Here’s another wiring method common for vani- ties. In this configuration a GFCI-protected outlet is always hot and shares a box with a switch that con- trols the light on the vanity. 6 7 SELECTING AND BRINGING HOME BEEF CATTLE Attention to the basics of raising beef cattle will reap rewards in the form of a freezer full of homegrown beef as well as extra cash from meat and calf sales. Where cattle are common, so are the auction barns, truckers, and processing plants that make it fairly simple to buy, sell, and process cattle. Americans love beef, so there is a ready market for beef cattle. There’s another benefit to owning beef cattle: they can improve your land. This may come as a surprise, given the reputation cattle have acquired in certain quarters for overgrazing and destroying sensitive lands. But beef cattle are a tool, not a cause. The result depends on how the tool is wielded—just as a hammer can be used to fix building or destroy it. Research and on-the-ground experience have demonstrated that, when properly managed, beef cattle can be a highly effective tool for restoring health to damaged grasslands and watersheds. On hobby farm, well-managed cattle can continually increase the richness of your soils, the biodiversity and lushness of your pastures, and the water quality of your ponds and streams. Beef cattle will also enhance the view from your kitchen window. For hundreds of years, people have bred cattle to develop characteristics that were best adapted to particular climate and purpose. Eventually, this resulted in distinctive breeds of cattle, each with a distinctive palette of physical traits. Today, a cattle buyer can choose from a wonderful array of color, build, size, growth rate, and potential meat and milk production to fit cattle to the farm, the climate, and the purposes of Although not all cattle are created physically equal, they do share general behavior characteristics. Cattle sense the world differently than we do. They eat different foods and digest them differently. Understanding how cattle operate is key to knowing what to expect from them, what they will like and won’t like, and how to get them to do what you want them to do. Understanding and working with cattle’s natural behaviors will result in calmer, healthier animals. BEEF BREEDS Until the middle of the eighteenth century, cattle were tough, multipurpose animals that were not selectively bred for any specialized purpose. Differences in size, color, and build were simply results of groups’ being isolated from one another in remote settlements. Then, in 1760, Robert Bakewell, an Englishman, began the first known systematic breeding program to improve the uniformity and appearance of his cattle. The results were published in 1822 in George Coates’s Herd Book of the Shorthorn Breed the first formal recognition of a cattle breed. Other breed herd books soon followed, and, as the concept of breeding for a specific purpose spread, cattle were divided into two main categories: those bred primarily for milk production and those bred primarily for beef production. Even the original dual-purpose Shorthorn breed has been split into Shorthorns for beef and Shorthorns for milking. today, although only few are common in the United States. Milking Shorthorn; the ubiquitous black-and-white Holstein; and the rarer Guernsey, Brown Swiss, Ayrshire, and Jersey make up the six primary dairy breeds in the United States. WHY BEEF CATTLE? Beef cattle are as much at home on the hobby farm as they are on the range. Adaptable to almost any climate and easy to manage and market, they are well suited to any farmer with the pasture room and a hankering for a cowboy hat. Although beef cattle require a higher initial investment than any other traditional farm animal except dairy cows, they require the least amount of daily maintenance. If steer feeder calves were listed at $1.00, then the price for 500-pound feeder steer would be $500. Keeping track of prices gives you good idea of what you should be paying when you buy, but keep in mind that it may be worthwhile to pay a little extra for cattle you know are healthy, have been vaccinated, and come from good parents. Where to Buy Cattle Finding cattle for sale is a matter of checking ads in local newspapers or regional farm papers; looking at bulletin boards at the feed store, the farm supply store, and rural gas stations; and just asking around. If there’s beef producers’ association in your area, join it. If you don’t know whether there is one near you, give your extension agent call and ask. An association is a great place to network and get some background information on area beef cattle operations and auction barns. County and state fairs are other good places to find beef producers with cattle for sale. Go to the cattle shows, walk through the barns, and visit with the exhibitors. Two additional sources for leads on cattle for sale are your local artificial-insemination service and veterinarian. Auction barns move lot of cattle, but they’re no place for beginners to buy. If you go, take a friend who is a good judge of cattle and can help you avoid the ones that are sick, are wild, or have bad hooves and legs. You may want to make few dry runs to the barn, going early to visit the pens and then watching the auction without buying, to give you a feel for how the bidding process works and how cattle are moved in and out of trailers, pens, and the auction ring. A better idea is to buy cattle directly from a seed stock producer or commercial producer. Seed stock producers raise purebred cattle for sale as breeding stock and are good sources of quality animals. Commercial producers generally have mixed herds of several breeds or crossbred cattle being raised for beef production instead of breeding stock. These won’t be registered purebreds, but often they’re of good quality and reasonably priced; sometimes they aren’t. Most commercial cow-calf operators sell their calves after weaning in the fall, and this can be an excellent opportunity to purchase. Dairy bull calves are common at auction barns, but it’s better to buy directly from the farmer and save the calf the stress of being hauled twice to strange places and exposing him to who-knows-what at the auction barn. When you buy directly from the farmer, you can make sure the calf is at least three days old and has received colostrum, his mother’s immunity-boosting first milk. This is critical to a calf’s health. BRINGING CATTLE HOME Once you’ve bought your cattle, you have to get them home. If you’re buying from a breeder, he or she may be willing to deliver the cattle for an extra fee. Otherwise, you’ll either have to hire cattle hauler or do it yourself. There are usually haulers for hire in any area where there’s cattle, and you can track one down by asking neighbors or calling local auction barn. If your only option, or the option you prefer, is to transport your new livestock yourself, you’ll have to buy, borrow, or rent a trailer (unless you’re buying small calves that you can fit into a pickup or small truck). When the cattle arrive at your farm, ideally you’ll turn them into a solidly fenced small pen or barnyard, with water available and some nice hay scattered around. Don’t rush them out of the trailer; give them time to look around and step down carefully. Of course, they may decide to all come out in a rush, but let that be their decision. Once they’ve had few hours to get drink, find the salt, and get bellyful of An occasional cough in adult cattle usually isn’t anything to worry about (cows do get colds and runny noses), but constant coughing signals problems. I’d hesitate before bringing any coughing animal home to my herd. In young calves, constant coughing or labored breathing may indicate pneumonia, a dangerous condition. Check the hind ends of calves to make sure they aren’t typical of scours, another common and dangerous affliction of young calves. Polled cattle are naturally hornless, but if you’re buying horned breed that has been dehorned, make sure that the spot is well healed and not sprouting any more horn. How Cattle Are Priced and Sold The pricing and availability of cattle generally follow yearly cycle, which varies by the age and sex of the animals. Calves and steers are usually sold by weight, whereas heifers and cows for breeding are sold either by weight or by what the market will bear. Bulls are normally priced according to their quality or what the owner thinks he or she can get. Bulls are most expensive in the spring and early summer, when they’re in high demand for the breeding season, and cheaper in the fall. Feeder calves—those that have been weaned and are ready to go on pasture or on finishing ration—are usually least expensive in late fall, when the market is flooded with calves born the previous spring that are being sold before winter. Stockers backgrounders (feeder calves headed for few months on pasture before going on a finishing ration) are expensive in the spring, when landowners are buying cattle to keep their pastures grazed during the growing season. Open or unbred, heifers will be most expensive in spring, just before breeding season; the price tapers off through fall, when they’re cheap because it’s not economical to winter an open heifer. In addition, a heifer that didn’t “settle,” or get bred, during the summer may be infertile and good only for being finished and slaughtered. Bred cows will be most expensive in the spring, just before calving, and cheaper in the fall, when you will have to feed them through the winter. Before buying bred cow, always have a veterinarian check to see whether she is really pregnant. Cattle prices are listed, usually weekly, in local and state farm papers. If you have farm radio station in your area, you can typically find prices being announced daily or weekly, and some state extension services list current cattle prices on their websites. Cattle prices are listed either as dollar and cents per pound or as dollars and cents per hundredweight. If, for example, were looking for feeder calves, would look down the column until came to that category under CALVES IN A VAN Our first beef cattle were dairy calves. R o JECTS FARM DIY FARM DIY Bu ld a Bee House Step-by-step Step-by-step 1 Site selection and foundation. When evaluating and choosing the construction site for our bee house, we considered most of the same attributes that one would normally consider when siting regular beehive in North America: we chose an area with excellent southeastern exposure (so that the rising sun quickly warms the hives and helps the bees get an early start), good soil drainage, and some protection against the prevailing western winds. Our bee house sits next to some small trees that provide wind protection as well as shade on hot, sunny summer afternoons. Additionally, the bee house in field that naturally grows early spring dandelions, and is not far from some flowering fruit trees, for an easy nectar source. Once we chose the exact location, we began the site ground preparation. The spot we chose was naturally level, but still required some ground work to lower certain high points and raise low spots. Then we hauled in materials to begin construction. 2 Prepare the foundation. We chose 12 16 ft. (365 × 487 cm) as the dimensions of our bee house’s footprint. While these dimensions make for substantial building and present a fairly large construction undertaking for a DIYer, this size nevertheless doesn’t require formal foundation to carry the load, which saves time and cost. Setting cinder blocks directly on the prepared ground was enough here, but time and care had to be taken to ensure the blocks were all the same height—a transit is invaluable for making the precise adjustments needed. Short pieces of treated lumber of varying thicknesses can also be used as shims to achieve the correct spacing. Then we tied together the overall shape of the foundation and made sure everything was perfectly square. 3 Construct the subfloor. We used treated 4x4s— thirteen of them—on 16 in. (40 cm) centers as the floor joists for our bee house, sitting on top of the larger timbers of the foundation. This provided us with a very strong floor to support the weight above. We then used 1×6s to create subfloor decking. 4 Frame the walls Framing out the four walls—each one built separately as a complete piece—is no problem for an experienced carpenter. This process, even though looks complex, isn’t terribly difficult. However, the framed walls can be quite heavy and it required several people to get the walls to the site and raise them vertically (we built the frame of each wall back at the shop). To help keep costs down on this project, we were able to reuse a large amount of unused lumber from other projects. Transit 3 4 b d Chicken DIY 120 Step 3: Fasten hardware cloth Attach the 24 24-inch (61 61-cm) sections of hardware cloth to each of the eight wooden panel frames. We used manual staple gun, but you could also use roofing nails to pin down the hardware cloth. It’s important to keep the edges straight and properly aligned with the wooden frame. It’s also critical that you exercise extreme care when handling the wire (safety glasses and gloves are a must!). Step 4: Attach hinges We can begin to fasten the finished panels together to create the pen. This can be tricky step because you must assemble the hinges and frames the right way to allow 3 4 3 3 4 Collapsible Chicken Run 121 the pen to expand and collapse properly. Use two 2-inch (5-cm) hinges on each joint, and screw them in with the electric drill or screwdriver (it can help to predrill the screw holes). Here’s an easy way to make sure that the panels will assemble in the Create four pairs of panels, each with the hardware cloth facing out. Place all four pairs (a total of eight panels) side by side. Attach hinges to each of the four pairs (shown in the photo). Go around to the other side Attach hinges to the six inner panels, leaving off the two panels on each end (shown in the photo). Step 5: Add latches Use two hook-and-eye latches at the top and bottom to secure the opening, and you’re ready to use your pen. 85 FARM DIY p rotect a f ru t ree Step-by-step With these steps, you should be able to easily—and quickly—protect your young fruit trees from troublesome deer and smaller chewing critters like mice and voles. You’ll thank yourself next year! Chicken DIY 104 Chick Brooder 105 Step 4: Add bolts With the holes prepared in the plywood and plastic, put the hardware cloth back in place under the plywood. Use the ten 1-inch (2½-cm) bolts and nuts to secure the hardware cloth in place. Use pliers and a screwdriver to tighten the bolts. Step 5: Add accessories Add a few inches of bedding to the brooder, along with feeder and waterer for the chicks and a basic thermometer, which will allow you to monitor the temperature in the coop. Step 6: Mount lamp and test temperature Test out the brooder before using. Mount the heat lamp nearby, pointed at the hole in the lid of the brooder, and observe the thermometer until you reach the desired temperature (initially 95°F [35°C]). You will likely need to adjust the heat lamp’s wattage/distance and experiment until you find the right combination to give you the Step 1: Measure and cut lid Begin by making modifications to the lid of the brooder. For the dimensions of our storage tote, a hole of 9½ x 14 inches (24 x 36 cm) was just about right. Leave a couple of spare inches free on each side of the hole to avoid interfering with the locking mechanism and structural components of the lid. Use a ruler (or framing square) and pencil to mark straight lines for your cuts and then carefully use a utility knife to remove the plastic. Step 2: Measure and cut hardware cloth Use wire snippers to cut out a 10½ x 15-inch (27 x 38-cm) section of ½-inch (13-mm) hardware cloth. This spacing will allow plenty of airflow but still keeps the chicks protected. Wear gloves and eye protection when handling the hardware cloth. Once you’ve cut the hardware cloth, set it aside momentarily. Step 3: Drill holes Next, use the strips of ½-inch (13-mm) plywood to create a frame around the hole in the plastic lid as shown in the photos. Once the frame is in position, use the electric drill to drill several holes in the plywood strips and all the way through the plastic underneath. As one of the easiest to propagate, you can make these vines into new plants, which is always so rewarding. Propagate this plant from either stem cuttings in water or leaf cuttings in sphagnum moss. WATER PROPAGATION Place the stem cutting in a glass of rainwater, making sure that the node is submerged, and keep in warm place that gets a lot of bright indirect light. Change the water once a week. In approximately 3–5 weeks the roots should be long enough to transfer into your soil mixture. Cut a vine which has four leaves on it. Cut off the lowest leaf to expose the node (the point where leaves emerge from the stem). iw Indoor Garden.indd 88 13/04/2022 15:30 2 – HUMIDITY-LOVING PLANTS 89 MOSS PROPAGATION Once they are all in the sphagnum moss, mist slightly to create humid environment. Push down the cutting into the sphagnum moss; repeat this with all of your leaf cuttings, ensuring the stem is snug. Dip your leaf stem cutting in rooting hormone powder (see page 21). Cut the vine in between each leaf to create a leaf stem cutting. Take a long vine cutting with approximately 8–10 leaves. Prepare a large shallow container with damp sphagnum moss. After roots are established, it’s time to move your leaf cuttings into your potting mixture. Lightly moisten the soil and place the pot in bright indirect light. Place your container in warm area with bright indirect light. You will not need to water your cuttings again throughout this period as sphagnum moss retains water. It’s very easy to find and has become a popular house plant. Growing yucca in pots indoors is a fabulous way to bring the outdoors inside in a large way, adding a focal point to the room. Native to the Caribbean, the high deserts of south-western United States and Mexico, yucca plants are striking and low maintenance. They are slow so will not outgrow their pot quickly and will not need repotting for many years. Also, an added bonus is that they are drought tolerant, so you forget to water or go away for a short break they will be fine. They are relatively inexpensive and often come in a large pot, perfect for displaying as a floor plant. YUCCA POSITION Your yucca will thrive in full sunlight. Placing it in the brightest location indoors is the best position. Near a south-, east- or west-facing window would be perfect. WATERING Yucca plants are prone to overwatering. Be mindful when watering as they do not like to sit in water. Always use a pot with good drainage holes. Water regularly in the summer months, allowing the soil to dry out between watering. Water once every few weeks in the winter months. It’s better to underwater rather than overwater. SOIL MIX Native to hot climates, yuccas grow in sandy soil, so the main requirement is a welldraining mix. When repotting, use a regular potting compost and mix with coarse sand and perlite to help with drainage. Yucca plants do not require a highly fertile soil. FEEDING Feed once a month during the growing season. Use a liquid fertilizer and dilute to half the strength recommended on the product label. An overfed yucca can result in leaf burn; using half-strength fertilizer helps prevent salt and mineral build-up in the soil. HUMIDITY Yuccas are adaptable to the ever-changing indoor environment. However, misting during the winter months when the central heating is likely to be on (causing dry air) will help prevent browning leaf edges. PESTS Common pests are aphids, mealybugs and scale. To get rid of them, simply shower the whole plant with a strong stream of water (perhaps easier outside or in the bath); once dry, spray it with an organic neem oil solution. Pay attention to the undersides of the leaves too! QUICK CARE TIPS • Lower leaves will always droop and die back first. Trim any yellow, crispy dead leaves back to near the trunk. • Do not overwater or allow the yucca to sit in water. • Place in the brightest lit area in the home. • Use a sturdy ceramic or terracotta pot. They are only found in the western hemisphere, which consists of North and South America and the very western parts of Europe and Africa. Bats are very important to the pollination process for wild bananas, which are not the same as bananas you see at your local grocery store. LIVING SUCCULENT WREATH Beginner- Intermediate Wreaths are the perfect statement piece to decorate and liven up your front door or wall for any season. Although wreaths can look complicated, they are actually quite simple to create. Making your own wreath gives you the flexibility to use the color palate you want and let your inner creativity shine through. Wreaths can be customized for different holidays by choosing succulents and embellishments that compliment the season. For example, decorate your wreath with large gold or red ribbon for the holidays or with leaves and berries for the fall. Use red and pink varieties of plants or heart-shaped wreath base for Valentine’s day and pastel colors for spring. Wreaths can also be used as a unique and interesting table decoration when laid flat and placed around candles or other centerpiece décor. These also make an excellent gift that will delight for months to come. SUCCULENTS USED Eleven 2 inch succulents Sixteen cuttings of smaller “filler” succulents with ½ inch stems Note: For this project we used both cuttings and rooted succulents. The wreath shown showcases several varieties of colorful Echeveria Graptopetalum, large Kiwi Aeonium and a cluster of Sempervivum ‘hens and chicks’ in 2-4 inch sizes. Filler succulents to accent the larger plants included Crassula ovata (‘baby jade’), Crassula rupestris, Sedum confusum and Sedum reflexum. MATERIALS NEEDED Large bag of Sphagnum moss (a lb. bag would be more then enough!) Large bowl or bucket of water 13-inch wire wreath frame Natural twine- available to purchase in 120 ft. spools Floral pins (often called “greening pins”) pack of 50 Chopstick, screwdriver or pencil to create holes Rooting powder (optional) Hot glue gun or tacky glue (optional) Decorative holiday ribbon, wreath hanger (optional) Note: To make this project easier you can also purchase pre-formed sphagnum wreath form, instead of crafting your own. Simply soak the moss form in water for 10 minutes before beginning and skip to step 8. Living Succulent wreath 1. Gather your succulents and cuttings as outlined in the materials used. You’ll want few larger plants, around 4 inches in diameter, to act as visual focal points. As noted in the introduction, let your cuttings harden for a day or so before using. Remove soil from rooted plants by gently massaging away the dirt. 4. Squeeze out excess water from the moss and place it around your wreath base. Use both of your hands to firmly squeeze the moss onto the wreath, around its shape. Fill large bowl with water and soak several handfuls of sphagnum moss for about 10 minutes. The moss will expand to 5 times its size when soaked in water. You can always add more moss to the water if you need it. 5. Once you’ve molded your wreath use twine to secure the moss by wrapping it around the entire wreath leaving about fingers’ worth of space between each interval. Use your scissors to cut about 120 inches of twine. Start by tying the twine firmly off on one end and then proceeding to wrap it around your wreath base. Keep in mind that moss is messy and will fall off as you do this. If you lose too much moss in the process of securing it, simply add more and keep going. Lay your wreath base flat with the curved side facing up.

Seal the bag, turn to coat, and set aside for 30 minutes. Line four 12 x 24" pieces of heavy-duty foil with parchment paper; spritz with cooking spray. Peel spaghetti squash, remove seeds, and cut into 1/4"-thick crosswise slices; lay a few slices on each lined foil piece. Add fresh green beans to each, drizzle with olive oil, sprinkle with salt and garlic powder, and top with some fish. Close parchment/ foil around the food, sealing with tight, heavy folds; push the ends of a cooking fork through each pack, right below the folds. Hold over hot embers until the bread is toasted and the cheese begins to melt DINNeR 95 Balsamic Steak Kebabs Makes 6 servings STICK INGREDIENTS 2 tsps. butter 2 tbsps. finely chopped shallot 1/4 cup balsamic vinegar 2 tbsps. brown sugar 1/4 cup beef broth 2 carrots 1 zucchini • 1 red bell pepper 1/2 lb. asparagus, trimmed 11/2 lbs. sirloin steak Worcestershire sauce Salt and black pepper to taste Mesquite steak seasoning Ahead of time, melt the butter in a small pan and add the shallot; cook until softened. Stir in the vinegar, brown sugar, and broth. Bring to boil, boiling until liquid is reduced to about half. Meanwhile, cut the carrots, zucchini, and bell pepper into matchsticks; toss into boiling water along with the asparagus and parboil for a few minutes, then drain. Cut the steak into eight equal pieces and pound 1/8 to 1/4 thick; drizzle with a little Worcestershire sauce and let stand for 10 minutes. Top each steak piece with some of the parboiled vegetables and season with salt and pepper. One at a time, roll the steak around the vegetables and thread onto side-by-side cooking sticks, catching the ends of the steak to secure; repeat until all the bundles are skewered. Set aside 2 tablespoons of the balsamic mixture and brush the remainder over the bundles. Sprinkle with steak seasoning. Cook the sticks on an oiled grate over hot embers, until steak is cooked to your liking, turning to brown both sides. Brush with set-aside balsamic mixture before serving. Simply heat it up over the fire (or use a microwave if you have one). sNaCks 35 Prosciutto & Mozzarella Makes 4 servings STICK INGREDIENTS 12 cherry tomatoes 12 mini marinated mozzarella balls 6 slices prosciutto 1 cup Italian dressing Carefully push cherry tomatoes and mini marinated mozzarella balls onto flat cooking sticks, weaving strips of prosciutto in between; brush with Italian dressing. Hold over medium embers until the tomatoes have softened slightly, the prosciutto is starting to brown around the edges, and the mozzarella is just beginning to melt. A quick and easy snack to munch on at any time.
