Holiday Biscotti

Ingredients

• 1 cup (2 sticks) salted butter, softened

• 1 cup powdered sugar

• 2 tsp vanilla extract

• 1 large egg

• 2 ½ cups all-purpose flour

• ½ cup unsweetened cocoa powder

• Red and green peppermint candies

• 4 oz almond bark or white baking chocolate

Directions

1. Beat butter and powdered sugar until the mixture is smooth. Mix in the vanilla and egg. Add the flour, cocoa powder and salt. Press a piece of plastic wrap onto the surface of the dough and refrigerate.

2. Unwrap the candies and crush them to pieces with a rolling pin. Throw the crushed mints into separate bowls and set aside.

3. Preheat the oven to 375ºF.

4. Roll the dough into balls and place onto baking sheets. Flatten them slightly. Bake for, 7 to 9 minutes. Let the cookies cool completely.

5. Melt the almond bark. One at a time, dip the cookies halfway into the bark. Sprinkle the top with crushed mints.

6. Lay the cookies on parchment paper and allow them to set. Serve with a few whole mints on the side.
