Yummy Cranberry White Chocolate Scones Submitted by: Little Garden Montessori Center
In December we always make yummy treats to share with the children and staff. Here is one of our favourite treats during this festive season. Happy Holidays from Little Garden Montessori Center TOTAL TIME: 25 min. MAKES: 8 servings 2 cups all-purpose flour
2 egg, beaten
1/2 cup sugar
1/2 cup fresh or frozen cranberries
3 teaspoons baking powder 1/8 teaspoon salt 1/2 cup cold butter 6 tablespoons 2% milk
1/2 cup white chocolate chips or chunks 1/2 teaspoon coarse sugar
In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, combine milk and 2 tablespoons beaten eggs; add to crumb mixture just until moistened. Stir in cranberries. Turn onto a floured surface; knead gently 6-8 times. Pull apart a generous hand full of dough for large scones or a smaller amount for smaller scones. Place on a baking sheet coated with cooking spray or butter. Brush top of scone with a lightly beaten egg; sprinkle with coarse sugar. Bake at 425° for 12-15 minutes or until golden brown. Serve warm with cream, jam or butter.

Have been making for Christmas brunch for 40 years! 16 slices white bread, crusts removed 16 slices Canadian back bacon or ham 16 slices sharp cheddar cheese 6 eggs 1/2 tsp. pepper 2 ml 1/2-1 tsp. dry mustard 2-5 ml 1/4 cup minced onion 60 ml
1/4 cup finely chopped green pepper 60 ml 1-2 tsp. Worcestershire sauce 5-10 ml 3 cups milk 750 ml Dash Tabasco 1/2 cup butter 125 ml Special K or crushed Corn Flakes
Set 8 pieces of bread into a 9" x 13" (23 x 33 cm) buttered, glass baking dish. Cover bread with slices of back bacon. Lay slices of cheddar cheese on top of bacon and then cover with remaining slices of bread like a sandwich. In a bowl, beat eggs and pepper to the egg mixture, add dry mustard, onion, green pepper, Worcestershire sauce, milk and Tabasco over the sandwiches, cover and let stand in fridge overnight. In the morning, melt butter, pour over top. Cover with Special K or crushed Corn Flakes. Bake, uncovered, 1 hour at 350F (180C). Let sit 10 minutes before serving. Ashlie Family Scones Submitted by: Cheryl Ashlie Basic recipe for scones: 2 cups flour 1/4 cup white sugar

Stir above together and then cut ¼ cup of butter or margarine into dry mixture so that margarine is smaller than pea size throughout. At this point you can add up to one cup of dried fruit mixture: golden raisins, regular raisins, dried cherries, cranberries, or any of your other favourites that are chopped to the size of a raisin. Make sure the fruit is evenly tossed throughout flour mixture. In a measuring cup pour 1/3rd cup of milk and blend in two eggs with a fork until completely combined with milk. Make a well in centre of the dry ingredients and pour in the wet mixture and stir with a fork until dough forms a ball. It usually takes floured hands to finish this off and gather up all of the mixture into a ball, which you then put on a floured surface. Knead and fold about 10 times and then shape into a long rectangle about ¾ of an inch thick. Slice the rectangle into about 12 scones and place on floured baking pan. I use a baking stone, but if you use a metal tray, you may want to use wax paper or spray the bottom before placing scones. Bake at 390F for 13-14 minutes. However, this is my oven, so if your oven is hot, start at 375 for 12 minutes and then check to ensure they are not turning brown. Scones should never be brown! This recipe is very versatile, so feel free to swap out the dried fruit for fresh fruit, such as blueberries, or apple slices. I will also make a brown sugar, cinnamon and margarine combination when I use apples, which I will add in when I knead the dough, allowing for a kind of cinnamon bun effect in the scone. Adding vanilla extract and lemon zest with fruit also adds to the flavor. Basically, you can do whatever your imagination or craving brings you to, as this recipe will net you a great breakfast scone to go with your coffee or tea in the morning with very little effort. In a food processor knead self raising flour, diced butter, soft sugar, spices, lemon peel and salt to taste into a soft dough Knead shortly with a cool hand Wrap dough in cling wrap and let rest in the fridge for 30 minutes Mix almond paste, egg yolks and lemon peel with a fork Beat egg white lightly Butter 24cm diameter springform pan and preheat oven to 325F Divide dough into two equal portions and roll out one portion to fit bottom and sides of the springform (or press out in the tin) Roll out the second portion of dough, brush the sides with egg white and place the dough over the almond paste layer Brush the top with cream and decorate with almonds Bake in the centre of the oven for approximately 30 minutes, until golden Line 9x5 inch loaf pan with parchment paper Place chocolate in top of double boiler, add cream and butter Melt over medium heat, stirring until completely smooth Remove from heat and cool for a minute Whisk egg yolks and sift in icing sugar Pour into prepared pan and refrigerate overnight Unmold, remove paper and dust with cocoa powder Drizzle with fruit puree (optional) of choice Use a hot wet knife to slice Makes approximately 16 servings

1/2 tsp salt 1 egg beaten (brushing on top) 1/2 cup finely chopped walnuts
Mix first set of ingredients together to form dough

5oz milk 300ml egg 4oz graham cracker crumbs 2oz sugar 2oz melted butter
Roll to 1/8” thick
For the crust, combine graham crumbs, sugar and butter and press into a 9-inch ring mold lined with parchment paper
Cut desired shapes
Soften cream cheese and mix with sugar at low speed
Brush with beaten egg and sprinkle with chopped walnuts Bake on ungreased cookie sheet at 375 degrees F for 8 minutes Makes approximately 8 dozen at 2” shapes
When smooth add sour cream, lemon zest, juice, milk and eggs. Whisk and flour by hand Pour into mold and bake at 310F for 45 minutes with moisture in the oven (i.e. water in an oven proof container) Open door and let it cool in the oven for 1 hour before serving

Cranberry Orange Bread Submitted by: lesley@bakeathome.ca 2 cups flour
¾ cup orange juice
¾ cup sugar
1 tablespoon orange zest
1 ½ teaspoon baking powder
1 egg, beaten
½ teaspoon baking soda
1 cup chopped dried cranberries
½ teaspoons salt ¼ cup butter cut into pieces
½ chopped pecans (optional)
Preheat oven to 350 degrees F (175 degrees C). Grease a 8 ½ x 4 ½ inch loaf pan. Combine flour, sugar, baking powder, salt and baking soda in a mixing bowl. Cut butter into flour until combined. Add orange juice, orange zest and egg, mix well. Fold in cranberries and pecans if using. Spoon batter into the prepared loaf pan. Bake in the preheated oven until a toothpick inserted in the center comes out clean, approximately 50-60 minutes. Run a knife around the edges of the pan to loosen cake. Cool in the loaf pan for 10 minutes before removing and placing on a wire rack to cool completely.

Ingredients 8 candy canes , crushed 1 cup unsalted butter , softened 1/2 cup white sugar 1/2 tsp salt
Using an electric mixer, cream together the butter and sugar. Beat in the salt and flour until it is well combined and has an even consistency. Mix in the crushed candy canes. Roll the dough out on a floured surface to a 1/4 - 1/2 inch thickness. Cut cookies with 2 inch round cookie cutters. Place on a baking sheet lined with parchment paper. Sprinkle with the 1 tbsp of sugar. Bake in a 325F oven for 12-15 minutes. The edges should just start getting brown. Remove from the oven and place on a wire rack. Cool completely. Melt the white chocolate and shortening. Drizzle on the cookies. Store in an airtight container for 2 weeks or in the freezer for up to 3 months.

2/3 cup cocoa 1/4 teaspoon salt 1/4 teaspoon baking powder 1/4 teaspoon baking soda 28 unwrapped peppermint kisses
Preheat oven to 350 degrees. Cream butter & both sugars with mixer. Add eggs one at a time and mix just until incorporated. Mix in mint extract. Combine flour, cocoa, salt, baking powder and baking soda in a medium bowl. Add 1/2 cup dry mixture to butter mixture. Blending after each addition just until combined and scraping side of mixer bowl as needed. Remove bowl from mixer and refrigerate for 10 minutes. Butter hands and roll dough into 1 inch balls. Place on cookie sheet covered with parchment paper. Bake for 10 minutes. Allow to cool for 5 minutes only. Press one peppermint kiss into the top of each cookie. Move to cookie cooling racks being very careful not to the touch the kiss.

1/2 cup coconut oil , melted and cool (can substitute the same amount of unsalted butter, melted and cooled for a traditional option) 1 cup granulated white sugar 1/4 teaspoon baking soda 1/4 teaspoon cream of tartar
1 egg 1/2 teaspoon vanilla extract 1-1/2 cups all-purpose flour 3 tablespoons granulated sugar 1-1/2 teaspoon ground cinnamon

In a large mixing bowl, beat coconut oil, 1 cup sugar, baking soda and cream of tartar, scraping down the sides of the bowl, as needed. Add egg and vanilla extract and beat until combined. Add flour in gradually, scraping down the sides as needed. The dough will be sticky and you might need to stir in the remaining flour. Cover the dough and refrigerate for 1 hour or less, until it's easier to handle. While the dough is chilling, combine the 3 tablespoons of sugar and cinnamon in a small bowl. Preheat oven to 375 degrees F. Take out the dough and allow to get to room temperature. You can use a fork to break up dough, if it's too hard. Form 1 inch balls, roll in cinnamon-sugar mixture to coat evenly. Space about 2 inches apart on an un-greased or parchment-lined baking sheet. Bake 10-11 minutes or until the edges are golden. Allow to cool on a wire rack. Makes 36 cookies. Enjoy!
