EAST BELFAST CADETS ON A RECRUITING CRUSADE One of NI’s largest and longest established youth organisations is launching a major drive in East Belfast to attract new teenage members and new Adult Volunteers who are prepared to train as Instructors. East Belfast already has several busy Cadet Detachments meeting at Clonaver Park: the Army Cadet Force meets there at 7pm each Monday; the Air Training Corps which meets at 7.30pm each Tuesday and the Sea Cadets which meet at 7.30 on Tuesdays, Wednesdays and Thursdays. Many local teenagers are also members of pupil-only Cadet Detachments at their school or travel to Detachments based elsewhere in the city. Potential Civilian Instructor Ben Jackson from East Belfast (pictured) is training to be a fully fledged Adult Instructor with the Sea Cadets – and loving the experience. He says, “I loved my own time as a Cadet and, when I finished my time there I knew I wanted to train to be an Adult Instructor. It’s easy to think of it as giving something back, and that’s an important aspect of the commitment, but I think you actually get more than you give. I’ve really been enjoying the training and am gaining in skills and experience as well as making new friends. HOME IS WHERE THE HEART IS Slimming world consultant and mum to four daughters Ash O’Neill has returned to her native Belfast after 29 years. Following a successful career in catering management and teaching, Ash took the exciting opportunity to train as a Slimming World Consultant. As a target member, having lost two stone, Ash knew the effectiveness of the slimming World approach. For two and a half years she has been supporting nearly 200 members a week in Kent. When husband Matthew accepted a job offer in NI, she was delighted to return but also anxious about leaving her members. But the support of Slimming World ensured her Kent members got a new consultant and Ash was again doing the job she loves running two new groups, supporting her new Belfast members in Glenburn and Ormeau. Ash says, “What I love about Slimming World is it’s just one big family - you can always rely on them for support as a member and as a consultant. VOLUNTEERING SUCCESS BT, Northern Ireland’s leading communications provider, partnered with principal palliative care provider, Marie Curie, to create the ‘Great BT Charity Shops Challenge’ which took place on Thursday 9th October. Head Chef, Sean McCann has given us a sneak peek into some of the most popular dishes to feature on the delectable menu…
Spread chicken fillets and squash evenly on a tray and roast for 20-25 minutes, until the chicken is cooked ,the squash has caramelized and is tender. Leave to cool for a few minutes. Combine yogurt, lemon juice and harissa paste. On a serving platter spread the leaves, shallot, pomegranate seeds and chickpeas. Top with slices of roast chicken and butternut squash before spooning over the yoghurt dressing.
Braised beef feather blade, butternut squash gratin • Serves 4 BEEF 1kg feather blade steak, trimmed and cut into 4 even pieces. 3tbsp oil
Moroccan spiced chicken, roast squash, chickpea pomegranate salad & HARISSA YOGHURT DRESSING • Serves 4 CHICKEN 4 boneless chicken fillets 200220g 1tbsp ground cumin 1tbsp ground cinnamon 1tbsp turmeric 1tbsp smoked paprika 2 cloves garlic, crushed. 2tbsp honey 1tsp salt

SALAD 1 large butternut squash, peeled deseeded, cut into big pieces 1 pomegranate, seeds only 1 can chick pea, drained 1 shallot, finely sliced 250g baby salad leaves YOGHURT 100mls natural yoghurt Juice of half a lemon 1 tsp harissa paste finely grated zest & juice of 1 lime Combine the spices, honey, garlic and salt in a bowl. Rub into the chicken fillets and leave aside to marinade for at least 2 hours. Preheat oven to 180oC

GRATIN 500g maris piper potatoes, peeled and thinly sliced 1 butternut squash, peeled, deseeded and thinly sliced 2 cloves of garlic, peeled, halved 284ml carton double cream 300ml full fat milk 20g butter Sea salt

Transfer to casserole dish. Return the pan to a reduced heat, add the remaining oil and gently fry the shallots, carrots and celery for 5-6 minutes until golden brown and softened. Stir in the garlic and thyme and cook for a further minute and transferr to the casserole dish. De-glaze the frying pan with red wine before adding tomato puree and beef stock. Bring to the boil, pour over beef and vegetables. Cover the casserole dish with greaseproof paper and a lid, place in the oven and cook for 3- 3.5 hours until beef is tender. Transfer the beef to a plate, strain the cooking liquor into a non stick pan, bring to the boil and simmer until sauce has thickened. Add the beef back to the reduction and
