Holiday Greetings Christmas is a time for families and friends to share the best of the season and for everyone to think about our fellow man and woman and extend the spirit of peace and goodwill. Luckily, we live in a place with a proud history and experience of making the best of everything. The people of Sooke have a tremendous community spirit and resilience. Sooke is blessed with talented people in the arts, in business and in the community and volunteer sector. Our residents are kind, hardworking people and our entire community of people deserves the best and we will continue to progress in 2015 and build on our efforts in past years. In my recent mayoral election speech, I said that while our work as a new Council will be difficult at times, with the support of our staff and community, we will embrace the responsibility with confidence. We will rise to the challenge and celebrate our milestones along the way. Reflecting this Christmas, as both a member of Council and a resident of Sooke, I have been privileged to see firsthand the contribution of organizations, individuals and volunteers who work hard throughout the year to assist others. This has had the effect of filling me with great hope and pride when I have witnessed the contribution they have made. I have been inspired to continue our important work for Sooke; my sincere thanks go out to each and every one of them on behalf of all the community. Let this Christmas time be about the celebration of who we are as a town, a nation, and as humankind. Together we can enhance the celebration of this season for everyone and look to 2015 with confidence. May I express the desire that peace and hope will be more than just aspirations at this time of year, but a way of life for the future. Christmas Pudding Sauce Heat 1/2 c butter and 1 c brown sugar in a double boiler or a bowl over a pot of boiling water. Add 2 beaten egg yolks. Stir until thick Add 1/2 tsp. vanilla extract This may be kept until the next day. Just before serving Beat 300 ml whipping cream and add to sugar mixture Pour over Christmas pudding Can be used as a sauce for any dessert.

Ranch Nuts & Bolts 1 box Crispix 1 box Cheese Crackers (like Cheese Nips or Goldfish) 1 bag of Pretzels 1 bag Bugels 1 1/2 c oil 2 pkg dry Ranch dressing 6 T dill Mix oil, dressing and dill together. Mix crackers and put in large bowl or brown paper bag. Pour oil mixture over and shake. Leave overnight then enjoy! If you want, you can add whatever you like to the mix like peanuts, Shreddies, Cheerio's, etc.

New Orleans French Bread Pudding 4 c cubed french bread 1/2 c raisins 4 eggs slightly beaten 1/2 c sugar 1/4 tsp salt 2 3/4 c milk 1/4 c sherry or brandy if desired Whipping cream Heat oven to 350F Lightly butter 2 quart baking dish Place bread cubes in dish, sprinkle with raisins In a large bowl combine remaining ingredients except whipping cream and sherry mix well Pour over bread cubes. Bake 60 min or until knife inserted comes out clean.

Peanut Butter Bon Bons

Next Day Frozen Fruit Salad

1 can Pillsbury Ready to Spread Vanilla Frosting Supreme 1 c peanut butter 1/4 c butter 2 c graham cracker crumbs 1 can Pillsbury Ready to Spread Chocolate Fudge frosting Supreme

1 c sour cream or yogurt 250 mi cream cheese soften 1/2 tsp vanilla 2 c miniature marshmallows 2 c peach slices drained and crushed 1 1/4 c maraschino cherries drained reserve some for garnish 1 c crushed pineapple drained In a large bowl blend sour cream, cream cheese and vanilla

In a large bowl combine vanilla frosting, peanut butter and butter with a fork until well blended. Stir in crumbs until well mixed. Form into 1” balls and chill 1 hour. In a small saucepan melt chocolate frosting over low heat stirring occasionally. Dip chilled balls in melted frosting. Allow excess to drip off. Place on cooling rack over wax paper Let stand at room temp until dry about 6 hours Store in cool dry place Make 5 51/2 doz bon bons

Fold in remaining ingredients. Spoon into oiled 4 c decorative mold or 8x4 loaf pan. Freeze until firm about 2 hours. To serve unmold and cut into wedges or 1” slices Garnish with reserved cherries.

Ginger cookies Makes about 10 dozen small 2-inch cookies. Preheat oven to 325 degrees. Cream: 3/4 cup of butter Add: 2 cups sugar. Stir in: 2 well-beaten eggs 1/2 cup molasses 2 tsps. vinegar Sift and add: 3 3/4 cups all-purpose flour 1 1/2 tsps. baking soda 2 to 3 tsp. ginger 1/2 tsp. cinnamon 1/4 tsp cloves Mix all ingredients until you have a soft dough. Make 3/4 inch balls. Place on a greased cookie sheet and bake for about 12 minutes. The cookies will melt down and get the familiar crinkled look. You can also press them down with a fork to make a larger cookie. These cookies store well and have a definite spicy flavour.
