Summer is the season of relaxing vacations, freeing your spirit and embracing the simple life. For me, this summer means a different type of season, one filled with milestones. My daughter starts college at UCF this August, Bill and I will celebrate our fouryear wedding anniversary on July 13, and we are planning on expanding our FOUR lifestyle brands to include an online market and pop-up shop. The past four years have been life changing for sure. My mother always stresses how important it is to do the things you love in your life because it flies by so fast. Well, I guess I listened. I treasure the time I spend working on this magazine and the opportunities it affords me. I love to share my heart, dive into things that have piqued my interest for years, and best of all this magazine is a family affair which allows me to "be me" while meeting so many great people like you! In a world full of likes, comments, shares, and reposts, I think we sometimes lose sight of just being our authentic selves. Imagine a day without overthinking how people will react to your post? Don't misunderstand me, I totally love social media, enjoy being on it and in fact, a lot of our business partnerships have come from it and for that I am grateful. The difference for me however, is I never compare myself to others or think that I'm not young enough or my body isn't the perfect size, or that I wish our feed looked like "theirs". Instead, I strive to just be Melisa - silly, imperfect, and happy to be in my 40's. Can you believe I sometimes put my cell phone away on purpose and just "be" in the moment? I do! SAUSAGE SLIDERS Ingredients: 1 package breakfast sausage 1/3 cup onion, finely chopped 1/3 cup shredded cheddar cheese Hawaiian sweet rolls or biscuits
In medium bowl, mix all ingredients except bread. Warm large skillet over medium heat. Form sausage mix into 12 patties, slightly larger than one roll or biscuit. Add sausage to skillet and cook until completely cooked through. Place cooked patties onto bread. Serve and enjoy!

SWEET CORN CASSEROLE Ingredients: 1 package frozen corn kernels (or fresh!) 1 can creamed corn 1/2 cup unsalted butter 1/3 cup onion, finely chopped 1/4 cup all purpose flour 2 eggs, well beaten 1 cup whole milk 1 cup panko bread crumbs 1/3 cup shredded cheddar cheese 1 garlic clove, minced 1/2 teaspoon ground black pepper, salt, & parsley
In medium bowl, mix all ingredients but reserve some cheese and panko crumbs aside for sprinkling on top. Spread mixture casserole baking dish of choice. I like to use glass 9x9. Then sprinkle 1/4 cup of remaining cheese and panko crumbs on top. Preheat oven 350 degrees. Bake for about 35 minutes or until edges look slightly golden brown.

WHERE TO EAT IN ORLANDO Summertime calls for vacation and good times filled with great friends and amazing food to share. When I think about the best restaurants I've eaten at, I envision a menu filled with signature dishes and a to-die-for atmosphere. When both of these elements are met, I find myself wanting to come back again and again. Restaurant options vary across Orlando, so pick a different favorite each day! Here I had the honor of trying all three new restaurants nestled in Margaritaville Orlando - Rock and Brews, Ford's Garage and Bento Asian Kitchen. You can pick the menu to suit your crowd with any of these three locations. One thing remains with me about all three businesses - the level of service and quality of food you get for the price is definitely something I look for to fill my hungry stomach. What do I eat at these restaurants you ask? I love to order the bruchetta appetizer, wings and fish + chips at Rock and Brews. Next stop you'll see me pulling into is Ford's Garage, where I'll be chowing down on their onion rings and signature beef burgers alongside fries with their yummy cheese sauce! Last but not least, I'm enjoying a mini build-a-pokĂŠ with mixed greens, carrots, edamame, red onion, and scallions at Bento Asian Kitchen. There's plenty more sizzling fare I could tell you about, but I'm going to let you try these new hot spots out for yourself. As for me, I'll definitely be back for another meal, or two! Everything about these new eateries is right.

ING N E D R A G ROSE L FOR REA RS BEGINNE Gardening has surprisingly become one of my favorite pastimes. Who knew? A few years ago I would have never thought I would be into it like this because it seemed way too time consuming and even a little intimidating. But I finally realized gardening is actually not as hard as I thought and it's a sweet little hobby for me to get into while making a bigger effort to enjoy life's simple pleasures this summer. Right now, I am focused on my flower and rose gardens only. A few tricks I've already learned is how much and how often to water. For those of us living in Orlando, it's hot and our flower friends need a whole lot of water! I religiously water mine between 4:30 pm - 5:30 pm every night. This is after the strongest sun and heat have passed, yet still allows the plant enough time to soak in the water before night time. For me, it works well. One day I hope to expand into vegetables and herbs, but it's difficult when you live in a subdivision with a homeowners association! You put a seed in the ground, water it, and watch it grow. The best part is when you get to enjoy the fruits of your labor.

FROM ORLANDO TO LAS VEGAS National Parks, State Parks, & Roadside Attractions Made This 15-Day Adventure a Lifelong Dream Come True Bill and I usually choose to stay close to Orlando on our little getaways. Date nights (or days!) consist of rotating through our favorite theme parks and eating spots. I personally like the comfort of spending time with my husband in a familiar setting where I know the quality, service, and experience will be high. But every once in a while, we like to mix things up and go on an adventurous whim - like a 15 day road trip across America's southwest. We usually have media events or personal to-do things on our calendar. But for some
reason, we had two whole weeks in March free and on that first Sunday of the month, Bill had an idea and looked over at me. "What are you doing for the next two weeks pretty lady," he asked. I laughed and jokingly replied, "I don't really know!" Bill's bucket list was about to be checked off as he proceeded to tell me we would be leaving on a road trip in 24 hours. I protested only for a second, and then realized I had no reason to turn this down or wait until we were retired to take this trip! I scurried onto the computer and booked a few hotels in the locations we knew we were going to visit like Roswell, Grand Canyon, Las Vegas, and Waco. But the rest of the journey we were winging it. We were going to take the back roads and Route 66 as much as possible in between these preset destinations and hopefully find some cool, and even weird, roadside attractions. Our curiosity and childlike excitement would be our only compass because we planned to stop whenever we saw something that piqued our interest. We refused to feel rushed on this journey. The next day I ran around the house cleaning and doing laundry so this big trip could actually happen. Two weeks of clothes to pack was proving to be a bit of a challenge, but then I realized I would probably go shopping along the way so I left a few empty spaces in my luggage for souvenirs, T shirts, and such!

The day flew by and we were off on our trip of a lifetime! I am a longtime fan of science fiction and have always wanted to visit the most famous UFO crash in history at Roswell, New Mexico. So, Bill made that dream a reality for me as the very first destination of our trip. I justified this little excursion out of the way of Route 66 as "research" for my upcoming fantasy book series, Blood Of The Kingdom, because technically it was. With my creative juices flowing, I read every testimony, documentation, and evidence I could find at the International UFO Museum. It was a little cheesy at times, but also very educational. It was probably my favorite place to visit. Everywhere I looked I saw UFOs and aliens in this cute little town. All the businesses were in on it, including the local McDonald's and Domino's Pizza! Next we head to Arizona where we go to visit some ancient sites known for their extraterrestrial presence for my book research along with visiting some of our country's most famous national parks - Petrified Forest and Grand Canyon. First stop is a private property we hiked on near St. Johns, AZ. There we found many ancient petroglyphs engraved in rocks. It was surreal seeing these in person and not on TV. They were definitely intriguing and had my imagination running! Many UFOologists suggest the ancient petroglyphs such as these appear to resemble flying objects and the aliens they encountered is what we see in this artwork they carved into stones many years ago. I strongly suggest visiting these ancient sites as well as the national parks - Grand Canyon and Painted Desert while in Arizona. When you drive by a wigwam hotel or a giant green dinosaur alongside the road, pull over and explore. Or if you have somewhere you must be, build in a few extra hours beforehand so you can veer off the beaten path and let your curiosity be the guide. Even if Bill and I never get to make this trip again, I will always have the fun child-like memories of us taking the road out west and the sweet excitement of being explorers together hand in hand.

Restoring: 1947 Airstream Liner Before & After Photos! Whether you're an avid tin can tourist or a newbie camper, attending a vintage trailer rally open house is a fun, family-friendly activity you must try! I was lucky enough to see this 1947 Airstream Liner in person recently at a rally and got all the details from owner, David Rogers. Here's his great restoration story: "Lucy Mae is a 1947 Airstream Liner produced in Los Angeles, CA. 1947 was the first year after WWII that aluminum was allowed to be used on a camper. My wife, Lois Lane, and I bought the camper from Steve Prouty and his company. We came up with a design and asked Vintage Camper Restoration if they would help us renovate the camper to our specifications. The restoration was of the shell-off variety. This allowed a new, heavy duty frame and axle to be installed beneath the camper. The original frame was quite old and flimsy. For the interior, we were trying to create a camper with a warm, cozy look so we used heart pine wood throughout including on the walls, floor and cabinetry, LED and incandescent lights with dimmers, and off-white shears for curtains. The heart pine was salvaged from renovation jobs on historic homes in Charleston, SC including our own.
David continued his lovely story about their vintage camper by explaining the details about the amazing bathroom and kitchen! "Lucy Mae also has a hammered copper tub which was a special request from my wife. She’s definitely a tub girl! We use an ondemand tankless water heater to provide the hot water to the tub. We have a full kitchen that includes a sink, stove top and the original icebox that we cool with block ice. The bed is slightly larger than a queen size with a custom mattress."
It was so nice to meet David and see his beautifully restored trailer at a recent rally. When Bill and I bought the FOUR Retro Trailer last year, it was our first big purchase together. Having never camped before, I really wasn't sure what it was all about or even if I'd like it. My love affair with vintage travel trailers actually began many years ago when I started pinning cute photos I'd find on Pinterest. Little did I know years later I would own one of them and attend so many vintage trailer rallies.
You simply can not beat the fun we've had or the great folks we've met while camping. I am proud to have vintage running through my veins! Above The hammered copper tub and gorgeous kitchen with the original icebox!

What suggestions do you have for my husband and I who are heading to Walt Disney World this summer for our wedding? Amanda l Atlanta, Georgia Melisa: I have been blessed to be a passholder for several years. When Bill and I want a romantic date night, we often head to Epcot. We like their many dining options and beautiful flower gardens. It tends to be a bit more adult-friendly, which may be the perfect fit for your honeymoon!
Every time I make gravy it always turns out too runny. What secrets or tricks do you have to help with the consistency? Jillian l Lakeland, Florida Melisa: Oh, this is a great question! Making gravy is a little bit of luck and dash of skill for sure. Whether it's a Saturday morning or a big Thanksgiving dinner, I love making different types of gravies. It's taken me years to perfect it though, but I honestly would eat gravy with every meal if I could! Here are a few of my own tricks for making the best gravy. First, my gravy technique is applicable to just about any gravy situation you may come across like my sweet Mamaw's country fried steak, sausage gravy, or even turkey at Thanksgiving. Basically, you take the fat that’s been rendered from some form of meat, stir in enough flour to make a thick roux, cook it for a bit, then add some form of liquid (room temperature is best), while whisking it around constantly until it reaches the proper consistency of your choosing.
