Maggie’s Christmas Trifle

1-9 inch sponge cake 3/4 cup raspberry jam 1/2 cup sherry 4 cups heavy custard or prepared vanilla pudding 14 oz tin apricot halves, drained 1 cup whipping cream whipped 1/2 cup sliced almonds toasted 1 1/2 cups halved fresh strawberries SPONGE CAKE 1/2 cup butter, softened 1/2 cup sugar 2 eggs, beaten 1 cup all-purpose flour 1 1/2 tsp baking powder. FOR CAKE Cream butter and sugar. Add eggs and mix well. Stir in flour and baking powder. Place in greased 9-inch cake pan and bake at 350F for 30 to 40 minutes. Cool. To assemble trifle, cut cake in half horizontally and spread one half with jam. Replace top. Sprinkle with sherry and chill for 4 hours. Cut cake into bite-size pieces. Arrange half the cake cubes over bottom of large glass bowl and top with half the apricots and custard. Repeat, ending with custard. Cover and chill for at least 4 hours or overnight. Just before serving, top with strawberries, whipped cream and almonds. Serves 6 to 8.

Christmas Eggnog

12 egg whites salt 1/2 cup sugar 1 quart whipping cream 12 egg yolks 1 cup sugar 1 quart milk 1 large bottle of ginger ale or 1 quart of white rum or bourbon 1. Add a dash of salt to egg whites and beat until stiff, but not dry: gradually beat in 1/2 cup sugar. 2. Beat the chilled whipping cream until stiff. 3. In a large mixing bowl, beat egg yolks until thick and light; gradually beat in 1 cup sugar. Add the milk. 4. Stir chilled ginger ale or liquor into egg yolk mixture; fold in whipped cream and beaten egg whites. 5. Pour mixture into a chilled punch bowl and sprinkle with grated nutmeg. Fills about 35 4-oz punch-cups.

1 cup butter 1 cup margarine 1/2 cup sugar 3 cups flour Cream butter and margarine Add sugar until creamy. Add flour all at once and mix with hands. Turn out onto floured board and form into a ball. Divide into 4 pieces. Place each quarter into a pie plate and press down until dough fills plate. Prick with a fork. Bake 50-60 minutes at 300. Cut into triangles while still warm and dust with sugar

Combine first 7 ingredients and let sit overnight Next day dredge the fruit mixture in 1/2 c flour Sift flour, baking soda, salt and spices together Cream the butter, gradually beat in the brown sugar and 6 eggs. Mix the molasses and apple juice together Add sifted dry ingredients to creamed mixture alternately with the liquid. Make 3 dry and 2 liquid combining lightly after each. Fold in floured fruit. Turn into prepared pan. Bake at 275 for 3-3 1/2 hrs. This cake will keep very well. If I keep it over a year (in freezer) I take it out, poke holes in it & drizzle more brandy over.

Potato Chip Cookies

1 cup soft butter (unsalted) 1/2 cup white sugar 1/2 tsp vanilla extract 2 cups Flour 1/2 - 3/4 cup Potato chips finely ground(Lays reg. or Ripple kind for more of a crunch) 1/2 cup Pecans finely ground super fine sugar Cream together soft butter, white sugar and vanilla then mix in flour. Add finely ground pecans and chips, mix well. Make little balls and put on a cookie sheet. Put some fine sugar in a dish, and take a little glass with a flat bottom, dip in a bit of water then press in sugar and then flatten the little cookie ball. You can make the cookie fatter or flatter to your taste liking creating different results. Bake 15-17 mins at 325 until rim of cookies gets light golden. Make sure to space the balls 2” apart so they don’t stick together. These cookies freeze well.

Christmas Apple Cake

RECIPE 4 Cakes First, peel and cut 4 cups apples. Add 6 level tsp. baking soda, 10 tbsp. cold water Let stand for 1 hour, then blend in the following: 2 cups white sugar 1 cup butter 2 eggs 4 cups flour 2 tsp. cinnamon 1 tsp. nutmeg 1 lb. red cherries 2 lbs. cut mixed fruit 1 tsp. cloves 2 cups raisins 4 cups walnuts 2 tsp. vanilla and salt 1 lb. green cherries

Beat well and add soaked apples. The mix will not be very moist, but as heat is applied, it will make plenty of moisture. Bake in Angel Food pan or bread tins. 325 F oven, 1 hour or more. This is a very tasty fruit cake and moist! Enjoy!

Preheat oven to 350F. Grease cookie sheets. In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in egg and vanilla or brandy. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfulls into prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.

Crab Stuffed Mushroom Caps

36 large mushroom 3 tbsp. butter (use only butter) 1/2 lb. crab meat (fresh is best) 2 tbsp flour 1 tbsp. chives, fresh 1 tbsp. Dijon mustard 3 tbsp. fresh squeezed lemon juice 2 tsp. Worcestershire sauce

2 tsp. basil 1/4 cup sherry 1/3 cup light cream 1 cup Bernaise sauce Wash and remove stems of mushrooms. Boil caps in lightly salted water.

Drain and cool. Mince the stems. Heat butter in a large skillet. Sautè the crab meat and mushroom stems. Sprinkle with flour and cook for 2 mins. Add the remaining ingredients except the Bernaise sauce. Simmer until very thick. Preheat oven’s broiler. Stuff the caps with crab mixture. Place caps on cookie sheet. Tap each cap with a dollop of Bernaise sauce. Place under the broiler and brown. Serve very hot! Feeds approx. 6 people.

Grandmother’s Recipe

1/2 cup butter, softened 1 cup flour 2 Tlbsp water 1/2 cup butter 1 cup water 1 tsp almond extract 1 cup flour 3 eggs Chopped almonds Confectioners sugar glaze (recipe below)

2 c. flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1 egg, beaten 3/4 c. orange juice 1 1/2 c. cranberries, chopped 1 c. sugar 1 tsp salt 1/4 c. butter 1 tsp orange peel 1 1/2 c. raisins

Heat oven to 350. Cut 1/2 cup butter into 1 cup flour. Sprinkle 2 Tbsp water over mixture and mix with fork. Round into ball. Divide into two balls on ungreased baking sheet. Pat each ball into 12 x 2 strip. Strips should be 3” apart. In medium saucepan heat 1/2 cup butter and 1 cup water to rolling boil. Remove from heat and quickly stir in almond extract and flour. Stir vigourously over low heat until mixture forms a ball: about one minute. Remove from heat. Beat in eggs all at once until smooth. Divide in half and spread each 1/2 evenly over strips covering completely. Bake about 60 mins or until topping is crisp and lightly brown. Cool. Frost with sugar glaze and sprinkle generously with almonds. Confectioners Sugar Glaze : Mix 1 1/2 cups icing sugar, 2 Tblsp. butter, softened, 1 1/2 tsp almond extract and 1 Tblsp. warm water until smooth

Sift dry ingredients Cut in the butter Add the egg, juice and peel all at once Stir Add the cranberries & raisins. Pour into 9 x 5 x 3 pan Bake at 350 for 1 hr & 10 min. This is a great alternative to Christmas Cake, if you don’t like the candied fruit, as it’s very festive, easy to make and so tasty!
