Spinach Dip
Eggplant Caviar Cheese Straws
1 pkg chopped spinach, 300 g 1 cup Hellmans Mayo 2 cup sour cream 1 pkg Knorr vegetable soup mix 8 oz. chopped drained chestnuts 3 grn onions chopped
2 lbs Eggplant (peeled and chopped) 1 lrg Onion (diced) 2 Tbsp. Olive oil 1 tin Tomatoe Paste 1 Tbsp. Red wine vinegar 1 clove Garlic (chopped) 1 Tbsp. Sugar (to taste) Sprinkles of salt, pepper, basil & oregano
Chop and combine all ingredients. Refrigerate for 2 hours. Hollow out 1 large round pumpernickel bread loaf. Cut bread into cubes. Fill loaf with dip. Serve with veggies and bread cubes. Can substitute plain greek yogurt for sour cream and ½ fat mayo.

In a large frying pan or pot, fry onion in oil until transparent. Add eggplant and other ingredients plus enough water to moisten well. Simmer covered for 45 min. Serve hot or cold with crackers to dip. Savoury. Even the kids enjoy it!

2 cups flour 2 cups grated cheddar cheese ¾ cup butter 1 tsp baking powder ¼ tsp cayenne pepper ½ teaspoon salt ½ cup water
Chestnut Appetizer 1 (10 ounce) can whole chestnuts, drained 2 cups soy sauce 1 cup brown sugar 1 pound bacon
Preheat oven to 400 degrees F. Grease or line a baking sheet with parchment paper. Combine the flour, cheese, butter, baking powder, cayenne pepper, and salt in a bowl and mix until well combined. Add water a little bit at a time to make a very stiff dough. On floured surface, roll pieces of the dough into just slightly thicker than pencil shaped sticks. Cut sticks into 4 – 5 inch lengths. Arrange the pieces on the baking sheet. Bake at 400 degrees F for 5 minutes or until browned.
In a small mixing bowl, combine chestnuts and soy sauce. Refrigerate for 30 minutes. Preheat oven to 450 degrees F (275 degrees C). Line a baking sheet with aluminum foil, and spray with a non-stick cooking spray. Cut bacon into thirds. Place brown sugar in a small mixing bowl. Drain chestnuts then roll them in brown sugar. Wrap each nut in a bacon strip and secure it with a toothpick. Arrange chestnut/bacon wraps on the prepared baking sheet. Bake until the bacon is crisp. Serve.

Holiday Punch
Nacho Dip
Recipe makes 40 (4 ounce) servings 4 cups cranberry juice cocktail 8 cups prepared lemonade 2 cups orange juice 1 (4 ounce) jar maraschino cherries 1 (2 liter) bottle ginger ale 1 orange, sliced in rounds
250 g cream cheese 250 ml sour cream 2 – 3 Tbsp mayonnaise 2 – 3 Tbsp salsa 1 – 2 green onions 1 tomato 1 can shrimp Grated cheese Nacho chips
In a large punch bowl, combine cranberry juice cocktail, lemonade, and orange juice. Stir in the maraschino cherries. Refrigerate for 2 hours or more. When ready to serve, pour in the ginger ale. Garnish each glass with an orange slice.

Mix soft cream cheese and sour cream together until smooth. Add mayonnaise to taste. Spread evenly in bowl; spread on a few spoons of salsa. Top with chopped green onion, tomato, shrimp and grated cheese. Chill before scooping.

Grapes and Baked Cheese: 8 oz. fresh goat-cheese log 2 tbsp. flour 1/2 tsp. dried basil, crushed 3 tbsps. melted butter 1/3 cup chopped pecans or almonds lb. seedless grapes Slice cheese log into 1/2 inch rounds. Combine Flour and basil. Dredge each slice of cheese in flour mixture. Dip slices in butter then coat with chopped nuts; press nuts lightly into cheese. Place cheese on a plate or small tray and refrigerate 1 hour or until completely chilled. Place on a non-stick baking sheet (line the baking sheet with parchment paper if it does not have a non-stick surface). Bake at
400oF for 6 to 8 mins. or until nuts are crisp and cheese is warm. Cut grapes into clusters of 6 to 8 grapes. Serve cheese with grapes as an appetizer or dessert. Makes 8 servings.

Warm Spinach & Artichoke Cups 24 won ton wrappers 1 can (14 oz) artichoke hearts, drained, finely chopped 1 cup Kraft 4 Cheese Italiano light shredded cheese 1 pkg (300 g) frozen chopped spinach, thawed, squeezed dry 1/3 cup miracle whip ¼ cup grated parmesan cheese ¼ cup finley chopped red peppers 2 cloves garlic, minced
cup. Bake 5 min. Meanwhile, combine remaining ingredients. Spoon artichoke mixture into won ton cups. Bake 12 to 14 min. or until filling is heated through and edges of cups are golden brown. Note: for best results, spinach needs to be squeezed until very dry. The squeezed spinach should measure about 1 cup.

Chop 300g. chocolate chips until you can see 3 distinct grades from powder to coarse. Add 4 tbsp cookie crumbles & 4 tbsp cocoa powder, (all ingredients available at Cooper’s Foods Bulk Food section). Put into a bowl; add 100 g butter and rum. Kneed into an almost solid paste. If too soft, add some cookie crumbles or put in a cool place until you can make this cute, little, tasty Rum ball. Roll in chocolate (not sugar) sprinkles while they are still warm from your hands.

Black Bean and Corn Salsa 1 can yellow or white corn, drained (or if you have fresh, that is even better!) 1 can black beans, drained and rinsed 1 can RoTel diced tomatoes and green chilis 1 bunch cilantro, finely chopped 1/2 small red onion, finely chopped 2-3 green onions, finely sliced 1 red bell pepper, finely
chopped 2-3 Tbsp lime juice 1 avocado, chopped (I didn’t use an avocado only because I didn’t have one on hand . . .) 1/2 tsp minced garlic small amount of jalapeno, depending on how hot you like it dash of cumin Mix all together in a large bowl and serve with taco chips.

Zucchini Pancake Bites (serves 8 as an hors d”oeuvre)
1 lb (500g) zucchini (about 6 medium) 1tsp (5ml) salt 1/2 cup(125ml) all purpose flour 3 green onions 1/4 cup (50ml)parsley, chopped 1/2 tsp. (2ml) chilli powder 1/4 tsp (1ml) freshly ground pepper 2 large egg whites vegetable oil, for frying smoked salmon, cooked shrimp or crab meat. for garnish Trim zucchini and coarsely grate into a large colander set in sink. Stir in salt and let drain at room temp. for 30 mins. Wrap zucchini in a kitchen towel and twist towel to wring out as much liquid as possible. Place zucchini in a large bowl and stir in flour, green onions, parsley, chili powder and pepper. Using an electric mixer, whisk egg whites in a bowl until they just hold stiff peaks. Gently fold into zucchini mixture. In a large frying pan, heat a thin layer of oil over medium-high heat. Working in batches, spoon about 2 tbsp.(30ml) batter into pan for each pancake, flattening slightly with back of a spoon. Cook, turning once, until golden brown about 3 to 4 minutes total. Transfer as cooked to a paper towel-lined plate to drain. Pancakes can be prepared 2 hours before serving and then warmed slightly in a 325F (170) oven before finishing. When ready to serve, place zucchini pancakes, side by side, on a serving tray. Top with smoked salmon (or topping of your choice) and a small dollop of Herb Cream.
Herb Cream recipe: 1 cup (250ml) sour cream 1/4 cup (50ml) fresh basil, chopped 2 tbsp. (30ml) fresh chives, chopped 2 tbsp (30ml) fresh mint, chopped 1/2 tsp (2ml) salt Blend all ingredients in a blender or food processor until smooth and pale green. Transfer to a bowl and refrigerate until ready to use. Herb Cream can be made up to l day in advance. Bon Appetit!

Shrimp Dip 1 (8 ounce) package cream cheese, softened 2 (4 ounce) cans small shrimp, drained 1 (8 ounce) jar cocktail sauce 1 cup shredded mozzarella cheese 1/2 red bell pepper, diced 1/2 green bell pepper, diced assorted crackers for dipping Directions: Spread cream cheese in an even layer on a serving dish or in the bottom of a glass pie pan. Combine shrimp with cocktail sauce in a bowl and spread evenly over the cream cheese layer. Sprinkle with mozzarella cheese, covering the shrimp layer as completely as possible. Sprinkle the red and green bell pepper over the cheese layer. Serve with crackers.

Cinnamon Christmas Tree Ornaments ½ Cup Apple sauce ½ Cup Ground Cinnamon 1 Tbsp. Ground cloves 1Tbsp. White liquid glue (school glue) Mix together in bowl. Roll out ½ cm thickness (approximately). Use small cookie cutters to cut out shapes. Transfer to wax paper covered cookie sheet. Using a small straw or pin, make a hole in the top of each ornament. Bake 150 degrees F for approximately 2 hours. Turn to harden both sides. Decorate with glitter glue when cool. String with a ribbon or thread to hang on the Christmas tree. Makes a nice fragrant and personal gift!

Christmas Soup 1 pound kielbasa, sliced 1/4inch thick on bias Vegetable oil, as needed 8 cloves garlic, minced 1 pound red kidney beans, soaked at least 4 hours and up to overnight 2 quarts chicken broth 1 pound red potatoes, cut into 1/2-inch cubes 6 ounces fresh kale, approximately 4 handfuls 1/4 cup red wine vinegar 1/2 teaspoon freshly ground black pepper Place the kielbasa into a 7-quart Dutch oven and set over medium-low heat. Cook until the kielbasa has browned well and rendered its fat, approximately 15 minutes. If you do not have at least 2 teaspoons of fat, add enough vegetable oil
to make 2 teaspoons. Remove the kielbasa from the pan and set aside. Add the garlic and cook for 1 to 2 minutes, stirring constantly to prevent the garlic from burning. Add the beans and the chicken broth and cook, covered, for 45 minutes. After 45 minutes, add the potatoes, cover and cook for 15 minutes, stirring occasionally. Wash, rinse and trim the kale and tear into bite size pieces. Add the kale to the pot, cover and cook for an additional 10 minutes or just until it is tender, but not mushy. Add the red wine vinegar and black pepper and stir to combine. Evenly distribute the kielbasa between 8 soup bowls. Laddle the soup into bowls and serve

Greek Quinoa Salad:
With its smoky chipotle dressing, this two-tone salad complements many barbecued dishes.
l cup cooked, cooled, quinoa 1 cup chopped snap peas 1/2 cup Feta cheese 1/2 green or red pepper, sliced thin 1 cup chopped tomato 1 medium cucumber, diced 1 small chopped onion 3 chopped celery stalks 1/4 cup chopped cilantro, or basil
4 Yukon Gold potatoes (about 2 lb/1 kg) 3 sweet potatoes (about 2 lb/1 kg) 3 tbsp vegetable oil 1/2 tsp salt 3/4 cup frozen or canned kernel corn 1 sweet red pepper, diced 2 green onions, finely chopped DRESSING: 3/4 cup light mayonnaise 1/3 cup buttermilk 1/4 cup chopped fresh coriander or parsley 2 tbsp lime juice 2 tbsp minced chipotle peppers in adobe sauce 1/2 tsp ground cumin 1/4 tsp each salt and pepper Peel and cut Yukon Gold potatoes and sweet potatoes into 1 inch cubes; place in large bowl. Add oil and salt; toss to coat. Spread on large rimmed baking sheet; roast in 425F (220C) oven, stirring once, until tender and golden, 60 to 65 minutes. Let cool.

Roast Potato Salad
DRESSING: Meanwhile, in bowl, whisk together mayonnaise, buttermilk, coriander, lime juice, chipotle peppers in adobe sauce, cumin, salt and pepper. In a large bowl, combine potatoes, corn, red pepper and green onions. (Make ahead. Refrigerate potato mixture and dressing in separate airtight containers for up to 2 days.) Pour dressing over salad; toss to coat. Makes 6 to 8 servings. (about 360 calories per each of 6 servings)

Corn Soup 1 can 14 oz cream style corn 2 eggs well beaten 5 cups water (or chicken stock) 2 Tbsp corn starch + ¼ cup water 1 stalk green onion, chopped 2 tsp salt tsp pepper Bring water to full boil. Pour in cream style corn. Stir in corn starch & water mixture. Lower heat. Trickle the beaten egg into soup stirring constantly. Turn off heat & garnish with green onion. Serves 6

Pumpkin Soup Olive Oil Leek 1 Potato 1 ½ lbs Pumpkin Salt Pepper Fresh Sage Leaves Fresh Parsley Broth
2 lbs large potatoes, peeled ¼ cup olive oil ½ cup freshly squeezed lemon 2 tsp oregano 3 garlic cloves, finely chopped ½ cup water Salt & pepper
Furniture rt ~ Collectables A Antiques ~ Preheat over to 450°. Cut potatoes into quarters or eighths, lengthwise and place in large shallow baking dish. Add remaining ingredients and stir to coat the potatoes. Bake uncovered for 1 hour until crisp on outside and soft inside. Stir once or twice during baking and add a little more water, if necessary. Serves: 6 -7
In a saucepan pour some olive oil. Gently brown a washed sliced leek over medium heat. Reduce heat, add a potato and approx. 1 ½ lbs of pumpkin, peeled & diced fairly small. Add salt & pepper and a few fresh sage leaves and parsley. Cook slowly, add a little broth if too dry. Cook until pumpkin and potato are soft, about 30 minutes. Puree and add broth until desired consistency.

Ingredients: all-purpose flour 1/2 of a 397 g pkg frozen puff pastry 1/2 c. regular sour cream 1/4 c. thinly sliced sun-dried tomatoes 1/4 red onion sliced 1 bunch asparagus 1 tbsp olive oil pinches of salt & ground black pepper 1/2 c. grated Emmenthal, Gruyere or white cheddar cheese

Directions: 1. Preheat oven to 400F (200C). Partially fill a large frying pan with water and bring to a boil over medium-high heat. Line a baking sheet with parchment paper. Lightly dust counter with flour and place puff pastry on top. Dust rolling pin with flour. Roll pastry into a rectangle, about 14 x 10 in. (35X25 cm) Pastry will be very thin and edges uneven. Move to lined baking sheet. Form a narrow 1/2 in (1 cm) border by folding pastry edges over and pressing down to seal. Spread sour cream evenly over pastry. Scatter with sun-dried tomatoes and onion. Bake in centre of pre-heated oven for 10 min. 2. Meanwhile, snap tough ends from asparagus and discard. Boil asparagus until tender-crisp, about 2 min. Drain. Pat dry with paper towels. Slice spears in half diagonally. Place in bowl. Drizzle with oil and sprinkle with salt and pepper. Toss to coat. 3. After tart has baked 10 min. remove to heatproof surface. Scatter asparagus, then cheese overtop. Continue baking until pastry is golden, about 10 more min. Cut into rectangles to serve.

Ingredients: 1 tbsp (15 mL) vegetable oil 1 onion, diced 2 cloves garlic, minced 1 tbsp (15 mL) mild curry paste or medium curry paste 1/4 tsp (1 mL) salt 1/4 tsp (1 mL) pepper 1 cup (250 mL) basmati rice 1/4 cup (60 mL) raisins
1 cup (250 mL) sodiumreduced chicken broth 4 cups (1 L) chopped fresh spinach 1/4 cup (60 mL) toasted sliced almonds Directions: In large saucepan, heat oil over medium heat; cook onion until deep golden, about 8 minutes. Add garlic, curry paste, salt and pepper; cook until fragrant,about 2 minutes. Stir in rice and raisins to coat. Add broth and 1 cup (250 mL) water; bring to boil. Reduce heat, cover and simmer until almost no liquid remains, about 20 minutes. Stir in spinach and almonds. Cover and let stand for 5 minutes.

Turkey Taco Salad 2.5 cups Ground cooked turkey (or diced) I use diced, cooked turkey and add it with the tomato sauce. If you don’t have left over turkey, use the ground turkey. ¾ Cup Chopped onions ¼ Cup Chopped green pepper 1 Can Tomato sauce (7 ½ oz. / 213 ml.) 1 Tbsp Chili powder ¾ Tsp Ground cumin ¾ Tsp Salt ¾ Tsp Garlic powder I use cloves of garlic. 1 Can Green chilies (4 oz. / 113 ml.) 1 Large Tomato diced 1 Head Iceberg lettuce chopped ½ Cup Sliced ripe olives ½ Cup Grated cheddar I
serve the cheese on the side 2 Cups Crushed tortillas or corn chips 1/4 Cup Taco sauce Low calorie 1000 Island dressing Directions: Place turkey, onions and green peppers in a large bowl. Microwave on HIGH for 3-4 minutes, stirring once until the onions and green peppers are tender. I cook it on the stove. Add tomato sauce, chili powder, cumin, salt, garlic and green chilies. Microwave on MEDIUM for 10 minutes, stirring 2 times. Meanwhile, toss tomatoes, lettuce, olives and cheese in a salad bowl. Place tortilla chips over the lettuce. Top with hot ground turkey mixture. Dot the meat with salad dressing, and drizzle taco sauce over all. Serve while still warm. Serves 4 as a salad.

Baked Chicken Breast & Basil
Light Salmon Loaf with Dill
4 boneless, skinless breasts, rinsed and patted dry ¾ cup low fat yogurt, plain ¼ cup fresh chopped basil or 1 Tbsp dried basil 2 tsp cornstarch 1 cup fresh, whole wheat bread crumbs Salt & pepper 2 Tbsp grated Parmesan cheese
1 tsp soft margarine 1 med onion finely chopped 1 cup of diced celery 1 cup diced mushrooms 2 eggs 1 can (7 oz) salmon 1 cup fresh bread crumbs 2/3 cup milk ¼ cup chopped fresh dill (1 Tbsp dry) Pepper to taste
Arrange chicken in a single layer in a baking pan. Combine yogurt, basil & cornstarch, spread over chicken. Season crumbs with salt & pepper and Parmesan and sprinkle over chicken. At this point, you can refrigerate up to 6 hours. Bake in 375° oven for 30 min or until chicken is no longer pink.
Stir fry together first 4 ingredients. In bowl beat eggs and add to stir fried mixture. Add liquid from salmon. Flake remaining salmon and mash bones. Add to bowl with bread crumbs. Add milk, dill and pepper. Stir lightly to mix. Pour into lightly greased 8 ½” x 4 ½” glass loaf pan , not metal. Cover with plastic wrap. Microwave on high power 7 minutes. Let stand 5 min.

Submitted by April Wilding Stuffed Cabbage Entrée Lentil Tomato 10 green cabbage leaves Loaf 2 cups cooked brown rice 1 cup chopped walnuts ½ cup diced onion ½ cup diced celery ½ cup chopped spinach ½ tsp salt 2 Tbsp soy sauce
Steam cabbage leaves. Mix remaining ingredients together. Fill each leaf with a heaping tablespoon of mixture and roll into a neat roll. Tuck ends under so mixture will not spill while baking. Lightly oil baking dish. Put any leftover mixture on bottom of dish. Place cabbage rolls on top, close together. Cover and bake at 350° for 25 min. Serve with tomato sauce. Serves 5

¾ cup chopped onion 4 Tbsp oil 1 tsp soy sauce 3 Tbsp flour ¾ cup tomato juice 1 ½ cups cooked lentils ¾ cup cereal flakes ¾ cup chopped walnuts 1 tsp salt Braise onion in oil and soy sauce. Stir in flour and cook a few minutes. Add slowly stirring constantly. Mash lentils. Add with rest of ingredients to the onion tomato mixture. Turn into well-greased loaf pan. Bake at 375° about 45 min. Serves 6

Holiday Pilaf 1 cup diced celery 1 small onion, chopped 4 Tbsp oil 2 vegetable bouillon cubes ½ tsp salt 4 oz. sliced mushrooms with liquid 8 ripe olives, sliced 2 Tbsp raisins 1 cup cooked peas 2 cups cooked brown rice Simmer celery, onion and oil together for 5 min. Add bouillon cubes, salt, mushrooms, olives and raisins and bring to a boil. Add peas and rice and heat through. Toss lightly with a fork. Serve immediately. Serves 4

Lasagna RollUps 1 pkg (10 oz) frozen spinach 1 cup part-skim ricotta 2 Tbsp basil 1 egg 8 whole wheat lasagna noodles 3 cups tomato-basil pasta sauce ½ cup shredded mozzarella ¼ cup grated Parmesan Preheat oven to 375. Squeeze excess liquid out of thawed spinach. Mix spinach, ricotta, basil, and egg in bowl. Spoon onto cooked lasagna noodles and roll up. Place in baking dish. Top with pasta sauce, mozzarella and Parmesan and bake for 45 minutes. Serves 4

Braised Balsamic Chicken Recipe 6 skinless, boneless chicken breast halves ground black pepper to taste 1 teaspoon garlic salt 2 tablespoons olive oil 1 onion, thinly sliced 1/2 cup balsamic vinegar 1 (14.5 ounce) can diced tomatoes 1 teaspoon dried basil
1 teaspoon dried oregano 1 teaspoon dried rosemary 1/2 teaspoon dried thyme Brown Rice or Wheat Noodles Mozzarella Cheese to sprinkle on top (optional) Season chicken breasts with ground black pepper and garlic salt. Heat olive oil in a medium skillet, and brown the onion and seasoned chicken breasts. Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes. Put over brown rice or wheat noodles. Then sprinkle Cheese on top.

Burgundy Spareribs
Cabbage Roll Casserole
2 lbs pork spareribs 1/3 cup onion, chopped 1/3 cup chili sauce 3/4 cup burgundy wine 2 tart apples, cored & halved 1 Tbsp. brown sugar Salt & pepper
1 lb lean ground beef 1 onion (chopped) Sprinkle salt & pepper (to taste) Pinch garlic powder (to taste) 1 Tbsp. Worcestershire sauce 1 14oz Can Tomatoes (crushed) 1 Cup Water 3 Tbsp. Uncooked rice 3 Cups Coarsely shredded cabbage Shake grated Parmesan cheese (optional)
Wipe spareribs with damp cloth. Sprinkle them with salt & pepper. Place in large shallow casserole with lid. Stew the onion over them. Mix chili sauce with burgundy and spread ½ over ribs evenly. Cover and bake in oven preheated to 400° for 1 hour. At the end of this time surround the meat with apples and spread the rest of the wine sauce over. Sprinkle brown sugar on top, cover and roast for 15 min. Uncover and bake 15 min more. Baste once with sauce in pan. Serves 4

In frying pan, brown meat. Add onion, salt & pepper, garlic & Worcestershire sauce. Cook until brown. Pour off fat. Stir in tomatoes, water and rice. Place cabbage in large casserole. Pour meat mixture over cabbage. Cover and bake at 325 degrees F for 1 & ½ hours.

Chocolate Macaroons
Chipits Chocolate Log Chocolate Mint Roll (Sweet and gooey – my favorite) Kisses
(Bird’s Nest Cookies) 2 Cups white sugar ½ Cup milk ½ Cup margarine 1 tsp vanilla 1/3 Cup Cocoa 3 Cups rolled oats 1 Cup coconut
2 egg whites ½ cup granulated sugar Pinch cream of tartar 1 cup Chipits chocolate mint chips
In a pot, bring 1st 5 ingredients to a rolling boil. Whisk constantly for 2-3 minutes. Remove from element and stir in oats and coconut. Using a teaspoon, spoon quickly onto cookie sheet or cutting board. Store when cool and set. Freezes well. Optional: push thumb into each cookie when warm and place 2-3 Cadbury mini eggs in centre.
Beat egg whites until foamy. Add sugar gradually and cream of tartar, beat until stiff. Fold in chipits. Spoon meringue into piping bag fitted with a 2 inch round tip. Pipe meringue kisses onto foil lined baking sheets and bake at 250° for 25-30 minutes or until firm to touch and lightly browned. Makes about 3 dozen.
1 Cup Chocolate chips 1Cup Butterscotch chips 8 oz Cream cheese (softened) 1 Cup Maraschino cherries (cut up) 2 Cups mini coloured Marshmallows 2 Cups Coconut (for rolling) Melt chips in microwave. Stir in cream cheese, cherries and marshmallows till well mixed. Shape into logs and roll in coconut. Wrap logs in wax paper. Freeze. Cut just before serving.

Ginger Nut Cookies ¾ cup shortening ¾ cup brown sugar 4 Tbsp molasses 1 egg 2 cups flour 2 tsp baking soda 1 tsp cinnamon 1 tsp cloves 1 tsp ginger 1 tsp salt Beat together shortening and brown sugar. Add molasses and egg. Mix well. Add the rest of the ingredients and mix together. Roll into small balls and dip into sugar. Place on a greased cookie sheet. Bake at 350° for 15 mins.

Dutch taai-taai Version 1:
1 cup sugar 3/4 cup honey or corn syrup 3 tsp instant coffee dissolved in one cup of hot water 4 cups flour 2 tsp baking powder 1 tsp soda 2 tsp cinnamon 1 heaped tbsp ground anis seed Melt together sugar, honey or corn syrup. Dissolve 3 tsp instant coffee in one cup of hot water and add to melted ingredients. Cool slightly, then add flour, baking powder, soda, cinnamon and ground anis seed. Spread in 8 x 13 pan. Bake slowly until done. Keep in an airtight container with a piece of bread.
Easy Nut Brittle 1 cup white sugar 1/2 cup white corn syrup (Crown) 1/8 tsp salt 1 1/2 cup cashews 1 tsp butter 1 tsp vanilla 1 tsp baking soda
Version 2:
1 cup syrup 1 cup honey 1 cup water 5 cups flour ½ tsp salt 2 tsp ground anis seed 3 tsp cinnamon ½ tsp coriander 1 tsp nutmeg 1 tsp cloves or all spice Mix first 3 ingredients in a pot and boil. Cool mixture and add dry ingredients. Put on buttered cookie sheet and bake 15 min at 375°. Cut in squares, cool completely.

In 2 L glass bowl, stir sugar, corn syrup and salt with wooden spoon until well mixed. Micro on high 6-8 mins. until syrup is pale yellow. Add nuts, mix well, micro 1-2 mins. until golden. Add butter, vanilla and baking soda until foamy. Spread smooth on cookie sheet. Work quickly. Tips: heat cookie sheet in low oven, lightly grease with butter, turn oven off and leave cookie sheet in oven until ready to use. Toast 1 heaping Tbsp sesame seeds and sprinkle on brittle while

Breakfast Bars with Nutella ¾ cup flour ¾ cup whole wheat flour ¼ tsp baking soda ¼ tsp baking powder ½ tsp ground cinnamon ¼ cup sugar ¼ cup melted butter or margarine ¾ cup unsweetened apple sauce 1 egg lightly beaten 1 cup trail mix* ½ cup Nutella Preheat oven to 350°. Coat 8x8 baking pan with cooking spray. In a large bowl whisk together flours, baking powder, soda & cinnamon. In another bowl whisk together sugar, butter, applesauce and egg. Add liquid mixture to flour mixture. Stir to combine. Fold in trail mix and spoon into baking pan. Smooth top. Bake for 25 – 30 min. or until toothpick comes out clean. Let cool for 15 min. Turn onto cutting board. Let cool. Cut into 10 bars. Spread top of each with Nutella. *Note: use signature trail mix with sunflower seeds, raisins, cashews, and pumpkin seeds.

Almond Tarts ½ cup white sugar 2 Tbsp butter 4 Tbsp rice flour 1 egg 1 tsp almond flavoring Pinch of salt 12 tart shells Jam* Cream sugar and butter, beat in egg. Stir in flour, flavoring and salt. Put 1 tsp of jam in bottom of each tart shell, spoon mixture on top. Bake in 350° oven about 30 min. * Apricot jam is very nice.

Mexican Wedding Cookies
1 14oz can of applesauce 1 cup of cooking molasses 2 tsp. baking soda 3 cups of all purpose flour 1/2 tsp. salt 2 tsps. ground ginger spice 1 1/2 tsp. ground cinnamon spice 1/2 tsp. ground clove spice 1/2 tsp. ground nutmeg spice 4 eggs 1 1/3 cup of sugar 2/3 cup of vegetable oil greased bundt pan whipped cream for garnish
100 g butter 250 g berry sugar 100 g white flour 100 g finely chopped hazelnuts 1 tsp vanilla icing sugar
In a small saucepan, bring the applesauce to boil, add the molasses and soda, blend well and cool. In a large bowl combine the flour, salt and spices. Beat the eggs until light and creamy, gradually add sugar and continue to beat until thick and golden, then slowly beat in oil. Add the molasses mixture and the egg mixture together and then fold in alternately with flour mixture. Pour into bundt pan and bake at 350 degrees for 1 hour and 10 minutes, or until the centre springs back and is firm. Cool the cake in pan, turn over onto plate and serve with whipped cream. This cake with be a hit with the entire family, it is delicious and moist, especially with a hot cup of tea or hot chocolate on a winter day.
1 (10.5 ounce) package large marshmallows 6 cups cornflakes cereal 1 teaspoon green food coloring 1/4 cup cinnamon red hot candies Melt margarine in a large pan over low heat. Add marshmallows and stir constantly until marshmallows melt and mixture is syrupy. Remove from heat. Stir in food coloring. Add corn flakes and stir until well coated. Drop mixture, by 1/4 cupful, onto cookie sheet. Using buttered fingers, quickly shape into individual wreaths. Dot with cinnamon candies.

Beat sugar and butter until creamy, add flour to the sugar butter mixture. Add vanilla and hazelnuts, mix well. Divide dough into small balls, about 2cm in diameter and place on a greased baking sheet. Bake for 15 minutes at 180 degrees Celcius. Remove and cool on a baking rack until completely cooled. Roll each cookie in icing sugar and serve.

No Bake Pumpkin Cheesecake Crust: 1 ½ cups graham crumbs 2 tablespoons brown sugar ½ teaspoon cinnamon 3 tablespoons melted butter.
To make crust , combine crumbs, brown sugar and cinnamon in medium bowl. Add melted butter. Spray a spring form pan with cooking spray and press crumb mixture firmly and evenly in pan. Refrigerate for an hour.
Filling: 1 cup 2% evaporated milk ¼ cup frozen orange juice concentrate, thawed 2 packages unflavored gelatin Knox 1 ½ packages light cream cheese at room temperature 1 ¼ cups packed brown sugar 1 tablespoon vanilla 2 cups light sour cream 2 cups pure pumpkin 2 tablespoons cinnamon ½ teaspoon each, nutmeg, allspice Combine evaporated milk and range juice concentrate in a small saucepan. Sprinkle gelatin on top and let stand 5 minutes. Whisk gelatin into milk mixture and cook over medium high heat stirring constantly until mixture just starts to boil. Remove from heat and let cool. To make the filling beat together cream cheese, brown sugar and vanilla at high speed of mixer until smooth, add sour cream, pumpkin and spices, beat again on medium speed until well blended and add milk mixture and beat until well mixed. Pour batter over crust smoothing the top and cover with plastic wrap and refrigerate overnight or at least 8 hours. Run a knife around edges and remove sides, serve with light whipped topping.

Pumpkin Deb’s Delight Spiced Oatmeal 1 cup butter sugar Pecan Cookies 11 cup cup brown sugar
Preheat oven to 350°; line two baking sheets with parchment paper. In a medium bowl, whisk together flour, oats, baking powder, baking soda, salt, pumpkin spice and cinnamon. In a large bowl, cream together the butter and the sugars on medium speed. Add the egg, followed by the pumpkin and vanilla extract Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain; stir in the pecans Drop 1 tablespoon of the dough at a time onto prepared baking sheets. Bake for about 10-12 minutes, or until cookies become light brown at the edges.

Mom’s Famous Polka Dot Shortbread 1 Cup softened butter ½ Cup white sugar 1 ¾ Cup all-purpose flour ¼ Cup rice flour 1 Pkg semi-sweet mini chocolate chips (300 grams) Cream butter and sugar till light and fluffy. Stir in the rest of ingredients. Press down into 9 X 13” pan. Bake in oven for 40 min at 275 degrees F. Cut into 1” squares while still warm. Cool and remove from pan. Spread onto crust. Refrigerate until ready to use. Add boiling water to jelly powders in large bowl; stir 2 min. Add berries; stir until thickened. Pour over cream cheese layer. Refrigerate 30 min or until set but not firm. Cover with remaining cool whip and reserved crumb mixture. Refrigerate 3 hours or until firm.

Divide dough in half and roll each half into log wrap in plastic, refrigerate 1 hour or until firm. Unwrap logs and roll in sugar, slice into ½ inch slices and cook on cookie sheets covered in parchment. Bake 11-13 minutes cool on racks.

Zucchini Brownies
Thimble Cookies
2 cups grated zucchini ½ cup canola oil ½ cup cocoa 2 tsp vanilla ½ cup chopped nuts 1 cup sugar ½ cup brown flour 1½ cups white flour 1 ½ tsp baking soda 1 tsp salt
½ cup butter ¼ cup sugar 1 egg yolk 1 tsp vanilla 1 ¼ cups flour 1 tsp cornmeal
Mix zucchini, oil and vanilla together. Sift dry ingredients together and mix into zucchini mixture, add nuts. Press into buttered 8 x 8 pan. Bake in 350° oven for 25-30 min.
Cream together butter and sugar. Add egg yolk and vanilla, flour and cornmeal. Shape into balls. Dip in unbeaten egg white, chopped nuts, indent and place on greased baking sheet. Bake in 350° oven for 5 min and dent. Bake 10 min. more. Fill with jam or jelly.

Whole Wheat Cinnamon Buns In bowl mix: ½ cup white sugar 1 1/3 cup warmed milk 4 Tbsp butter melted 1 tsp vanilla 1 tsp salt 2 eggs Beat well. Add 2 2/3 cups whole wheat flour missed with 3 tsp instant yeast and beat well. Add 3 ½ cups white flour a small amount at a time and beat well. Knead until a soft, smooth, non-sticky dough forms. Transfer dough to greased bowl and turn it to grease all over. Cover. Knead down every 20 – 30 min x 3. After last knead, let rise until doubled in bulk.
Filling: In small bowl mix together then set aside. 1 ½ cups brown sugar 2 tsp cinnamon Pinch of cloves Pinch salt

Speculaas Cookies 1 cup margarine 1 cup brown sugar 1 cup white sugar 2 eggs 1 tsp vanilla 2 cups flour 1 ½ cups oatmeal 1 tsp cinnamon ½ tsp nutmeg 1 ½ tsp allspice 1 tsp baking soda Cream margarine and sugar together. Add eggs and vanilla and mix. Add flour, oatmeal, cinnamon, nutmeg, allspice and baking soda. Mix until smooth. Drop in clumps of dough of about a teaspoonful onto a cookie sheet and bake at 350° for about 8 – 12 minutes. This is a Dutch recipe that is great for St. Nicholas day on Dec.6.

Rocky Road Candy
Prepare pans: Spread enough pans to hold 16 – 20 med – large cinnamon rolls with a generous amount of soft butter (bottom and up sides). Sprinkle bottom with sugar mixture to form a thin layer over the butter.
1 350 g pkg. semi sweet chocolate chips 1 300 ml can Eagle Brand sweetened condensed milk 2 Tbsp margarine or butter 2 cups dry roasted peanuts 1 250 g pkg miniature marshmallows
To Make Rolls: When dough is ready, turn out onto a lightly greased surface. Roll out to approx. 20”x12” rectangle. Spread soft butter over surface. Sprinkle with remaining sugar mixture. Roll up as a jelly roll and cut into 16-20 rolls. Place rolls cut side down in pans approx. 1” apart. Let rise until double in size. Bake at 375° for about 20 min. or until golden brown. Turn upside down onto foil & use soft scraper to get all of the liquid out of the pans onto the buns.
In heavy saucepan, over low heat, melt chocolate chips with Eagle brand and margarine: remove from heat. In large bowl, combine nuts and marshmallows; fold in chocolate mixture. Spread in was paper-lined 13 x 9 inch pan. Chill 2 hours or until firm. Remove from pan, peel off wax paper; cut into squares. Cover and store at room temperature. Tip: if desired, mixture can be dropped from teaspoon onto was paper-lined baking sheets.

Cranberry Squares 1 1/2 cup rolled oats 1 1/2 cup flour 3/4 cup butter 1/4 tsp. baking soda 1 cup packed brown sugar 14 oz. tin whole cranberry sauce Mix first 5 ingredients until crumbly. Pat firmly 1/2 of crumbs into 9”x9” pan. Spread sauce on top - sprinkle remaining crumbs on top of sauce. Bake 350oF for 35-40 mins. until rich golden brown.

Graham Wafer Chocolate Squares ½ cup butter 1 cup icing sugar 1 large egg yolk ½ tsp vanilla ½ cup coconut 2 squares chocolate, melted ½ cup chopped nuts 1 egg white beaten stiff Whole graham wafers (2 crushed for top) Line 8 x 8 pan with whole wafers. Cream butter & sugar, add egg yolk and beat well. Add vanilla, coconut, nuts and melted chocolate fold in stiffly beaten egg whites. Spread this mixture over wafers and sprinkle crumbs over top. Chill. This should be kept in refrigerator until used.

Coconut Tarts Line tart tins with pastry, put a tsp. of jam (strawberry or raspberry) in unbaked shells.
Mix 2 eggs well beaten, 1 cup white sugar pinch of salt 1 tbsp. butter 1 tsp. vanilla 1 cup coconut
Ultimate Butter Whipped Tart Shortbread ½ cup brown sugar ½ cup corn syrup 1/4 cup Crisco shortening 1 egg, slightly beaten 1 tsp vanilla ¼ tsp salt ½ cup washed raisins Pastry shells, frozen
Put 1 tbsp. of this mixture over jam in tart shells. Bake at 375oF for 20-25 mins. Enjoy!
Combine all ingredients except raisins. Divide raisins into pastry shells and add syrup. Bake at 425° for 12 – 15 minutes.

1 lb butter at room temp. 1 cup icing sugar 3 cups flour 1 cup corn starch Beat butter for 4 minutes. Add icing sugar. Combine flour and corn starch. Sprinkle into butter mix. Drop onto a greased cookie sheet. Bake at 250° for 35 minutes.

Christmas Hamper Applications are available at Hope Community Services until Dec. 13. Any person who feels they need a hamper may apply, Monday to Thursday 9:30 am - 4:00 pm - closed for lunch from 12 - 1 pm. Applicants must have proof of address and identification for all people living in the house. The hampers will be available for pick up on December 20th. Donations may be dropped off at Hope Community Services 434 Wallace St. All donations are gratefully accepted & volunteers are always needed.
