Cookies & Carols There is so much to love about Christmas From the sparkling lights brightening up the nights, to the squeals of delighted children opening presents, there are special moments to be found everywhere. Everyone celebrates the season in their own way, but there are two things that can unite us all — great food and classic song. Traditions surrounding both form many of our cherished holiday memories. In this special edition of Cookies and Carols, we’ve collected recipes and songs to help you celebrate the season in a memorable way. Try a new cookie recipe, such as the Van De Pol’s Gevulde

Cookies & Carols Coconut Craisin Christmas Cookies Gourmet Chocolate Fondue Ingredients: 2 chocolate bars (milk, dark or white) 1/2 cup (125ml) whipping cream 1 teaspoon (15g) butter 6-8 cups of fruit cut into bite size pieces (strawberries, oranges, bananas, etc.) Directions: Heat cream and butter in heavy saucepan over medium heat. Remove from heat when mixture just starts

to simmer. Break chocolate bars into pieces and add to the cream mixture and whisk until smooth. Add a splash of your favourite liqueur if desired and stir until smooth. Add more heated cream if fondue is too thick. Transfer chocolate fondue mixture to fondue pot and keep warm with a lit tealight candle underneath. Dip fruit in chocolate fondue and enjoy! CUSTOMER

3 ¼ cups Flour 1 teaspoon Baking Powder ¼ teaspoon Salt 1 ½ cups Butter, softened 2 cups White Sugar 1 Egg 2 teaspoons Vanilla Extract 1 ½ cups Craisins 1 ½ cups Sweetened Shredded Coconut Preheat oven to 350 F. Directions: Whisk together flour, baking powder and salt; set aside. In a separate bowl, cream together butter and sugar until light and fluffy. Add egg and vanilla; beat until blended. Gradually add flour mixture and beat on low speed for about 5 minutes.

Stir in Craisins and coconut. Shape into little balls and put on greased cookie sheet. Flatten balls slightly with a fork before baking. Bake for about 13 minutes. Let cookies cool slightly before taking off of cookie sheet. Makes about 5 dozen soft & chewy cookies. by Petra and Chris Van Oort

Cookies & Carols Italian Peach Cookies This is my mom’s recipe for these delightful cookies that look like little peaches. They were always on our Christmas cookie tray and they disappeared very quickly. 4 eggs 1 ½ cups sugar 1 cup butter 4 tsp. baking powder 4 ½ cups flour Pinch of salt Rind and juice of one lemon Filling: 1 pkg. vanilla pudding (not instant) 1 pkg. chocolate pudding (not instant) Coating: whiskey or rum- dilute half and half with water, granulated sugar, red food colouring add to whiskey or rum mixture. Mint leaves for decoration. Directions: Using an electric mixer, cream butter, add sugar, eggs and lemon. Mix dry ingredients in another

bowl. Add slowly to butter mixture. Roll dough into 1 inch balls. Use more flour if the dough is too sticky. Cover baking sheet with a piece of parchment paper and bake in oven 350 degrees for about 15 to 20 minutes. Cookies should be golden brown, not too well done. Let cool completely. Using a sharp knife, hollow out each cookie very carefully. Fill half of the hollowed cookies with vanilla pudding and the other half with chocolate pudding. Stick one vanilla and one chocolate cookie together on the filled sides. This looks like a peach shape. Add drops of red food colouring to whiskey mixture until pinkish. Roll cookies one at a time in whiskey mixture, then in sugar. They should look like little peaches. Place on a cupcake paper and add mint leaves to decorate if desired. Store in fridge or freeze to keep fresh. These freeze well to serve for Christmas. by Fran Froehlich

Dough: Filling: 1 cup butter 1/2 ib. grated almonds 2 cups brown sugar 1 egg 2 eggs 1 tsp. almond extract 3 1/2 cups flour 1/2 to 1 cup sugar 1/2 tsp. salt juice of 1/2 a lemon 1 tsp. baking powder 1 tsp. baking soda 1 tsp. almond extract Directions: Roll dough 1/8 inch thick, cut out rounds, approx. 2 inches in diameter. Place on greased cookie sheet. Put about 1 tsp. filling on each round. Cover with another round and press edges, brush tops with beaten egg yolk to give a shiny surface. Bake for 10 to 15 min in 375 F oven by Ineke & Jolanda Van De Pol

Cookies & Carols Christmas Morning Wifesaver Ingredients: 1 onion, sliced 8-12 slices bread-cubed, toasted 1 lb sliced or crumbled sausage 1 teaspoon mustard 1/2 teaspoon salt 4 eggs beaten 2 cups milk 1 cup cheese, shredded 1. Saute onion with sausage. 2. In bowl mix mustard, salt, eggs and milk. 3. Add sausage, bread cubes and stir to coat evenly. 4. Pour into greased 9x13 pan. Make this Christmas Eve! Cover and chill 8 hours. Then cover with tinfoil and bake 45-60 minutes @ 350º. Then uncover, sprinkle shredded cheese, reduce oven temperature to 325 for 30 more minutes. This recipe feeds 2 adults and 4 children. It would be smart to make a double recipe of this. It goes quickly because it tastes so yummy. Ingrid Haines

Soft Eggnog Cookies

Ingredients: 2 cups whipping cream pinch of sea salt 2 tbsp maple syrup (or more if you like a sweeter taste) 1 tsp. pure vanilla extract Method: Put cream in stand mixer fitted with the whisk attachment. Add pinch of salt. Turn on low for 1 to 2 minutes. Turn up to medium. When it starts to thicken, add maple syrup and vanilla and continue to whisk until desired thickness. Top on your favourite dessert. Miel Bernstein

Ingredients: 1 1/4 cups sugar 3/4 cup butter, room temp 1/2 cup light eggnog 1 teaspoon vanilla 2 egg yolks 2 1/4 cups flour 1 teaspoon baking powder 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg Directions: Preheat oven to 300 degrees. (Yes 300) In a large bowl, cream sugar and butter with an electric mixer. Add eggnog, vanilla and egg yolks and beat at medium speed until smooth. In a medium bowl combine flour, baking powder, cinnamon and nutmeg; mix well with a wire whisk and add to your eggnog/sugar/butter mixture. Stick in the refrigerator until dough is cool

Next drop by rounded teaspoons onto a greased baking sheets, 1 to 2 inches away from each other. Bake for 17 to 22 minutes or until bottoms turn light brown. Be sure to keep an eye on them Transfer to cool, flat surface immediately with spatula. If you leave them on the pan they will burn! Eggnog Icing 3 cups powdered sugar 1/4 cup softened butter 1/2 cup light eggnog In small mixer bowl, beat the powdered sugar and butter until well blended. Gradually beat in eggnog until icing is smooth and the desired consistency. You may need less or more egg nog depending on the consistency you like. Then frost the cookies and let the icing harden.
