4 clove of garlic minced Handful fresh basil leaves 1 tbsp fresh coriander leaves 1 juice of 1/2 lime 1 stick lemon grass, bruised and chopped 2 inch piece fresh ginger, peeled and chopped 2 medium hot green chillies, deseeded and chopped 2 tbsp sunflower oil 2 green pepper, deseeded and cut in strips 4 spring onions, trimmed and finely chopped 150 ml coconut milk 275 g / 10 oz bag of large peeled raw tiger prawns Handful baby spinach leaves, salt, freshly ground pepper, few fresh whole coriander leaves, extra squeeze of lime juice
This is a recipe adapted from traditional Korean kalbi/ galbi marinade. By marinating overnight the flavor penetrates and the meat becomes most tender. 4 lbs (1.8 kg) flank steak cut 1/4” (5 mm) thick (substitute sirloin)
This combination of spices makes a unique burger topped with your favorite cheese. Try an aged cheddar, Gouda or Brie.
Place root ginger, garlic, lemon grass, chillies, basil leaves and coriander in a processor with lime juice. Whizz until blended - this paste is not stiff, but don’t worry, this is fine. Reserve. Heat sunflower oil in a wok and fry green pepper strips and spring onions until just beginning to soften. Add spice and herb paste and cook for 1 minute. Add prawns and stir around 1 minute+ until beginning to turn pink, then add coconut milk and spinach leaves. Cook until prawns are completely pink. Season with salt and freshly ground black pepper, stir in coriander at the last minute and sharpen with extra lime. Serve immediately with rice.

Marinade: 1 C low sodium soy sauce 3/4 C brown sugar 1/2 C water 1/4 C rice wine (substitute dry white wine) 3 cloves minced garlic 2 tbsp sesame oil 1 small cooking onion grated 1 small Asian pear grated (substitute Bosc or Anjou if unable to find) Marinate the sliced beef overnight. Weave onto skewers (soak skewers in water beforehand or use metal). Grill in air fryer, on indoor grill or outdoor bbq. These cook up super fast, so only need a few minutes per side. Enjoy.
Jamaican Jerk Chicken Spicy Ingredients: 2 lbs chicken legs and thighs 1 med onion chopped 3 cloves of garlic crushed 1 sprig of thyme 1 scotch bonnet pepper (can substitute with habanero) remove seeds 4 tablespoons of Jamaican jerk sauce 1 tablespoon of flour 1 tablespoon of soy sauce 1 cup of water
Mix together: 1 lb lean ground beef 1 egg 4 tbsp dry bread crumbs 1 clove minced garlic 2 tbsp grated Parmesan cheese 1/2 tsp salt 1/2 tsp basil 1/2 tsp oregano 1/4 tsp thyme 1/4 tsp red pepper flakes 1/4 tsp smoked paprika Make four 1/4 lb patties and cook on the outdoor bbq or indoor grill until burgers reach minimum of 160F. Top with cheese of your choice and serve on buns toasted with garlic butter. Marinade: Combine onion, garlic, pepper, thyme and jerk sauce to make marinade. Massage marinade into chicken pieces. Place into Pyrex dish and refrigerate overnight. Before cooking, mix flour, soy sauce and water and pour on top of chicken. Cover with foil and bake at 350 degrees for 90 minutes. Turn chicken 2 times while baking. 30 minutes prior to completion, remove foil to allow marinade to reduce.

Classic Potato Latkes 2 pounds russet potatoes, peeled, diced 1 large onion, peeled, diced 1 egg 3 tablespoons all purpose flour 1-1/4 teaspoons salt 3/4 teaspoon pepper 1/2 teaspoon baking powder 10 tablespoons (about) vegetable oil Preheat oven to 325°F. Place 2 baking sheets in oven. Line large bowl with towel. Finely grind potatoes and onion in processor (do not puree).Transfer to towel. Fold towel up around mixture; twist top, squeezing out all liquid into bowl. Let liquid stand 5 minutes. Pour off liquid, reserving any potato starch in bowl. Add potatoes to bowl. Mix in egg, flour, salt, pepper and baking powder.
Heat 6 tablespoons oil in large skillet over medium-high heat. Working in batches, drop 1 heaping tablespoon batter per pancake into hot oil. Using back of spoon, spread to 2-1/2- to 3-inch rounds. Cook until brown, about 3 minutes per side.Transfer to baking sheets in oven. Repeat with remaining batter, spooning off any liquid from surface of batter and adding more oil to skillet by tablespoonfuls as necessary. Serve hot.

“Land of Nod” Cinnamon Buns
Who would think you could be this organized so early in the a.m.!! 20 Frozen Dough Rolls 1 cup brown sugar 1/4 cup vanilla instant pudding 1-2 tbsp. cinnamon 3/4 cup raisins (optional) 1/4-1/2 cup melted butter
250 mL 60 mL 15-30 mL 175 mL 60-125 mL
Before you put the cat out and turn off the lights, grease a 10” (25 cm) bundt pan and add frozen rolls. Sprinkle with brown sugar, pudding powder, cinnamon and raisins. Pour melted butter over all. Cover with a clean, damp cloth. (leave out at room temperature) turn out the lights and say goodnight! In the morning, preheat oven to 350oF (180oC) and bake for 25 minutes. Let sit for 5 minutes and then turn out on a serving plate. Now, aren’t you clever?

Chef Shaughn’s “Stuffing”
Ingredients (Serves 4) 2 med Spanish onions, diced into ½ inch pieces 4 stalks celery, washed and diced into ½ inch pieces 2 large carrots, peeled and diced 6 cloves garlic, chopped 3 tbsp. unsalted butter 2 tbsp. olive oil ¼ cup chopped fresh sage Salt and pepper to taste 1.5 liters hot chicken stock 1 Toasted baguette or loaf of crusty bread, cut into rustic pieces Dry spice mix (thyme, sage, garlic, and onion powder) Directions 1. In a large pot, on medium heat, sauté vegetable and dry spice mix in olive oil and butter mixture. 2. After 5 mins, add bread and stir. 3. Cover and continue to cook for 4 mins. 4. Uncover and add 2 cups of stock. Cover and cook on low heat for 5 mins. 5. Add 1 more cup of stock and cover again. Continue to cook for 10 mins, stirring every 3 mins. 6. Add 1 more cup of stock and cover for 10 more mins. Uncover stir in fresh sage and adjust seasoning. Tip: For a dryer stuffing 1 cup less stock, for a moister stuffing add more stock. Be careful not to add too much stock or stuffing will become soggy.

Delicious no bake Peanut Butter Truffle dipped in dark chocolate. ingredients
250 grams (1 and 2/3 cup) dark or milk chocolate*
4. Dip each peanut butter ball into the chocolate, one at a time, and use a fork to get slowly lift them out. Gently shake off excess chocolate and place truffles on prepared tray. Pop in the fridge for 10-15 minutes to set. 5. Add a few tablespoons of peanut butter to a small bowl and microwave 20 seconds or so, until melted and smooth. Drizzle peanut butter over truffles.

1. Line a large baking tray with baking or parchment paper. In a large mixing bowl, add butter and peanut butter. Mix briefly until smooth and creamy.
• *You can use a mix of both milk and dark chocolate. • It is recommend using a regular store-bought peanut butter for this recipe, but you can substitute a ‘natural’ healthy peanut butter. • If you find your peanut butter balls are too soft to roll, it may be because your butter was too soft. Simply leave the peanut butter mixture in the fridge for 30 more minutes – or even pop it in the freezer to firm up.

Heat in the microwave, stirring every 20 seconds, until melted and smooth.

Chocolate Lavender Sea Salt Truffles
Ingredients 5 Medjool dates (do not substitute) 1/3 cup coco powder 1/2 cup rough chopped almonds Seeds of 1 large vanilla bean 1/4 tsp culinary lavender plus some to top the truffles 2 tbsp of very strong coffee 1/2 tsp gray sea salt 1/2 cup of dark non-dairy chocolate chips Lindt 75% works well
Return to the fridge until the chocolate sets, then gift them, love them, share them.
Truffles freeze well and can be eaten straight from the freezer as they stay soft and chewy or let sit at room temperature for one hour for a smooth sinful treat after a romantic dinner by the fire.
Preparation Put dates, coco powder, almonds, vanilla bean seeds, lavender, and coffee into a food processor and process until it looks like cookie dough. Put mixture in the fridge for 30 minutes. Form into round truffles using a teaspoon full of dough and rolling with your hands until uniform and smooth. Place truffles on a plate and place in the freezer for 30 minutes. Melt chocolate chips over a hot water bath, being careful not to get any water into the chocolate. Remove truffles from the freezer. Drizzle with the melted chocolate using a fork… as much or as little as you like or your addiction needs. Sprinkle tops with lavender sea-salt, or gray salt and a pinch of culinary lavender.

Carrie’s Cranberry Salsa for the Holidays Ingredients: 1 (12oz) package of fresh or frozen cranberries 1 large granny smith apple (peeled, cored and cut into chunks) ½ large sweet red pepper (seeded and cut into chunks) ¾ cups granulated sugar 1/3 cup apple juice 3 tablespoons fresh cilantro (chopped) 2 tablespoons pickled or fresh jalepeno (chopped) 1 teaspoon grated lime zest 1 squeeze fresh lime juice 1 package tortilla chips
Directions: In a food processor, add cranberries, apple, red pepper and onion and pulse until finely chopped. Transfer to a mixing bowl and set aside. In a separate bowl, stir together sugar, apple juice, cilantro, jalepeno, lime zest and lime juice; mix well to blend. Add both mixtures together and mix well to blend. Spoon into jars and cover to refrigerate. Serve fresh cranberry salsa with your favourite tortilla chips.

Cherry and Almond Crisps Submitted by Pacific Carlton resident Leah Munro 1 c butter 1 c brown sugar 2 c sifted flour 1/8 tsp of salt 1/2 c candies cherries 1/2 c blanched almonds Cream butter and sugar well, add flour and salt. Mix until smooth, stir in cherries and almonds. Shape into rolls (logs) and chill in there refrigerator for several hours. Slice desired thickness and bake at 350 for 12-15 minutes, depending on thickness. Makes 3,5 or 6 dozen.

1. Preheat oven to 300 degrees F. 2. Combine flour, baking powder, cinnamon and nutmeg. 3. Cream sugar and butter. Add eggnog, vanilla, and egg yolks; beat until smooth. Gingerbread Oreo No Bake Mini Cheesecakes Yield: makes 6 mini cheesecakes Prep Time: 20 minutes
Ingredients: 12 Gingerbread Oreos 8 ounces cream cheese, softened 1/3 cup confectioners’ sugar 1 1/2 teaspoons pumpkin pie spice 1 teaspoon pure vanilla extract 3/4 cup prepared Gingerbread Pudding (prepared according to package directions) 8 ounces Cool Whip Optional: Additional Cool Whip for topping Wilton Gingerbread Men for garnish
1. Place the Gingerbread Oreos in the food processor and pulse a few times, until you have fine crumbs for the crust. 2. Divide the crumbs between six parfait cups or small canning jars. Gently press the crumbs into the bottom of each serving dish 3. In the bowl of a stand mixer fitted with the paddle attachment, or in a medium bowl with a hand mixer, combine cream cheese, confectioners’ sugar, pumpkin pie spice, vanilla extract, Gingerbread Pudding. Mix on low speed until all ingredients are well combined. 4. Using a rubber spatula, fold in Cool Whip until completely incorporated. 5. Spoon or pipe cheesecake filling into each serving cup. 6. If desired, pipe additional Cool Whip onto each mini cheesecake, then place one Wilton Gingerbread Man on top of the whipped cream for a festive look. 7. Store in refrigerator until ready to serve.

Ginger Molasses Cookies Ingredients: 2/3 cup Butter
In a mixer, cream together the butter, sugar, eggs and molasses.
1 cup Sugar
Add in the rest of the ingredients and mix well.
1 Egg 1/4 cup Blackstrap Molasses
Portion out to 3 oz. cookies, press down and sprinkle with granulated sugar.
2 1/3 cups Flour
Bake at 325° F for approximately 8 to 10 minutes.
1 Tbsp Ginger 1 tsp Cinnamon 2 tsp Baking Powder 1 tsp Cocoa 1/2 tsp Salt

Gingerbread Latte Makes 12 servings.
Ingredients. for gingerbread syrup: 1/2 cup Molasses 1/2 cup Water 1-1/2 teaspoon Ground Ginger 1 teaspoon Ground Cinnamon 1/4 teaspoon Ground Cloves 1/4 teaspoon Ground Nutmeg 1 teaspoon Vanilla Extract Ingredients for each latte: 3 teaspoons Gingerbread Syrup, or more to taste 1 shot Espresso, or 1 ounce very strong coffee 1/4 cup Whole Milk 1/4 cup Cream Whipped Cream, For Serving (optional)

For the gingerbread syrup: Place molasses, water, ginger, cinnamon, cloves, and nutmeg in a small saucepan and bring to a boil over medium heat. Remove from heat and stir in the vanilla extract. Strain through cheesecloth if desired. Store in a jar in the refrigerator. Makes about 3/4 cup syrup, or enough for 10-12 servings. For each gingerbread latte: Place 3-4 teaspoons of gingerbread syrup and a shot of espresso in a mug. Warm the milk and cream to 155°F and froth. Pour over the syrup and espresso in the mug. Top with whipped cream if desired.
