This month in BN23 we have our usual mix of entertainment and information for you. Our celebrity interview this month is with the brilliant Christian Bale. He talks to us about The Dark Knight and working with the late Heath Ledger. Fancy a change in career? Aaron Craze was a carpet fitter until he was discovered by Jamie Oliver. He trained at Fifteen in London and won Jamie’s competition for one of his trainees to run a gastro pub of his own. Aaron has gone from strength to strength and has now published a book on Italian Food. Two of the recipes from this great book are reproduced this month in BN23. If you are still hankering for distant shores, take a look at our travel article on South Africa’s wine region. September’s Restaurant of the Month is Reef ‘n’ Beef - a new seafood and steak restaurant/bar situated in Seaside Road, Eastbourne. As one would expect from its name, Reef ‘n’ Beef specialises in seafood and steak.
If like me you can never decide between seafood or steak when you go out for a meal, then Reef ‘n’ Beef in Seaside Road is for you. Owned by two husband and wife teams - Dave & Mandy Richardson and Carl & Cathy Fitzsimon, Reef ‘n’ Beef is fast becoming a popular venue for those looking for good night out with superb food and friendly staff.

Not only can you enjoy a stunning meal prepared freshly to order with local ingredients, diners can begin or end their meal with a drink in Sharky’s Bar downstairs. And if you want to leave the car at home, there’s a courtesy Bentley at your disposal to take you to the restaurant and home again in style.
The menu is exciting and just big enough to give an excellent choice without being overwhelming. The locally caught fish is supplied daily by Southern Head Fisheries. As a consequence, the Day boat Specials change daily dependent upon that day’s catch, and are displayed on the Specials Board.
Our visit took place on a Tuesday evening. Traditionally a quiet evening, the restaurant was pleasantly full - always a good sign.

Restaurant of the Month
bn23 To start, I chose a warm salad of marinated beef with goats cheese. My partner opted for chilli and coriander squid in tempura batter. The starters were served quickly and were delicious.
The bar is sumptuous and welcoming with large leather sofas and pleasant music. Dave and Mandy showed us around the recently refurbished Function Room.
For my main course, I decided to go with tradition and chose the Reef ‘n’ Beef - a 10oz ribeye steak together with a 1/2 lobster (pictured). My partner chose sea bass fillets served with fennel on a bed of shredded vegetables with basil and lemon oil. Both dishes were absolutely superb and highly recommended.

By the time the dessert menu was presented, both my partner and I were full so we chose a light mango parfait to share. The waitress was more than happy to provide us with two spoons so we could both indulge. As with the rest of the meal, the dessert was faultless and the perfect end to a lovely meal. After we had eaten, we visited Sharky’s Bar for an after dinner drink with co-owners Dave and Mandy Richardson.
Able to accommodate 30 seated or up to 80 standing, the room is decked out as an underwater room. With its own toilet facilities and use of the bar opposite, the room is ideal for birthday parties, anniversary dinners, Christmas parties etc. There are two set menus available and Dave is happy to discuss your individual requirements and will tailor a package to suit. Open 7 days a week from 5pm ‘til late, Reef ‘n’ Beef is a beautifully decorated and extremely welcoming place to come and eat and enjoy a few drinks with friends.

t's not often that an evening slumped in front of the telly can change your life forever - but that's just what happened to Aaron Craze. The one-time carpet fitter was watching Jamie Oliver work his magic on TV one night when he had an epiphany and decided he wanted to become a chef. He wasn't sure how to go about it, but his mother-inlaw Dee knew he needed a lucky break and she sent off an application form for Aaron to join the trainees at Oliver's London restaurant, Fifteen, in 2003.

Getting accepted into the crew at Fifteen was just the start - he graduated from the chef training programme, had stints working at The Ivy and even returned to Fifteen as chef de partie.

As his confidence grew, so did his thirst for greater challenges. So in 2005 Aaron competed against other Fifteen students to win the keys to his very own gastropub. Running the small rural business was an even bigger challenge, but Aaron and wife Nicci pulled it off, receiving critical acclaim and an AA rosette for outstanding food and service. Aaron is now sharing what he's learnt in the last five years in a new book, Aaron Cooks Italian. Like his mentor, Aaron is incredibly inspired by the Italian approach to food
and wine - and says that northern Italy is not too different to England. "The weather is similar, the produce is much the same and even the landscape seems familiar, apart from the grapevines and olive trees that grow there. The real difference is that, unlike the Italians, we're slow to take advantage of all the wonderful fresh produce we grow here," he says. FUNKY LEAF SALAD This is a good all-rounder: you can use any and as many leaves as you fancy. (Serves 4-6)
To serve 100g (3 1/2oz) Parmigiano Reggiano cheese Aged balsamic vinegar for drizzling Tear the inner leaves from the radicchio and chicory into a sink of clean cold water. Add the dandelion leaves and rocket. Wash thoroughly but gently, because the leaves bruise easily. Drain the leaves and pile on to a clean tea towel to dry.
1 head of radicchio, outer leaves discarded 1 head of chicory, outer leaves discarded 1 head of dandelion leaves 1 handful of rocket 1 bunch of tarragon, leaves only 1 bunch of basil, leaves only 1 bunch of mint, leaves only 4tbsp capers Salt and pepper Juice of 1 lemon 4tbsp extra virgin olive oil
Tip the salad leaves into a large salad bowl along with the tarragon, basil, mint, capers and salt and pepper. Sprinkle over the lemon juice and olive oil and toss well. Finish with some shavings of Parmigiano Reggiano and a drizzle of aged balsamic vinegar.
LEMON SOLE WITH ANCHOVY & CAPER BUTTER SAUCE There's no need to overcomplicate this dish: wonderfully fresh fish simply baked in the oven with butter, anchovies, capers and lemon is perfection on a plate. Lemon sole is one of the less expensive fine fish on the market and easy to get hold of all year round. (Serves 2) 2 lemon sole, about 400g (14oz) each Salt and pepper 1 lemon, cut into 6 slices Dressed salad, to serve Anchovy and caper butter sauce 6 anchovy fillets 2tbsp capers 100g (3 1/2oz) unsalted butter, softened 1 bunch of flat leaf parsley

Rinse the fish in cold water and pat dry with kitchen paper. Place one fish on a chopping board. With a sharp pair of kitchen scissors, trim away the frill around the edge of the fish. With a sharp knife, make a straight slit across the skin, a few millimetres from the tail fin on both sides of the fish. Starting on the darkskin side, ease a finger under the slit to loosen a flap of skin large enough to grip firmly. Use a clean tea towel to hold the fish tail down and to grip the flap of skin tightly. Slowly pull the skin towards the head. It should come away cleanly but, where it sticks, use fingers to release it to avoid tearing
the fish. Do the same on the paleskin side. Repeat for the second fish. Alternatively, leave the skin on and make four slashes in the flesh. Season the lemon soles with salt and pepper and set aside. Preheat the oven to 180C/350F/gas mark 4. Put all the ingredients for the anchovy and caper butter in a food processor and blitz until coarsely chopped. Place the lemon soles on a large baking sheet and cover with the butter mixture. Lay three lemon slices along the back of each fish. Bake for 20-25 minutes.
Serve the lemon soles immediately with the melted butter sauce spooned over the top and a dressed salad on the side.

In the first of an occasional series in which we profile local businesses, BN23 talks to local interior designer Richard Langley, proprietor of Trumeiad Ltd. Richard has worked in the world of design, decoration and restoration for many years. Since moving to Eastbourne, he has undertaken projects as diverse as a bedroom make-over, to the refurbishment of the recording studios and offices of National Talking Newspapers for the Blind (for whom he’s a volunteer reader). We began by asking Richard how he approaches a project. “I listen carefully to the client to find out what they want to achieve. Some designers seem to believe that it’s what they want that’s important but it’s the client who has to live with the finished result” Past projects have included creating an Italian restaurant with murals of Italian scenery, and a simple country cottage living room where space was at a premium. “The next stage is to assess whether the client’s requirements are realistic and achievable. In my experience, there’s usually a way and I’ll produce sketches, samples of fabrics, carpets etc., until a final scheme is agreed.”
“Once the design is settled, it’s down to making it a reality. Having taught decorating to City & Guilds students, I have plenty of experience. I am also a very “hands on” person and can undertake much of the work myself. Alternatively, if the client wants to carry out the work themselves, I am happy to simply be on-hand to offer help or advice. Of course, due to strict legislation, things such as heating and electrics have to be contracted to qualified tradespeople and I have a list of several I have worked with before and know I can rely on.” “I’m very lucky. ‘GOLDEN CELEBRATION’ RECOMMENDED TO ME SEVERAL YEARS AGO BY THE MAN HIMSELF WHEN I INQUIRED WHETHER IT WAS POSSIBLE TO GROW FRAGRANT OLD ENGLISH ROSES IN LARGE CONTAINERS.
T
his repeat-flowering yellow shrub rose has now been housed in a large wooden trough for several years and is still doing well, but I would like to replicate its appearance and scent in other spots in my garden, which brings me to the subject of propagating roses.
Taking rose cuttings is a really easy process as they will grow on their own roots. You can root the softwood cuttings in the open ground on a spare patch of land in early summer. The cuttings should be about 15-20cm (6-8in long). The advantage of a rooted cutting is the absence of suckers - all shoots belong to the variety being grown. Choose healthy stems of the current season's growth and take off the lower leaves, leaving the bottom two-thirds of the stem bare, then use a sharp knife to trim off the bottom of the stem just below a leaf joint. Nip the growing tip out of the shoot, as the tips of rose cuttings are very soft and likely to develop fungal disease.

Gardening Remember to look after your stock once you have increased it. Now is the height of the flowering season but also the time when pests and diseases turn up to ruin all your hard work. Watch out for blackspot, which looks like ink spots on the leaves and can destroy your roses. Mildew and rust can also be disastrous for roses and spraying may be the only solution. However, there are so many disease-resistant types of rose on the market now, it's worth investing in a few to give you blemish-free, glorious roses in future. Dip the base of the cutting into hormone rooting powder before placing it into well prepared ground. Take more than one cutting in case some don't succeed and leave a space of at least 15cm (6in) between each. If you are putting them straight into the ground they will need protecting with a mini cloche or a soft plastic drinks bottle cut in half. This will help build up the humidity underneath. Alternatively, place four or five cuttings into a 20cm (8in) pot filled with seed compost and cover the pot with a large, loose polythene bag after watering them in. They can be kept in a shady spot and the compost should be kept moist. As soon as the rose cutting starts to grow new leaves - usually a sign of rooting - then gradually

take the cover off and grow the plant on as a normal potted shrub. Your cuttings should be well rooted by the autumn and rose plants can then be potted up individually, to be planted out probably next summer. If you plant them out before then, you risk them being smothered by weeds or being trodden on and snapped.

You can wait until later in the year to propagate roses, taking hardwood cuttings in early autumn. Rooted outdoors, they should provide young plants after a year.

Give A Pound For Joe ExEx-Ratton people Joe Townsend always dreamed of being a Marine. In 2006 he got his wish when he passed out as a member of the 40 Commando Marines. He was sent on his first tour of duty to Afghanistan not long after. On 8 February this year whilst serving in Helmand Province, Joe’s life was changed forever when he stepped on an anti-tank mine on his way back from a patrol. The blast caused terrible injuries to his legs. He was just 800 yards from the safety of his base and aged just 19. Joe was taken to the US military’s Camp Bastion base. Unfortunately, his legs could not be saved and after 12 hours of surgery, was flown to Selly Oak military hospital in Birmingham. Here, he spent five weeks on a critical care ward and a further five months receiving treatment for his injuries. Joe’s mum Debbie was at his bedside throughout his time at Selly Oak and his dad Dave and brother Charlie made the long journey every weekend to see him. Whilst in hospital, Joe was awarded the Operation Herrick campaign medal, presented to him by Vice Admiral Adrian Johns who flew to Selly Oak to present it personally. Joe fought off many infections but finally, when his wounds were beginning to heal well, he was transferred to the military rehabilitation centre, Headley Court, in Surrey. He is still an in-patient but is allowed home to Eastbourne on regular occasions. Eager to help, Eastbourne & District Chamber of Commerce launched the Pound for Joe Appeal in July and the appeal is now open to members of the public. All money raised will help with the costs and expenses Joe and his family have had to meet since he was injured. It will also pay for alterations to his family home - necessary if Joe is to return there permanently.
All we ask is that you donate just £1 to the Appeal to help Joe and his family lead a normal life. The Appeal will run until the end of October when ALL monies raised will be handed over to Joe and his family. The main collection will take place on 19 September. Collections will be held in local shopping centres, and a Salsa Night is also being held at the Lansdowne Hotel. Robert Miller from the Chamber said “Here we have an ordinary lad who did what he wanted to do and went to serve his country. I know and appreciate he knew the risks but in reality none of us would ever think this could happen. As a result, he faces a future of pain and injury. He has given and so should we”. A bank account called A Pound for Joe has been opened at the National Westminster Bank in Eastbourne and solicitors Lawson Lewis and accountants Dominic Hill will act as legal and financial advisers. A note from Neighbourhood Specialist Constable Ed Faulkner The Neighbourhood Specialist Team for the BN23 area continues to work on the issues that affect everyone's lives, reducing crime and the fear of crime. This includes getting involved in the launch of www.immobilise.com This website enables everyone to register their property for free, meaning that should any of your property be stolen and later recovered by Police it can be reunited with you quicker. We have already had some success with a pedal cycle being reunited with the rightful owner after being checked by a vigilant PCSO. We are encouraging everyone to participate in this scheme to help increase the chances of property being returned. With youngsters returning to schools this month no doubt that parking for parents collecting and dropping off their children will be raised with us. I can only ask, as I have done in the past, that people are mindful not to block driveways, double park, or act inappropriately when getting involved in the school rush. Whenever a lot of cars try to get into a small space their will always be problems caused, everyone needs to do what they can to help reduce the problems. In the past I, along with colleagues, have carried out random sweeps of schools handing out fixed penalty notices and words of advice to parents parking in bus stops and on double yellow lines. This will continue into the future. We don't want to penalise vehicle owners, but we do want a safe environment for children to arrive and leave school. Finally, please stop us and say hello if you see us around. We are always keen to stop and chat with anyone in the neighbourhoods that we serve. We are here to resolve your problems and so would welcome any input you wish to make.

We got our first taste of this new complex Batman when British actor Christian Bale gave his intense interpretation of the caped crusader in 2005 movie Batman Begins. In The Dark Knight, the second in director Christopher Nolan's take on the franchise, Bruce Wayne is a millionaire with a mission to save corrupt and dangerous Gotham City from criminals like the anarchistic Joker (the late Heath Ledger). Celebrity Heath Ledger's version of The Joker is also a world away from the oneone-dimensional villain often seen in superhero films.
This movie was the last that Heath completed before his death in January this year, but the Australian actor's performance as the anarchistic psychopath is already being talked about as one of the year's most outstanding. "Somebody like Heath loves to immerse himself completely in the role, and you can see the pleasure he's getting from that," says 34-year-old Christian. "And I feel likewise - that's the pleasure I get from acting. "The way that Heath plays The Joker it's not like we're watching Heath Ledger enjoying playing this zany crazy character. He disappears and he becomes this anarchic, destructive, chaotic individual." And it's Batman who provides The Joker with his toughest challenge yet in the movie. "Everybody can be leveraged so damn easily. The mob - they want money, that's boring. Also, The Joker despises hypocrisy and he's finally finding in Batman somebody who doesn't have that. He's as uncompromising as The Joker. Born and raised in Britain, Christian, who began his career in Empire Of The Sun, is
now based in Los Angeles, and after filming Batman and other American films like 3:10 To Yuma, he sports a mid-Atlantic accent. Christian clearly relishes his work, and the opportunities it affords him, such as the chance to film a Batman scene while standing on top of Chicago's Sears Tower. "I like working - I don't mind long hours and strenuous work," he says. "The main challenge for me is primarily the sitting around, the waiting periods, that's what I don't like. "There's a great many doors that are opened through doing movies. Sears Tower would not let me just walk up, knock on the door and say, 'Do you mind if I go stand there, on the edge of your building 110 stories up? That ain't going to happen. "I just finished doing the film Public Enemies with Michael Mann. We toured the FBI headquarters and got shown around every single department - really insider stuff. That never would have happened had I not been involved in movies." Although he confesses to being a big Star Wars fan as a child, Christian wasn't interested in superheroes at a young age, and says he only really had one personal hero while growing up - his dad David, who died four years ago. "The only person I always consistently looked up to and felt was intriguing, and inspired me and had wonderful stories to tell, was my own dad. Maybe that was the reason I didn't have others - he was always endlessly entertaining. I didn't need to look any further."

If I weighed in at 60 tonnes I could manage little more than a lie on the sofa in front of daytime TV. But for the gigantic Southern Right whales off the coast of Cape Town, weighing the same as seven double-decker buses is no reason to avoid a spot of acrobatics. Nearby a family of penguins swam nonchalantly past through the surf, apparently unflustered by the prospect of one of the world's largest populations of Great White sharks lurking beneath. Gripping onto the safety rail of our boat, I felt like I had turned up in a David Attenborough documentary. But after just three days in South Africa I was getting used to nature showing off.

For all the pain of its recent history, this is an area blessed by nature - from the dramatic backdrop of Table Mountain looming over Cape Town to the jagged peaks and rolling landscape of the winelands just inland. It was the latter that I had really come to see. In the years since the collapse of apartheid signalled the end of international economic isolation, South Africa's wine industry has taken off. The country is already the world's eighth largest producer and becoming a bigger and bigger presence on UK supermarket and off-licence shelves every year. Not that I could claim any expertise in the subject. My golden rule with buying wine has always been to go for the second cheapest bottle in the shop. But there couldn't be better places to have a crash course in the subject than unpretentious South Africa.

The winelands' rich history is very much on show in towns like Stellenbosch or Franschhoek Afrikaans for French corner - which takes its name from the Huguenot refugees who settled there 300 years ago, fleeing religious persecution in their homeland. The town has earned a reputation as South Africa's undisputed gastronomic capital. Every other building on the pretty main street seems to be a restaurant - but I don't suppose there could be too many places in France where wildebeest or impala are regular items on the menu. For little more than the price of a meal for two at a high street pizza joint in the UK, I was able to eat at what is officially one of the world's best restaurants, Le Quartier Francais in the centre of town. It is rightly famed for its Tasting Room where customers can opt for four, six or eight small courses with dishes ranging from lamb cooked for 36 hours, to gourmet takes on unique local ingredients. Tucking into a warthog roulade, I discovered that this was the only eatery in the whole of Africa or the Middle East to make it onto the world's top 50 list. By my calculations, that made it the best restaurant for 5,000 miles.

But it's certainly not the only good restaurant in Franschhoek, with the Grande Provence Estate just outside town - popular with guests such as Jude Law or Prince Andrew - or trendy Bouillabaisse and Reubens in the centre. Nearby we stopped on a local farm to try out cross-country quad biking. As we sped across one field, we again realised we had company; a group of ostriches dashed past to put us in our place. A scenic drive around Cape Point took us to the stunning Grootbos nature reserve where guests stay in immaculate individual hillside lodges with dramatic sweeping views down to where the Atlantic and Indian Oceans meet. I soon learnt that the dramatic natural surroundings of the Cape are also the key to its wine. Although the climate is best described as Mediterranean, there are stark variations between what can be grown on cool mountain slopes, hotter valleys and coastal areas exposed to the ocean. The country's main wine region a ls o s it s in a n ar ea o f internationally-recognised environmental importance. A relatively small zone around the Cape is home to more species of flower than the entire northern hemisphere.
Efforts to preserve indigenous plants while still producing wine are being spearheaded by the Lourensford estate near the town of Somerset West. More than 400 hectares of land including forest which is home to porcupine and lynx - have been set aside as part of a scheme to preserve native species.

Despite having worked on the estate for 30 years, this is still a relatively common occurrence. Two days later he e-mailed me to say he has had it identified by plant experts. On land continuously occupied by man for millions of years, perhaps it is strange that we call this the 'New World'.

On Saturday 12 October, Setanta will be screening live, Eastbourne Borough’s clash with Stevenage Borough in the Blue Square Premier Division - the pinnacle of non-league football. With no Premiership or Football League games on TV that day - because of a break in domestic fixtures for World Cup international qualifiers a big TV audience is expected for the first ever Borough game at Priory Lane to be televised live.
