Slow Cooker or Crock Pot? You might call it a slow cooker: in the South we call it a crock pot. Either way you can really prepare some delicious and inviting chicken dinners the entire family will enjoy. One of the best benefits of using crock pots is that you don't have to watch the stove every 5 minutes while your chicken is cooking. Not to mention the tender & delicious chicken meal you cooked while at work or while spending time witht the kids. 1 - Chicken Provencal Stew Ingredients 2 pounds boneless, skinless chicken thighs, each cut into quarters 2 medium red peppers, cut into 1/4-inch thick slices 1 onion, thinly sliced 28 ounces plum tomatoes, canned, drained 3 cloves garlic, minced 1/4 teaspoon salt 1/4 teaspoon thyme 1/4 teaspoon fennel seeds, crushed 3 strips orange peel 1/2 cup fresh basil leaves, chopped Directions Put all ingredients in slow cooker, except for the basil leaves and mix thoroughly. Cover and cook on Low for 7 to 9 hours or on High for 3 to 4 hours. Sprinkle with fresh basil leaves to serve.
2- Chicken Noodle Soup With Sweet Potato Ingredients 6 to 8 boneless, skinless chicken thighs, cut into 1-inch pieces. 2 sweet potatoes, peeled and diced. 1 onion, chopped. 1 1/2 teaspoons salt. 1/2 teaspoon dried thyme. 1/4 teaspoon marjoram. 1/8 teaspoon pepper. 1 bay leaf. 14 1/2 ounces chicken broth. 8 ounces egg noodles, cooked. Directions Combine all ingredients except the egg noodles in slow cooker. Cover and cook on Low for 8-10 hours or on High for 4-5 hours. Stir in cooked egg noodles before serving.
3- Chicken Cordon Bleu Rolls Ingredients 6 boneless, skinless chicken breasts, pounded to -inch thickness. 6 slices prosciutto. 6 slices Swiss cheese. salt and pepper, to taste. 5 1/2 ounces condensed cream of mushroom soup, (1/2 can). 1/4 cup milk. 1/4 cup dry white wine. Directions Put one chicken breast on a piece of waxed paper and place one slice of prosciutto on the chicken and cover with one slice of cheese. Roll up the stuffed chicken breast and secure with a wooden pick or cooking string. Repeat step with the remaining chicken breasts. Season each roll with salt and pepper. Arrange the rolls in a slow cooker. In a small bowl, blend together the soup, milk and white wine. Pour the sauce over the chicken breast rolls. Cover and cook on Low 4 to 6 hours or High 3 to 4 hours. So, these are three of my favorites.
