Don’t call it scotch, it’s single malt whisky Earle Couper Black Press OYSTER RIVER — The waiting is the hardest part. Tom Petty sang that back in 1981. Patrick Evans and James Marinus are living it today. As owner (Evans) and operations manager (Marinus) of Shelter Point Distillery, the duo still has over a year’s wait before they can produce their first bottle of single malt whisky at their distillery in Oyster River, located halfway between Courtenay and Campbell River. “The earliest it can come out is June of 2014. It has to be in a cask for three years to legally be called a whisky in Canada. We’re 18 months in,” Marinus says, adding that same requirement Cont. on Page 4

The Shelter Point Distillery could produce its first bottle of single-malt whisky by June 2014.

applies in Scotland, home of the “water of life.” Marinus notes there is a chance their whisky – it’s only “scotch” when it’s from Scotland – might not be ready for consumption next summer. “We’ll reserve the right to say ‘Let’s hold on to that another year.’ I’m thinking we’re not going to have to, and we’re not going to want to. But we just don’t want to put a product out that’s not good.” And even if the whisky is good to go, Marinus says decisions will have to be made as to how much of the three-year-old do they sell and how much do they keep for their 10year and 12-year and 20-year bottlings. “I suspect year 10 will be one of our

with Don Daniels As we get into the second week of fishing in February the weather is cool and the fishing has been good in certain areas and sometimes the bite can be off. Destination points have been Willow and Shelter point for winter Chinook ranging from 12 to 15 pounds. Local guide Gary Stotts has been doing well fishing 140 to 160 ft using plug herring and dummy flashers,4 inch Tomic plugs are also working very well. Prawning has been productive on the back side of Quadra Island and Twin Islands. Before heading out for prawns always check for closures in the area.

Many fishermen this time of year will be heading to the local rivers to fish for Steelhead and trout. The Nimpkish river has some nice water to fish and some local anglers had a chance to fish it this month. For the fun of it I asked a number of local anglers what fly they used and if you had to use only 3 flies what would they be. The top 3 were Muddler Minnow, Adams Irresistible and Carey Special. Local tackle shops carry a full array of flies and the staff know what works at certain times of the year. In the Courtenayy a Comox area n prawning has been e slow in many of the areas and will pickk e. up in weeks to come. Many of the anglerss will be fishing offff Denman Island.

better years. Once we have a 10-year product out there we’ll be in full swing.” Whisky is judged by its age, but Marinus thinks the novelty of a Canadian single malt will entice people to try it. The only other single malt whisky distillery in Canada is in Cape Breton. Marinus says their whisky will be sold at their distillery at first, then go out through the provincial liquor distributers. The goal is to go across Canada then overseas, where lower taxes makes for a more profitable market. Single malt drinkers are a discerning demographic, and Marinus says he will make the Shelter Point whisky in the same fashion as they do in Scotland. Evans and Marinus Cont. on Page 5

The old diving gear is part of a new exhibit. off Ashby and back on its stand, Whiteside breathes a sigh of relief as she thinks about the divers from long ago who worked underwater with these heavy helmets and suits, plus steel shoes. “It only shows what these guys went through. Once they got on this stuff, they must have went down in a hurry,” she says. The Centre’s latest exhibit, “What Lies beneath: the Past, Present and Future of

Underwater Exploration.” This exhibit examines new technology and the evolution of diving from prehistoric man to modern times. The exhibit is on loan from the Maritime Museum of BC where it was a huge success in Victoria. Now the interactive display is at the Maritime Heritage Centre in Campbell River, and there’s a lot of cool stuff to see. There’s another old diving suit, a combination of a claustrophobic mask and heavy burlap “suit”; a hand-powered pump that provided oxygen to divers; a small bathysphere which is a spherical deep-sea submersible; and a classic spear gun with the tridenttipped spear. Visitors can also learn more about the Venus and Neptune underwater ocean observing systems located off Vancouver Island. These unique observatories on the ocean floor allow researchers and the public an up-close look at sea life. Admission is $5. imported two copper pot stills from Scotland and a master distiller from Scotland trained Marinus. “I want to be like the Scots as much as I possibly can, but still be Canadian. We are Canadian, we can be a little different, but I want to respect the traditions.” Shelter Point got its start after two men who were looking for investors to build a distillery approached Evans and Marinus. After many years of dairy farming on the Evans’ family farm, they decided to go for it. The dairy farm property proved a natural location. Marinus says an aquifer under the property provides an abundance of perfect water. They are growing their own grain and, in the longterm, will be looking to add a malting facility which will allow them to produce their single malt “from field to flask” a rarity even in Scotland, Marinus points out. As for the waiting, Marinus says the initial investors are not involved in the distillery. “Just Patrick

CAMPBELL RIVER – At the Maritime Heritage Centre, Glenn Ashby takes on the light- and heavy-lifting chores. The past president of the Maritime society is happily painting doorway trim on the entrance to the main hall when he gets called over to the new underwater exhibit by operations manager Trish Whiteside. There’s one more “little thing” that requires his attention: An old, cast iron diving helmet. This is where the heavy lifting comes in. With a quick clean-and-jerk, the two of us hoist the behemoth from its stand and lower it as gently as possible onto Ashby’s trim shoulders. He’s kneeling on the ground to further brace himself when he remarks on the weight. “Jeez, must be at least 60 pounds!” Fortunately, the U.S Navy Diving Helmet Mark V is designed to distribute its bulk through the shoulders and not Ashby’s neck. He opens the front glass porthole and smiles for the photographer. When the helmet is safely

Mature eagle enjoys an eye-level hang-out PORT HARDY – North Islanders are well used to seeing eagles on their doorsteps, but one indifferent raptor has taken this a little more literally than usual. Port Hardy resident Darren Wilson was surprised last week when he came outside to feed his cat and saw the full-grown bird perched on a fence mere feet from his front door. When it became clear that the eagle was unperturbed and determined to stay put, Wilson got his camera, soon followed by his neighbours and, as word spread, a steady stream of visitors wanting to grab a snap with the bird. The bird calmed speculation that it was injured by flying off after a few hours, but apparently enjoyed – or was at least unfazed by – all the attention since it returned to the same spot the next

morning. “It seemed healthy, said Wilson. “It would just come hang out for a couple of hours. As the eagle kept returning in the following days, more people came by to witness the spectacle and pose for photos or videos. Wilson estimated forty visitors in a single day last week. Theories abounded on the raptor’s unusual behaviour, with speculation that perhaps the bird had been released from captivity since it was comfortable around people or possibly it just had one eye on the cat’s food bowl and was waiting for an opening. “It’s really hard to say what’s going on without getting hands-on with it, said Mountainaire Avian Rescue Society manager Maj Birch, who confirmed that she had received several calls and

that January was typically a lean month for eagles and her speculation was that hunger was a factor in the bird’s behaviour. “When they’re hungry they’ll take more risks, said Birch. “There is a danger in feeding them though: they lose their fear of

all week but has kept its distance since

Tuesday when Wilson’s neighbour saw children throwing rocks at the bird. Birch had a question for the stone throwers: “If you were hungry how would you like someone throwing rocks at you? It’s just trying to survive, adding that everyone should respect wildlife. “It didn’t seem right, said Wilson of the kids’ actions. “Maybe it’ll work out for the best. They (eagles) shouldn’t get too comfortable around people. Wilson said he still sees the bird in the neighbourhood but it has kept it’s distance. “It was nice to have it around for the week or so, he said.

ntist Ask the De3x3.5

Question: Why is uoride3x3.5 so important? Answer: Fluoride has long been a topic of debate and

DR. DR. LATHANGUE LATHANGUE

although uoride use has its critics, the Centres for Disease Control and Prevention consider the introduction of uoride to improve oral health one of the top 10 great public health achievements of the 20th century. Dr. Kevin Lathangue Fluoride has a very unique property in that it can replace Calcium in our enamel. So when our teeth are exposed to acid (which is how decay starts) the acid leaches (pulls) calcium out of our enamel thereby weakening our teeth. Fluoride, when available, replaces the calcium in our enamel and makes our teeth more resistant to acid. So, in essence, uoride makes our teeth stronger because acid from bacteria won’t be as effective at decaying our teeth. It’s still very important to brush and oss because, even with uoride replacing our calcium, our teeth are still susceptible to decay. So 2-3 minutes twice a day for brushing and ossing every day is still the Canadian Dental Association recommendation.

Forest industry launches recruitment contest The Forest Products Association of Canada (FPAC), with support from the Government of Canada, is today launching TheGreenestWorkforce. ca, a resource tool that provides information on the dynamic direction of the industry and career opportunities on offer right across the country. The industry is also launching a competition to give eight promising students across Canada a paid Green Dream Internship that includes a four month paid summer

placement at a forest products company, an iPad Mini and a chance to win $5,000. “The forest products sector is now a future oriented business that is brimming with opportunity. It is now hiring and offering solid careers for those who care about their future, the environment and their quality of life,” said David Lindsay, president and CEO of FPAC. Under Vision2020, FPAC has a set the goal of recruiting at least 60,000

or more workers by 2020 to meet the growing demand for such professions as millwrights, electricians, engineers, sales staff, truck drivers, foresters, chemists and many more. “Our government’s top priorities are job creation, economic growth and longterm prosperity, so it is imperative that we match the skills of Canadians, especially younger workers, with the needs of the employers,” said Diane Finley, Minister of Human Resources and Skills Development. “Through

our partnership with the forestry industry, we are helping young Canadians to receive the skills and training needed to address skills shortages in the forestry sector and prepare them for future careers.” “We invite Canadians to visit the Greenest Workforce website to see the exciting opportunities now available. We also want to encourage students to consider applying for the internships to receive job training, skills development, and realworld experience within

was very irritable, hyperactive and crying with her head pain. I learned that she was given acetominophen regularly for the headaches and also for the cold and flus. My first goal was to get the child off acetominophen as it may cause rebound headaches due to chronic use. I explained to the mother that food intolerances were often the main cause of headaches and recommended the Electrodermal (EDS) testing to determine which foods she should eliminate from Amy’s diet. In the meantime I suggested she start eliminating the two most common food sensitivities, wheat and dairy, and I gave her some diet suggestions.

I sent her home with a homeopathic protocol for acute colds and flus, liquid calcium and magnesium to give her at bedtime, a vitamin B complex, fish oils and probiotics. Magnesium is a major deficiency for most people including children, and when children take this at bedtime it helps them sleep better as well as helps with irritability. Most importantly, it helps prevents headaches. Vitamin B complex really helps with irritability and energy. It also helps with taste buds and assisting children to make changes in their diet. willing to take the fish oil daily this way. Probiotics are critical for the health of the immune system, 50 per cent of which lines the intestinal tract. A potent probiotic HMF (Human Flora), lines the intestinal tract acting as a barrier to the outside world of microbes. This tasty powder was easy for Amy to take. I explained to the mother that most people who take this just don’t get sick over time. On the second appointment, using the tasty wheat-free and dairy-free recipes on my website, we set out a new diet plan for Amy with the information from the EDS testing. It is challenging to come up with substitutions for milk and bread but it is possible with many of the products available on the market today. After one month Amy was much happier at her next appointment. Her headaches were all but gone and she had had no recurrent infections. There was more work to do with the diet and I explained the whole family would benefit over time. Amy’s basic program is in place and the acute remedies were no longer needed but could be used in the future if needed. With the positive changes in Amy I would expect learning disabilities to be averted.
