appetizers Appetizers • 1 box cheerios • 2 boxes corn chex • 1 box shreddies • 2 lbs mixed nuts • 1 bag pretzel sticks Mix together in large garbage bag.

Seasoning Mix • 1/2 tlb seasoning salt • 1 teaspoon majoram • 1 teaspoon summer savory • 1 teaspoon garlic powder • 1/2 teaspoon cayenne Put seasoning mix into bag and shake well. Put mixture onto baking sheet (add four). Cut up 1lb of butter (divide among the amount of baking sheets). Place on top of mixture. Cook at 250 for 45 mins (stir mixture every 10 min). Makes three gallons, store in covered container.

Mini Mexican Tostadas Appetizers Ingredients: • 1 Bag tostitos scoops • 1 packet Taco seasoning mix • 1lb ground Beef • 1/2 onion chopped • Shredded Cheese Topping : • Shredded Lettuce • Salsa • Sour cream • What ever else you like to use. Brown ground Beef and onions in a large pan, drain oil. Stir in 1 cup of water and Taco seasoning mix. Simmer for approx 7 mins or until liquid is absorbed, stir often. Cover baking sheet with foil (this helps with the cleanup). Place tostitos scoops on sheet. Spoon beef mix into each scoop. Top each with shredded cheese. Broil until cheese has melted. Let everyone add there own toppings to the warm scoops.

Crab Puffs / Cream Puffs

to the touch & golden. Slice almost all the way through & stuff with cooled crab filling.

Bake at 400 degree oven, Recipe can easily be doubled.

Crab Filling: 1 pkge imitation crab meat 2-3 celery sticks, finely chopped 1/2 cup shredded carrots 1/2 cup mayonnaise Couple of drops of prepared mustard Salt & pepper to taste (you can also add a pinch of dill, chili powder, dill pickle or green onion to suit your taste)

Puffs: • ¾ cup water • 6 tbsp butter or margarine • ¾ cup flour • 1/4 tsp salt • 3 large eggs Place water & butter in a medium saucepan & bring to a full boil over medium heat. Add flour & salt, stir vigorously until dough forms a ball and leaves side of saucepan. (approx 1 min). Remove from heat and add eggs 1 at a time. Mixing thoroughly after each egg. After last egg, mix well another 30 sec. Grease cookie sheet & drop small amount of dough (approx 1 tsp) on it bake at 400 degrees approx. 30 min or until pastry is dry

appetizers Appetizers Crunchy Swiss and Ham Appetizers • 2 cups very stiff mashed potatoes • 2 cups cooked ham, finely chopped • 1 cup shredded Swiss cheese • 1/3 cup mayonnaise • 1/4 cup minced onion • 1 egg, well beaten • 1 tsp prepared mustard • 1/2 tsp salt • 1/4 tsp pepper • 3 1/2 cups crushed corn flakes Preheat oven to 350 degrees, combine all ingredients except cornflakes: chill. Shape into 1 inch balls and roll in cornflakes. Place on greased cookie sheet and bake for 25-30 minutes. Serve hot. Yields about 8 dozen appetizers.

Festive Meatballs Use store bought frozen meatballs. Use as many as you wish, 25-30 or more works well.

• 1 clove minced garlic • 1 tsp chili paste • 1/4 tsp sesame oil • ¾ cup canned cranberry jelly • 4 tsp soya sauce • 1 tsp honey • 1 tsp oyster sauce Mix well and pour over meatballs. Bake in casserole dish covered at 350 degrees for 1/2 hour. Stir and take lid off & bake 5-10 minutes longer. These are nice if you put a toothpick through each one on a plate or just serve in the casserole dish.

Healthy Buttermilk Whole Wheat Crepes • 1 cup whole wheat flour • 1 cup buttermilk (might need more) • Add ½ tsp baking soda, ½ tsp salt into the buttermilk • 2 eggs, mix very well – let stand a few minutes

Vegetable oil between each crepe

Toppings 1. Low fat sour cream with brown sugar. 2. Sautéed mushrooms with onion and green and red pepper. 3. Apple sauce and maple syrup.

• 1 pkg. refrigerator biscuits (10) • 1 1/4 cups rice krispie cereal, crushed • 1 1/2 tbsp caraway seeds • 1 tsp salt – or less • 1/2 cup milk Cut each biscuit in half, roll each half into a pencil, shape, mix cereal, caraway seeds and salt in a shallow bowl. Dip each in milk, then roll in seed mixture. Arrange on greased baking sheet. Bake at 450 degree oven for 10 minutes (watch carefully) Makes 20

desserts Desserts Apricot & Cashew Cookies • 1 cup margarine • 1/2 cup white sugar • 1/2 cup brown sugar • 1 egg • 1 tsp vanilla • 1/4 cup orange juice • 2 1/2 cups our • 1 tsp baking soda • 1/2 tsp salt • 1 pkg. (6oz) chopped apricots (dried) • 1/2 cup chopped cashew nuts Combine butter, sugar, egg & vanilla. Beat on medium speed with electric mixer until light & uffy. Add our, baking soda, salt & orange juice. Beat at low speed until soft dough forms. Stir in apricots & cashews. Drop dough by heaping teaspoons

onto ungreased cookie sheet. Bake in 350 degree oven for 9-10 minutes until edges are golden brown.

Coconut Jam Tarts • 1/2 cup butter • 1/2 cup sugar • 2 eggs • 1 cup coconut • 1 tsp vanilla • 1/4 cup jam (raspberry is great) Combine all ingredients. Fill tart shells. Bake @ 375° F for 10 – 15 min.

desserts Desserts Cherry Flips My G.G-ma used to make these. They’re good, with a surprise cherry inside!

• 1 cup butter • 1/2 cup icing (confectioners’) sugar • 2 egg yolks • 1 teaspoon almond extract • 2 cups flour • 1/4 teaspoon salt • Marachino cherries (about 30) plus juice • Additional icing sugar • Coconut (optional) Soften butter to room temperature. Drain cherries well (reserving juice) and dry with paper towel. Preheat oven to 325 degrees F. Cream butter and sugar. Add egg yolks and beat well. Stir in almond extract. Blend in flour and salt. Pinch off a piece of dough. Press the dough in the palm of your hand and place a cherry on top. Mould the dough around the cherry to form a ball. Place balls on a greased cookie sheet and bake for about 25 minutes. Make a thin icing with icing sugar and some of the reserved cherry juice. When cool, dip the cookie tops in icing, and dip into coconut if desired.

Creamy Lemon Bars Makes 36 (3 doz). Ingredients:

• 1/2 cup icing sugar • 1 1/2 cups plain flour • Pinch salt • ¾ cup butter, chopped Topping:

• 4 eggs • 1 1/2 cups granulated sugar • Grated rind of 1 lemon • 1/2 cup fresh lemon juice (or concentrated works fine) • ¾ cup whipping cream • Icing sugar for dusting Preheat oven to 325 degrees. Line a 9” cake tin with parchment paper, greased lightly. Sift sugar, flour & salt. Rub in butter until mixture resembles course crumbs. Press mix into the bottom of prepared cake tin. Bake for approx. 20 minutes (until golden brown). Meanwhile to make the topping, whisk together eggs & sugar until blended. Add lemon rind & juice, mix well. Lightly whip the cream & fold into egg mixture. Pour over warm crust & return to oven & bake about 40-45 min. Cool completely! Before cutting into bars, then dust with icing sugar. After bars have cooled off I set the pan into the freezer before cutting as well as unmold from pan and use a butcher knife for slicing.

Best Ever Butter Cookies • 1/2 cup butter • 1/2 cup brown sugar • 1/2 cup white sugar • 1 egg and 1 yolk • 1 teaspoon vanilla • 1 1/4 cups All Purpose flour • 1 tablespoon cornstarch • 1/2 teaspoon baking soda • 1/2 teaspoon salt

Cream together butter and sugars. Add egg, vanilla, baking soda and salt and beat by hand until smooth. Stir in flours and drop by teaspoonfuls onto a cookie sheet lined with parchment paper. Bake at 325 degrees Fahrenheit until lightly brown, about 15 minutes.

desserts Desserts Pina Colada Cake • 1 pkge yellow cake mix • 1 can sweetened condensed milk • 1 can pina colada mix, defrosted • 1 – 8oz container nondairy whipped topping • 1/2 cup coconut Bake cake according to pkge directions, in 9x13 pan. As soon as it comes out of the oven, punch holes in top with a meat fork or chop stick. Mix milk & pina colada mix together & pour evenly over cake. Chill overnight, covered. Frost with whipped topping before serving..

Tammy’s Butterscotch Confetti • 1/4 cup margarine or butter • 1/2 cup peanut butter • 6 oz bag butterscotch chips • 1 bag miniature marshmallows Melt together butter and peanut butter. Stir in butterscotch chips and cool to lukewarm. Stir in marshmallow until well coated. Press into 9” x 9” pan. Refrigerate and cut after one hour.

Sour Cream Streusel Bars Ingredients: • 1/2 cup butter (Mix in 3 batches, bars will be light & fluffy) • 2/3 cup granulated sugar • 3 eggs at room temperature • 1 1/2 cups plain flour • 1 tsp baking soda • 1 tsp baking powder • 1 cup sour cream Topping 1 cup brown sugar, firmly packed 2 tsp cinnamon 1 cup walnuts, finely chopped 4 tbsp butter, chopped Preheat oven to 350 degrees, line 9” square cake pan with parchment paper (greased). To make the topping: place brown sugar, cinnamon & walnuts in a bowl. Mix with fingers, and then add butter until mixture resembles course crumbs. Set aside. To make bars, cream butter until soft. Add sugar & beat until light & fluffy. Add eggs, one at a time, beating well after each addition. In another bowl, sift flour, baking soda & baking powder together 3 times. Fold dry ingredients into butter mixture in 3 batches, alternating with sour cream. Blend well after each addition. Pour 1/2 batter into the cake pan and sprinkle half topping over it. Pour remaining batter on top and sprinkle remaining topping. Bake 60-70 minutes, let stand 5 minutes, then unmold & transfer to wire rack to cool

desserts Desserts Russian Toffee This recipe has been a Christmas family tradition more than 20 years. It’s heavenly - better than Mackintoshes’ boxed store brand - but must be stirred the full 20 minutes (- caution - do not leave for even a minute, and beware that hot syrup is as dangerous to the skin as hot oil.) To break into pieces, I freeze the cookie sheet full and apply a mallet while brittle.

• 2 c. brown sugar (lightly packed) • 1 can sweetened condensed milk • 1 c. butter (no substitutes!) • 1 c. corn syrup • Optional - 3/4 c. nuts ( I never have added these

but you may like to) In a heavy, large saucepan melt butter and add all ingredients (add nuts towards the end). Over medium -low heat, boil while stirring constantly a full, timed 20 minutes. Mixture will get thicker and darker. When finished pour onto greased cookie sheet, cool, and enjoy sharing with family and friends over the holidays!

Mississippi Mud Pie

chips (milk or dark or combination) • 3 eggs • 1 cooked pie shell – 9 inch pastry or graham

• 1/2 cup butter • 1 cup powdered sugar • 1 tsp vanilla • 1 – 6oz pkge chocolate

Whip butter, powdered sugar & vanilla. Melt chips and add to butter mixture, add eggs one at a time, beating well,

and pour into shell. Freeze 6-8 hours. Room temperature for 15 minutes before cutting. Garnish individual slices with whip cream & toasted slivered almonds. Store leftovers in the freezer. Serves 8-10 people.

Candy Cane and Chocolate Pot De Creme We chose to share this dessert with you because it is deceptively easy and delicious. You can make this dessert well in advance, and only takes minutes to prepare. It is important to make this dessert the day before, as it needs time to set to the right consistency. The trick to this dessert is to use the very best chocolate you can buy. At the restaurant, we use a 50% dark Belgian Callebaut Chocolate. Please read the recipe all the way through before starting. • 500 ml heavy whipping cream • 500 ml Callebaut dark chocolate • 5 ml pure vanilla extract • 100 ml roughly chopped candy cane • A few pinches of Fleur de Sel, or any other Ànishing salt

In a heavy bottomed sauce pot, heat cream to a boil. Be careful not to let it boil over. While cream is heating, place chocolate in a medium sized stainless steel bowl. Pour boiled cream into the chocolate, and with a whisk, mix chocolate and cream together until it completely blends together. Add the vanilla extract and the candy canes. The candy canes should remain solid, which will give the dessert a unique texture. Pour the mixture into your serving dish. At the restaurant we use brandy snifters, but mason jars, whiskey glasses, and champagne also work well. Let it set overnight. Serve the next day with a pinch of Áeur de sel on top and some whipped cream. Enjoy! 12/13H_JR1

Spicy Double Chocolate Cookies

Preheat oven to 350 degrees. In a saucepan on medium heat, cook raisins, water, margarine, cinnamon and nutmeg until margarine is melted. Continue cooking for 3 minutes, add egg, applesauce and vanilla and mix well. Combine flour, sugar substitute and baking soda

• 1 1/2 cups flour • 1 cup Cocoa • 1 teaspoon baking soda • 1 teaspoon cayenne • 1 teaspoon cinnamon • 1 cup chocolate chips • 2 eggs • 1 cup brown sugar • 1 cup white sugar • 1/2 cup melted butter • 3 tablespoons grated ginger • 1 teaspoon vanilla • 1 teaspoon kosher salt

Line cookie sheets with parchment paper. Sift flour, cocoa, baking soda, cayenne and cinnamon. Stir in chocolate chips. Whisk eggs, sugar, butter, ginger and vanilla together. Stir into dry ingredients. Drop and shape cookies using wet

fingers. Sprinkle with salt. Bake one pan at a time at 375 degrees Fahrenheit for 11 to 13 minutes. They should be a bit soft in the middle. Cool on racks.

desserts Desserts Brandy Alexander Pie Crust: • 6 oz pkg chocolate chips • 2 1/2 cups Rice Krispies • 2 tbsp butter Melt chocolate chips and butter in top of double boiler over hot water (not boiling). Stir in rice krispies and mix well. Press into buttered pie plate evenly around sides and bottom. Refrigerate.

Filling: • 1 envelope unflavored gelatin • 1 cup whipping cream • 1/8 tsp salt • 1/3 cup white sugar • 3 beaten egg yolks • 1/2 cup cold water • 1/3 Tia Maria or Kalhua • 2 tbsp brandy • 3 egg whites In a small saucepan combine gelatin, sugar, and salt. Stir in water and egg yolks. Cook over low heat until gelatin dissolves and mixture thickens slightly. Remove from heat and stir in liquor and brandy. Chill until slightly thickened. Beat egg whites stiff. Fold in thickened gelatin mixture. Pile into prepared crust. Cover and chill overnight in the refrigerator. Garnish with chocolate curls. Serves 8

Noel Daiquiri Pie • 1 baked pastry shell or graham wafer shell • 1 envelope plain gelatin • 1 can Eagle Brand sweetened condensed milk • 1/3 cup real lime juice • 1/4 cup rum or 1 tsp rum extract • Few drops of green food

coloring • 1/2 pint whipping cream – whipped Combine gelatin & cold water in a small saucepan and bring to a simmer, stir just until dissolved, blend sweetened milk with lime juice and rum, stir in gelatin and few drops of green food coloring. Refrigerate until mixture starts to thicken. Fold in whipped cream and pour into pie shell. Chill 2 or 3 hours. Garnish with cherries, whipped cream or shaved chocolate.

Funny Cake Pie Cake Batter: • 1 1/4 cups flour • ¾ cups sugar • 2 tsp baking powder • 1/4 cup shortening • 1 egg • 1/2 cup milk • 1/2 tsp vanilla Preheat oven to 350 degrees. Combine cake batter ingredients and set aside.

desserts Desserts Pumpkin Cheesecake • 1 1/2 cups crushed gingersnap cookies • 1/2 cup finely chopped pecans • 1/3 cup butter, melted • 2 (8 ounce) packages cream cheese, softened • 3/4 cup white sugar, divided • 1 teaspoon vanilla extract • 3 eggs • 1 cup canned pumpkin • 3/4 teaspoon ground cinnamon • 1/4 teaspoon ground nutmeg Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, mix together the crushed gingersnap cookies, pecans, and butter. Press into the bottom, and about 1 inch

up the sides of a 9 inch pan. Bake crust 10 minutes in the preheated oven. Set aside to cool. In a medium bowl, mix together the cream cheese, 1/2 cup sugar, and vanilla just until smooth. Mix in eggs one at a time, blending well after each. Set aside 1 cup of the mixture. Blend 1/4 cup sugar, pumpkin, cinnamon, and nutmeg into the remaining mixture. Spread the pumpkin flavored batter into the crust, and drop the plain batter by spoonfuls onto the top. Swirl with a knife to create a marbled effect. Bake 55 minutes in the preheated oven, or until filling is set. Run a knife around the edge of the pan. Allow to cool before removing pan rim. Chill for at least 4 hours before serving.

Frosty The Snowman

Frosty the snowman was a jolly happy soul, With a corncob pipe and a button nose and two eyes made out of coal. Frosty the snowman is a fairy tale, they say, He was made of snow but the children know how he came to life one day. There must have been some magic in that old silk hat they found. For when they placed it on his head he began to dance around. O, Frosty the snowman was alive as he could be, And the children say he could laugh & play just the same as you & me. main Main dishes Dishes Mexican Chicken Breasts • 4 Chicken breasts • Taco Seasoning • 1 Cup Salsa • 1 Cup Shredded Cheese Pre-heat the oven to 375 F Coat chicken breasts in taco seasoning. Place chicken breasts on a lightly greased pan. Cover in Salsa. Bake for 25-35 min (until breasts cooked through). Sprinkle chicken with the grated cheese and back for another 3-5 min (until cheese melts). Top with Sour Cream if desired

Lazy Wife’s Dinner • 1 cup diced raw potatoes • 1 cup diced carrots • 1 cup cooked meat • 1 cup cooked macaroni • 3 tbsp chopped onion • 1 can cream of chicken, mushroom or celery soup • 1 1/2 frozen vegetables • 1 1/2 cups milk • 1 cup shredded cheese Preheat oven to 350 degrees, combine all ingredients and pour into baking dish. Bake, covered for 1 1/2 hours.

Asian Pork Tenderloin I’ve used this recipe for many years. It never fails to impress guests, I always have the ingredients on hand and is the most flavourful marinade I’ve ever used! You can use either pork steaks, chops or tenderloin for this tasty main dish.

• 1/3 c. soy sauce • 1/4 c. oil (canola works) • 1/3 c. brown sugar

• 2 TBS. lemon juice • 1 tsp. garlic( powder or minced) • 1 TBS. mustard (may use dry) • 1 1/2 tsp. pepper • Up to 2 1/2 lb of pork or 2 tenderloin Marinate 8 hours or more for the fullest flavour. . Discard marinade before frying, roasting or grilling.

main Main dishes Dishes Sweet and Sour Meatballs • 1 pound ground beef • 1 egg 1 onion, chopped • 1 cup dry bread crumbs salt and pepper to taste • 1 can of pineapple • 1/4 cup vinegar • 1/2 cup ketchup • 2 tablespoons cornstarch • 1 cup brown sugar • 2 tablespoons soy sauce In a large bowl, combine beef, egg, onion, bread crumbs, salt and pepper. Roll into meatballs about 1 to 1 1/2 inches in size. In a large skillet over medium heat, saute the meatballs until browned on all sides. Drain the juice from the pineapple. Keep the juice and top it up with water until you have 1 cup of pineapple juice/ water mixture. In a separate medium bowl, mix together the pineapple juice/water mixture, vinegar, ketchup, cornstarch, sugar and soy sauce. Add pineapple (optional) Pour over the meatballs, and allow sauce to thicken. Continue to heat until the sauce just starts to bubble. Serve over bed of rice for a meal or serve as an appetizer.

Paprika Beef • 2 lbs round steak • 2 tbsp oil • 1 tsp salt • 1/3 tsp paprika • 1 clove garlic, peeled • 1 cup water • 2 tbsp Worcestershire sauce • ¾ cups sour cream • 1 tsp paprika • 2 tbsp flour Season meat with paprika and salt(both sides), brown it well in the two tbsps of oil. Add water and Worcestershire sauce, cover and cook slowly for about 2 hrs. Add sour cream and paprika, continue to cook slowly for 15 mins., remove the steak to hot platter, thicken the broth with the flour missed with 1/2 cup cold water, stir and boil 5 mins. Serve the gravy over the meat.

Orange-Honey Glazed Salmon • 2 salmon steaks/filets 6 oz each • 1/2 cup orange juice • 2 tbsp each honey and soy sauce Heat oven to 500°F. In pie plate, mix juice, honey & soy sauce. Add salmon and turn to coat. Bake (filets – skin side up) for 6 minutes, turn and baste and bake for 6 more minutes. Sprinkle with 2 minced breen onions. Serve with rice. Can turn remaining juices into a glaze by reducing in a fry pan.

• 2 lbs round steak • 2 tbsp oil • 1 tsp salt • 1/3 tsp paprika • 1 clove garlic, peeled • 1 cup water • 2 tbsp Worcestershire sauce • ¾ cups sour cream • 1 tsp paprika • 2 tbsp flour

• 1/4 cup chopped green onions • 1 clove garlic crushed • 1 1/2 cup cooked rice • 1 can crushed tomatoes • 1/2 lb raw peeled shrimp • 2 tbsp butter • 1 tbsp chopped parsley • Pinch of cayenne pepper • Salt & pepper to taste

Season meat with paprika and salt(both sides), brown it well in the two tbsps of oil. Add water and Worcestershire sauce, cover and cook slowly for about 2 hrs. Add sour cream and paprika, continue to cook slowly for 15 mins., remove the steak to hot platter, thicken the broth with the flour mixed with 1/2 cup cold water, stir and boil 5 mins. Serve the gravy over the meat.

Olive Steak • 1 1/2 lbs round steak • 1tblsps oil • onion, chopped • green pepper, chopped • 1 jar pimiento olives(312 ozs), sliced • 1 can cream of tomato soup

Cut steak in serving pieces and brown in hot oil with onion and green pepper, add olives and brine in which they were packed, add tomato soup, cover and cook slowly for 1 1/2 hours or bake at 350 degrees.

main Main dishes Dishes Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink. Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C), and preheat an oven to 350 degrees F (175 degrees C). Place the flour, egg, and bread crumbs in 3 separate bowls. Mix the garlic powder into the bread crumbs. Working in batches, coat the chicken breast in the flour, then dip them in the egg, and finally coat with the bread crumbs. Carefully fry the coated chicken in the hot oil in small batches until golden

Chicken Parmesan • 1 (16 ounce) package uncooked rotini pasta • 1 pound skinless, boneless chicken breasts, cut into bite-size pieces • 2 cups vegetable oil for frying • 2 cups flour • 4 eggs, beaten • 2 cups Italian seasoned bread crumbs • 2 tablespoons garlic powder • 1 (16 ounce) package shredded mozzarella cheese, divided • 1/2 cup grated Parmesan cheese • 1 1/2 (32 ounce) jars marinara sauce • 1/2 cup dry red wine • 1/2 cup grated Parmesan cheese

brown and no longer pink in the center, 3 to 4 minutes. Drain the fried chicken over paper towels. Combine cooked pasta, fried chicken, 1/2 package of mozzarella cheese, and 1/2 cup grated Parmesan cheese in a large bowl. Stir in the marinara sauce. Pour the red wine into the empty marinara sauce jar; cover and shake the jar, and empty the contents into the bowl of pasta. Stir to combine. Spread pasta mixture in a large casserole dish, and cover with

aluminum foil. Bake in the preheated oven for 30 minutes. Remove the aluminum foil and sprinkle with the remaining 1/2 package of mozzarella cheese and 1/2 cup of Parmesan cheese. Return to the oven, and continue baking until the cheese has melted, about 30 minutes. Remove from the oven, and allow to rest for 5 minutes before serving. Serve hot.

sides Sides French Quarter Bean Soup • 1 cup dry pinto beans (I use all different kinds of bean, whatever is in the pantry) • 1/2 cup dry red beans • 1/2 cup dry garbanzo beans • 1 to 1 1/2 pounds ham hocks • 2 16 oz cans of cut up tomatoes • 1 1/2 cups chopped celery • 1 cup chopped onions • 2 cloves chopped garlic • 2 bay leaves • 1/4 tsp ground red pepper • 1/2 lb smoked sausage, sliced, cooked and drained • 1 lb chicken thighs • 3 tblsps sniped parsley Rinse beans. Combine beans and enough water to cover. Bring to boiling; reduce heat and simmer 2 mins. Remove from heat, cover and let stand for 1 hour (or soak the beans in water over night) Drain and add 6 cups fresh water and ham hocks, bring to boiling and reduce heat. Cover and simmer for one hour, remove ham hocks, when cool enough to handle, cut off meat and chop. Discard bones and return meat to bean mixture. Add tomatoes, celery, onions garlic, bay leaves and red pepper. Add sliced sausage and chicken thighs, bring to a boil, reduce heat and simmer for one hour or till meat and beans are tender, remove meat from bones and chop, add meat to soup and discard bones, add parsley and remove bay leaves. Serves 12.

Cranberry Orange Salad with Boursin Cheese • 1 head of romaine lettuce • 1 package of Boursin Cheese- Garlic and Fine Herbs • 2 mandarin oranges, peeled and cut into pieces • 1/2 cup of dried cranberries • 1/4 cup of pumpkins seeds (or slivered almonds or pine nuts) Cut lettuce into bite-sized pieces, place into serving bowl then layer other ingredients. Crumble cheese over lettuce. Sprinkle mandarins, then cranberries and top with pumpkin seeds. The Boursin acts as a nice (tasty) dressing that won’t wilt the lettuce. This can be made ahead and stores and travels nicely.

Cold Pea Salad • 1 pkg ranch dressing • 1 cup buttermilk • 1 cup sour cream • 6 strips of crisp cooked bacon • 1/2 cup diced red onion • 1 pkg sweetlet peas

Italian Potato Roast

Left over potatoes – make biscuits

• 5 medium unpeeled potatoes (cut into chunks) • 2 tbsp Olive oil. • Pkg of Zesty Italian dressing mix

• 1/2 cup mashed potatoes • 1/2 cup milk • 2 cups biscuit mix Beat potato and milk in a medium bowl until smooth. Stir in biscuit mix to form a soft ball. Turn out and knead 8 to 10 times on lightly floured surface. Roll or pat ¾ inch thick. Cut into 2 inch circles with a cookie cutter. Arrange on greased baking sheet. Bake in 425 degree oven for 13 – 15 minutes, until risen and golden brown. Makes about 16 biscuits

Put chunks of potatoes into Ziploc bag, drizzle olive oil inside, seal bag, shake to coat spuds. Sprinkle dressing mix into bag. Seal, shake well to coat potatoes. Arrange potatoes in single layer on greased baking sheet. Bake in 400 degree oven for 30 minutes. Stir, bake for 5-10 minutes more until browned and tender. Serves 4

Sweet Potato / Yam Casserole

• 4 medium potatoes, baked • 1/2 cup light sour cream • 1/4 cup margarine (or butter) • 1 green onion, thinly sliced • Garlic powder sprinkle (optional) • Salt 1 1/16 tsp • Pepper

• 1 large sweet potato • 1 large yam • 1 cup brown sugar • 2 eggs • 1/2 cup butter • 1/2 cup milk • 1 tsp vanilla

Cut 1/4” lengthwise from top of each potato, scoop out pulp into a medium bowl, leaving potato shells about 1/4” thick. Discard tops once pulp is removed. Mash potato pulp. Add remaining 6 ingredients, mash well. Stuff shells, arrange on ungreased baking sheet. Bake in 350 degree oven for 20 minutes until heated through. Serves 4. Sprinkle tops with paprika or parsley. This dish is nice for a buffet and can be frozen.

Special Garlic Bread

Topping: • 1/2 cup brown sugar • 1/3 cup melted butter • 1/3 cup flour • 1 cup pecans Peel, boil and mash sweet potato and yam (you’ll need approx. 3 lbs). Add brown sugar, eggs, butter, milk and vanilla. Spread into casserole dish. Mix topping ingredients into a crumble. Sprinkle over sweet potato/yam mixture. Bake at 350° F for 30 – 40 min.

sides Sides Red Lentil Soup • 2 cups red lentils • 2 cloves garlic – finely chopped • 2 medium onions – chopped • 1 stalk celery – chopped fine • 2 carrots – diced • 2 tbsp olive oil Rinse 2 cups red lentils. Sauté: Add 6 cups stock (chicken, ham or vegetable) and 1 large can (28oz) of diced tomatoes. Simmer about 4 hours & season with salt, pepper & 1 tsp dried cumin.

whipped topping (thawed) In a bowl, combine milk and lemon juice, mix well. Stir in the pineapple, cranberry sauce, marshmallows, pecans & food coloring. Fold in whipped topping, spoon into 13x9” baking dish. Freeze until firm, 4 hours or overnight. Cut into squares. Serves 12-16

• ½ cup corn starch • 1 quart boiling water • 1 cup soap flakes • ¼ cup talc powder

Fill flat bottomed ice-cream cones, no more than ½ full with cake batter Bake 375 degree oven for 20 minutes of until done Frost & decorate

Easy Kool-Aid Playdough

Mix starch with cold water to make a thin paste. Add boiling water and cook until mixture is clear stirring constantly, add talc. Let cool and stir in soap flakes. Keep in a covered jar.

Pinecone Reindeer Pink Popcorn

Marshmallow Supreme

• large googly eyes • red pompom • glue gun • pruners • pine cones and twigs

• 1 bag of chocolate chips • 1 bag of marshmallows • red and white sprinkles

• 2 1/2 cups flour • 2 cups boiling water • 2 unseetended pkgs Kool-Aid • 1 tbsp oil • 1/2 cup salt • wax paper Mix flour and salt in a large bowl, to boiled water, add Kool-Aid and stir to dissolve, add Koo-Aid water and oil to flour and salt mixture; stir with a fork until cool enough to handle. Knead on wax paper until no longer sticky, you may need to add a bit more oil. Store in a Ziploc bag at room temperature.

Melt chocolate chips, when melted dip marshmallow into chocolate. Sprinkle decorations on it however you like. Turn marshmallow onto it’s top and place into the refrigerator for half an hour and then you have a marshmallow supreme.

Take the kids outside and gather some pinecones and twigs. At the pointy end of one pine cone, glue the red pompom nose and then glue eyes into place. Use the pruners to shape twigs into antlers and glue on. Attach a string or piece of pipe cleaner and hang or using another pine cone for a body, glue the reindeer head to the other pine cone at the larger ends for both, with the pointed ends opposite and place on shelf for all to see!

• 12 cups unsalted popped corn • 2 cups miniature marshmallows • 1/3 cup melted butter • 1 (3oz) pkge red fruitflavored Jell-O powder (strawberry is nice) Combine popcorn, marshmallows & melted butter in a large bowl till butter coats everything. Sprinkle the dry Jell-O over it all & toss it again until everything is coated.

kidsKidskorner Korner Holiday Hide and Seekers Turn the bottle or squish the bag to uncover hidden surprises. Great entertainment for long rides to visit relatives over the holidays. Supplies:

• clear container with lid (eg - baby food jar, plastic drink bottle-sports drink bottles have wider openings) OR small and medium sized zipper bags and packing tape • rice • assorted holiday items (pieces from broken ornaments work well, buttons, beads, dollar store items) • glue gun

Plastercine • 1 cup flour • ½ cup salt • 3 tsp powder alum • Water • Food coloring if desired Mix together first 3 ingredients with enough water to hold together.

Puffy Paint Squeeze • 1 cup flour • 3/4 cup water • 1/4 cup sugar • food colouring(optional) • 1/4 tsp salt

Put holiday items into the container then fill with rice, leave about an inch at the top. Put on lid and test that the rice can flow easily. Glue lid on. Decorate outside if desired.

Mix flour, sugar and salt; add water(maybe a bit more so mixture is drizzly enough to go into a squeeze bottle), stores in fridge for quite a while. Puffy paint can be used to draw cool pictures.

If using zipper bags, place holiday items and rice in bag so it is about 3/4 full, close bag, squeezing out the air and test that bag is not too full. Tape bag, place in another bag to prevent messes, tape second bag and start seeking. Bonus: the squishing of the bag can be soothing!

Soapsuds Picture • 1/2 cup dry detergent or 1 cup liquid detergent • 2 tsps liquid starch • brown paper • paints or food colouring Beat detergent and starch in a bowl until thick as frosting. If you want different colours, put mixture into different jars and add colour. Dip coloured soapsuds from jar with finger and paint on brown paper. If soapsuds thicken, add more starch and beat it into the mixture. Leave picture down until dry
