T
his issue isn't just for wine connoisseurs. Anyone who enjoys conversing with friends, trying new cuisine or a little rest and relaxation will get some great ideas on how to kick off the fall season. In this issue, Indulge chats with Chef Brian Fowke from Kitsilano Daily Kitchen about his commitment to buying (and even foraging) local ingredients. His menu changes daily, sometimes even hourly, to ensure his guests are served the freshest food possible. Fowke's ingredients – sourced from locations including Granville Island Market and anywhere wooded between the North Shore and Pemberton – are carefully paired with B.C. wine to enhance each dish's flavour and texture. For those wanting to travel further from home, Indulge profiles a selection of wineinspired vacations available through travel companies in White Rock and Surrey. Although wine is a focal point, these holidays in Europe, South America, Africa and the Okanagan include much more – amazing sightseeing opportunities, intriguing cultures, a great deal of pampering and much more. award-winning wineries from the Okanagan and internationally. I visited a few wineries in Langley's Campbell Valley Wine Region to see what goes into growing grapes in the Lower Mainland. The climate is perfect for vines that thrive in cooler temperatures, such as Bacchus and Chardonnay. The picturesque landscape influenced Indulge's fall fashion looks, showcasing darker shades with pops of colour and statement jewelry, all courtesy of boutiques and shoe stores in Surrey and White Rock. If beer is your beverage of choice, the fourth annual Fraser Valley Cork & Keg Festival is profiled. Besides an oyster bar and live music, the one-day event includes dozens of samples from local and international beer and wine companies, as well as from producers and culinary artisans from the Fraser Valley. As summer winds to an end, the temperature with drop and the days will become shorter, but this issue of Indulge shows there is much to look forward to. Let's embrace the changing season with friends, family, good food – and a glass of Fraser Valley wine.

In the competitive world of wine, local wineries work hard to make a name for themselves
I
t can be surprising how much wine is produced within an hour drive from downtown Vancouver. In the Fraser Valley, where the soil is rich and farmland plentiful, there are 60-plus acres of grapevines – making up 22 wineries and nearly 30 vineyards. The region – tiny in comparison to the Okanagan – is stamping its mark on the competitive world of wine. But recognition has taken years of hard work and dedication from winemakers and vineyard owners. The main goal is to get local residents out to the wineries to try what's in the barrel – and

demonstrate that the product can be in the same high-calibre category as wine produced in Naramata, Osoyoos, Oliver and other areas of the Okanagan. "Once you remove any bias, people realize the quality we have here," says Brian Ensor, manager of Chaberton Estate Winery in Langley, as he stands between rows of nearly ripe grapes. "It's about recognition, and this region as a whole has been making progress." Chaberton Estate Winery, formerly Domain de Chaberton, was the first winery to open in the Fraser Valley region 23 years ago and is among the largest in operation. It's a hot day in August as guests stop by to sample wine and tour the vineyard. They learn from their tour guide that Bacchus grapes are the most common varietal planted at the vineyard, and that the Fraser Valley's cooler climate suits some grapes well – such as Pinot Noir, Gewürztraminer and Chardonnay – but is not conducive to growing types that thrive
in hotter temperatures. Because of this, many larger Fraser Valley wineries use grapes grown in the Okanagan to supplement what they are unable to grow themselves. Fraser Valley vineyards are small compared to many others in North America; it's possible to see from one end of the rows of grape vines to the other. But still, to first-time visitors, the sight of grapes growing in the Lower Mainland can be shocking. It's this local, quaint vineyard atmosphere that the four wineries in the Campbell Valley Wine Region – Chaberton Estate Winery, Backyard Vineyard, Township 7 Vineyards & Winery and Vista D'Oro Farms & Winery – use to attract their customers. "In the Campbell Valley, we're not in competition with each other. We don't compete even with the Okanagan," Ensor says. "We all have the same purpose – to raise the profile of B.C. wine, and even Canadian wine."

Standing near a patch of Bacchus vines, Brian Ensor, manager of Chaberton Estate Winery in Langley, says local wineries have worked hard to create a name for themselves. To help draw in customers, they are holding the Campbell Valley Wine Run in late September. Less than an hour drive from downtown Vancouver and mere minutes for Surrey and White Rock residents, the local wineries market themselves as a quick wine-tour getaway, in comparison to the multiple-day journey to the Okanagan. The wineries team up together to host events that draw people out to Langley. Participants in the Campbell Valley Wine Run on Sept. 21, for instance, run a 15-kilometre route between the valley's vineyards, stopping to sample wine along the way. The run isn't a competitive race – it's meant to be fun, with a fivekilometre walking option and prizes for best costume. "We get a lot of people saying, 'Wow, this is so close, I would Mary McDermott have stopped here winemaker before if I had known about it,'" says Backyard Vineyard's winemaker James Cambridge, who graduated from Niagara College's viticulture program 15 years ago before settling at other wineries, including Summerhill and LaStella in the Okanagan. "Once they know we're here, our job is to keep them coming back."

Langley sparkles It's winemaker Mary McDermott's second day at Township 7 Vineyards & Winery, but she already has a lofty goal – to produce more sparkling wine. To create the refreshing bubbles, rows of Chardonnay and Pinot Noir grapes – easily seen from the long country road – have been planted, and will be harvested at low sugar levels with high acidity. Township 7's 2008 Seven Stars Sparkling, created in the traditional style of French champagne, is sold out, and a new vintage is on the way. They produce around 100 cases of sparkling wine every couple of years, depending on whether the season was conducive to growing the specific grapes needed, and McDermott plans to boost production in the future. "The climate here in the Fraser Valley is a perfect match for sparkling wine," says the winemaker, who recently worked for Trius Winery at Hillebrand and Thirty Bench Winery in the Niagara region of Ontario. "It's vital to match the grape with the climate and soil – of course every grape can't grow anywhere" Bottles are sold at both of Township 7's wineries – locally and on the Naramata Bench – as well as at the White Rock Farmers' Market, a convenient "buy local" option that is the result of recent changes to the B.C.'s liquor policy. Other Campbell Valley wineries have their own signature styles. Chaberton recently released its off-dry 2013 Reserve Bacchus, highlighted by aromas of citrus, chamomile

The future is local Competing against Okanagan and international wineries – with thousands of highly acclaimed labels from both the New and Old World – is a tough order. To appeal to customers, wineries from the Campbell Valley have banded together to create a unique region, complete with seasonal events and tour routes. "Buying our wine is almost an emotional experience," Ensor says. "When people come here, they get to taste the wine, walk around the vineyard and really get know the winery – it sticks with them." Chef Brian Fowke redefines urban foraging

F
resh thinking and flexibility remain the key ingredients at play in Chef Brian Fowke’s Kitsilano Daily Kitchen. After two decades of making other people’s kitchens hum, he would not have it any other way. Nearly five years and well over 12,000 menu options later – neither would anyone who has discovered Daily’s principled charm. The Daily monicker applies as much to Chef Fowke’s perpetual foraging – be it at Granville Island Public Market or anywhere wooded between the North Shore and Pemberton – as to the menu itself. From day one at Daily, Chef Fowke changed the menu game entirely, serving only four appetizers and four mains, fresh in every way, everyday. It is a format that puts Chef Fowke’s passions to play in the most food forward ways imaginable, presenting a daily opportunity for fresh foraging and expression. “Finding the freshest ingredients has been what it’s all about from the beginning. For the first long while the day would begin with a trip to Granville Island because it is so close and then back to spread out all the ingredients on the bar by 11 a.m.” says Chef Fowke. “Now it is all a bit more organic. The brain trains itself to put all the pieces together. You see salmon, think chanterelles and then go back to grab a blood orange.” While recently that 4x4 offering swelled to 6x6 to accommodate an established audience, the guiding ethos remains unwavering. From plate to adeptly paired glass, Chef Fowke’s creation takes local to heart as few do. “We change the menu daily, but we’ll change the menu as we go too. If Kristjan from Sea Tilth comes through the door with fresh anything, we’ll be changing up the chalkboard because it’s going on the menu,” says Fowke. “The idea for Daily’s menu concept came from sitting down with a farmer who was raising rabbits and having problems connecting with local chefs. It really hit home. For all the support of local, for the

small, sustainable food movement to work, we as chefs have to be more flexible.” While he admits that certain international accoutrements such as French truffles will always have a place in his heart and on his plates, the base of each dish is always local. The wine list too is exclusively B.C., although a selection of Old World bottles is also on display and available for anyone looking to compare. Interestingly, while pairing local wines with
local ingredients makes delicious and logical sense, it also required Chef Fowke to revisit the more classic definitions of B.C. wines with which he had been groomed during his years with Joe Fortes. “When we opened here, we knew the B.C. pairing would cause a lot of table discussion, so we wanted less jargon and a more conversational approach,” says Fowke. “Our B.C. wines and grapes are structured differently than many have been wine-
educated to believe. Our Pinot Noirs are very different from France and some of our Merlots are light enough to pair really well with salmon. We had to get out there, taste, talk and revisit a lot of prior thinking.” Fowke adds with a laugh, “We’re still doing that actually, so when it comes to pairings our front staff knows them all” Of keen interest to any who opt for the

multi-course Chef’s Menu is the approach to pairing with each dish. “We like to pair a dish with a pair of wines – one complementary and one which contrasts. A Chardonnay and a Cuvee Blanc can both work wonderfully but in very different ways.” That flexibility has been the driving force for Chef Fowke since, leading him to follow the seasons and his suppliers far more closely than most. “The truth is it is fun and we are doing our part to serve a bigger picture. As to the cost, another farmer once explained to me that if we only bought what was in season, it would be half the price. In a lot of ways, I have spent the past four years relearning, but good things always take time. James Joyce didn’t write Ulysses when he was 18,” he says with a grin. From his earliest apprenticing days at the Windsor Arms Hotel under executive chef Oliver Bonacini to his journey out West as executive chef for Joe Fortes Seafood to his avant-garde efforts with Rare and Metro in Vancouver – Chef Fowke has never been happier than where he is today. “Maybe I am just too crazy to stop, but what we are doing is really about opening people up to the wider spectrum of what’s available. It’s cooking with what you have and it makes a difference,” says Chef Fowke. “Having kids has made a real difference about how I think about what we do. Barkley Sound Risotto Wine pairing: Without a doubt, the buttery richness of this risotto pairs perfectly with the 2012 Church and State Winery Gravelbourg Chardonnay. The wine is balanced, and the finish of minerality enhances the mushroom. Ingredients • 1 ½ lbs fresh Barkley Sound Chanterelle mushrooms, cleaned • ¼ lbs unsalted butter • 7 cups rabbit, duck or chicken stock • ¾ cup leek, julienned • 1 ½ cups carnaroli rice (or arborio) • ½ cup Chardonnay • ¼ cup grated 30 month old Reggiano cheese • 2 tbsp chopped fresh thyme to taste salt and pepper

Method • Bring the stock to a boil, reduce to a simmer. Sauté the leeks, over low heat, for 45 minutes with half of the butter. Turn the heat up to medium high and add the mushrooms. Cooked until tender. Add the rice and Chardonnay. Cook until almost dry. Stir continuously at this point. Add the ¾ cup of stock and let cook until full absorbed. Repeat until all stock is cooked. Add remaining butter, cheese and thyme. Stir well and season to taste. Serve and drizzle with olive oil.

ou can enjoy a great day touring top notch Fraser Valley wineries on just a quarter tank of gasoline. That’s no small thing when you consider that a round trip to the Okanagan is at least 1,000 km. The oldest and largest vineyard is the Chaberton Estate Winery in South Langley. The 40-acres of grapes, all white varieties planted in the 1980s, flourish within sight of the winery’s bistro where, after a walk among the vines, you can dine on boeuf bourguinon and other French comfort cuisine. The French stamp was placed on this winery by its founders, JOHN Claude and Inge Violet, who emigrated

from France in 1981. When they opened the vineyard in 1991, they named it after the Violet family farm, Domaine de Chaberton. Eugene Kwan and Andrew Cheng, who bought the winery in 2005, simplified the name to just Chaberton. The winery sources red varieties from the Okanagan. The vineyard in the back yard still provides many of its whites, notably intensely aromatic varietals like Siegerrebe and Bacchus. “Those are the ones I baby,” says Barbara Hall, winemaker since 2011. “Those are the ones that speak to the Fraser Valley.” Whether the wine tour at Chaberton is led by Barbara or by one of her colleagues, her passion for those varietals guarantees excellent wines. And you will also have a selection of big reds. An international businessman and collector of Bordeaux wines, Andrew Cheng has a hand in blending remarkable Merlot-based wines released under his AC label. On 16 Avenue, just around the corner from Chaberton, Township 7 Vineyards and Winery is the Langley outpost of a sister winery in Penticton, also called Township 7. The Langley winery was opened in 2001 because the owners at the time decided to spare their customers the drive to the Okanagan. They have all of their excellent Okanagan wines in the Langley wineshop.
Backyard Vineyards, a short drive up 232 Street, has a lower profile because it has operated under three names, opening in 2002 as Glenugie Winery, then becoming Neck of the Woods Winery and now Backyard. James Cameron, the veteran winemaker who has been there for two vintages, has significantly raised the quality of the affordable wines. The Nosey Neighbour White and Red blends, at $15, are solid barbecue wines, and go well with the light lunches available in the Backyard tasting room. By contrast, you might want to check out the $150 bottle of The Referènce 2008 at Blackwood Lane Vineyards & Winery on 8 Avenue. Owner Carlos Lee presides over a tasting room, offering wines for connoisseurs. The final visit of this day tour is to Mt. Lehman Winery on Mt. Lehman Road in Abbotsford. Owner and winemaker Vern Siemens has a photogenic vineyard planted largely with Pinot Noir. He offers superb wines both from his wines and from premium Okanagan grapes. And before returning home, fill up in Abbotsford with the cheapest gas in the Lower Mainland.
