A checklist of BK Magazine’s most important discoveries this week That there’s a new restaurant dedicated to edible insects Called Insects in the Backyard, the restaurant in Thonburi’s soonto-launch art complex, Chang Chui, has been conceptualized by the team behind the Old Town’s beloved Seven Spoons. So, rest assured the food will be a little different to the fried insects we’re familiar with on the street. Chef Thitiwat Tantragarn will serve the likes of cricket pasta with pesto and chorizo, red ant and peppercorn-marinated tomahawk steak and Marou chocolate-covered crickets. Opening in May. That Phoenix is almost definitely coming to Bangkok Indie gig organizers Have You Heard? are at it again. According to their latest teaser poster posted to Facebook, we’ve got good reason to believe the suave French rockers are heading our way in the not-too-distant future. The four-piece are known for tracks like “If I Ever Feel Better” and “Lisztomania,” which blend elements of synth-pop and new wave, as well as frequent collaborations with filmmaker Sofia Coppola (who’s married to frontman Thomas Mars). That one of our fresh food markets just ranked No. 4 in the world Remember when CNN named Bangkok the best street food city in the world a few weeks back? That worked out well. Turns out we’re also home to one of the world’s best fresh markets, according to the American broadcaster at least. Bangkok’s Or Tor Kor has been named up there with Tokyo’s Tsukiji Fish Market, New York’s Union Square Farmer’s Market, London’s Borough Market and Barcelona’s Boqueira Market, which placed #1. Now, please don’t take our fresh markets away, too. That a monorail could be up and running in our lifetime Construction contracts for two new electric lines connecting Bangkok with neighboring provinces could be signed as early as next month, according to Bangkok Post. They are the 30.4km Yellow Line, said to be worth B52 billion, which will stretch from Ladprao to Samrong in Samut Prakan, and the 34.5km Pink Line at B53.5 billion, which will run from Nonthaburi to Bangkok’s Min Buri district. Following cabinet approval and the subsequent signing of contracts, the Mass Rapid Transit Authority is confident construction would be complete in little over three years.

upfront HOT OR NOT

Hot: Eco-tourism

Not: Energy

The government’s plan to build a coal-fired power plant in Krabi has again been put on the backburner after Dear Leader scrapped the latest environmental health impact assessment. He’s ordered a new one with greater involvement from local communities, many of whom oppose the plant. That should mean eco-destinations like Koh Klang (see page 12) remain as pristine as ever, for the next couple of years at least.

CITY NEWS

Hot: Tiki cocktails

Not: Tea cocktails

Back a few years, Polynesian-style cocktails looked primed to take over this city. Now that could finally be coming true. Rum-heavy concoctions and poke bowls dominate at the Hawaiian-themed Pakololo (see page 24), while the upcoming Tropic City comes from reliable hands Philip Stefanescu and Sebastian De La Cruz (who introduced tiki cocktails to UNCLE back in the day). Trend-setter Mad Moa even has a new list of tropical drinks. That said, we’re happy for some cocktail trends to stay firmly where they belong—back in 2014.

Hot: Shot in Thailand Not: Shot by Thais The Ministry of Tourism’s new incentives for foreign movie producers are reaping benefits. Since January, 239 foreign films have been shot in Thailand bringing in some B900 million of revenue. That’s thanks in part to generous cash rebates for big spenders. Meanwhile, five of Thailand’s most illustrious directors, including the Palme d’Or-winning Apichatpong Weerasethakul, have had to take to Indiegogo.com to crowdfund their latest project, dubbed Ten Years in Thailand. Where’s the love?

Hot: Hotel Buffets

Not: Eggs Benedict

That’s it. We’ve had one proper brunch in a standalone restaurant too many. And we can’t even stand the smell of Hollandaise. Give us back Bangkok’s definition of brunch pre-Roast: oysters, free-flow Champagne, unsustainably-farmed foie gras. You in? See page 5 for our round-up of the top spots.

THAT’S WHAT SHE SAID

4

Word that Bangkok would ban street food caused a global outcry in just about every media outlet under the sun. The TAT was quick to deny the BMA’s statement, soon followed by the BMA back-pedaling, too. Here’s where things stand. There has been fevered conjecture over the past weeks regarding the situation of Thailand’s street food. The panic started on Apr 18 when daily newspaper The Nation released a front page article titled “BMA bans all street food across Bangkok this year” with a standfirst reading “Despite international acclaim, Yaowarat and Khao San Road next targets of clean-up.” It quoted Wanlop Suwandee, chief adviser to the Bangkok governor: “The BMA is now working to get rid of the street vendors from all 50 districts of Bangkok and return the pavements to the pedestrians. Yaowarat and Khao San Road will be our next goal in clearing out illegal vendors,” Wanlop said. “No exceptions” The news quickly drew an u p ro a r o n t h e i n t e r n e t f ro m both locals and foreigners who expressed their disappointment and pointed out the contradiction in forcing a blanket ban shortly after Thailand was dubbed the best street food city in the world by CNN just four days earlier. The news was quickly picked up and shared by foreign media, including The Guardian, The Telegraph and Conde Nest Traveller , in turn starting a global conversation that was largely negative. However, in an interview with Voice TV on Apr 19, chief adviser Wa n l o p ref u te d T h e N at i o n ’ s claims. He insisted Khaosan and

Yaowarat will not be cleared of street food. He clarified that the BMA will be implementing stricter rules to manage the standards of food on these roads, referring to them as central spots for tourism that need to be standardized. This includes a control on service times, prevention of dishwashing on the pavements, higher standards of food hygiene, government training for staff and many other rules. Wanlop explains that this is due to street vendors obstructing footpaths and causing road congestion, which the BMA has received a large number of complaints about . He states that , while Khaosan and Yaowarat are prime tourist hubs, other street food and vendor-heavy areas like Siam Square, Victory Monument and parts of Sukhumvit cannot be given the same excuse and thus are likely to be cleared, though no further details were given as to when. On the same day, Thailand’s Minister of Tourism and Sports Kobkarn Wattanavrangkul wrote a statement on Facebook that the news of a blanket ban on Thai street food is false, despite The Nation’s initial reporting. However, she clarified that street food vendors throughout the city, in particular Khaosan and Yaowarat roads, will be regulated by the government. In a press conference for the launch of the Michelin Guide

in Thailand on Apr 21 the Minister once again reiterated this clarification. Thus, Kobkarn’s statement comes as a contradiction to what Wanlop stated on Voice TV regarding certain areas which are still under threat. At this time, there’s one thing that’s guaranteed: the street food on Yaowarat and Khaosan roads is not going anywhere—though they will be more heavily regulated by the BMA in the immediate future—thanks to them being prime tourist destinations that Bangkok can’t afford to lose. As for the rest of Bangkok, the situation still remains unclear with the BMA and TAT contradicting each other. However, it’s safe to say we can surely expect more enforcement targeting them too—if not total removal. While it seems tourism is the only thing saving street food at the moment, perhaps the BMA ought to consider the livelihoods of the food sellers, as well as ordinary Thais who depend on B30-50 meals. If not for their sake, perhaps for the sake of street food in general being a uniqueness that makes Bangkok so appealing to both locals and foreigners. In a city with such horrible walkability, some regulation is welcome, but the BMA must tread carefully to preserve this invaluable asset. By Bonnie Sananvatananont

Holiday Inn Sukhumvit's Indian buffet is B824 net. For an international buffet, Marriott Marquis Queen’s Park is B1,350 and the buffet is huge.

Theo Meo's free-flow is B1,488 all-in, but the food isn’t a buffet (it’s more an unlimited a la carte deal), so you might prefer the freeflow at Le Meridien's 20 labels at B2,295 for food and drinks.

Peninsula is B3,400. You only get one bottle for two people, though. For free-flow, Siam Kempinski is B3,500.

You do realize B3,990 is actually B4,668 after service charge and VAT? We tip our hat to the net prices at Millenium Hilton (B2,200 net for food, B3,390 net with free-flow)

escapes ECO-TOURISM

Go Local

Here's a trip with a difference. It's right in the heart of Krabi—and you didn't even know that it was there. By Lily Kittisrikangwan

Baan Khlong Prasong

K

rabi is known for its postcard-perfect beaches and rocky islands. But this southern Andaman beauty has a lot more to offer. The little-known Muslim community on Koh Klang provides an entirely new travel experience, from snorkeling excursions and picture-perfect guesthouses.

Where is it?

On the Island

Located in Pak Nam Krabi, where a giant rivermouth meets the Andaman Sea, Koh Klang is a 10-minute ferry ride away from Suan Chao Fah Pier, with many local ferry operators on standby so you don’t even need to book a long-boat in advance (a trip will cost you around B60-100). It's a peaceful cruise along the way, you’ll be greeted with waterside houses on one side and a mangrove forest on the other. On our last trip, in May, the weather was warm and humid, but the water was calm and boat ride peaceful.

Right outside the restaurant, you can call a tuk tuk for a tour around the island, where 80 percent of the population practices Islam (the first settlers here came from Malaysia). Parts of the island have been turned into homestays, while others are used to grow Sangyod rice, which locals harvest during January. Visitors will get to witness the unique two-story houses along the two sides of the road, with the occasional motorbike stopping to refuel at tiny petrol stations. This is worlds away from the mainland Krabi that we're familiar with. Make a stop at the Baan Khlong Prasong. Here, you’ll get to see how Indonesian batik fabrics are made, with pots of natural dyes and white sheets lying on working tables. These are dyed fabric with patterns drawn using candle wax—a craft passed on from generation through generation and not dissimilar to the trending slowlife workshops we get in the city. On our last trip, we met an auntie who says she was one of the first to bring the craft to the island. Locals use batik fabrics to make dresses and to decorate their homes. The cute little goats walking around the complex are a bonus. You can also learn the history of Krabi's signature longtail boats here. Locals carve and assemble pieces of wood into boats themselves. In fact, the sea is a part of everyone's daily lives, from fishing to commuting to the city. Visitors who are interested in learning more can take part in longtail boat model-making workshops, organized by the local OTOP group here (28 Moo 1 Tambon Khlongprasong, Muang District, Krabi 081-569-0224) It is possible to do a daytrip to Koh Klang, but an overnight homestay completes the experience as you get to learn more about people's daily routines, the religious practices at the island's mosque, see the boats leave for fishing trips and learn more about the ecosystem on the island, all of which sets the area apart from the Krabi that we thought we knew.

What to eat Throw away all perceptions that you have of islands and terrible food, as the first thing you’ll notice as you approach the dock is a line of restaurants run by the local Muslim community. We recommend stopping by Baan Ma Ying, one of the most well-known on the island. Here, they specialize in Southern Thai cuisine, but of course every dish is halal. The seafood is extremely fresh and comes in massive sizes, so simple dishes like grilled crab, prawns or just fresh oysters are best recommended. Every dish is cooked according to the age-old recipes of the owner's grandma, which means that you can expect an authentic meal, a little bit on the spicy side but well-balanced and flavorful. Order the red snapper gaeng som, shrimp coconut curry and bai cha plu— as the kitchen uses freshly squeezed coconut milk and you can definitely notice the difference. The pla sam rod (fried fish with sweet and sour chili sauce) is another highlight— fresh and almost double the size of the usual local seafood places. Make a reservation in advance as they do get quite a crowd during long holidays.10 Moo 1 Tambon Khlongprasong, Muang District, Krabi, 081-271-6102

They block off the very best rooms at every accommodation level exclusively for Club guests, who also get a few other goodies like Club Lounge access (a room by the beach where you can have breakfast, afternoon tea and neck free cocktails from 5-7pm) and your own butler on call 24 hours. Rates start at B9,500 for the Club InterContinental Pavilion, which is about B3,500 more than you'd pay if you booked the room without the Club package. Or splurge on the ultimate pampering and privacy of the Baan Sai Chol Bedroom Pool Villa at B52,000.

SHANGHAI

Sobering Thoughts In keeping with major cities in Asia, Shanghai’s craft cocktail bar scene has been growing steadily over the years. On our last visit, we stumbled upon a Parisian-looking bistro at the intersection between Yandang Lu and Nanchang Lu. Step inside and you'll find a sleek space Sober Company (helped by lots of natural light) and three uniformed baristas-slash-bartenders manning a great long wooden bar. Sober Company (99 Yandang Lu, www.fb.com/ sobercompany) is the latest establishment by Shingo Gokan, the guy that energized the Shanghai speakeasy-style bar scene with the arrival of SpeakLow (currently ranked 2nd in Asia’s Best 50 Bars). Here, you might have heard of him as the guy who designed the delicious Japanese-inspired cocktails at Morimoto Bangkok. Sober Company is divided into three parts: on the ground floor, Sober Cafe offers all-day dining comfort dishes from like "Rice Eggs Benedict," the "Wagyu Teritama" burger and "Kinpira Kale" salad (prices range from RMB45-95 / B225-500) and coffee cocktails. More serious food takes place in the upstairs space, dubbed Sober Kitchen, where they serve a contemporary Chinese dinner from 5pm onwards, while the third component, Sober Society, is a moodily lit bar which makes a fine choice for a relaxing evening. In keeping with the speakeasy tradition, we hear that there’s a hidden fourth space named “Tipsy” in the same building.

VIETNAM

Center Point Located south of the more popular Nha Trang, Cam Ranh has finally landed itself a five-star resort. Only a 15-minute drive away from Cam Ranh International Airport, The Anam (Long Beach, Northern Peninsula Cam Ranh, www.theanam.com) blends colonial luxury with traditionThe Anam al Vietnamese aesthetics—think Hue-style roofs, glowing lanterns, French mosaic tiles and stone pathways. In addition to having one of the best private beaches in the area (stretching for 300 meters), The Anam also features the to-die-for Siri Mara Spa(Balinese treatments its specialty). At the moment, rooms start from B7,000/ night. In 2015, the Vietnamese military returned Bai Dai Beach to civilians in an effort to promote tourism in Khanh Hoa and Cam Ranh. The region enjoys 300 days of sunshine in a year (the rainy season is roughly around Oct-Jan), so you're unlikely to hit bad weather.

Palace Intrigue Bangkok’s part-punk, part fairytale princess fashion label, Sretsis, has debuted its first pre-fall 2017 collection, “Love More”. The brand’s “more is more” DNA combines rocker chic with Marie Antoinette-inspired style in its black denim jacket (B11,000), which retains the Sretsis romantic sensibility from its heartshaped embroidered pearls. Other jackets take inspiration from Mao-era Chinese soldier uniforms, which are given a Victorian twist with puffy shoulders (B20,500). Beer Terrace

Roll With It

Greece via UK

That gigantic new Marriott hotel on Sukhumvit Soi 22 has introduced a new alfresco spot in front of its Goji Kitchen + Bar buffet— and it's quite a hidden gem. Since Goji Terrace is located round the back of the hotel, you'd never actually see it from Soi 22, but that also means it gets some great views over Benjasiri Park—really, the views from out here look more like a residential part of Taipei than Bangkok. Booze focuses on draft beers like Brewdog Punk IPA 5.6% (B230 for 250ml; B350 for 470ml), Maisel's Weisse Original 5.2% (B200; B330) and La Chouffe 8% (B240; B370). They also have cider from Brothers and Happy Monster, all priced at B250/ bottle. Food sticks to the sort of stuff you want with a beer: fish and chips (B260) and barbecue spare ribs paired with homemade pickled (B360).

The new extension at Bangkok’s Japanese dessert pioneer, Kyo Roll En, offers a fun new dessert experience. Kyo Bar features only 13 seats around a blond bamboo counter bar where chefs work, serve and explain each dish. Inspired by Japanese kaiseki (a setmenu dinner), pastry chef Dej Kewkacha serves the menus: main and beverage (ume, B300), appetizer and main (take, B350) or the full experience (matsu, B400). The hassun (kaiseki's small seasonal side dishes) features the sweet-savory marriage of Kyo Roll En's signature roll cake served with shoyu sauce alongside delicious soy milk pudding, yuzu granita and other classics like warabi mochi and dango (rice flour dumplings). Also don’t underestimate the appetizers, which are full of surprises. G/F, Siam Paragon, Rama 1 Rd., 02-610-7583. BTS Siam

This Apr 27-28, UK’s celebrity chef Theo Michaels drops by Sheraton Grande Sukhumvit. Though based in the Hertfordshire, Michaels’s Greek roots play a big part in his cooking. In 2014, the chef got to the semi-finals of the UK version of cooking show MasterChef with his inventive takes on classic Greek dishes. He now runs a pop-up restaurant and hosts private dinners in the UK while also making appearances on TV and radio from time to time. On Apr 27, he takes over Barsu with his five-course Mediterranean meal (B1,750 with wine) and on APr 28, he joins Sheraton Grand’s chef Gaetano Palumbo at Rossini’s for a four hands dinner (B3,750 with wine). 250 Sukhumvit Rd., 02-649-8364. ON THE BAR

Pakalolo Tiki cocktails and poke bowls arrive in Ari. By Choltanutkun Tun-atiruj The buzz: Ari’s latest cocktail bar takes inspiration from Hawaii to create the neighborhood’s first you-gotta-leave-Thonglor-andsee-this opening since we can’t remember. The decor: Like nothing else being done in Bangkok right now. Pakalolo takes its Hawaiian theme, adds a dose of the Florida Keys and punches it into something fun and fresh. There’s a geometric bamboo ceiling courtesy of the guy who did Wonderfruit’s stage, as well as some artfully flamboyant banana-leaf wallpaper. It all says “cocktail hour at the coconut lodge” in a kitch, wink-wink kind of way. The space, mind you, is tiny, so if past Ari form is anything to go by, you’ll be queuing up to take your seat—either a bar stool that looked like it was pinched from Hemingway’s veranda, and or one of the handful of four-person tables. The drinks: If you hadn’t guessed already, this is not one for beerdy, spirit-forward bores. Order the Lilia (B280) for a hit of elderflower and thyme that goes right up your nose, along with pear vodka, gin and pink guava juice to make the whole thing go down easily. Awa Awa (B320) is just as fruity, with rum, honey, vanilla, peach schapps and a combination of passion fruit, orange and gooseberry. Unique and refreshing but with a strong kick of rum. The Thai craft beers on offer are just as fruity: Lamzing Sticky Mango Pale Ale, Stonehead Lemongrass Kolsch, Sandport

Bang Bang IPA and Mahanakorn Pale Ale (all B200). Pro tip: wear a Hawaiian style shirt and get one free cocktail. The food: Pakalolo’s menu takes you from America to Japan with a stopover at Oahu. The freshness of the prawn and pineapple salsa (B240) is truly impressive—basically a katsu prawn but with a sweet and sour sauce made from tropical fruits. This is one more place where you can find Hawaiian-style poke bowls; wasabi salmon (B180) for a Japanese profile, or tuna with an intense Thai kick (B180)—keep a glass of water by your side. Though the space definitely screams “bar” louder than “restaurant,” you can still have a proper fill with the Hawaiian Loco Moco (pan-fried minced beef and fried egg topped on Japanese rice, B240),while the sushi rolls (B280-380) are best for sharing. The music: You guessed it: ukelele. But the soothing island rhythms get switched for easy-listening deep-house later in the night. The crowd: It’s Ari—T-shirts, sandals, ripped jeans, you get the picture. Surprisingly, a few families also seem to be wandering in, as well as the odd person over 30. But overall it’s very young and hip. Ari Soi 4, 02-075-0939. Open daily 5pm-midnight

THE SPEAKEASY BAR BY ASIA’S DRINK EXPERTS

TROPIC CITY BY THE EX-SAPPAROT GROUP GUYS

This project is a collaboration between globetrotting competition judge and instructor Ueno Hidesugu, Nick Wu (ranked 3rd best bartender in the world by World Class Cocktail Competition 2016), Colin Chia (owner of Nutmeg and Clove bar in Singapore), plus two talents from Bangkok: Ronnaporn “Neung” Kanivichiporn (owner of Backstage Cocktail Bar and ranked 11th best bartender in the world by World Class Cocktail Competition 2014) and Chennarong “Jan” Bhumichitr (senior brand ambassador, Diageo Moet Hennessy Thailand). The bar will not have a name and will be located in “a box” on Thonglor Soi 10. Opening by end of May 2017.

It is a collaboration between Sebastian De La Cruz and Philip Stefanescu (both formerly of Sapparot Goup). You might know De La Cruz from behind the bar at Thonglor’s Touche Hombre, while Stefanescu was formerly the Sapparot Group beverage manager covering places like Lady Brett and UNCLE. Both promise bold drinks, most of them rum-based. Joining them is the gang from 80/20 who will be providing food we can only expect to be amazing, giving 80/20’s standing. (The bar will be located next door to 80/20, in fact.) Minding the bar is Krit “Joey” Parkobdee, previously at Bronx Liquid Parlour and one of four finalists of this year’s Bacardi Legacy Thailand Competition. Opening by the beginning of June.

THE NEW ITALIAN PLACE BY FOODIE COLLECTION GROUP

THE NEW FRENCH PLACE BY SOHO HOSPITALITY GROUP

Foodie Collection Group (Choti Leenutaphong and Debby Tang) are doing another Italian place, which makes that their third Italian place as both Vesper and Il Fumo were done in partnership with serial restaurateur and chef Luca Appino. It will open by the end of May and will be somewhere in Thonglor. They are known for producing top quality bartenders, such as these two Vesper alumni: Milk Pailin who is now at Zumo St. Regis Bangkok was crowned the best bartender in SEA 2016 while Oil Wareewan, currently the head mixologist at Freebird, has also been in plenty of final rounds. So, we have no doubt that their new place is just going to be as excellent.

Brasserie Cordonnier is the latest project by Soho Hospitality, the group that already owns three places on Sukhumvit Soi 11, Havana Social, Above Eleven and Charcoal. The new place will also be on Sukhumvit Soi 11, making it Soho’s little kingdom (though they do also own an Italian restaurant in Ari, Cantina). Brasserie Cordonnier is located right next to Apoteka, just around the corner from Soho’s three other places. Head mixologist, Davide Sambo has also created the whole entire signature cocktail menu using anything and everything French in the mix to go with the French cuisine. Opening by end of May.

OPEN DOOR

Bombyx by Jim Thompson The silk company has shed the stuffy image of its bistros in favor of this bold new spinoff.

The buzz: Jim Thompson goes all moody and modern at this chic cafe spinoff (named after the scientific genus for silkmoths), where Thai flavors get given delicate contemporary plating amid a black box of printed silks and plush furnishings. Without windows or a facade, Bombyx simply looks out on the tail-end of Siam Paragon's M/F. The decor: Tucked just beside the Jim Thompson shop, the compact unit is swathed in black then peppered with the artwork of national artist Ithipol Thangchalok in the forms of printed silks hanging on the ceiling and walls. Ocean blues blend with rich browns and golds on geometric, velvet upholstered furnishings and shining lacquered surfaces. Too bad it's not the most inspiring location.

24

The food: Forget tourist staples familiar at other Jim Thompson restaurants. Chef Phongsak Mikhunthong adds occasional twists to Thai food and plays with presentation and contemporary plating. He pairs grilled seabass with passion fruit sauce and pak wan (a local herb) salad (B350) while serving Western shrimp cocktail his style with lemongrass salad (B260), creating combinations that are not unfamiliar but still have the power to surprise. In the crab curry (B380), he adds seepweed leaves that perfectly compliment the texture and produce one of the restaurant’s star dishes. The dessert menu, though, sticks to Western items, such as lemon cream tart (B250), carrot cake (B185) and sac en chocolat (vanilla mousse in a chocolate box served with berries, B320).

The drinks: Signature cocktails play with the silk theme and Thai ingredients. The purple-colored Bombyx elixir (B280) mixes mulberry shrub with vodka and lavender while Bangkok Bloody Mary (B280) sees chili-infused vodka and nam jim jaew sauce on top of usual mix. Wine starts from B190 by the glass. Why you should care: There’s some bold new flavors here, though they are perhaps outdone by the truly striking look of the place. Now if only it had a view. Badass Beef After making her name from Burgers and Bangers (near Asoke), chef Panida “Poupee” Paethanom has just left the brand and opened a place of her own on the second floor of Mix and Munch. At Bad Burger (392/9 Sukhumvit Rd., between Soi 18-20. 097-283-4598), her focus remains on burgers, but now with a bigger, 150g chargrilled beef patty for The Baddest (B289), which also comes stacked with bearnaise sauce, gruyere cheese, crispy bacon, onion rings, tomato and lettuce. She also makes barbecue pork ribs here, which you can get as a full

(B579), half (B359) or quarter rack (set with the Baddest burger, B459) or sandwiched up with apple slaw and smoked cheese in a burger bun (B269). Vegan and gluten-free buns are available upon request at no extra cost. Shakes start from B80 while there are also a few craft beers (from B230) and ciders (from B200).

Cool Down Perfect for this boiling hot summer, this new online gelato shop delivers icy treats to your door. Amica Gelateria (www.fb.com/ amicagelateria) stems from Sarunpak Phenjati and her partner Thanyaphorn Rungreungthanja's gelato-making course at Gelato University in Bologna, Italy. Here, Thanyaphorn combines her knowledge with local ingredients and rolls out yummy flavors like roasted banana with salted caramel, candle-smoked coconut milk, butterfly pea-lime and intense Chiang Rai rice green tea on top of classics like chocolate, Horlicks and coffee. All gelato is priced at B65 and can be delivered throughout Bangkok for B50-200. Definitely not just another imported to n k at s u ( b rea d e d p o r k c u t l e t ) specialist, Tonkatsu Wako makes you feel like you’re actually dining in Japan. And that’s not because it sits in the old-school Japanese department store Isetan. On our last visit on a S at u rd ay afte r n o o n , we we re a whopping tenth in the queue on arrival but everything was handled with the utmost efficiency. A member of staff took our name and the number of our party, before giving us a menu and coming to take our order before we were seated. Once at our table, we were immediately served our drinks before the food arrived just a few minutes later. Fried to crisp perfection, these golden cutlets are

Food_Review_687_Apr28_17_2.indd 26

On our last visit, on a Friday night, Bistro Convent sat empty save for our table and a man dining alone, reading a book. Given the adorably cliched setting—woven chairs, round marble t o p s fa c i n g l e a f y S o i C o n v e n t , chalkboard above the bar—we almost wished he were smoking a Gitane. The food is equally Parisian and competently executed, which makes us wonder why the place isn’t doing any better. Probably because it’s too authentic for its own good: no tuna tataki salad, no pasta, no lava cake. Instead, you get dishes with funny names ( vol au vent anyone?) and amphibians (flambeed frog legs, B480)—exactly what a French bistro should be serving. While the escargots’ (B380 for 6) plentiful chunks of garlic could have been a tad more cooked,

on another plane. We think the secret l i es i n t h e f res h b rea d c r u m b s, produced on-site from bread loaves every day. The fluffy yet crunchy results won’t scorch your palate, like some tonkatsu offerings. Beneath those delightful exteriors, the pork loin (B320 for a set) is tender while the tenderloin (B330 for a set) almost m e l t s i n yo u r m o u t h . T h e nabe options (from B370/set), where the fried cutlets are served in egg soup, are just as delicious. Do order the deep-fried eggplant sandwich with minced beef and pork (B80) as a side, too! Here, as at most tonkatsu joints, your set includes refillable rice, miso soup, cabbage and tea. Moreover, we like that each refill of the springy Japanese rice comes in a hot iron pot ( kamameshi ), rather than being served bowl by bowl. Service is also spot on—you’re greeted by a chorus of “irasshaimase,” while staff march around intent on refilling your plate of crisp cabbage and even bringing out toys to kids. With a price range comparable to Saboten and Maisen, there’s little wonder why diners choose to wait a little longer for Tonkatsu Wako’s superior cutlets. Good news is they’ve just opened a second branch in Siam Center, too.

the dish otherwise hit all the buttery notes and powerful aromas that makes chewing on little molluscs so rewarding. The familiar panned foie gras (B680) also stands out . No saccharine balsamic drizzle here. The perfectly cooked lobes of liver are surrounded by apple slices in a red wine reduction. Délicieux. True to the bistro format, the kitchen also makes a mean steak frites (B680): the handcut potato wedges are just superb, the Australian rib-eye tender and juicy. Ordered rare, it came rare. The boeuf bourguignon (B380) is equally satisfying, not just for its stewed beef but for the rich sauce with notes of carrots, mushrooms and red wine. Like the rest of the menu, the pastry is a “best of” gallic classics: tarte tatin, souffle Grand Marnier or crepes suzette (all of which are whopping B380). Our lemon tart (B280), clearly made with generous amounts of lemon, was much more intense than some of the more popular pastry shops in town. When you get the check, you’re reminded that being so produce-centric, French food doesn’t come cheap. At these prices, you could have rubbed shoulders with the cool kids up the street at Vesper; so why sit alone with the man reading Sartre? To flee the tyranny of tiramisu and bolognese is why.
