New markets lure farmers overseas Cameron Ginn Omineca Express Markets in Asia and the Far East are offering local farmers high prices for hay, also known as alfalfa. The domestic price of hay has long been stagnant, largely due to oversupply. But in highly populated, resource-scarce
nations abroad, like China, the United Arab Emirates and Vietnam, hay is up to five times more valuable, according to Mel Gulbranson, a local producer of hay with more than 35 years of farming experience. Hoping to capitalize on the global roundup of animal forage, Gulbranson is building a plant west of Vanderhoof that processes hay for export to countries in
Asia and the Middle East. Using a special baling machine, Gulbranson plans to compress hay into manageable sizes that can be loaded onto containers, transported to the port of Prince Rupert and shipped overseas. "We've been looking into this for years," he said. Continued on page 7
WorkSafeBC officials have completed their investigation into two fatal dust explosions and fires in northern B.C. sawmills earlier this year, and referred the cases to Crown prosecutors for possible charges. WorksafeBC vice-president Roberta Ellis said Crown lawyers will consider whether to proceed with charges under the Workers Compensation Act, which could be laid against individuals as well as the companies involved. Criminal charges were ruled out earlier in the investigation. If Workers Compensation Act charges proceed, the companies could face fines up to more than $500,000 and individuals could be sentenced to up to six months in jail. If prosecutors decide not to take charges to court, the case would be referred back to WorkSafeBC for possible administrative penalties related to cleaning, ventilation and other conditions at the mills. Two mill workers died and 20 others were injured when an explosion and fire tore through the Babine Forest Products sawmill in Burns Lake on Jan. 20, 2012. On April 23, a similar explosion killed two workers and injured 22 more at Lakeland Mills in Prince George. Investigators ruled out natural gas, oil and other fuel sources, leaving fine, dry dust produced from milling wood. WorksafeBC concluded that the likely ignition source was hot electric motor and gear reducer equipment running wood waste conveyors in low, confined areas of the mills. The Babine mill is co-owned by Oregon-based Hampton Affiliates and the Burns Lake Native Development Corp. Hampton CEO Steve Zika said he is disappointed that the company has not yet seen the final WorkSafeBC report. Greg Stewart, president of Lakeland Mills owner Sinclair Group Forest Products, also expressed concern that the referral to Crown counsel means the report is being withheld from the mill owners pending a decision on charges. After meeting with students and faculty during a brief ceremony in the foyer at NVSS, Doug presented a second bench to McLeod Elementary across the street. Dozens of students and a handful of teachers attended the ceremony in the library, where the bench was placed. It was a solemn moment and at least one student began to cry. "Whether they are just sitting and thinking, here students have a safe place to be and know they're safe," Doug said about the benches. "I hope they will be treated with dignity, compassion and respect."
Cameron Ginn Omineca Express Three benches have been built in memory of Loren Donn Leslie and her selfless compassion for others. On Tuesday, Nov. 27, two years after her death, three handmade benches were unveiled inside schools that Loren attended as a youth: Nechako Valley Secondary School, McLeod Elementary and Fraser Lake Elementary Secondary. By many accounts, Loren was a caring, non-judgmental person who spoke out against bullying and helped others overcome severe depression, preventing at least two people from committing suicide, said her father, Doug. "I wanted a place for kids to have where they could feel safe, where they knew that they're not going to be made fun of, poked at, or bullied," Doug said about the purpose of the benches. Doug remembers only fragments of his statements during the whirlwind of media inquiries that followed Loren's death, but recalls saying that he wanted to keep Loren's legacy of helping others alive. "We're trying to carry that on," he said. Henry Klassen, an area wood worker, donated the lumber to build the benches.

As he sometimes does with certain stands of trees that he logs for building homes, Klassen set the lumber aside for a special project after noticing its unique characteristics of knots and grains. "When we have an opportunity to do something for groups like this," said Klassen, "we try and help it along and make it all work." Built into the back of the bench is a metal plaque inscribed with a poem that Loren discovered in a library archive in Portland, Oregon, at age
13. Doug found the poem in Loren's journal after she died. "We've adopted that now for everything to do with Loren," said Doug. The benches at NVSS and McLeod Elementary took about 70 hours to make, said Rock Allred, the woodworking instructor at NVSS who built them by hand. For close to a year, Allred took his time to build and assemble the benches. "It was a lot harder then I thought

Express Fire chief advises businesses to prepare for safety inspections Cameron Ginn Omineca Express
Local businesses are being advised to prepare for building inspections by the Vanderhoof Fire Department. More than 230 local businesses will be reviewed for safety compliance over the next several months as department officials conduct the semi-annual inspections in accordance with the B.C. Fire Code. "We still have a ways to go before completing them all," said Fire Chief Joe Pacheco, who is in charge of carrying out the inspections, on Friday, Nov. 30. Pacheco will be assessing businesses to ensure that fire exits are unimpeded, emergency lighting is installed appropriately and fire extinguishers are being serviced once per year, among other things. This year, the fire department is employing laptops and special computer software to aid inspections, but the Vanderhoof Fire Department is requesting that area businesses prepare in advance to further reduce inspection times. A small shop, for instance, takes about one hour to walk through, but
a grocery store could take up to four hours to complete, explained Pacheco. "It makes it easier for us, when we come into your store, or your shop, and we do a quick walk around with you and you've already got the paperwork," said Pacheco. If documentation and service records aren't available, or if deficiencies are noted at the time of the inspection, Pacheco must return to the business for a follow-up visit to ensure that orders are being complied with. "Remember: you have a responsibility to keep your store safe," said Pacheco. As a result of the deadly mill explosions in Burns Lake and Prince George earlier this year, the fire department is working closer with area saw mills to prevent similar accidents from occurring. Although saw mills employ their own personnel to conduct safety sweeps, Pacheco said a second set of eyes can sometimes help detect potential hazards that may go unnoticed. "Our experiences so far have been nothing but total cooperation," said Pacheco.
As winter sets in and pellet stoves and furnaces are being used more regularly, Pacheco is also asking homeowners to ensure their smoke and carbon monoxide detectors are functioning properly. Pacheco also stressed the importance of maintaining chimneys, which can become clogged with creosote or even small animals, reverting carbon monoxide - a colorless, odorless and tasteless gas that can suffocate a person without warning - back down into homes. Logs infused with chemical additives are no substitute for old fashioned chimney sweeping, said Pacheco. Canadian Pathways School Opening – Clarification (Information about School District Business Company)
On November 23rd, CKPG TV News carried a story about the School District No 91 Business Company (SD91BC). In it the reporter spoke about the opening of a secondary school in China which SD91BC has been instrumental in helping the owner develop, called “Canadian Pathways Xianghe International High School.” As reported we too, believe that the opening of this school in Xianghe China is a good news story and are grateful to CKPG and reporter Cheryl Jahn for choosing to share our recent progress. Such stories often trigger questions and in anticipation of these the following facts and information are offered to avoid confusion and misunderstandings. 1. In order for any school district in BC to conduct business outside of the province of BC, it is required by BC provincial legislation that a “School District Business Company” be created and incorporated under regulations covered in the BC School Act and specific referenced sections of the BC Business Corporations Act. 2. These incorporated business companies are permitted to have only one shareholder and that shareholder must be the school district that through formal Board of Education motion has directed that the school district business company be formed. 3.

On the Board of Directors of the business company there must be representation from the District’s Board of Education, either through the appointment of the school district’s Secretary Treasurer or the appointment of an elected Trustee to act as a Director. 5. The Board of Directors cannot have more than 1/3 of its directors be associated with the Board of Education. Accordingly, the SD91BC Board of Directors has one of its seven directors who is a trustee appointed by the Board of Education. 6. The representative of the Board of Education appointed to serve as a director must also Chair the Audit Committee of the business company and does so in the SD91BC. 7. School district business companies are forbidden to use the public education grants of their shareholder, the school district, to conduct their operations and school districts cannot loan any funds from school district’s grants to a school district business company.
8. School districts can only provide services to a school district business company on a fee for service basis and such services if provided must be charged at market rates. 9. The SD91BC as an independent business, one year ago secured its own start-up funds to begin its operations. SD91BC is grateful to Northern Development Initiatives Trust’s Board of Directors and to four separate Community Futures Development Corporation Board’s led by CFDC - Stuart Nechako for their confidence in SD91BC’s loan application and original business plan used to secure the approved loans. The company has been drawing quarterly on these funds on an as needed basis during the past year. 10. School District No 91 Business Company is responsible for the repayment of the loans that it has acquired. 11. The Ministry does not allow school district business companies to “own” an offshore school license. 12. SD91BC has been greatly instrumental and is central to the development of the Canadian Pathways School in Xianghe, but it is not the owner of the school, or the authority working to achieve certification as an Offshore School. 13. SD91BC is a contracted
service provider of educational services to the foreign owner in exchange for its share of tuition and fees charged by the foreign owner. 14. SD91BC has assisted the owner in acquiring the necessary Chinese government approvals to develop the school in Xianghe during the past 18 months. 15. Certification as a BC Offshore School is a three phase process. SD91BC has assisted the owner applicant known as “the authority” in acquiring the first phase of full approval from the BC Ministry of Education called “Applicant Status”. While this level of approval allows the authority/owner to begin the process of becoming a BC Offshore School, two more steps are required before full approval and permission to operate and advertise as a fully certified BC Offshore School can be achieved. 16. The next phase in the process is a review and inspection by BC Ministry appointed officials that will hopefully lead to approval at step two called “Candidate Status”. This will likely take place in the spring of 2013 at the Canadian Pathways School in Xianghe, Hebei province, China. 17. After implementation of all recommendations from the Candidate Status review inspection, the owner/authority then will request the full certification inspection by
the International programs branch of the BC Ministry of Education as the third step in the certification process. With a positive inspection and approval the school may then finally be registered as a certified BC Offshore School by the BC Ministry. 18. Until that final approval is granted the school, its owners and service providers are not permitted to advertise as being a BC certified school, but if they are to achieve certification they must operate according to the regulations of certified schools to demonstrate that they meet all criteria needed for certification. 19. Following certification the Offshore School will be subject to annual inspections and reporting to ensure continued compliance with regulations and quality control by the BC Ministry of Education. 20. There are currently 34 BC Certified Offshore Schools in operation around the world and 16 more, including Canadian Pathways Xianghe International High School that are in Applicant Status. Of these 50 schools only six are associated with School District Business Companies and those six are associated with just three of BC’s 60 school districts. Attention Cluculz Lake Prince George Free Press
Given all the talk in this town about city hall dipping into your pockets, it’s ironic that for a good number of Prince George residents it may be the District of Vanderhoof that takes the largest tax bite next year. It’s also ironic, with the future of the Four Seasons Pool up in the area, that tax bite from out west is for a pool. Vanderhoof wants to build a pool. Nothing untoward there. And, because it will cost a fair chunk of change, they are going to the voters in a referendum in February. The pool won’t be cheap for property owners in the catchment area paying for the pool. The price tag is $86 per $100,000 of assessed property. For most, that’s a couple hundred bucks on the tax bill, for some, it could be a few hundred bucks. The catch for a bunch of Prince George residents? The catchment area for the pool includes Bulkley-Nechako Regional District Area F. That means Cluculz Lake. It’s no secret to anyone that a lot of Prince George residents have property at Cluculz Lake, whether they live there year-round or just a summer cabin at the lake. A lot of Vanderhoof residents do the same, however, we would suggest that the number of property owners at Cluculz Lake who identify themselves with Prince George far outnumber those who identify themselves with Vanderhoof. So, for Prince George residents who have property at Cluculz Lake, we suggest you find out about the pool referendum. There is lots of information on the regional district website. You might not object to paying for a pool in Vanderhoof. But you should at least be informed about it. And, whether you support it or not, exercise your right to vote in the referendum. Shipping oil… by rail or pipeline Are environmental activists doing more harm than good in delaying pipeline projects? Products have always found a way to market one way or another. Be careful what you wish for as there is a real factor called “unintended consequences” that emerges every time man tries to tinker with tried and tested methods. Most people are completely unaware of pipelines running underground because it is a less intrusive method which does not interfere with our daily surface activity. That is why the concept of transporting liquid products in underground (u/g) pipes was viable, economical and went
back to the Romans. In our modern civilized world, we bring water to our buildings in u/g water main pipes buried deep enough for frost protection. We flush our toilets and u/g pipes transport it to sewage treatment. Storm water from our roofs go into u/g pipes then to natural watercourses. Natural gas and electric u/g pipes all mostly go unnoticed. By contrast, surface transportation of product by rail noticeably affects our lives daily. Because of the enviro activists protesting all new pipelines, shipping oil by rail has become a real and growing alternative. The cost difference is about $3 more per barrel which
is a small obstacle with oil selling at around $85. Canadian tanker cars carry approx. 650 barrels each (U.S. 714 barrels) with 100 car trains used to deliver 65,000+ barrels per day to refiners and other rapid growth terminals all over North America. Rail operators have reported a 30 per cent increase in oil by rail in the last year, only curtailed by the shortage of tanker cars. Trains go over all the same streams and rivers that pipelines do and there is even a greater risk of spill by rail. For instance, CN’s 2005 Cheakamus river caustic soda spill near Squamish. So now the agitated antioil activists are trying to
stop ‘Oil by Rail’ but it’s too late and they couldn’t anyway because of the more than 100-years established infrastructure and practices of shipping liquid chemical materials by rail tanker cars. CN is one of the biggest oil by rail shippers in North America and they are double tracking to Prince Rupert. BNSF railroad (owned by big Obama donor Warren Buffet) is shipping 350,000 barrels per day of Bakken and Oil Sands oil mostly to the Gulf and wants to increase it to 1 million barrels per day. End violence against women Every year on Dec. 6, Canadians wear white ribbons and observe a minute of silence to show their support for ending violence against women. The occasion, informally known as White Ribbon Day, marks the anniversary of the 1989 École Polytechnique Massacre, in which fourteen women were singled out for their gender and murdered. While Canada has made important progress since that tragic day, we have a long way to go. In rates that are far higher than men, too many women continue to expe-
rience physical, psychological and sexual abuse. Parliament will soon have a chance to take practical action on one part of the problem—cyberbullying. Cyberbullying is a powerful, relentless and insidious tool used by children and adults alike. There is no escape, no respite. As one cyber-bullied young student told me: "You have no place to run, no way to hide. Everyone knows. You feel trapped and cornered forever. Your life is ruined!" Bullying by spreading false messages, criminal
harassment and defamatory libel is already covered under the Criminal Code if it is done using print, telephone, television or radio—but not on the internet. I have a bill to correct that and extend protection to electronic media, a long overdue step. This plan has been endorsed by the Canadian Teachers' Federation and the Canadian Association of Police Boards. Our children need this protection. Yet MP Bob Zimmer and most of the Conservative Party voted against this bill at second reading; one more
vote could have defeated it. Their opposition is difficult to understand. Parliamentarians should be working together to strengthen action on bullying, not trying to stop it. Please tell Mr. Zimmer to vote for Bill C-273 when it comes back to the House and take a small, but important, step against the cyberbullying of our children. Asian markets offer ‘huge’ growth opportunities

"They need more from other parts of the world," he said. "And we are the closest place to Asia that can grow good alfalfa." Wu plans to send about 40,000 tons of alfalfa to Chinese ports annually, but it could take some time before local farmers start producing the quantity and grade of hay that Wu desires. Right now, there is a shortage of high-quality alfalfa in the area, said Richard Martens, a seasoned farmer who was born and raised in the region. "The quality we have around here isn't dairy quality, so it's something we have to work towards producing," he said. At a meeting with students from the University of Northern British Columbia on Oct. 26, Martens said the local production of hay could quadruple if markets continue to improve and farmers start utilizing their land to the fullest extent. But there is still the issue of drying the crop for export, he added. Depending on the weather and the level of moisture in the air, hay can take between three and seven days to dry when rolled into round bales, Martens explained. "It's a very good crop in this area," said Martens, who produces about 4,500 tons of silage and hay each year on a dry matter basis. "It's one of our better crops to grow and it grows very well here, it's just getting it dry that's my biggest worry." Boelens says the climate and soils in the Nechako are suited to producing high quality alfalfa, and that the region itself presents good growing opportunities for producers. "The province supports these types of invest-

From front "We just needed to find a better market that would bring us farmers a decent return, and we finally found it. That was the hold up." Almost 25 per cent of farm land in the Nechako region is used for cultivating hay and field crops to support livestock, according to the Ministry of Agriculture (MOA). In 2011, area farmers produced a particularly large yield of mediocre quality hay that inundated the domestic market and dragged down prices. A 45 per cent decline in the number of beef herds since 2006 has also led to an excess of hay in the Nechako numbering in the hundreds of thousands of tons, said Gulbranson. Because of the surplus over the past two years, Gulbranson has managed to sell only a fraction of the several thousands of tons of hay he used to move annually. "I know people who were selling hay for $20 per ton, and through our plant, it will be worth five times as much," he said. When the plant starts producing, Gulbranson hopes to process the overabundance of hay in his storage sheds and fields for shipment to foreign markets. "We will be purchasing some amount of hay off others, but most of it is going to come from our own farm," he said. Sprawling with fertile agricultural land and less than nine hours away from the international shipping ports of Prince Rupert, the Nechako area is one of the most ideal logistical locations to build such a plant, as Robert Boelens, a provincial spokesman for the MOA, explained in an email. "As Canada’s Pacific Gateway, B.C. is the closest connection Asian markets have to North America, and our ports deliver hundreds of millions of dollars worth of B.C. food products each year to customers in China and Japan," he said. "The opportunities for growth are huge." Jud Wu, a local businessman, is also jumping on the forage bandwagon. Using a compression machine and shipping containers, Wu is starting an operation east of Vanderhoof that processes only high-quality alfalfa for export to China. “When I was in Vanderhoof a few weeks ago, I met Mr. Jud Wu and learned of the work being done to compress and export alfalfa,” said B.C. Agriculture Minister Norm Letnick. “I am very optimistic that the combination of the high quality product and the proximity to the Chinese market will lead to success, and increased B.C. alfalfa exports to China.” The high-quality alfalfa, which offers between 10 and 20 per cent more protein than regular hay, will be used as forage for some of China's 40 million dairy cows, a number that is increasing annually, said Wu. "They can not make enough feed for their cows," he said. With a population of more than 1.34 billion people, China, like many other densely-populated Asian

NEWS After going viral, weight loss program Express
For many people in Vanderhoof, a common New Year's resolution won't be to lose weight, but rather to keep it off. Ever since the Omineca Medical Clinic adopted a special weight loss program in early 2011, dozens of people in the community have collectively shed an enormous amount of weight. "By the time we hit January 2013, Vanderhoof as a community will be quite a bit lighter," said Jennifer Little, an office assistant manager at the clinic. The program, called the Robson Valley Lifestyle or the Eat For Life Program, has proven to be hugely successful among people who have repeatedly tried to lose weight, as well as those affected by diabetes, obesity and hypertension. "This plan has worked very well for our patients who do have some of these chronic conditions," said Little. "We're trying to focus on these types
of patients." From the central interior to the Kootenay's, many B.C. communities have adopted the plan, which has gone viral ever since it was introduced to the Town of Valemont by Dr. Stefan Du Toit, the program's creator. In Vanderhoof, people are lining up to enroll in the program, but patients are accepted on a basis of priority. "It's not just who went on the list first," said Little. "We're trying to focus our efforts, if you will, on the patients that definitely have problems because they're overweight." The program doesn't involve any pills and there is no cost to the patient to enroll, save for a voluntary $10 photocopying surcharge. However, physicians at the clinic do expect patients to commit to the plan's 12-week diet of nutrition and exercise. "It's a lifestyle plan; a low carb, low fat, low calories eating plan that patients

But given the risks associated with diabetes and obesity, medical supervision at the clinic is required to ensure that a patient's existing medications are being adjusted appropriately to correlate with the program's diet plan. At the end of the 12 weeks, if a patient hasn't quite achieved their goal of losing a certain amount of weight, they will have the knowledge and tools to continue adhering to the diet plan independently while consulting with their family physician. "It's a fairly easy program to follow," said Little. "Part of the problem isn't losing the weight. It's keeping it off that's more difficult."

Skilled workers in California sought to fill B.C. jobs Jen Reid B.C. Construction Association Following a recruitment trip to Ireland in October, which drew more than 2000 applications for skilled trades jobs in the British Columbia construction industry, a group of employers and representatives from the B.C. Construction Association (BCCA) will travel to California as part of their continuing recruitment mission, focusing on a job fair in Indio on Dec. 4. Increased demand for skilled workers – particularly in the northern parts of the province – is so critical that the BCCA launched the Foreign Skilled Workers B.C. (FSWBC) program in early 2012 to help B.C. construction sector employers identify qualified foreign employees and navigate the immigration pathways. The goal is to fill vacancies and keep projects moving. It is estimated that by 2020 there will be a shortage of 61,500 skilled workers in B.C. Continued on page 20

Marine safety plan BC CONSTRUCTION ASSOCIATION ...because we live here.
Last week, in this space, I talked about why we chose Kitimat as the site for Gateway’s marine terminal. This week, I’d like to discuss the various steps we’ve taken to prevent an incident on water, and the measures we’ve put in place to build a comprehensive marine safety plan for Gateway. Safety starts with a tanker acceptance program that’s as stringent as any in existence — and includes an independent review of all tankers, weeks ahead of their scheduled arrival. Tankers mooring at the terminal will be double-hulled and no more than 20 years old, and will be required — by independent third parties, before they enter Gateway’s shipping channels — to show a sound maintenance and operational history. As they approach Kitimat, all vessels will be boarded and guided by B.C. Coast Pilots with expert knowledge of our coastal waters.

Simulations conducted in varying weather conditions have shown that the largest tankers can be safely navigated without the help of tugboats. Still, Gateway is adding a tug-escort system as an additional safety measure. The Douglas Channel is already one of the deepest and widest inland waterways on North America’s west coast, and Gateway’s tug-escort
system, according to risk assessment data, would reduce the already unlikely chance of a grounding incident by a further 80 to 90 per cent. As another Gateway marine safety initiative, we’re introducing landbased radar to B.C.’s North Coast for the first time. This radar system will be bolstered by extra navigational aides such as lights and channel markers. These enhancements aren’t just for Gateway — they are for all vessels on B.C.’s North Coast. Groups who oppose this project use fear tactics. They’d have you believe an oil tanker spill is inevitable. It isn’t. Walk to end violence against women Charlyne Smilinski Join with community members from Saik'uz and Vanderhoof as we walk in Remembrance of women lost to violence and in support of a violence-free community. You can be the advocate, you can be the change and you can make a difference in the community one step at a time. We walk in memory of the missing and murdered women and their families who are all part of the painful legacy of the Highway of Tears, the 800 kilometres of Highway 16 between Prince George and Prince Rupert, and in hope for a future that does not condone or accept violence in any form. We walk on Dec. 6 as a statement of solidarity against violence against women. The National Day of Remembrance and Action on Violence Against Women was established as a memorial to the 14 women who were killed at Montreal's Ecole Polytechnique on Dec. 6, 1989. Vanderhoof is a very supportive com-
munity and a wonderful place to raise a family but cannot assume that violence does not take place in our community. We encourage everyone to not only acknowledge that violence is wrong but to take action in their own life. Spend time with your family and talk about the issues surrounding violence and determine how you can make a positive difference in your family and in community. In our community from January to October, 64 women have accessed the Omineca Safe Home shelter. As of 2012, there were 582 known reports of missing or murdered Aboriginal women in Canada, with B.C. recording more than any other province. Research shows that victimization rates are much higher among Aboriginal than non-Aboriginal women. Twenty-four percent of Aboriginal women said they had been victims of domestic violence in the five-year period ending in 2004. Geographic isolation, lack of access to services, lack of transportation and poverty heighten risk for Aboriginal
women every year in B.C. there are over 60,000 physical or sexual assaults against women; and in Canada, it is estimated that every year, 800,000 children witness a woman being abused. We can not and must not forget those who have been lost and we must stand together as a community against the violence. The Walk to End Violence begins at W. L. McLeod School Nechako Valley Secondary School and will follow a designated route through Vanderhoof; we will gather at W.L. McLeod School at 12 p.m. for the walk and gather again at the end of the walk at McLeod School for a presentation and some hot drinks. Come out and join us and show your commitment to help shape a healthy community. This opens the pipeline – with people in the experienced positions, we can hire more B.C. trainees.” “We have already received over 150 resumes from regional residents who have expressed interest in working in Canada,” Tom Freeman, county economic development agency spokesman, told City News Service. “We have received resumes from Texas, Nevada and Arizona as well.” The California event is hosted by the CanadaCalifornia Business Council and the Riverside County Board of Supervisors. Unemployment rates in California remain high and the construction industry has been one of the hardest hit, with employment still well below 2007 levels.

Nutritional Labels Part 2 Nutrition labels can be confusing, but they are there to help you make the right decision, or at least an educated one. Today’s article is a continuation of last weeks’ part one. Carbohydrates- an accumulation of all: sugars, starches and fibers in a food, this is why the total amount of a carbohydrate is not as important as what makes up that amount. Dietary fiber – this is a vital and necessary component for good health & proper internal cleansing. Without fiber your body tends to accumulate toxins and intestinal debris that reabsorbs back into your body leading to a host of problems. Fiber helps to clear out your internal ‘pipes’ so to speak. There are two types of fiber “Insoluble & Soluble”. Insoluble fiber is digested by the body but not absorbed, meaning it moves through your system and takes with it all the other stuff you’ve eaten , for ingredients look for whole grains, as well as nuts, seeds and beans. Soluble fiber absorbs water (so be sure to drink plenty) and gives your bowel movements a softer consistency, as well as keeps body systems lubricated, sources include: apples, oranges & oats. Generally on a label, the higher the fiber content the healthier the food, just don’t be mislead by sugar content. Sugar – not all sugars are the same: natural sugars that normally occur in certain foods are: fructose, glucose, galactose, lactose and maltose. It’s the added sugars you need to worry more about. Sucrose (table sugar) is high in calories, as is High Fructose corn syrup, glucosefructose combination or corn syrups. These sugars readily turn into fat, and other sweeteners can also throw off your body’s weight regulating hormones by interfering with insulin production. Our bodies are designed to crave sweet, but keep in mind that this was before refined sugars were readily accessible. We crave the sweet in milk, fruits, the naturally occurring ones which comparatively to what we eat today is not considered very sweet, so try not to overload your system. Aim for 28grams a day max. Starch – is found in foods such as rice, potatoes and grains. It is similar to fiber except the difference being that it is completely absorbed by the body (unlike fiber) that means that its calories can be stored as fat if there are too many. So don’t rely on starches for your fiber content. For nutritional labels you will often find a heading of starch followed by the amount of fiber you get from those starches, try not to use this to gauge your fiber intake, it is very important o get the proper fibers in your diet.
