Every meal needs protein. This means meat/fish, beans, eggs, dairy (if you tolerate it), nuts and seeds. We buy meat most weeks but also have a stash of frozen meats that we buy in bulk directly from the farmers. Having a stash of frozen meat has really saved us time and we feel great knowing exactly where our meat is coming from. Dried beans can be bought in bulk and kept in jars for a long time, their preparation usually takes a little longer so I also have a small stash of ready to go organic canned beans (BPA free cans!) that I can add to a meal for protein. Nuts and seeds are another way to get protein in a meal. They can also be bought in bulk, I have several nuts and seeds in my cupbords that I refill as they get low.

We aim for 1/2 plate of vegetables with every meal so this is always my first stop at the grocery store. I buy them fresh every week and always make sure that I have a variety of leafy greens. There are lots of non perishable foods that you can stock up on ahead of time or that you can have ready in the freezer to facilitate this.

Sure, it may take a little longer than putting a frozen pizza in the oven but not as long as you might think. As a working mother of two small children, I understand what busy feels like! While I do enjoy cooking, I don't feel like shopping and food prep takes over my life – it is possible to cook healthy meals and not spend forever in the kitchen!

When shopping and meal planning I have four main categories that I consider:

I discuss the importance of adopting a healthy whole foods diet with each of my patients and some worry about the time it will take to cook more healthy meals for their families.

This includes staples for making salad dressing and sauces, herbs and spices and those little extras that add so much flavour to meals. To turn meals from boring to delicious I usually find it helps to have some ingredients that are either sweet, vinegery, salty or add a little fat (this is why cheese makes meals so delicious; cheese = fat + salt). Think olives, sundried tomatoes, pickled vegetables, nuts and sweeteners like maple syrup and honey. Having a some of these on hand can add that “je ne sais quoi” to a meal.

Lisa FISCHER LAURA LAVIN editor@mondaymag.com Whether performing solo or as backup to such musical greats as the Rolling Stones, Luther Vandross and Tina Turner, Lisa Fischer is a voice to be reckoned with. Born in Brooklyn NY, Fischer rose to fame with the Grammy award–winning hit single How Can I Ease the Pain from her album So Intense, which reached number one on the R&B charts in 1991, after she spent nearly a decade supporting others. But life as a solo artist didn’t sit well with her and she returned to touring as a backing vocalist. She was featured in the 2013 Oscar-winning documentary film 20 Feet from Stardom which highlighted backup singers behind some of the greatest musical legends of the 21st century. We caught up with her a few days before she joined the Rolling Stones Zip Code Tour in California. Laura Lavin: What is your first musical memory? Lisa Fischer: I don’t know if I truly have a first musical memory because I feel like music has been with me throughout my life. … Maybe through the music my parents listened to perhaps. Music feels like an endless circle to me. LL: Who were your biggest musical influences? LF: Luther Vandross would be the biggest. Dionne Warwick, Diana Ross and the Supremes, all of the Motown music. LL: When did you know you could make a career out of music? LF: It’s not so much of a knowing as much as doing what felt joyous, and praying for the best outcome. I would sing whether I could make a living from it or not. LL: You had a successful solo career, but are happy to perform in a supporting role. Tell me a bit about that choice. LF: My solo career was truly a gift,

How does it feel to have that loyal following? LF: It’s a gift that you never look for but when it’s presented, it takes your breath away! I’m so humbled, and thankful. … I look forward to seeing everyone in the music. LL: What kind of show can people here expect? It’s hot. It’s uncomfortably hot. We are down south and today the weather crossed over that wonderful 100-degree mark that says: ‘I hope you brought water.’ That moment when you think to yourself: ‘I didn’t know I could sweat from there.’ With heat in the hundreds and humidity in the high 80s, my wife said, “The weather is a little hot today,” to which I replied, “At 100 degrees and 85 per cent humidity – that’s not weather hun, that’s tea.” We have come down to Florida this time of year for the past four years. It lets us get away, sweat off the winter chill and enjoy some good old fashioned expensive family entertainment from a large talking mouse. So, one day my Facebook profile was me in Disneyland in shorts and a t-shirt and then two days later, it was me off the coast of St John’s on a boat, in a parka holding onto a small piece of an iceberg. No surprise here … with a weather change like that I became unbelievably sick. The worst part about me being sick is that it’s worse than anything else. I don’t get the flu or that bug that’s been going around. No, no, this enormous gent that I am – I get the Man Cold. That’s right. When my body feels the sniffles, all manners and self respect fly out the window and I become a tiny, petulant child. I want a glass of water but I can’t get it because the sink is so far away! Can you make me some soup? I could do it myself but I am so achy and coughy! My beautiful and caring wife just smiles and takes care of me. She is a nurse and so brings me medication and goes out of her way to make my life – which is endlessly difficult during a Man Cold – much easier. We talk about having babies but I

think spending a week with a whining 350-pound baby may have changed her mind. The other day, after calling for her for three or four hours because I couldn’t reach the remote that was a foot away from me, I asked her what she was reading on her computer. She said it was a new book. I’m pretty sure it was an article on assisted suicide. Men are unbearable when it comes to colds. If we were horses you would just take us out back and shoot us. We can’t even function. Imagine if we had to deal with actual pain and discomfort. Imagine if one man had to have one baby one time. That would be it. Forget the Armageddon, that would be the end of it. We couldn’t handle it. When I was a kid I grew up watching macho men on TV and in movies and I wanted to be them. For the better part of my childhood I wanted to be Schwarzenegger from Commando. Take a bullet to the arm? Walk it off. Get hit with a pipe in the back of the head? Walk it off! One time I popped a pimple and it hurt so bad I cried a little bit. I don’t think I will ever be Rambo.

Topiary triumphs The next time you say hello to a hedge and don’t hear it say anything in return, you may want to listen a little harder. “They whisper,” says the man standing beside us with laugh, “they don’t yell out.” His name is Georgio and he first heard a yew tree talk 25 years ago. Before he shows us how that conversation ended, he invites us to see how another one is beginning. He looks up at a still untamed tree in his backyard and points around it. “The tail’s going to be over there. The flipper’s here. And I haven’t decided to put a ball on the end of its nose or not.” After looking at it and listening to it, Georgio has agreed to help the tree reveal its inner seal. The videographer starts capturing the sounds and sights of how Georgio does that: hands and garden tools snipping and clipping; moving together as one in a jubilant dance. When Georgio is done, we don’t see much change. He says we won’t see the seal for about five years. “It’s the voyage. Not the destination.” He shows us a plant that’s a couple years into the process of becoming a peacock, its ‘feathers’ starting to fan out behind it. And then we walk towards the front yard of his Rockland home. Return to the tree that first caught our attention as we were searching for stories for the end of the six o’clock news – the tree shaped like a duck.

This first conversation that Georgio started almost a quarter century ago has ended by putting a hat on the hedge. The bonnet is made from an upside-down waste-paper basket, fake flowers and an umbrella with a penguin pattern. It’s tied around the topiary’s neck with a blue ribbon from a mattress pad wrapping. I ask why it was worth the time and effort to turn the tree into a duck with a hat and Georgio laughs. He laughs often. “I like whimsy, a little bit of fun, joking around.” And the trees seem to like being transformed. The duck is apparently set to return the favour, by helping to celebrate Georgio’s daughter’s upcoming wedding. It whispered it wanted to wear a veil. I ask what his daughter will think? Georgie responds with a laugh: “Surprised, unexpected and dad’s at it again!” Adam Sawatsky is co-host of CTV News Vancouver Island at Five. On weekends, he hosts ‘Eye on the Arts’ on CFAX 1070.

The next time someone tells you to ‘go fly a kite’ you might want to take them up on it. With the Victoria International Kite Festival just around the corner, May 29 to 31, I decided to put thoughts of work, household chores and weeding my garden aside and head to Clover Point to meet up with Terry Wiggill of Team Island Quad. If you’ve been to Clover Point and marvelled at some of the large, colourful kites that fill the sky almost year round, chances are you’ve seen Wiggill. He’s there most days, flying a variety of kites, depending on the wind. Wiggill, who began flying nearly 10 years ago, says the only trick to flying a kite is to keep the wind at your back, be patient and persistent. Of course, having the right type of kite for the wind speed and a few tips from a pro like Wiggill can’t hurt either. I meet Wiggill around 2pm, the wind is very light and the skies are clear. Kites don’t like the rain. We begin with a single line skate, it’s so light, it will fly Victoria indoors, says Wiggill. etting out on a mission to find food can be a great adventure or a list of errands taking you to your favourite shops. The bakery, butcher, fish monger, green grocer, cheese shop, and the wine store are great places to try something new or satisfy cravings for old favourites. Summer starts this month, and if you’re like me, you’re already planning road trips and adventures. Here’s a few ideas I hope you’ll enjoy. In Port Renfrew, the Renfrew Pub is refreshing for summer with new food and craft drink options, and there is a food truck at the marina that makes great sushi, and has a pizza night. Cowichan Valley has new brick oven pizza restaurant, Torta Luna in Valleyview Centre (14-1400 Cowichan Bay Rd.), by Drumroaster Coffee (the best coffee in the area). Blue Grouse Wines, 2182 Lakeside Rd., Duncan, has a stunning new tasting room which just opened this week. The new Victoria Wine Trail, a

group of wine and cider producers on the Saanich Peninsula are promoting the destination as a whole. Their website (victoriawinetrail.com) has all the details, visit each producer to see their events, tastings, and celebrations all summer. Make a stop at Silver Rill Farms for awesome produce. In Victoria, HOPoxia brings 30-plus Craft Beer producers to Phillips Brewery June 13, 3 to 7pm, $20. escatores’ renovation is complete and thank goodness. Its beautiful new interior is perfect for the growing sophistication of Victoria. There are options to be had here with three restaurants in one but my interest was in the cocktails that can be ordered in any of the rooms. In the past I wouldn’t consider Pescatores’ as cocktail centric but there seems to be a new emphasis on considered drinks and a playful style. Classic cocktails have updated names with a nod to our locale. The Malahatten steps in for the classic Manhattan, the Old Way for an Old Fashioned and the Sunset Mule is a local take on the Moscow Mule featuring Fever Tree Ginger Beer, though I must confess a preference for Q Ginger this one does hold its own. If you’re looking for other riffs then check out the Evil Twin, a negroni twist utilizing trendy Aperol to good effect and the Southern Hemisphere, a sour with Pisco and Cointreau that is light, refreshing and perfect for the street patio here. To nosh, there are no better fresh oysters in town and there were seven varieties the day we were in. I would have liked to try an unavailable Brandade (how can they be out, they just opened!), a classic Portuguese dip of salt cod and olive oil, but settled for a lightly curried calamari over the flatbread or prawns. A trip to Tomorrowland ROBERT MOYES arts@mondaymag.com Brad Bird is a brilliant and playful director, whether he’s telling the anti-militarist tale of a boy and his huge alien robot (Iron Giant) or confecting a delicious whimsy about a rat with dreams of being a chef (Ratatouille). The double Oscar winner blasts off into imaginative and visually extravagant sci-fi realms in Tomorrowland, where strange memories of a futuristic alternate Earth are the key to our planet’s survival. Britt Robertson stars as Casey Newton, the rebellious teenage daughter of a NASA engineer whose mix of scientific curiosity and endless optimism have brought her to the attention of a mysterious girl named Athena, who slips her an old badge from the 1964 New York World’s Fair. Whenever Casey touches the badge she briefly gets transported to a fantastical world of flying cars and spaceage buildings. But the magical visions soon fade, and Casey finds herself on the run from smiley-faced humanoid robots that want to kill her. Eventually paired up with an embittered and reclusive inventor (George Clooney) who knows a lot more than he is willing to admit to, the mismatched pair undertakes a spectacular journey through a mysterious portal that exists outside the usual constructs

of time and space. Suddenly catapulted into a very real Tomorrowland, they must come to grips with past events in order to survive their deadly confrontation with the suave but despotic ruler (Hugh Laurie) of this exotic realm. Visually inspired by the various futuristic Disneyland park rides of the same name, glossy Tomorrowland is decidedly Spielbergian in its candy-coloured sheen, wholesomeness, and sentimentality. The storyline is clever and well paced, while strong performances give an affecting emotional realism to many scenes. But above all, this is a movie with a message. Through Casey’s eyes we see a planet under assault from extreme weather events, political chaos, and other grave threats. And like Casey, we are meant to be inspired to rise to these challenges with fearless hearts. To call this naive is an understatement, even though the movie itself impresses on many levels. But in a multiplex throbbing with the amped-up distractions of The Avengers and Mad Max, Tomorrowland is a blockbuster with no obvious target audience. It is well made and deserves to be seen. But how many people will queue up to take this spectacular ride?

Feast Food + Film, a three year old festival is taking it a step farther bringing food themed films together with great local purveyors for eight tactile movie experiences. My personal favourite, Red Meat and a Bottle of Gin brings the mouthwatering film Steak (R)evolution together with sizzling grilled steak from the Village Butcher accompanied by a wee bit of gin – I’m sure there is no better marriage. The film follows the search for the best steak in the world and I think the Village Butcher makes the cut. Over at the Oak Bay Beach Hotel they’re offering a remarkable brunch with the dream like film El Somni, a concept to bring food, art and technology together to create a once in a lifetime dinner experience by the top restaurant in the world, El Cellar de Can Roca in Spain.
