A jury found Arthur Topham guilty of one count of willful promotion of hatred and not guilty of a second count of promoting hatred against an identifiable group. The verdict came down Thursday after 13 days of crown and defence cases and more than two days of jury deliberations. “I’m not shocked by the guilty verdict,” Topham said. “I’m not shocked by anything, because I have absolute faith in God that anything that is happening is happening for a reason.” “I’m more surprised by the not guilty on the second count, because then why not guilty on the first?” He speaks to the fact both charges stem from his website, www.radicalpress.com, yet the charges are from different time frames. Topham said he feels the silver lining in the decision is the fact he can continue his challenge of the Charter of Rights and Freedoms in which he was charged under, 3.19.2 (willful promotion of hatred). “If I wasn’t found guilty of that one charge I couldn’t challenge the legislation,” he said. “And that’s key.” Topham also spoke to a piece on his website, Israel Must Perish, which was covered extensively in the trial. The piece, he said, was taken from a previous book called Germany Must Perish. Topham said he essentially substituted certain words, such as Germans for Jews, Nazi for Zionist and Germany for Israel. “The text is verbatim other than that,” he said. “If anything, I’d be guilty of plagiarism.” Thursday sees Topham back in court with crown counsel seeking additional bail conditions and sentencing dates. Topham was arrested and his house searched on May 16, 2012 after it was determined “there were reasonable grounds the offence of promotion of hatred was committed.”

CRD hears Gold Pan physician recruitment plans

Susan Paulsen, Healthcare Recruitment Coordinator, Quesnel Community and Economic Development Corporation appeared before the Cariboo Chilcotin Regional Hospital District (CCRHD) Board to provide an update on recruitment and retention activities of health care professionals to the Quesnel area. The presentation featured ways in which the organization has been recruiting health care professionals, the Red Carpet Welcome program, various program successes and the next steps for the program. The CCRHD Board also endorsed a resolution to renew their three-year agreement in support of the recruitment programs in the North, Central and South Cariboo. BC Service Centre staff in Quesnel honoured with award Bonnie Leclerc, on behalf of the Kidney Foundation of Canada, B.C. & Yukon Branch honoured Service B.C. centre staff in Quesnel on Friday with a special Community Leadership Award for their dedication and support of organ donation. Quesnel was one of several Service B.C. Centres chosen to launch a pilot program which provided information and an easy registration for

those wishing to become organ donors. Up to the end of August, Quesnel staff had registered 279 donors. Province-wide 19,692 citizens had registered their decision to be an organ donor. Now all 62 Service B.C. Centres provide a central location where people can access information and get answers about organ donation and register as a donor.

“The staff in Quesnel are being recognized for their continued support of this important program and for assisting the citizens in the community register a decision on organ donation,” director of service analytics and standards with the Ministry of Technology, Innovation and Citizens’ Services Perry Slump said. In addition to the Kidney Foundation of Canada, B.C. & Yukon Branch’s

Community Leadership Award, Slump presented the staff with a letter of recognition from the ministry and the B.C. Transplant Society. Right now there are more than 500 people in B.C. waiting for a life saving organ transplant and almost 400 of those are waiting for a kidney. Sadly many of these patients will die waiting. 95 per cent of British Columbians say they

support organ donation but only 19 per cent have actually registered on B.C.’s organ donor registry. The Kidney Foundation of Canada has committed to increase organ donor registration and kidney transplants by 50 per cent over the next five years. “The decision to register as a organ donor can mean a second chance at life for multiple individuals – quite possibly for someone in Quesnel,” Slump said.

Radon mitigation measures can be taken at a moderate cost

Towns across B.C. have joined the B.C. Lung Association in proclaiming November Radon Aware month – Prince George, Kamloops, Penticton, Princeton, Trail, Creston, Nakusp, the Village of Salmo, Fort. St. James and Keremeos. And they’re hopeful the Gold Pan City will benefit. Radon gas exposure accounts for an average of 55 per cent of a person’s lifetime radiation exposure – and for as many as 16 per cent of all lung cancer deaths each year in Canada. “Radon is one of the most hazardous sources of indoor air pollution in Canada,” Dr. Peter Paré, Chair of the B.C. Lung Association and Professor Emeritus of Respiratory Medicine at the University of British Columbia, said. “And B.C. community involvement is vital to making real progress on the issue. “It’s encouraging how many B.C. community leaders have stepped up and spoken out in a short period to help keep B.C. families safe from radon-related lung cancer risk. “No one should have to suffer from preventable radoncaused lung cancer. Home radon testing is affordable and relatively straightforward solutions exist to reduce radon to safe levels if it turns out the radon level in your home exceeds the recommended safety threshold.” Affordable do-ityourself radon test kits are available online at RadonAware. ca, which includes home delivery of lab results. And while the B.C. Lung Association continues to promote community action, they’re also championing the issue with industry groups central to the development of a comprehensive solution. “To put a stop to radon-related lung cancer - building inspectors, builders and tradespeople, realtors, and home warranty organizations will all play a very significant role,” Britt Swove-

Lung Association, said. “Radon policies and regulations need to be established to ensure both new and existing B.C. buildings are future-proofed from the risk of radon. And these policies need to be effectively enforced. “Ultimately, it needs to become standard practice to address radon when buildings are constructed, financed, re-financed, insured, retrofitted or sold. “As in the US and elsewhere, at some point, radon inspections will likely become a routine step in any real estate transaction. “The B.C. Lung Association is right. To effectively address the threat that radon poses to public

health, actions are required on many fronts,” Dr. David Boyd, Environmental Lawyer, Author and Adjunct Professor at Simon Fraser University said. “In addition to residential testing, there should be strategies to ensure that radon testing and if necessary radon mitigation

measures, are undertaken in all public buildings with priority given to schools and daycare facilities. “The good news. is that radon problems can be fixed, at a moderate cost, both in new home construction and in retrofitting existing buildings. We just

City’s Tax Framework for 2016-2019 For over four decades, politicians have trumpeted the mantra that taxes and government are bad; bad for your pocketbook and bad for the economy. The reality is that taxes are essential if you want to live in a progressive society with good schools; quality public health care; maintained road, water and sewer systems; and affordable public services, programs and amenities (parks, playgrounds, and recreation facilities). This year, for the first time, Quesnel City Council is attempting to project the taxation framework we believe we’ll need to maintain the vibrancy and resiliency of our community during this transition period while also achieving long outstanding financial goals; particularly, the need to relieve the tax burden on our industrial employers and address the City’s long term infrastructure deficit. This is a bold move by Council and contrary to the normal political avoidance of discussions about what it really costs to maintain quality public services, programs, and infrastructure.

Contractors and trades are invited to learn about opportunities related to the Renovations and Upgrade project for the Sam Ketcham Pool - West Fraser Aquatic Centre in the Cariboo Memorial Recreation Complex (scheduled to begin spring 2016).

Between our 2015 and 2016 budgets Council has reduced the operating costs of the City by about 10%, avoiding about an 8.5% general tax increase. This allowed us to tax and increase utility fees only to address our annual infrastructure deficit of $2.4 million/year. This additional taxation for capital re-investment enabled the City to immediately double its roadworks program in 2015. Over the next three years we need to continue to increase taxation for capital re-investment (5%) and also address a projected 2% inflationary pressure in both 2017 and 2018. However, we want to do this without increasing industrial taxation, so this 9% increase in overall tax revenue must be borne by residential and commercial ratepayers, amounting to a 7.7% tax increase each year for the next three years. This will result in a tax increase of $37/$100,000 assessed value per year for residential ratepayers or a total increase of $111 /$100,000 by 2018. We need to immediately shift taxes away from industry for three main reasons: tax fairness, as a way to attract investment in our industrial sector, and to reduce our unsustainable dependency on industrial taxation. Currently, residential ratepayers only contribute 20% to the City’s total tax revenue, despite receiving the majority of the benefits and representing 67% of the City’s total assessment. Industry pays just over 60% of the tax bill on only 12% of the total assessed value – this high tax rate is a major disincentive to investment and employment growth. Council believes that this proposed tax framework will put the City on a firmer financial footing by 2019, enabling us to better manage our way through this transition period and more able to ensure the vibrancy and resiliency of our community. Teach online safety in school, experts say Instruction to protect children from “cyberbullying” should be included in B.C.’s new school curriculum, according to a new report from the province’s independent child welfare and privacy officers. The B.C. government’s school antibullying program was put in place in June 2012. Four months later, 15-year-old Amanda Todd posted a video of her online treatment before she killed herself at her Port Coquitlam home, putting an international face on the dangers faced by young people socializing online. In 2013, Nova Scotia teen Rehtaeh Parsons was also driven to suicide after explicit pictures of her were circulated on social media. Representative for Children and Youth Mary Ellen Turpel-Lafond and Information and Privacy Commissioner Elizabeth Denham surveyed the laws and strategies in place inside and outside B.C. since then. “The circumstances leading to the deaths of these two young

women highlight the significant pain and suffering young people can endure when they are faced with repeated cruel treatment by their peers through online means,” Denham and Turpel-Lafond conclude. Their report, presented Friday to the B.C. government, calls for more measures in schools in addition to the ERASE (Expect Respect And a Safe Education) strategy put in place in 2012. That strategy provides for anonymous reporting by

students or parents of bullying, either online or in person. The report calls for the education ministry to “ensure that developmentally appropriate learning objectives about cyberbullying and digital citizenship be included in the provincial school curriculum and delivered to all school-age children as soon as possible.” Education Minister Mike Bernier said Friday the new school curriculum, which began implementation this fall, already

The Quesnel and District Hospice Palliative Care Association provides comprehensive and coordinated care to individuals and their families living with life threatening illnesses and grief and bereavement support to the community. Ensure safety As details of the sinister terrorist attacks on separate sites in Paris last week unfolded, many of us stopped in our tracks and wondered just how far terrorists would go in their bid to create global chaos. The way the Paris attacks were carried out was random and indiscriminately violent, a strategy that is becoming the calling card of the group known as ISIS. Besides the 129 (and counting) people murdered in Paris, other equally disturbing human massacres occurred over the past few days. Suicide bombers killed 43 in Beirut and at least seven died in bombings in Baghdad. While our leaders insist that Canada is safe from such carnage on our home soil, the weekend attacks are enough to send a chill down one’s spine. As our newly elected federal government analyzes the international role it will play moving forward after this latest barrage by ISIS and other groups, some of the discussion has moved toward how Canada should deal with its promise to accept 25,000 Syrian refugees into the country by the end of this year. On social media and many mainstream news outlets, some have said we should think twice about accepting these people given the news that some of the Paris terrorists may have posed as Syrian refugees. We’d like to believe the new Minister of Public Safety when he says the screening process for refugees will be “strong and robust.” We also agree with his later comments that no system is perfect. In general, the federal government must do what it needs to, as a way to ensure the safety of its citizens on home soil. While the Liberals may have a different mindset than the Conservatives when it comes to national security, we won’t be surprised to see measures instituted that may make civil rights activists and libertarians in this country cry foul. –BP

Green shift returns, goes global W

e will soon learn what Premier Christy Clark and Prime Minister Justin Trudeau have in mind for Canada’s renewed effort to influence climate change. As they prepare to join the 40,000 people jetting to Paris for the next big United Nations summit to deal with human impact on the world’s weather, here is some context for what is to come in December and beyond. Foreign Affairs Minister Stéphane Dion served as environment minister under former Liberal prime minister Paul Martin. Then, as Liberal leader, Dion’s proposed “green shift” carbon tax was pivotal only in ending his leadership. With a majority government this time, he promises the entire federal cabinet will be involved. Dion gave a revealing interview to The Globe and Mail last week about his experience in government. “The old system was to give the file of the environment to the minister of the environment and say, ‘deal with it, be the hero of the environment groups, but don’t bother us because we

That will not work.” It certainly didn’t work, which is not surprising since Dion is admitting the Liberals considered the environment ministry a mere public relations tool. This was the period when Canada signed on to the Kyoto Protocol, then pretended to care about it as the United States rejected it in a unanimous vote of Congress. We now understand more about those environmental groups, most funded by U.S. billionaires to target the Canadian oil and gas industry while the U.S. booms. Their tactics were on display in the defeat of the Keystone XL oil pipeline to the U.S., with arguments that even President Barack Obama acknowledged were

If you’ve been to the movies lately, you may have seen a slick animated commercial sponsored by the UN, featuring animals running the world from the seats of the General Assembly. “We have a plan,” trumpets the elegant llama at the podium, not only to fix climate change but to eliminate poverty as well. One problem with Kyoto was that it left emerging economies like China and India untouched. And while Canada endures false allegations of subsidizing fossil fuels, actual subsidies are huge in petro-states like Venezuela, Saudi Arabia, Iran, Algeria and Indonesia, where gasoline sells on average at a third of Canadian prices. China and India’s carbon emissions have about tripled since the Kyoto public relations gesture in 1997. That growth is one reason

Quilters gather to make tokens of love and support for children facing serious medical issues

A

s early as 8 a.m. on a late October Saturday morning, members of the Quesnel Quilters’ Guild could be seen lugging sewing machines, rolling chairs and multiple totes full of the tools and equipment needed for a weekend of serious sewing. This was their yearly Community Comfort Quilt workshop and all who attended came ready to work! This project is near and dear to the Guild – over a typical year, more than 50 quilts are given to children from newborn to 16 years of age who face serious medical issues or any type of emotional trauma which a cuddly quilt might help to ease. We are fortunate to receive donations of fabric from a number of sources – our own collections at home, families of quilters and “increased buying power” from local quilt shops by way of discounted prices. The profit we make every three years on our Quilt Show raffle quilt is used to purchase quilt batting and fabric for backing. We are always on the lookout for quality flannelette for backing, so members travelling far and near can be counted on to check out the local quilt shops for bargains. And – bargains they find! The labour for these quilts is free. Anyone who knows a quilter knows how much we look forward to getting together to share our passion for fabric and design, to learn from one another – and to share a laugh or two and have quality time together. Comfort Quilt weekend was electric – and the production level was remarkable. Most of the 22+ quilters came to sew for two days, although one or two could make it only one of the two days. One member spent the entire weekend cutting batting and backing for quilts being assembled by her quilting mates – when there was time, she and another quilter co-ordinated fabric from our sizeable “Guild stash” of donated fabric to give us a head start on our quilt production. By noon Sunday, the walls of the Elks Hall were covered by pieced quilt tops – all sizes, all colours, for wee babes, for boys and girls of all ages. By my estimation, there were at least 50 quilts well on their way to completion – to be machine quilted at home and then have binding and labels added before being handed over to our Community Quilt Coordinators. We are very fortunate to have a Guild member who is able to donate some sizeable space in her basement for storage of our Community Comfort Quilts and of our stash of fabric, bolts of backing and huge rolls of batting. As 4 p.m. Sunday approached, the sewing machines, chairs and totes were slowly returned to members’ cars. The energy level had diminished somewhat – we were definitely tired – but the joy of spending time together and the sense of accomplishment that came from the level of production meant we were all smiling as we headed home. – submitted by Sally Service

Remembrance of the early years of First World War With generous funding from the Department of Canadian Heritage through the World War Commemorations Community Fund and in partnership with the Royal B.C. Museum, Story Theatre Co. will be touring The Call Went Out throughout British Columbia during November of this year and will perform in Wells’ Sunset Theatre Nov. 21 at 7 p.m. The performance is free and suitable for all ages. This theatre piece is based on letters from B.C. soldiers

F

or the past 25 years, St. John the Divine Anglican Church hall has been a safe haven for those looking for fellowship, a hot meal and the milk of human kindness on Christmas Day. Eileen and Reg Chan have been the hosts of this holiday hangout, making sure every little detail was as perfect as possible. The annual Christmas dinner was first organized by Bonnie Carr and Barb Ingram. Bonnie had just pulled through a rather bad year and wasn’t looking forward to Christmas dinner and figured there must be others who felt the same. And so the Christmas dinner was born. Over the 15 years Eileen and Reg have been steering the Christmas dinner ship, they’ve heard heart-warming and heart-wrenching stories but regardless of the circumstance, no one was ever turned away. One story they tell is of a man who’d had an extremely difficult year and was on his way to the river to end it all. He was passing the church and was invited into the hall and treated to Christmas dinner with all the trimmings and a healthy helping of warm hospitality. Eileen said he reconsidered his options. “This dinner has always welcomed the

lonely, the sad, new faces in town and anyone wanting a warm and welcoming Christmas Day,” Eileen said. She added they’ve always tried to make their dinner guests feel as though they’re dining at a fine restaurant – table service and all. Last year they served 150 meals. That required nine turkeys, 50 pounds of potatoes and about 24 pies. “We depended on corporate, union and individual donations and the community always dropped off random donations,” Reg said. Stefan Van Schaick of the Salvation Army was happy to take over the Christmas dinner and says they plan to keep it much the same as it has always been. “We are looking to create much the same atmosphere, welcoming anyone who is looking for a chance to be around people in a warm and welcoming environment,” he said. “We’ll provide table service and turkey with all the trimmings. All the people have to do is show up.” The Salvation Army has for the last few years offered Christmas dinner a couple of weeks before

Christmas Day at the Warrior’s Song Cafe but this year they’re replacing that meal with Christmas dinner on Dec. 25. “This schedule works well for us, especially in light of our kettle campaign which begins on Nov. 28,” Stefan said. “We’ll still be offering Breakfast with Santa, Dec. 19, but for that, tickets are required.” The Salvation Army also hands out Sunshine bags to seniors in Dunrovin and Maeford Place. Although the majority of the public looks forward to the Christmas season with a flurry of engagements and time with family and friends, for those where the season doesn’t hold such happy prospects, they will find a warm welcome at the Warrior’s Song Cafe, Dec. 25.

Ernie is survived by his wife Wilma, daughter Cindy(Ray), son Wayne (Cindy) stepson Jerry (Betty) and his large extended family. His many grandchildren called him Papa. We regret to announce the passing of Betty May Halverson. Betty passed away peacefully on Oct. 30, 2015 at 10:13 am in her room at Dunrovin Park Lodge. Betty was born on July 9, 1931 in Cut Knife Saskatchewan, and raised her family in Dawson Creek, B.C. She spent approximately the last 20 years as a resident of Quesnel. Betty leaves behind two sons, one daughter, six grandchildren and six great grandchildren. Betty will be remembered through a celebration of life with her surviving Brothers, Sisters, and families in her favorite season, Summer, 2016, in the Okanagan where most her family reside.

Injuries from high heels has increased substantially in the past decade. Many of the injuries were to the foot and ankle while some also involved the knee, head and neck. Broken bones were involved in about 20% of the injuries. High-heeled shoes are looked upon as stylish but risky from a health point of view. Are you a “lark” (early riser) or an “owl” (later to bed)? Neither has an advantage over the other. The key here is the number of hours of sleep you get. If you have a 9-5 job, it’s good to be a lark but it’s not as good for owls. Seven hours of sleep daily is a great aid to better health. Long term studies on aging found that signs of body deterioration can be seen as early as age 26. But how quickly we age is dependent only 20% on our genes which means we can control how fast we age by taking care of ourselves better. Keeping active, getting enough sleep, watching what we eat and getting regular medical checkups….all contribute to a slower aging process. Pharmacists are often asked what “works” to prevent or shorten the duration of colds. Zinc lozenges taken every two hours may help shorten a cold but not prevent it. They shouldn’t be taken for more than one week. Hand-washing many times a day will reduce your exposure to cold viruses and is always recommended. If you are going on a winter holiday, remember to bring enough of your prescribed medication with you. Getting replacements in a foreign country isn’t always easy.

For certain donors it may make sense to make a donation in kind to the Foundation rather than money. These donations can be real estate, collectibles or appreciated stock. For this column only donations of securities will be dealt with as this has been a popular form of donation on occasion. A donation of appreciated stock makes sense when the donor owns stock that has increased in value while owned by the donor. The donor makes the gift of appreciated stock directly to the Foundation’s Endowment Fund with the transfer arranged by the Foundation and the donor’s broker. The donor receives a charitable receipt for the value of the shares on the date they are received by the Foundation. The donor is not required to show any capital gain on the disposition of the shares which will result in some tax saving to the donor. By giving stock to the Foundation the donor avoids capital gains taxes that would be due as a result of the sale of the stock and helps the Foundation fund local causes and organizations that the donor cares about and wants to have supported. Quesnel Kangaroos defeat rival Williams Lake RYAN GRAHAM Observer Reporter In a battle of the two top teams in the east division the Quesnel Kangaroos came out on top, defeating their rivals the Williams Lake Stampeders 9-5 this past weekend. The game started with a good pace, as Quesnel jumped all over Williams Lake scoring 37 seconds into the game. They scored three more to increase their lead to four with the Stampeders only getting one to finish the period. The second saw Quesnel run in to penalty trouble, with Williams Lake scoring two power play goals in the period and five in the game. During the period a penalty shot was awarded to forward Nathan Zurak of the Stampeders, but was turned away by Quesnel’s Shane Mainprize. Paul Giordat of the Kangaroos had a big game as he recorded a hat-trick with a

beautiful goal in the second, as he skated into the slot and fired a wrist shot over the goaltenders glove. The Kangaroos continued their momentum in the third period, as they scored three goals to wrap up the win, which was highlighted by another goal by Giordat going in on a breakaway beating the goalie on the backhand. Quesnel was led by Girodat who had three goals and Mike Kalusny who had two goals. The other goals were scored by Alessio Tomassetti, Brandon Mistole, Riley Marsh and Curtis Gassoff. With the win, the Kangaroos extended their wining streak to three games and are second in the east with four wins, three losses and one overtime loss, only one point behind Williams Lake for first place. Quesnel’s next game will be this weekend when they play Williams Lake again on Saturday.

7-3 to extend their undefeated streak. It was a close contest throughout the match, until Billy Barker broke through in the fifth end breaking the tie with a three ender to take the win. The second match saw Service Electric go up against Quesnel Lawn Care in a close game with Service Electric

picking up the win 6-5. The third contest saw Essential Business defeat Sky-Hi Scaffolding 8-5 extending their winning streak. The final match had Child Development Care defeat Karin’s Deli and Health Foods 6-5 to wrap up the night.

Holiday cookies with a healthful twist This traditional festive cookie incorporates whole wheat flour to provide a fibre boost without compromising flavour or texture. Whole wheat gingerbread cookies Prep time: 30 minutes Chill time: 1 hour Bake time: 9 minutes Yields: approximately 6 dozen (72) cookies Ingredients: • 1 cup (250 mL) unsalted butter, softened • 1 cup (250 mL) packed golden yellow sugar • 1/4 cup (60 mL) pure fancy molasses • 1 large egg, lightly beaten • 1 tsp (5 mL) artificial vanilla extract • 1/2 tsp (2 mL) iodized sea salt • 1 1/2 cups (275 mL) whole wheat flour • 1 1/2 cups (275 mL) Great Value All Purpose White Flour • 2 tsp (10 mL) ground ginger • 2 tsp (10 mL) ground cinnamon • 2 tsp (10 mL) baking cocoa • 2 tsp (10 mL) baking soda Directions: 1. In a large bowl, beat together butter and sugar until light and fluffy. Beat in molasses, egg, vanilla, and

salt until combined. 2. In a separate bowl, whisk together dry ingredients; add to wet ingredients and mix until well blended and dough forms. Cover with plastic wrap and refrigerate for at least 1 hour before handling. If chilled overnight,

allow the dough to warm up slightly or it may crack when it is rolled out. 3. Preheat oven to 350F (175C.) Line two baking trays with parchment paper, set aside. Divide dough into 4 pieces; roll out one at a time keeping the remaining dough refrigerated. 4. Roll dough to ¼ inch (½ cm) thickness on a lightly floured surface. Cut into desired shapes using floured cookie cutters. Carefully transfer to prepared baking trays. 5. Bake for 7-9 minutes, rotating trays top to bottom halfway through, or until cookies are set. Cool 1-2 minutes on the tray then transfer to a wire rack to cool completely before decorating. Tips: Make a simple Royal Icing to decorate. It will harden overnight, making the cookies stackable for storage. Lightly whisk together one egg white and ¼ tsp (1 mL) lemon juice. Gradually beat in 1 ½ - 2 ½ cups (375-625 mL) of icing sugar to desired consistency. Tint using food colouring, then pipe onto cookies using a zipper storage bag with the corner snipped off. Allow the icing to dry overnight before storing in an airtight container. – newscanada

Roasted turkey breast with Gorgonzola, Baked Pears and toasted pecans Host the perfect family dinner with a show stopping main dish that will be sure to impress. Try topping your turkey with this beautiful balance of sweetness and richness with the combination of crisp pears and punchy gorgonzola cheese. Prep Time: 15 minutes Cook Time: 30 minutes Serves: 4 Ingredients • 3 ripe but firm Anjou pears • freshly squeezed lemon juice (3 lemons) • 85g coarsely crumbled gorgonzola cheese • 1/4 cup (60g) dried cranberries • 1/4 cup (60g) pecans, toasted and chopped • 1/2 cup (120ml) apple cider • 3 tablespoons (45ml) chicken stock • 1/3 cup (80g) light brown sugar, lightly packed • 1/4 cup (60ml) good olive oil • 250g baby arugula • 1 large (500g) roasted turkey breast sliced • Kosher salt Directions 1. Preheat the oven to 375°F. 2. Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon baller, remove the core and seeds

from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly. 3. Gently toss the crumbled gorgonzola, dried cranberries and pecans together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation. 4. In the same small bowl, combine the apple cider, chicken stock, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature. 5. Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula and turkey among 4 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt and serve warm. – newscanada
