal soup, B240) that have been handed down from generation to generation.

Baan Ice The glamorous Thonglor location belies an approach to Southern Thai dishes which is down-to-earth and traditional. Owner Supaksorn Jongsiri draws his recipes from his grandma’s cookbook and, though less fiery than nearby Khua Kling + Pak Sod (see above), still produces powerful dishes. Classics like the sator pad kapi goong (stir-fried prawns with sataw beans, B230) and gaeng luaeng pla sam lee (spicy sour soup with black-banded trevally and fermented young bamboo shoot, B180) come in a bistro setting that’s polished but relaxed. Janhom Chef Poonsri Sarikarn, aka Auntie Baew, hails from Surat Thani and her reputation reaches all the way to Chiang Mai, where she has another branch. Auntie Baew refuses to season her dishes with sugar to accommodate us wimpy Bangkokians. Order her gaeng luang with a huge crab (priced by weight), but make sure you have plenty of rice at hand because this soup is all about saltiness and spiciness. Founded by the people behind top Bangkok restaurants Naj, The Local, and Crab and Claw, this space out in Central Eastville largely lives up to the high standards set by its siblings. While the decor—characterized by a shining wall of silver patterns taken from traditional metal water bowls—can’t quite wash away the restaurant’s suburban mall surroundings, the menu of traditional Thai comfort food (much drawn from the Eastern and Southern regions of Thailand) certainly doesn’t compromise on quality. Don’t underestimate these good-looking dishes in nostalgic enamel plates and bowls—they’re the real deal when it comes to spiciness. The gaeng kua pla

Taking over a stately old home on Sathorn’s tiny Soi Goethe, this Italian restaurant has well-heeled crowds going gaga for its low-key vibe, wine list that’s arguably the best in town, and polished yet rustic dishes. Compared to Il Fumo or Il Bolognese, the neighborhood’s other w e l co m i n g l y r e s i d e n t i a l I t a l i a n restaurants, La Casa Nostra’s friendly prices make more sense for return visits that aren’t business or date related. For starters, the cellar (a standalone building big enough for a 12-person dining table) is one of the best in town. That’s thanks to the co-ownership of Global Vineyards, a wine company that supply a who’s who of the city’s best restaurants (from Gaggan to Robuchon). Here, they claim to add never more than B500 markup to each bottle, meaning you can cut your drink bill by up to a third. The labels come mostly from Italy and France, with great finds to be found all along the price spectrum. A device known as a Coravin lets you try upscale wines without them having to pop the bottle. On our last

kapong (Southern-style yellow curry of seabass with coconut shoot, B250) performs a slow burn as it balances a complex profile of Thai spices, while the Rama V-era gaeng ranjuan (shrimp paste soup, B200 -220) is one of the best versions we’ve tried in ages thanks to a tom-saeb-like piquant character. Equally strong are the crab curry (B380) and stewed pork belly (B290)—richly intense and aromatic—as well as the pungent nua poo pad koey (stir-fried crab meat with shrimp paste, B380). It’s a shame that the pla tapian tom kem (B380) doesn’t quite reach such heights. The giant-sized portion of java barb is sure tender enough thanks to 15 hours spent simmering so you can chew the bones, but its broth lacks the simplicity of a good tom kem (sweet-and-salty soy sauce), tasting more like Chinese five-spice soup. The deepfried chunks of seabass with tamarind sauce (B380) are also a tough struggle, while their sweet sauce lacks the sourness of tamarind. Despite a hectic weekend dining room, the kitchen still manages to roll out its dishes in crack timing, and the quick turnaround of tables speaks of a restaurant that’s achieved the local seal of approval. We only wish it were a standalone with a less fussy vibe.

visit, though, we went for a bottle of 2015 Nals Margreid Pinot Bianco from Alto Adige, Italy (one of the “wines of the week”), which was a steal at B1,300/ bottle, bursting with freshness and zip. The food takes a comforting route with cold cuts, pastas and grilled meats joined by subtly flavored specialties that give nods to chef Nino Scognamil lo’s hometown of Sicily. The starter of paprika-spiced roasted octopus (B490), is tender, lightly charred and served atop a potato veloute with just a hint of white truffle. The yellow fin tuna tartar (B390), too, comes in a subdued olive oil and raisin dressing that lets plump capers and soft eggplant carry the flavor. Heading into carb territory, we’d advise against the mini pizza calzone (B160/2 pieces), whose perfectly deep-fried c a s i n g c a n ’ t m a ke u p fo r a d u l l combination of mozzarella, smoked ham and ricotta, but the fresh ricotta and spinach gnocchi (B580) is a must-try, coming with a light yet flavorful tomato sauce inspired by the chef’s grandma’s co o k i n g . Ex p e r t l y s ea s o n e d , t h e Australian lamb chops (B890) are everything you want in grilled meat, served with sides of sweet potato mash and daubs of yogurt and salsa verde that don’t detract from the main attraction. In fact, it’s hard to find much fault with anything we’ve tried here. If there’s any issue with the food it’s that Appia mines similarly rustic territory, and does so with just that bit more aplomb. With wine so good and a setting that combines both cozy outdoor terrace (complete with petanque court) and darkened corners, La Casa Nostra is the real deal.

Freakshakes and other trending Aussie brunch dishes land on Sukhumvit Soi 39. The buzz: Australia’s laidback coffee culture has gained a following here in the form of recent openings like Toby’s, Wanderlust and Kaizen. The latest player to join the fray is none other than Patissez, the cafe chain from Canberra that claims to be the original creator of the “freakshake” (those trending milkshakes piled high with cookies, cream and other dessert toppings), which comes to Bangkok after opening branches in Malaysia and Singapore. The decor: This wood-dominated space bears universal cafe hallmarks like dangling lamps, neon signs and ferns. But it all works nicely as a place to chill thanks to sunlight that streams through the floor-to-ceiling windows. An open beverage counter also lets you watch on as staff painstakingly assemble your shake.

The food: The Australian-style cafe food comes with the occasional twist, meaning dishes like smashed avocado (B380) with ricotta on house-made sourdough and roast beetroot puree on the side. The cutely-named Get Pig’d (B320) sees toast topped with a complex combination of pulled pork, bacon jam, spinach, sliced apple and hollandaise sauce, while the Freak Burger (B490) comes stacked high with two Aussie beef patties, double cheese, bacon, lettuce, tomato, onion, bacon jam and barbecue sauce in between a brioche bun. (A plain old cheese burger is B390.) You’ll also find some salads and pastas, as well as fluffy house-made donuts (B39) with fillings like nutella, vanilla and strawberry at the other end of the health spectrum.

The drinks: The photogenic shakes (all B230) come in five different varieties: nutella pretzel, mint chocolate, banana caramel, Thai tea white chocolate (exclusive to Bangkok), and watermelon and berries. Healthier options include freshly-squeezed juices (B160)—try Earth (beetroot, carrot, celery, orange and mint). Coffee starts from B80 for espresso, tea is B140 and chocolate drinks start from B120. Why you should care: While Patissez markets its freakshakes as the star attraction, the much more down-to-earth Aussie cafe food here is definitely worth a try. Running through Apr 3, Behind Tin Walls is a photography exhibition by Visarut Sankhum that documents the lives of Bangkok's migrant workers who live in temporary tin-wall structures as they build the city's booming luxury condo industry. Here, we speak to Visarut about the project. How did this project begin? I regularly walked past this one campsite near Asoke and always wondered what it was like inside, so one day I decided to walk in and explore it. It was a clustered mess but beautiful at the same time. I started going back regularly and it soon became my hangout spot. I realized not many people know what it's like inside these camps, so I decided to photograph it. What is it like inside? There are many small “rooms” made from corrugated metal, about 2x2m each, where about six people cram in. Some friends, some families. There’s loads of trash everywhere, even floating around in the toilets. But I can’t really say I was surprised. This is not permanent. Once they finish building the condominium, they’ll move to a similar camp elsewhere and start the next construction. What are your thoughts on the migration situation in Thailand? It’s tricky. On one hand, there should be better organization and protection for migrants, like health

care, because these people are our work force. On the other hand, many of them are in the country illegally. They might have to accept that conditions here will not be good for them if they remain illegal. Is this a reflection of the disparity here in Thailand? I wasn’t focusing so much on the gap, but rather the extremity of the low labor wages here. While the city runs on commercialism, building more and more condos for maximum profit, here live the people building it, subsisting on the lowest wages. What message do you hope to convey through this exhibition? I just want to share with everyone that these are the people who create our homes. This is how they live. This is the contrast. Whatever you want to take from that is up to you.
