Driving public at risk

Quesnel RCMP are asking the motoring public to report any suspicious activity or suspicious people in and around the Bellos Railway Overpass on Highway 97 just north of Quesnel after receiving a number of recent reports of unknown persons dropping objects onto the highway at this location. The latest incidents occurred shortly before 7:30 p.m., Wednesday (Oct. 16) after the driver of a transport truck and the driver of a commercial bus reported that their vehicles were struck by objects dropped from the railway overpass at Bellos crossing. “The potential for significant injury and/or death by this senseless act is unbelievable,” media relations officer Cst. Krista Vrolyk said. “The danger posed by falling objects could result in a major collision which could quite easily be fatal. “RCMP are asking the public to be vigilant in reporting any suspicious activity in this area.” Anyone with information regarding these incidents is asked to call the Quesnel RCMP at 250992-9211. Or, if you wish to remain anonymous, call CrimeStoppers at 1-800-222-8477.

Council endorses community plan

t’s time again for ourQuesnel: Integrated Community Sustainability Plan (“ourQuesnel ICSP”). The final document has been endorsed by council and is available for all to view on the city’s website, www.quesnel.ca/ ourquesnel.html. This is our community plan and we can all take great pride in its development. The process has begun – strategy areas have been defined as follows: • Arts, culture, recreation and leisure; • Building and sites; • Communications and connectivity infrastructure; • Economy, work, education, and skills training; • Ecosystems, natural areas and parks; • Energy, water, resources and waste; • Food; • Housing and land use • Social and community wellbeing; • Transportation and mobility. Our desired outcome statements have been created, the current reality

has been documented and we are moving forward to actions. Any of the city’s actions and dayto-day operations are filtered through its three-year strategic plan, giving consideration to the desired outcomes in the ourQuesnel ICSP, thus leading the way to greater sustainability. We will be reaching out to our partnering organizations through a fall session to see how they are able to utilize the ourQuesnel ICSP in their day-today activities and for future growth. I hope to see many of you participating. That is what is going to make our great community even better. The City of Quesnel is currently focused on a number of objectives set out in the 2013 strategic plan, also available on our website, www.quesnel.ca/ DocumentBank/ Annual%20Report/ Annual-Report.pdf. Here are just a few of our markers to date:

Affordable housing

An affordable housing strategy has been endorsed

by council. A detailed review and consideration of policy amendments will be brought back to council in the coming months. The city is developing its master parks plan and is currently working on a scoping exercise with staff and compiling a sensitive areas inventory for Quesnel.

Continue work on the West Quesnel Land Stability Program

Paving and landscaping from the 2012 work season is now complete and we continue to monitor the results of the dewatering program. A public information meeting took place earlier this year to provide residents with an update on the work to date and the next steps in the program. We are currently working on a plan to lobby for the next phase of the work program. We are working on strategies to increase volunteers at the Quesnel Volunteer Fire Department and other community groups

Tower of Song slated Tower of Song is a creative tribute to the music of Leonard Cohen, presented by two celebrated B.C. singer/songwriters: Oliver Swain and Glenna Garramone. And Gold Pan City music lovers can check them out, Oct. 17 at Dragon Studio at 3501 Estate Road Dragon Lake. Doors open at 6:30 p.m. A night of rare and classic selections from the Leonard Cohen cannon fearlessly interpreted by these artists, with a few original compositions and readings, round out an evening that celebrates Canada’s greatest bard and his influence on modern songwriting. Hear Cohen’s timeless songs arranged for two voices, banjo, string bass, piano and guitar. Together Swain and Garramone have crafted vocal arrangements of the great works of Cohen that will satiate and astonish the die-hard Cohen fan in everyone. After several sold-out shows on Vancouver Island, B.C., Tower of Song continues to expand their geographical range to put “more

power in the tower!” Produced by Garramone for the first time in June of 2011 at Vancouver’s Media Club, Tower of Song gave Swain and Garramone the chance to collaborate on Cohen’s rich material, and the chemistry was obvious -- to them and to the packed house at the Media Club. In the spring of 2012 they teamed up again for a sold out show at Victoria’s Hermann’s Jazz Club, with production duties and the artistic direction being shared as collaboration between the two artists. They frequently collaborate with special guest artists to showcase the broad range of Cohen’s writing. Previous guests include Leah Abramson (The Abramson Singers), Spoken word poet Shayne Avec I Grec (Two Dope Boys in a Cadillac), Anne Schaefer, Richard Moody, Melisa Devost, and Kent McAlister. Visit http://towerofsongmusic.com/ for more info. See PAGE A6

by developing a community volunteer database through Quesnel Community and Economic Development. This database is designed to identify volunteer gaps, research deficits and surpluses and attract

new volunteers. We are excited to be moving forward with the process and hope to engage all of our community groups in the future. Stay tuned for more on ourQuesnel: Integrated community sustainability plan.

Husqvarna Viking gives away sewing machine valued more than $10K

In honour of Alex Fraser The proposed North Cariboo Multi-Centre will forever honour former Quesnel resident and MLA Alex Fraser with a seat purchased in his name.

Observer file photo

Husqvarna Viking is a worldwide organization that designs and markets high-quality sewing and embroidery machines as well as sergers to passionate sewers all across the globe. Husqvarna Viking Canada held a “Red Carpet Gem” sweepstakes in conjunction with its new machine prelaunch campaign, which gave one lucky winner a chance to win a Designer Diamond Royale Sewing and Embroidery machine – the new top of the line machine launched at the annual Husqvarna Viking convention in September. The contest ran on the Husqvarna Viking Facebook page over a four-week period – between Aug. 19 – Sept.15, drawing attention from sewing and embroidery enthusiasts all over the country! The lucky winner of the grand prize – Darci Paice-Bailey from Prince George, B.C. – was selected via a random draw Sept. 16. Husqvarna Viking Canada, told the good news to Bailey on the day of the draw which left her overwhelmed and

more than thrilled to say the least. In addition to Bailey’s prize machine, she also receives a $3,000 bonus package which was on offer to all who purchased the Designer Diamond Royale sewing and embroidery machine during the pre-launch campaign period. This is an exciting time for SVP Canada, our new Designer Diamond Royale sewing and embroidery machine is a fitting addition to the Husqvarna Viking machine line up. The design and functionality of the machine gives sewers the flexibility they need for achieving sewing success. We are excited to know that Bailey has

already begun making plans for some fun and creative project ideas she and her sewing friends will design on her new machine. They have even begun downloading sewing projects and their hockey team is planning to embroider their names on their jackets using the new Designer Diamond Royale machine. All the best to Bailey as she begins her new and exciting sewing journey. Live show a ‘journey

from A4 Performing on Banjo and String Bass, Oliver’s live show has attracted a lot of attention over the last year including that of Tamara Kater, Executive Director of Folk Music Canada. “Since I first discovered him in 2008, Oliver Swain has been one of my very favorite artists – especially in a live setting. His performances are a musical journey that takes you from haunting old-time melodies to soaring new songs... sweeping vocal stylings, dazzling and dramatic skills as an instrumentalist, an evening spent with Oliver Swain will leave you breathless and joyful,” she said Glenna Garramone’s music is a reflection of her fascination with the edge. Inspired by the geography and spirit of the places she has lived, from Nunavut to Hawaii, she harmonizes the experimental with the classical and the unexpected with the organic. What happens when you meld a classically trained pianist and vocalist, a bi-lingual songwriter, a guitarist, and a dancer into one person on stage? You might witness an approximation of Glenna Garramone’s live show. Glenna Garramone crafts “raw, emotional, and utterly captivating” songs (John Threlfall, Monday Magazine), using anything from piano to her tap shoes, or a shaker made from lentils in a film canister. Advance tickets only, available at Quesnel Music, or call 250-255-2483.

he hashtag world is blowing up after a Massachusetts school punished a student for driving a drunk friend home. According to a number of news sites, grade 12 student Erin Cox was suspended for five volleyball games and stripped of her position as captain after she drove a drunk friend home. Sources say Cox was called by a friend who was at a party and unable to drive home. As she arrived to pick up her friend, police showed up and arrested several teens and warned many others (including Cox). Upon hearing of the situation, the school promptly punished Cox, even after police wrote a statement saying she had not been drinking at the party. Cox’s family has since tried to fight the punishment but a court ruled the decision was out of their jurisdiction. What are we teaching our future leaders by punishing them for the right thing? Surely the “zero alcohol tolerance” of the school does not apply in this case. What would they have their students do – tell their friends no? With all the amazing programs such as Quesnel’s own PARTY program, imploring our youth to never drink and drive, a decision such as this flies in the face of all the progress we’ve been making. Teens will drink. It happens. But for the love of all things holy, if we raise our future leaders to make smart decisions such as calling for a safe ride home if they’re under the influence, why would we turn around and punish not only them but their driver? How many lives have been lost because they were afraid to call home? How many people have climbed into a vehicle with a drunk driver for fear of a missed curfew? These teens did the right thing by calling for help, and responding to that call. To punish them is not only wrong, it’s dangerous. –Autumn MacDonald, Observer

The breast is yet to come

hen you’re healthy, it’s easy to not think about it and take wellness for granted. And then, just like that, your whole world can change and thoughts of your health can become all consuming. That’s what happened to my friend Dona Sturmanis in the summer of 2012. One minute she was showering, thinking about the day that lay ahead and all the things on her to-do list, the next minute all thoughts turned to worry after discovering a sizeable lump in her breast. Immediately she went to the doctor for tests and to her surprise she didn’t just have one simple mammogram like some might expect. Over the next month and a half she went to many appointments at various health care facilities and underwent a series of tests and biopsies in several different space-age machines before finally learning her prognosis. And then the news she dreaded was delivered: the lump in her breast was malignant and drastic measures would be required

Lori Welbourne

On A Brighter Note in order to save her. Devastated, she went home, opened a bottle of wine and called her three closest girlfriends, who came over to support and cry with her. And then they, along with some other dear friends, stuck by her side as she courageously fought for her life. After hearing her medical options and doing some research of her own, Dona chose to have a single mastectomy. She then endured chemotherapy and radiation and became sick, exhausted and muddleminded from the treatments and prescription drugs she was given. She also lost her hair, fingernails and toenails. What she didn’t lose, though, was her will to survive, or her ability to laugh.

Being a self-employed freelance writer for the last 30 years, and without a life partner to help out, or an insurance policy to kick in for lost income, she’s been working hard to catch up financially. “I’d like to one day get reconstruction,” she said. “But the most important thing to me right now is just making enough to pay my bills and not lose my home.” Dona considers herself one of the many self-employed people who fall between the cracks. “I thought I was immortal and I wasn’t,” she said when explaining why she never paid the high insurance premiums that could have helped her when she needed it. “This cancer threw me for a loop.” With one in eight women developing breast cancer, her advice is to perform regular self exams, get mammograms, and never take health for granted because this can happen to anyone, regardless of genetics or lifestyle. “I should have removed both,” she joked about the loss of her one double-Dsized breast. “It would have been nice to be flat chested for a change. And what a great fashion statement.” After decades taking care of her esthetics, and believing that a big part of her identity was in her physical attractiveness, it was eye opening after she’d seemingly lost it. “I remember looking at myself in the mirror one day,” she said. “And thinking, you know, this isn’t so bad.” Realizing that a woman’s sexuality is so much more than breasts and beauty, she was able to embrace what she has to offer on a deeper level and found what she possesses within is far more beautiful than her outward appearance could ever be. Dona’s cancer is now in remission. Her hair has grown back, and so have her nails - stronger and better than ever. What hasn’t grown back is the savings she burned through during all that time when she was too ill to work.

FEEDBACK

Encouraging discussion

Editor: Re: Sharon Hill Oct. 2 Feedback. As Co-Chairs of the North Cariboo Joint Planning Committee we encourage the community to engage in discussion of the pros and cons of any issue that has the potential to impact the community. We respect Ms. Hill’s right to share her point of view and welcome all residents to debate this important issue however we are concerned that some of the information included in her letter is factually inaccurate. It is important that the community feel comfortable making an informed decision in this referendum. In light of that, we feel it is important to clarify some of the information in Ms. Hill’s letter. • The efforts of the Fundraising Committee are commendable and the level of support from individuals and businesses in our community has been excellent. The fact that the project has not been able to secure sufficient senior government funding to proceed is not an indicator of the level of community support for the project. This is why a referendum is being held. A referendum is the most democratic way for elected officials to determine the level of support for a major initiative like the Multi-Centre project. Community support for the project will be determined by the November 9 referendum. • It should be noted that all of our recreation facilities are subsidized. This includes the Riverfront Trail network, all of our parks and sporting fields, the Arts and Recreation Centre, the Twin Arenas, the soccer complex, the Agriplex, the rodeo

Letters to the Editor

grounds and community halls. These facilities are provided as a service to meet the needs of the community. A community without trails, parks and recreation facilities would be much less attractive and livable. • The anticipated impact on taxation for the Multi-Centre is approximately $60/ $100,000 of assessed residential value, not $80/$100,000 as stated in Ms. Hill’s letter. • The Quesnel Millionaires organization paid all bills owed to the city/CRD in full. To suggest otherwise is untrue and unfair to the former owners of the club. • Residents of the City of Quesnel pay some of the lowest taxes for a community our size in the province. Of 31 similar sized communities in the province, the City of Quesnel has the third lowest total residential property taxes and charges paid on a representative house. The city and CRD are committed to providing information so people can make an informed decision. We encourage the public to attend one, or more, of the public information meetings so they can have their questions answered. Anyone seeking information regarding the project can find many documents and other information on the City of Quesnel website at http:// www.quesnel.ca/multi-centre. html. Additionally, people may also email their questions to multicentre@quesnel.ca or contact staff directly at City Hall or the Regional District office. NOTICE TO ALL QUESNEL RESIDENTS Snow Markers

Please be advised that with snowfalls of four inches or greater, the City of Quesnel removes the windrow of snow left by snow plows at the entrance to each driveway. It is the responsibility of the homeowner to mark any obstructions that may be damaged by backhoes clearing the driveway entrance (i.e. retaining walls, planters, shrubs, decorative bricks etc.). Please mark by using a brightly colored stake about 4 ft long and place it in front of the obstacle.

Markers are available at the Public Works Office located at 21 Johnston Bridge Loop. The City of Quesnel does not accept responsibility for damages that occur within the road right of ways if obstructions are not properly marked.

Cate Blanchett provides a stunning performance as a woman forced to lower her standards of living through no fault of her own.

Thank you for your cooperation on this matter. For inquiries please direct to Alec Darragh, Superintendent of Public Works, during regular work hours at 992-6330.

Quesnel Film Club presents

Blue Jasmine

The final film in the Quensel Film Club’s truncated fall schedule is Blue Jasmine, Oct. 24 at the Carib Theatre, 6:30 p.m. showtime. After recent excursions to Paris and Rome, Woody Allen returns to American shores with his latest film, Blue Jasmine. Featuring a wonderful ensemble cast that includes Cate Blanchett, Alec Baldwin, Sally Hawkins and Peter Sarsgaard, the film follows a high-society New York housewife who is forced to deal

with the economic and emotional consequences of her husband’s crooked financial dealings. Jasmine is used to a life of wealth and privilege, but after her husband Hal is jailed for a Madofflike Ponzi scheme she loses everything and is forced to move in with her blue-collar sister Ginger in San Francisco. As she struggles to build a new life for herself without her husband’s illicitly obtained wealth, she must learn to accept her new reality and face up to the past.

THEATRES

In terms of Allen’s body of work, Blue Jasmine is more Crimes and Misdemeaneors than Midnight in Paris, combining the writer-director’s characteristic humour and ongoing fascination with love, desire and fate with a timely and resonate examination of contemporary morality. Propelled by an extraordinary performance from Blanchett and featuring surprising turns by comedians

Louis C.K. and Andrew Dice Clay, Blue Jasmine is a thoughtful and heartrending examination of what it means to lose everything. Tickets for Blue Jasmine are $9 (regular admission) and $7 (seniors) with film memberships included in admission. Woody Holler brings Western Swing to the Quesnel stage In Quesnel, Live Arts second show Oct. 23, Woody Holler brings a unique take on Western genre. A Canadian prairie boy, this veteran performer has been yodelling since he was a little shaver. He later fell in love with jazz which led him to develop his unique crossover into Western Swing. Woody Holler grew up hearing the songs of the cowboy. Although he was later trained in opera, a sense of belonging and nostalgia held him close to the early Western genre. Influenced by the crooning styles of Gene Autry and Roy Rogers as well as the rustic blue yodeling of

Jimmy Rodgers and danceable swing of Bob Wills and the Texas Playboys, he developed his lyric yodel on the wideopen spaces of the Canadian Prairie. Woody Holler’s orchestra consists of Winnipeg’s finest folk/jazz musicians creating a western swing style that Woody defines as “jazz from the saddle”. Richard Moody on violin, Greg Lowe on guitar and Daniel Woody Holler to perform in Quesnel Oct. Koulack on double 23. Google image bass add clever arrangements that and style. The repertoire is are rich with virtuosity eclectic, fun and fascinating,

featuring finger-snapping swing beats, honeyslowed love croons and show stopping “extreme” yodeling. Woody Holler was nominated for the 2010 Canadian Folk Music Awards. Late trip buries ‘Roos

Stumble late in third turns to a loss at Lac La Hache JONAS GAGNON Observer Reporter It all went sideways in the last half of the third period. “For two periods we outplayed them and out chanced them, but their goalie played exceptionally well,” head coach Brian Kozak said. The 'Roos and Tomahawks teetertottered their way through 50 minute of play before a quick succession of Lac La Hache goals sent them spiralling to a 6-2 loss. The 'Roos started goaltender Shane Mainprize in his first start in the CIHL, and through the first period he, along with Lac La Hache goalie, William Sellers, stayed solid between the posts. The ‘Roos rotated through their four offensive lines, pushing hard through the first period and taking control of the game, said Kozak. Despite the rush, they were unable to solve Sellers leaving a pair of zeros on the scoreboard for the intermission.

It looked good as the Tomahawks were already killing a penalty when Mainprize hit the bench, but Wilfred Robins put an end to any comeback dreams with an empty netter with seconds over one minute left in the game. It was Kozak’s first game behind the bench and overall he said he’s happy with his lines and the depth of offensive skill he has on the bench. This weekend the ‘Roos play a double header against the Williams Lake Stampeders, last year’s Coy Cup winners and this year’s Coy Cup hosts. It’s a heavy beginning to the year said Kozak, adding next weekend the ‘Roos will play the Stampeders again as well as the Smithers Steelheads, last year’s league winners, followed once again by a bout with the Stampeders. “It’s a really heavy laden start to the season,” Kozak said. “But it’s a good challenge for the guys to play up to.” The ‘Roos play this Friday and Saturday in Williams Lake, with a 7 p.m. face off for both games.

On the MEND Quesnel families could soon be learning fun ways to get fit and healthy thanks to the first session of a free healthy lifestyle program starting in January. The MEND (Mind, Exercise, Nutrition...Do it!) ten-week healthy lifestyle program is available to families with children aged between 7 and thirteen who are above a healthy weight. Sessions aim to improve children's physical activity levels, nutrition and self-esteem. With one in four children above a healthy weight, the program is delivered by the YMCA of Northern B.C. to improve the health of local kids. MEND will take place twice a week at Quesnel and District’s Arts and Recreation Centre from January 15 – March 22. During the program, families will learn about nutrition and how to make healthy choices as well as take part in fun games and activities. MEND is not a weight loss program, rather it is about

empowering children and their families, and uses a practical interactive learning approach to teach children and parents skills for healthy living. MEND was developed in the United Kingdom and tested by leading experts in child nutrition, child behaviour and exercise. In 2011, MEND was adapted to align with Canadian dietary and policy guidelines. Independent research demonstrated that children who attended the MEND program experienced long-term health benefits, including weight loss and improvements in fitness and selfesteem. “We have delivered this program in Prince George twice and are thrilled about the expansion into Quesnel,” says Cheryl Wallace, YMCA Director of Association Services. “When we offered MEND in Prince George this year, we attracted sixteen families over the two sessions.” See page A18

The B.C. environment ministry has released its promised study of the current state of crude oil spill response capability, tracking the growing tonnage of petroleum shipping along the West Coast and estimating response time and effectiveness if oil was to spill at sea. Oil recovery in computer simulated oil spills could be as high as 25 per cent after five days, or as low as four per cent for Alaska crude, with another quarter evaporating. The study was commissioned to back up Premier Christy Clark's conditions for B.C.'s approval of expanded heavy oil shipments, either from twinning the TransMountain pipeline from northern Alberta to Burnaby, or the proposed Enbridge Northern Gateway project across northern B.C. to a new tanker port at Kitimat. Environment Minister Mary Polak said the three-volume study shows the need to increase response capability before the B.C. government would consider increased oil shipments. "While we respect federal jurisdiction over marines spills, we must ensure B.C.'s interests are being met, and that means adding more resources to protect our coast," Polak said. The three-volume report also details the huge and growing traffic that exists now. Shipping data show a 17 per cent increase in marine traffic volume from 2011 to 2012. An estimated 110 million cubic metres of petroleum products per year are shipped, about a third of which is crude-like bunker oil carried as fuel on ships of all kinds. The biggest tanker cargo is 38 million cubic metres of mostly Alaska crude a year. The study includes recovery estimates for seven oil spill scenarios, six of which assumed a spill of Alaska North Slope crude that has been shipped by tankers down the B.C. coast to U.S. refineries since the 1970s. Two scenarios involve an Alaska crude spill in Dixon Entrance, with four per cent recovery in summer an three per cent in winter. One scenario examines a summer-time spill of diluted bitumen in the Juan de Fuca Strait, with response from Canadian and U.S. ships and oil recovery equipment. It estimated 31 per cent oil recovery after five days, in summer conditions with daylight-only operations. Diluted bitumen tanker shipments from Kinder Morgan Canada's Burnaby terminal hit a high of 69 in 2010. The expansion would mean 300 tankers a year in and out of Vancouver harbour. The federal government has launched its own research project to model the drift and behaviour of a bitumen spill in the ocean around Kitimat, and funded marine weather forecasting to facilitate shipping.

NOW IS OUR TIME It is up to us, the residents of Quesnel, to raise the funds to build our Multi-Centre and now is our time. By supporting the North Cariboo Multi-Centre you are investing in the future of our community in so many ways.

It’s easy - here is how individuals and companies can help: • Buy a seat for $250, dedicate it to someone you love or as a legacyif every seat sold, we would raise $500,000; • Buy a piece of the North Cariboo Nature Mural starting at $25; • Sponsor the theatre; • Sponsor a room in the multi-centre; • Make a donation. Many packages have been delivered to businesses and individuals. If you are ready to make your donation or would like more information, please call Carol @ 250-991-2878 or Bernice 250-747-1727.

Quick and easy molten lava cakes

aspberry coulis is an easy way to pretty up freshly baked molten lava cakes for company. Don’t drain the raspberries- you want all that raspberry juice in the sauce. You can use frozen strawberries if you prefer strawberry coulis. Prep time: 15 minutes Cook time: 9 minutes Stand time: 5 minutes Ingredients 2 cups (500 mL) whole frozen red raspberries, thawed ½ cup (125 mL) icing sugar 1 tsp (5 mL) fresh lemon juice 1 pkg (300 g) President’s Choice The Decadent Molten Chocolate Cake Baking Mix 2 eggs ¼ cup (50 mL) unsalted butter, melted Instructions In blender, purée raspberries and their juices, sugar and lemon juice until smooth. Pour through a fine-mesh sieve set over a bowl. Using rubber spatula, press purée

through sieve. Discard solids. Refrigerate coulis. Preheat oven to 425°F (220°C). Generously butter six ¾-cup (175 mL) ramekins. In bowl, combine cake mix, eggs and melted butter. Using wooden spoon, stir for 30 seconds to moisten. Scrape side of bowl. Stir for 1 minute. Batter will be very thick. Spoon evenly into prepared ramekins. Place ramekins on baking sheet. Bake in centre of oven for 8 to 9 minutes or until edges are set but centre is still soft. Remove from oven and let stand for 5 minutes. Spoon 2 tbsp (25 mL) coulis onto each of six dessert plates. Carefully invert one cake onto each of the plates. Dust with icing sugar and garnish with a mint sprig, if desired. Save remaining coulis to drizzle over ice cream or yogurt. Makes 6 servings. Delicious mushroom, Parmesan pasta Ingredients 1lb wild mushrooms (porcini, cremini, oyster, shiitake etc)3/4 pound fettuccine 2 tbsp unsalted butter2 tbsp olive oil3 cloves garlic, rough chopped1/2 tsp red pepper flakes2 tbsp fresh Italian/flat-leaf parsley, rough chopped1/2 cup freshly grated Parmesan cheese1/4 cup toasted pine nutssea salt & fresh ground pepperextra Parmesan to serve (optional)extra parsley to serve (optional) Method Bring a large pot of generously-salted (very important as this dish is so simple) water to a boil and cook pasta to just under al dente according to package instructions. If the package says 9 minutes, take out around 7. Reserve 1 cup of starchy pasta water before straining. In a dry, heavybottom skillet set over medium-high heat, brown mushrooms in batches until golden and crisp. I browned each variety of mushroom on its own as they may have different moisture levels. It should take about 6-7 minutes per batch to get them nice and golden -

don’t rush this part. It’s the big flavour maker!Once all your mushrooms have been browned, remove everything from the pan. Add the butter and olive oil to pan and let it get shimmering and hot. Add the garlic and let it cook until fragrant, 1 minute. Add the mushrooms, parsley and red pepper flakes and sauté until everything is combined, 1-2 minutes. Remove from heat. Strain pasta (don’t forget to reserve 1 cup starchy water), and add back to large pot. Scoop the mushroom mixture into the pasta, making sure to really scrape all the good bits from the pan, with the Parmesan cheese and 1/4 cup of starch water and toss. If it’s too dry, add more water a little at a time until you’ve got a nice, loose mushroom sauce coating all the noodles. Taste for seasoning and add salt if needed. Garnish each serving with pine nuts, extra cheese, parsley and fresh ground pepper. For more information visit mushrooms.ca www.newscanada.com

Beautiful beaches and fantastic activities, try the Bahamas

I

love to travel! Over the past few years, I have visited Mexico, Jamaica and Cuba, with a trip to Paris and London, along with a Holland America cruise. It was probably not a surprise that when I announced to a dear friend that I was going to Nassau that she thought I meant NASA. Now, I am not sure my travels are ready to expand to the Space Station, but I was pretty excited for my first visit to the beautiful Bahamas. And a visit to this amazing place can only be surpassed by a stay at Sandals Royal Bahamian. This resort was the centre of high society in the 1940’s made famous by the Duke and Duchess of Windsor. Sandals has kept this theme, showcasing the architecture with luxurious suites and tropical gardens. The beaches are the most beautiful I have witnessed – not just white sand but often described as alabaster! And if you can imagine a Sandals private island! Where to start – perhaps the room with a beautiful ocean view, a mahogany four poster king size bed, private terrace and a minibar that includes French Champagne – perhaps with the pool which seems to go on forever, almost straight to the sea – perhaps a visit to Sandals private island. Now while Sandals Island has no accommodations, It is surrounded by

beautiful beaches, includes a pool with a swim up bar, and a great restaurant. On the ride over, I joked with our captain about what would happen if we missed the ride back at the end of the day. He called it “Survivor” although I am sure I could handle a night under the stars in the hammock no problem! Sandals is more than pools and ocean views. Dining is beyond spectacular. My

breakfast at the Baccarat restaurant started with champagne and orange juice and caviar! I totally enjoyed our Chef “Tiny” at Kimonos Japanese Teppanyaki cooking show! We dined at Crystal Room enjoying the Mediterranean cuisine and the mussels and salmon speciality. When relaxing by the pool it was Bella Napoli Pizzeria – casual and delicious! The ultimate though was

Gordon’s on the Pier, fine dining, candle light and surrounded by the ocean. There is no shortage of fun either. We watched some of the Grey Cup hockey finals at the Cricketers Pub and cheered along with people from all over the world while enjoying a cold brew and fabulous pub food. Lounging by the pool can get up beat too – with Caribbean dance class, zumba and pool volleyball. I found this resort had a bit of a Jamaican feel with great Reggae vibes. Sandals is known as the most all inclusive vacation and here is why: water activities such as snorkeling, scuba diving, canoeing, kayaking, windsurfing, water trikes, sailboat, and hydro bikes; or on land – yoga, table tennis, shuffleboards, bocce ball, pool, day and night tennis, fitness centre, basketball, beach volleyball, billiards, beach cabanas and fire pits; nightly entertainment includes piano bar, live shows, live bands, talent shows, and theme nights like Motown Night and Sandals White Night (my favourite). All included in your Sandals vacation! So while I didn’t go to NASA – I certainly visited something out of this world! Sandals Grand Bahamian – put it on your list!.
