What is love? The answer varies, but as what we all know, love is a feeling capable of conjuring our deepest emotion, which enables us to inspire, create, or alas, destroy. Love is a gift. On the latter part of January, we are witness to that love when we celebrated the feast of the Senor Sto. Nino. The birth of the baby Jesus is a manifestation of God’s love and gift to mankind. As we continue to relish in our idea and the reality of love, we, at Boracay Sun, couldn’t be more delighted to bring you our love month issue. February may be the shortest month but it is no less exciting, with Valentine’s Day and the Chinese New Year to celebrate. So go on, turn the pages and stuff yourselves with our special features – get to know why Boracay is the best honeymoon destination, be informed on proper date decorum, read notes on wines and chocolates, and yes, learn how to become a mermaid for a day! Riding with Dragons in Vigan, Ilocos Sur opinion

A

Having worked out in a gym for most of my life, I am the type of person who cross trains on different sports disciplines. During preparation for competition, I usually cross-train with grappling through Mr. Daniel ‘Mumbakki’ Foronda. Now in my forties, I find it is time to venture into another sport, the Dragon Boat Racing. A very different sport for me because I am used to ‘individual sports’ rather than with a team. My first ride with a Dragon Boat team was with the Boracay Sea Dragons, thanks to their Coach Reynaldo “Dodoy” Montoya and Managers Ryan and Florenda Tubi. During my second ride, I went boating with the Boracay All Stars through Coach Bambi Sacapano and team managers Ms. Azenith Ressurreccion and Ms. Nina Dublin. The training was great and considering that I don’t really know how to swim, I was not afraid of being in the deep water at all. I thought to myself, since my bodyfat is still high, I can just float to the shore. After only a week with the Boracay All Stars, I volunteered to go to Puro Magsingal, Ilocos Sur last January 10, 2015 for the Sun Soaked 2015 Dragon Boat competition which was organized by Congressman Ronald V. Singson and the Ilocos Sur provincial government. Since I am a neophyte, I did not mind serving as support for the team. I was simply deeply honored to a be part of the elite team of Dragon Boat Racers.

With gray sand under my feet and the scorching hot sun above our heads, the competition went on smoothly, everyone was with high morale. After an exhilarating ride, The Philippine Coast Guard Dragon Boat Team prevailed as champions. Tailing close behind were the Philippine Navy Dragon Boat Team (1st runner up), the Boracay Sea Dragons (2nd runner up), and the Triton Dragon Boat Racing Team (3rd runner up). The semi-finals were particulary exciting. The teams that competed in the semis, which included our very own Boracay All Stars, all clocked-in at over a minute. The time difference between teams were 1-2 seconds. Considering that my team, the Boracay All Stars, did not have a long training period in preparation for this event, being in the semis was a welcome result especially with 9 teams competing. Overall, I must say, the event was a success, with more than 300 water sports enthusiasts participating, the bulk of which came from the dragon boat teams. Congressman Ronald V. Singson created an event that brought together varied people who, to me, really personified the adage, “play hard, party harder”. Watching all the dragon boat teams, they are a motley crew from different walks of life. From the strict to the wacky. No wonder it’s a popular sport because it’s much more socially engaging compared to bodybuilding. Riding with dragons is a humbling experience which I will surely continue. Training with the Boracay All Stars (my primary team) and Boracay Sea Dragons will make my life in Boracay fulfilling as well as making my fitnessregimen complete. We are One Spirit, One Heart, One Team.

Boracay misses toursim target due to typhoons, Chinese travel ban Jun Ariolo Aguirre

oracay missed its target for the second year because of weather disturbance and the recent China travel ban in the Philippines. Niven Maquirang, Boracay jetty port administrator said that based on their official records, only around 1, 472, 352 foreign and local tourists visited the resort island this year, a rather low turn-out considering its target of 1.5 million tourists.

It could be recalled that the Chinese government temporarily called for a travel ban in the Philippines following the abduction of a Chinese teenager in Zamboanga in October . Reports from the Department of Tourism revealed that the Boracay tourism industry incurred a loss of around P500 million over the said travel ban. “The recent typhoons Ruby and Seniang have also affected the tourism industry of Boracay,” Maquirang told Xinhua News Agency.

The 2014 data revealed the top ten foreign tourists arrivals which includes South Koreans that registered 263,377; China, 165,243; Taiwan, 48,354; USA, 22,203; Malaysia, 19,452; Singapore, 18,175; Russia, 17,945; Australia, 17,649; Kingdom of Saudi Arabia, 11,136 and the United Kingdom, 10,549. In 2013, the jetty port which is under the Aklan Provincial Government also targeted 1.5 million tourists but missed the number following the onslaught of Super typhoon ‘Haiyan’ in November; Boracay only registered 1, 367, 767 foreign and local tourists. “For 2015, we are targeting 1.6 million tourists for Boracay,” said Maquirang. This year, Boracay will be hosting at least two conferences for the Asia Pacific Economic Conference (APEC). In addition, at least 16 Cruise Ships are also expected to dock in Boracay this 2015.

Muscles and curves abound at 2014 Boracay Bodybuilding Championships Karen Bermejo

ANTHONY’S DREAM PHYSIQUE Anthony used to idolize muscular cartoon characters like Johnny Bravo, and of course the bodybuilder turned actor and politician, Arnold Schwarzenegger. This pushed Anthony, who was a sickly and skinny boy then, to have an interest in the sport of bodybuilding. He started his bodybuilding training in 1996.

However, it was only in 2008 that he was able to sustain his training and fitness routine. And now, through proper training and hard work, at 35 years of age, Anthony brags of a well-rounded shoulders, six-pack abs, wide muscular back, and like Schwarzenegger, could even star in his own Terminator movie! Boracay launched in 2002. The event, now on its 12th year, is organized and promoted by Georgen dela Cuesta, owner of Muscle Tribe Fitness Gym, a pioneer in the fitness industry on the island. Fourteen men and four ladies in their best physique competed on the 12th installment of the BBC event at Ambassadors in Paradise Resort in Station 1.

Anthony came home from Kuwait and, along with his family from Laguna, he travelled to Boracay for the first time just to join the BBC. Anthony was declared winner of the Men’s Bodybuilding-Medium Division over Ildefonso Buenvenida of Iloilo City. He then bagged the Over-All Champion title when he bested the Winners of the

other two divisions: Don Tagalog of Makati City in the Tall Division, and Jose Gino Gutierrez in the Novice and Small Division. “I prepared for more than six months for this competition. Aside from gym exercises, I also have to watch out for the food I eat,” Anthony said in an interview. For more than six months, Anthony had to endure six days of training in a week. To achieve a leaner body, he doesn’t skip a meal, but eats six to seven meals in a day. “I don’t skip meals. Instead, I eat a lot, especially food with protein, carbohydrates and fiber that are essential in building muscles,” he said. Chicken, white rice and vegetables like broccoli and asparagus are constantly part of his meals. One of his secrets to keeping fit is skipping junk and processed foods. “I take enough rest, and sleep for eight hours daily. Water is also essential so I drink lots of it,” he shared. Winning as the Over-All Champion in BBC made Anthony’s first time in Boracay a memorable one. As an overseas Filipino worker, Anthony also took advantage of this break to enjoy the much-hyped Christmas and New Year celebrations on the island. He and his family were overwhelmed with the beauty of the White Beach. “This place is really a paradise,” he said. CONTINUED ON PAGE 06

A

ccording to popular tourism, there are many tourist destinations here in the Philippines and most of these are situated in Luzon and the Visayas, some can also be found in the northern parts of Mindanao. There are in fact, less known places in Mindanao which can rival the sands of Boracay, the beauty of Bohol and the nature of Palawan. Probably it is because of the stigma of peace and order that these places are less visited. But I can assure travelers that this is not always the case. I was fortunate enough to be able to set foot on these places, but not because I have to survive a stream of bullets and pass through a band of terrorists. My father hailed from Mindanao.

Most tourists opt for a day trip because there is really no hotel to stay in for an overnight adventure, well, none that I know of. But there are houses in the area and a military outpost where a traveler can ask for shelter in the night. There may be new developments as of this writing perhaps. Pump boats are available anytime to get back to mainland Zamboanga City. So, if you’re interested to experience a new color of sand, this is the place to visit. Direct plane trips are abundant from Manila to Zamboanga and vice versa, 7 days a week, all year round.

The island is actually near Bongao but the Lancha has to pass through a zigzag route because there are parts of the sea that are too shallow for the Lancha. Tawi-Tawi by the way is one of the places in the Philippines where the island count increases when it is low tide. The trip to Panampangan from Manila is undoubtedly longer than a trip to Hongkong but it is very much worth it. A place where few men have set foot on.

PANAMPANGAN ISLAND, TAWI-TAWI

Behind the war and the confusion, there is a paradise that will quench a traveler’s thirst for great places. Sulu has been branded, for many decades and probably up until today, a place of war and rebellion. True enough, but is this all this place has to offer? Certainly not. I would like you to see the famed Quezon Beach!

I would like to promote tourism and be able to convince travelers that there are other spots in the Philippines they can explore! - with less people, less urbanization, less pollution and less expense? – the last item being the most interesting I suppose. If they truly want themselves to be one with nature and truthfully relax, these are the places I recommend. I have grabbed some pictures from the internet to showcase these parts of the world and all credits go to the photographers. STA. CRUZ ISLAND, ZAMBOANGA PENINSULA One distinct characteristic of this place is its pink sands which I believe, as far as I know, can’t be found elsewhere and the excellent diving view it offers for enthusiasts. One can reach Sta. Cruz Island by taking a 40-minute pump boat ride from Zamboanga City. It’s a short channel travel, shorter than the travel time to cross the English Channel. The beach is pink because of the abundance of red corrals and shells. Over time these are pulverized and become part of the sand itself thus the pink.

A paradise incarnate! The first time I saw this island I knew that Boracay will now have something to be very jealous about. The Sands of Panampangan is finer and whiter than that of Boracay. In another extreme, if Boracay is so commercialized, Panampangan is the opposite – Natural Tranquility that is. There are very few settlers in the island and you can count the number of houses. The island is comparatively small than its Aklan counterpart. Panampangan is situated in the Philippines’ southernmost frontier, one of the pristine islands of the Province of Tawi-Tawi. From Manila you have to take a flight to Zamboanga, then another flight to Bongao – the capital of the province. From Bongao you have to take a Lancha (small motorized wooden boat). There is no Lancha that docks in Panampangan, so you really have to ask the captain of the Lancha to pass by Panampangan. Lanchas going to Tandubas and to Languyan are the ones that pass by the place. But if you are rich enough to hire (rent) one, then that will be most convenient. This is also an over the day adventure for there is no place to stay overnight unless if you are the type of traveler who enjoys camping. From Bongao, the trip can be for more than 2 hours.

QUEZON BEACH, PATIKUL, SULU

The trip from the Philippine capital is the same route as with the other two places mentioned above, Manila to Zamboanga, but this time to Jolo. The Municipality of Patikul is the next town near Jolo, so one can take a short 40 minute jeepney trip to the site. I recommend that you ask a local to accompany you. This is not to frighten you of any imminent kidnapping (so to speak) but to ease your burden of communicating to the local people. The Tausug value their language so much, most of them, especially those who have stayed at their place for most of their lives. Western Mindanao is a place of many hidden natural beauties. It would take me an entire book to write all that a traveler can find there. From beaches to mountains, from abundant food and the rich culture of the Zamboanguenos, Tausug, Yakan, Sama and many other social minorities, name it, and they have it! I only hope that when the time comes these places become popular tourist spots, they will remain as vestal virgins of nature.

Burdening Balls and Behinds Joel James Cubillas

O

ur journey to Mt. Batulao, Nasugbu, Batangas brings to me too many a first time.

for there are friends who share the same joy and struggle. I haven’t done it in a while but I did the sign of the cross. This moment—too grandiose, too perfect – made me think that there is, indeed, a higher being.

First, it was my longest motorcycle ride. My behind barely endured an almost 2 hour Lipa- Nasugbu journey as I have discovered that no two butt cheeks must bear the same weight at the same time— that one must alternate the burden on each cheek so as to lessen, if not prevent, that throbbing soreness taken from too much engagement with the synthetic leather saddle. Also, one does not need to seek for an “established” food hub. In Lemery, when we looked for a place to eat, the one that we chose did not even have a signage. We took notice of the place because of the number of parked trucks along its facade and, quite frankly, it was one of the better pork barbecues I had in my life. The joy of not settling with the Mcdos, the Jollibees and the KFCs, and the pleasure of discovering cheap yet close to home-cooking carinderias is always an achievement. Going for the stale tang and zero nutrition of fast food menu is the last thing a must-be-energyloaded hiker would want. We then proceeded to Nasugbu. Catching a glimpse of Mt. Batulao gave me the proverbial chills– her sides as green as moss and her peaks as intimidating as a saber toothed feline. I told Sundy, “P’re nakakatakot”, as I pointed to the peaks. “Hindi p’re, kagalanggalang!” he answered with Yodaesque charm. As we dismount ourselves from our motorcycles and as we let the manly ball vibrations subside, we then neared the mountain by foot. The asphalt faded into cement, then to deep trails of four wheel drives, then to random trike and motorcycle paths, and then to a prophetic statement of an inevitable muscle cramp. We ascended all the way to Peak number 8. We sailed, actually. Thanks to Alva’s whistling of Mike Love’s Permanent Holiday, Sundy’s humming of Bob Marley’s

After a short rest under the cool shade of trees, we again bludgenoned the path until we reached the summit. The peak lent us a different view of Batangas, a perspective that offered us the seas that made our province calm and beautiful, a panorama so different from the packed, ant colony-like scenarios in Lipa. It was 2 PM; the sun was as high as a young Peter Tosh. We headed down. And after almost 2 hours of alternating brisk and drunk man phasing, we finally found our parked motorcycles.

Now, our Lipa City arrival may still be more than an hour away and our innocent balls and behinds are certainly still in for the long haul, but that scenic exit of ours kind of tells us that the day was already ours.

I have conquered mountains with higher altitude. But Mt. Batulao presented to me a different kind of challenge. alentine’s day is a special event around the world but the excitement is doubled when one lives on an island as beautiful and dreamy as Boracay. This month of love let’s hear from some of the lucky couples who are fortunate enough to have somebody special in their lives. Jody and Canada

Alasdair, newly-weds,

always cry when we’re driving to and from the airport. But I like to think that crying when he goes means I really do love him. The saying, ‘Absence makes the heart grow fonder’ is so true.” And what are their plans for the future? “We both want kids,” Alistair answers with delight. “Every cute kid I see makes me think about it more and more!” “We definitely want two, before it was back and forth whether we wanted one or two, but it’s definitely two now!” laughs Jody.

T w e n t y- f i v e year old Jody, a chef and 26 yearold Alistair Montgomery, an electrician, from Vancouver Island, Canada, are visiting Boracay on their honeymoon. Married in August 2014, they chose to celebrate for two weeks on the island and a week in Bali. “We met about five years ago, have been together for four and a half, and were engaged for two.” says Jody. “I used to work as a lifeguard with Alistair’s brother and we met through him. “We went backpacking together, and fell in love with and in Asia! We chose to visit Boracay for our honeymoon as we didn’t get a chance to come to the Philippines on our last trip.” So what do they love about each other? Alistair was first to comment. “My favourite thing about Jody is that she lets me be myself. In fact, she introduced me to myself and I don’t have to be anyone else around her. And there’s really nothing I’d change about her. I think that every bad quality a person has may teach somebody, somewhere, something good. But if I could, maybe I’d get more back scratches!” he laughs. “Alistair brings out the best person in me. Also, we wouldn’t have had the experiences that we’ve had if it hadn’t been for each other. We’re 150% authentic to each other, there’s no hiding anything – this is it, the raw truth, take it or leave it! And we’re cool with that! Sometimes, of course, we don’t always agree on things, but we try to see it from each other’s point of view. Alistair does moan too much, but he really is the cutest, he does little things, like when I come out the shower there’s a warm towel waiting,” Jody explains. Alistair work “eight days at a time” and he has been doing it for a year now which makes it even harder. “I love him and miss him so much when he’s away,” sighs Jody, “Every time I take him to the airport I’m always so sad to drop him off, and I

She then found employment, and decided to stay and build a life near her best friend. , “I love Nina, she always manages to make me laugh, she’s always happy and caring, not just towards me but to everyone, animals included,” discloses Andrew. “She’s a bit messy when she comes to stay but it doesn’t really bother me.” “When we’re together, we do laugh a lot,” smiles Nina. “He’s also the only guy I’ll be 100% myself with – the states he’s seen me in! Andrew is the most generous person I’ve ever met, he’s helped me out with all sorts of things, he is completely selfless with everyone. But he drives me slightly mad when he loses stuff all the time! We also once ended up in Chiang Mai (north Thailand), when we were supposed to be right down in the south of the country!” What does the future hold for the best friends? “I can’t imagine not having Andrew in my life,” shares Nina. “ I owe him my life, he’s given me so many opportunities. Wherever we are in the world, we’ll stay in touch.”

Nina and Andrew, best friends, England Nina, 26, now living in Cebu and Andrew, 37, manager of Kasbah, Boracay first met each other through mutual friends on a night out in the UK about eight years ago. “We went out drinking a lot with friends,” says Andrew, “But the bonds of friendship really started to form when I broke up with an ex, bought a new flat, and Nina helped me paint and decorate the new place.” “I helped him peel off stickers and came to his painting parties!” laughs Nina. “But we really started hanging out, just us, when Nina came over and we sunbathed on my roof,” explains Andrew. “I also started to teach her to DJ and she’d often come round for a mix, we became really good friends.” Nina and Andrew then parted company as Nina left England to live and work in Switzerland. “Andrew came to visit and we spent every day, just hanging out and catching up. But then Andrew started talking about moving out to the Philippines – he is half Filipino – it made me feel really sick and upset that he’d be so far away,” says Nina. “ I wondered how I’d survive without him as he’s such a major person in my life and he was the one who connected everyone in our hometown. I felt a huge sense of loss. “I remember the day he was actually leaving, I Skyped him, but when we hung up I actually cried knowing he was leaving, I felt so gutted. I never imagined being able to visit the Philippines.” Andrew moved to Boracay three years ago and Nina finally managed to visit

“I’m s o g l a d N i n a’ s h e r e in the Philippines, I was gutted to be away from her and thought it would be a long time until we next saw each other – we’re going to be together forever!” Andrew declares. Macky and Lyn, couple, Boracay Macky, 25, a graphic designer originally from Virginia Beach, USA and Lyn, 31, from Manila, a make-up artist and full-time mom to five-year-old Ashanti, have been together for a year and a half. The couple now lives in Boracay and are neighbours. “We actually met at Exit Bar one night,” recalls Macky. “I had an argument with my then-girlfriend and had gone out for the night. I recognised Lyn as I’d seen her before at a party, so I went over and we hang out all evening. Although I was unhappy about the argument, Lyn was so nice to me we ended up having a really good evening.” “We hang out as friends for about a month then dated for about 4 months before becoming official,” says Lyn. “I

don’t remember our first kiss at Exit”, she laughs, “but we moved onto Epic and I definitely remember our second kiss in there!” “I started developing strong feelings for Lyn the day after, when we went to another party – we just kept looking across the room at each other,” remembers Macky. And what is it they love about each other? “I love Macky because her personality’s great, she’s sweet, supportive, very smart and she thinks outside the box – she’s far-out, good far-out!” Gushes Lyn. “I also love her because she really takes care of Ashanti, almost better than I do! But she often sleeps ‘til late which makes me mad.” “Lyn is crazy in a good way. And she’s very independent, she’s really, really good at taking care of herself and Ashanti, and me too. However, she doesn’t know when to go home at the end of the night! When all the bars are closed she wants to stay out and that annoys me sometimes.” says Macky. “We’ve talked about marriage, ‘what ifs’ really, but if we did something like that it would just be more of a celebration that we’re together, one big-ass party!” Of course, a relationships isn’t without its ups and downs! “We break up occasionally. Maybe once a month!” jokes Macky. “For me, a few little things build up, and Lyn sometimes feels we spend too much time together. But then we miss each other so much and realise it was a petty issue or argument that wasn’t worth the break-up. The fact that it’s a small island means we see each other and it’s easy to get back together, too.” The couple have had many memorable experiences together, but their most special was when they took a trip to Misibis Bay, a luxury hotel, where they spent a few days relaxing and doing water sports. But the most romantic moment of the relationship for Macky was when, after a break-up, Lyn jumped on-stage and sang The Beatles’ ‘I Wanna Hold Your Hand’, while a friend handed Macky a bunch of red roses from Lyn. “It was her first big gesture,” Macky smiles, “and I really felt something had changed then.” Now they’re looking to the future and feel they’ve moved to a new level, “We only break up every four months now!” laughs Macky. “It’s more serious and we’re saving up to take Ashanti to Disneyland.” Says Lyn, “We’re both working on our careers and saving money, and then we’re also thinking about moving away from Boracay, perhaps trying other places like Bali. And if they had to do it all over again? “I wouldn’t change anything,” says Macky. “We just end up laughing at all the fights we get into as it’s always so petty. Our friends laugh at us and say we’ll be fine tomorrow! They even place bets on how long it’ll be before we get back together!”

Fish Tale: Mermaid for a Day Kate Hammaren

B

eing single has its advantages; you can pretty much do whatever you want, when you want it, without having to worry what your ‘other half’ would think or feel. It’s hugely liberating! You can choose when to be alone, or when to immerse yourself back to society. You learn to love life whether you’re on your own or in good company. One sun shiny day, after I’d spent the morning working on a deadline, I felt particularly in need of a new, life-affirming adventure. With everyone busy for the rest of the day, I decided to embrace my freedom and treat myself to an afternoon off. I’d heard about ‘Mermaiding’ on Boracay and had always wanted to give it a go – there was no time like the present! I could hardly contain my excitement at the idea. As a little girl, I had avidly watched Disney’s The Little Mermaid and Splash, and religiously attended my swimming lessons every Saturday morning. ‘Mermaiding’, it turned out, was the perfect way to spend an afternoon or a day even for that matter. ‘Mermaiding’ is a word coined by the Philippine Mermaid Swimming Academy (PMSA) described as being ‘an artistic expression and a fun, whimsical way to keep fit’, and PMSA was the first in the world to educate people in the art of swimming like a mermaid (or merman!).

THE EXPATRIATE And, it is open to everyone – all age groups and genders. When I arrived at Fisheye Divers at Station 2, where the Academy is based, I was asked my foot size so I could have a correctly-fitting monofin. Our instructor, Tara, quickly showed us how to fit the stretch-fabric tail to the monofin and we headed to the beach for a photo-op. As we walked, the other three girls in my class, all in their 20s, were chatting excitedly and I was enchanted to see that the childhood fantasy of becoming a Madison or an Ariel was as exciting for them as it was for me. Before we swish our tails in the water, Tara took us through a few simple stretches on the shore to ensure we didn’t injure ourselves in the water. The plastic monofin can apparently feel a little heavy on the ankles, but doing the stretches helped loosen us up. Then, sitting on the sand, grinning with anticipation, I slipped my feet into the plastic monofin and rolled the light stretch-fabric up. Feeling my legs snugly encased in the tail, I adjusted the waist and bingo! I was suddenly transformed from human into a mermaid! It felt amazing and I flapped my little fins in the sand in glee. Tara showed us the best positions to lie in, in order to achieve the perfect mermaid look for our photos and, after a few shots in the sand, we shuffled like reverse caterpillars into the shallows. Being in the water with ‘one leg’ felt really odd to begin with and the fin a little heavy, but I quickly realized that propelling yourself forward required

the typical undulating move you see dolphins use – the dolphin dive. With Tara’s help, I found it relatively easy to master this move and you can really speed forward, powering through the water, it was a fantastic feeling! I just wished I had the ability to hold my breath a little longer or even better, I wished I could breathe underwater like a real creature from the deep! Tara showed us a couple of other movements; breaststroke and back stroke, and then moved onto some mermaid-esque tricks for us to play with. The forward and backwards rolls – simple somersaults in the water – I found pretty tricky, but then I recall being rather poor at those in swimming class years ago. Sadly a tail didn’t help me improve my technique! Mermaid handstands were next on the list, weirdly addictive as I felt like I’d nailed it but holding it for quite a while still sent my tail toppling down. On my second attempt, I was upright for a couple of seconds and even managed a little fin wiggle. Very satisfying! Armed with our newly-learnt skills, we were given time to practice and play, just like real, happy-go-lucky mermaids, and spent what only seemed like five minutes (but what was more like half an hour) splashing happily in the warm water, imagining what it would really be like swimming down into the depths towards the Kingdom of the Merpeople. It is such a fun activity and I could have carried on for hours, attempting to perfect my tricks and technique, but sadly the lesson drew to a close and we headed back to shore to de-fin. It felt really strange and a bit sad

taking the tail off, I was surprised as to what an authentic feeling you get from wearing it; by then I actually felt like a mermaid, it was incredible! And you feel a bizarre sense of freedom being able to walk and move your legs individually after an hour or so of them being locked together. Back at the Academy, Tara rewarded us each with a little certificate to mark our adventure and to commemorate our mermaiding achievements – a nice touch. Mermaiding with the PMSA is the perfect activity for anyone at any time. You can have a laugh with your girlfriends, attempt to coax your man into a monofin, or do as I did and just go on your own for something to do one afternoon. Either way, it’s a great activity for people who love life and love trying new things, and it’s certainly something to tell everyone at home about! I know I’ll be going back for more, whether it’s by myself, with a group of friends or with the merman of my dreams! Rates and services vary depending on the location.

A couple’s romantic mornings on the island are best communed with a breakfast by the beach. Order from the hotel menu a continental treat or indulge in the buffet with classic Filipino longganisa, tapa and garlic rice. In the middle of the day, lunch in Stations 2 or 3 can be an exploration. Eat in a restaurant along the beach, or if you are feeling adventurous go to the D’Talipapa (Wet Market) and partake in what the locals call “Paluto” (cooking service). Choose from a wide array of fresh seafood and have it cooked by a nearby carinderia (local restaurant) in your preferred way. Likewise, don’t forget that we are in this world to experience joy as well as sorrows. In times of trials,

we grumble, “Lord, why are you giving this to me?” To blame and question God is a common mistake, as well as looking for street car named ‘Desire’. During our trials and tribulations, we are terrified and tend to run away, but that is not the way out! We are already in this boat and whether we like it or not, we are forced to carry the load. Terminus Desire, as I said before: “Why not final spurt or ultimate goal?” We must keep in mind that we have our own goals, and we can reach our dreams. We can be wealthy and famous and we can have all the glory and honor. Everybody can achieve his or her aspirations. And while we are searching for material satisfaction, we must also stock up on heavenly ‘wealth’. After all when we meet our Maker, we can’t bring our material wealth.Maybe that doesn’t come up to our grand expectations but what we are left with is just the simple street car named Desire. The Pope and the Storm Paul Muncada

F

or weeks we had been praying for beautiful weather for the papal visit. Hence, we were understandably dismayed when a storm loomed in on the horizon, just in time to greet the Pope. No one was spared from the torrents of rain unrelenting winds, not even the Pope. We prayed in the rain, we danced in the rain, we were together through it all. Reflecting in retrospect, I’m beginning to believe that the typhoon was just another part of God’s mysterious plan. A papal visit with clear skies would’ve been ideal. But the Tacloban mass (which left us all drenched and cold to the bone) had an extra special impact, one which it might not have had if the weather was fine. The Pope came to Leyte in order to be with the survivors, and the Lord permitted him to not only see but also to feel what we have all gone through. It was as if the Lord planned it so that the storm was not too strong so as to prevent the papal visit, but strong enough for the Pope to truly understand the plight of the survivors. On my part, the typhoon showed us that our faith is stronger than the storm. Why be hampered by the winds? Why be held back by the rain? There were so many things that could’ve made us decide not to be there: inconvenience of the venue, lack of sleep and of food, and of course the horrible weather. But we were there and we realized that it is possible to overcome difficulties when one has a solid belief system. We did it because we knew that the Lord, and that his Vicar being with us is a blessingwas with us. Always remembering that Jesus is Lord, and that He never lets us down, the storms of life will serve to show to us the face of God and the reality of His presence in our life.

WHAT TANTRA IS…AND ISN’T Born in India over 6,000 years ago, the practice of Tantra has to do with much more than sex. In the sacred Indian texts, the purpose of Tantra (in its overtly sexual and non-sexual forms) is for spiritual awakening, enlightenment, moksha or freedom. That might be outside the experience or language of many people, so a more secular approach might be to help discover and nourish all parts of you and using sexual energy as a door toward that.

WHERE TO START EYE-GAZING: Stand facing each other and gaze wordlessly into each other’s eyes. It sounds simple and will take no more than 5 minutes a day, but the results can be transformative. This practice creates a sense of balance and solidarity and fortifies the feeling of being in a partnership. Once the habit has been established, eye-gazing can be employed as a way of creating harmony when there’s a feeling of disruption and before having any discussion that might trigger negative emotions.

The Lost Art of Ligawan

Although a part of the Philippine culture since time immemorial, it was arguably during the colonial period that ligawan was in full swing. It was during this time that native beliefs merged with Spanish-influenced values, leading to a rich and meaningful courtship ritual often spanning several months. There were plenty of different deeds involved in a traditional ligawan but for now, let’s focus on the three main components: Music Musically inclined Ever the musically inclined (just look at all the karaoke joints around the country), early Pinoys would charm their significant others through kundiman (love songs). These

soulful ballads often spoke of pure love and dedication. The kundimans were a socially-accepted way to let your intended know of your feelings. The more poetic the song, the more cultured and refined the suitor seemed. The kundimans were commonly presented via harana (serenade). Friends of the young suitor would usually accompany him to his intended’s home and play a musical instrument as he sang to her window. If she opened her window panes to watch him sing that meant she, too, was interested in him. On the other hand, if her windows remained shut that signified her indifference. Family A family-oriented society meant that the suitor wasn’t just wooing his special lady; he was also trying to win over her relatives by showing respect and generosity to them. Before a potential suitor can even begin to court the lady, he needed to formally ask permission from her parents and/or guardians. Dates (if one can call them that) involved not just the couple but also several chaperones to make sure nothing out-ofline was said or done. The lady’s family home served as the popular venue for these meetings, and since the suitor was also trying to charm the family, he never came empty-handed. Bringing food (sweetbreads and sweetmeats were a favorite) was a safe choice as it could

Decreases Stress Detailing their results in the October 2009 issue of the Journal of Proteome Research, scientists, led by Sunil Kochhar of the Nestle Research Center in Switzerland, said “The daily consumption of dark chocolate resulted in a significant modification of the metabolism of healthy and free living human volunteers with potential longterm consequences on human health within only 2 weeks treatment.” The researchers also wrote in the paper: “This was observable through the reduction of levels of stress-associated hormones and normalization of the systemic stress metabolic signatures.” Makes Blood Flow Better Cocoa was shown to inhibit platelet activation and function in a study (American Journal of Clinical Nutrition, July 2000 vol. 72 no 130-35). Our favorite food has anti-clotting, bloodthinning properties that work in a similar way to aspirin, which can improve blood flow and circulation. Improves Vision This ability to improve blood flow, particularly in the brain has led researchers to theorize at the University of Reading in 2011, that chocolate may also increase. Because of chocolate’s ability to improve blood flow, in particular to the brain, researchers at the University of Reading hypothesized in a small 2011 study that chocolate may also improve retinal blood flow, thereby helping improve vision. May Boost Intelligence Chocolates help with...math? Having increased blood flow to the brain, created by the flavanols contained in chocolates, appears to make people feel more awake and alert. And in the study where people were asked to count backwards in groups of three from a random number between 800-999, those given large amounts of flavonols appeared to do better.

Lifts Mood Apart from all the goodies it provides, chocolate also contains tryptophan, a precursor of serotonin, which can help with depression. Research also shows that eating chocolates can increase the neurotransmitter dopamine associated with pleasure. On top of that, it also has it also phenylethylamine (PEA) known as the “love chemical”. Dr. Patricia Fitzgerald, Huffington Post Healthy Living’s wellness editor points out that enjoying food is part of enjoying life.

But don’t go nuts with chocolates just yet. Chocolates didn’t help when participants were asked to count backwards by sevens, because apparently it’s a more complex task using a different part of the brain. There’s no denying that indulging your sweet tooth every once in a while feels great. But moderation is key. And knowing the various health benefits makes it guilt free. Happy Valentines everyone!

or many, the Christmas holidays are a feasting season. Delicious food abounds at parties, reunions and at home. You receive edible gifts. These scrumptious foods are seasonal. We devour them with the excuse that we will not have them until next year. Most contain high calorie ingredients like sugar, fat, butter, flour, etc. Having uncontrollably indulged in them, we gain weight! But you can lose that weight. It is simple. Not necessarily easy -but not hard. Daily you must burn more calories than you eat. You can lose weight by simply eating 300 to 500 calories less daily than what you need to stay at your bodyweight. No need to avoid your favorite food. Just control the serving size to fit into your daily caloric allowance. Do not starve! Eat enough to fuel yourself for your daily life. Choose an exercise you can do regularly 3-5 times a week. Walking is one simple way to burn calories. You can walk almost anywhere. For a good calorie burn, walk 10,000 steps each day. Get a Pedometer (step counter) at a sports shop. You take fewer steps than you think. Walking around a mall for half a day may only be 5,000 steps. Example, a 130lbs woman may need 1,690 calories to stay at that weight. To create a negative balance, she walks and eats 1,200 to 1,400 calories daily. In just 1 month, she would safely lose 8-10 pounds. *an average man may stay in a 1,600 to 1,800 calorie range. No one should eat less than 1,200 calories. Approximate calories of some foods:

Train for first aid, basic life support, lifeguarding and save lives. Learning is a lifelong process so gear up and save lives through swimming, first aid, basic life support and lifeguards training provided by accredited instructors of the Philippine Red Cross in Boracay island. hile most visit Boracay to have fun and party all-night long, some prefer to have a relaxing and peaceful vacation with their family and friends. When you feel the need to have a private and discreet island experience, head on to The Orient Beach. Strategically located in Hagdan, Yapak, just 10 minutes away from the busy crowd of the White Beach, The Orient Beach hotel is the perfect couple, family or barkada getaway. The hotel’s lobby is simple with a minimalist design, which provides a welcoming and relaxing ambiance. The experience was personalized as the hotel staff greeted us with cheerful faces then escorted us to our room wherein a welcome greeting with our names flashed on the television screen. The room was cozy and neatly prepared. Our room even has its own balcony where you can see the beach just a few meters away. Each of Orient Beach’s room is equipped with an air-conditioning unit, flat screen television set with cable connection, safety box, mini-bar with refrigerator, coffee and tea facilities, dining area, telephone line, hot and cold shower with towels and toiletry set, and Wi-Fi connection. For added amenities, they also provide laundry services, and they even have a doctor and/or nurse on call should you need such assistance. Dining is another highlight during our stay in the hotel. Though their restaurant is still under construction, they still served us what they will offer for breakfast. 7Stones of Luxury Beth Jalea

S

unrise streaming through partially drawn curtains kissing my vision, inviting my sleep-induced consciousness to wake up and enjoy such splendour one last time. As if on cue, my peepers opened up and my feet and legs, without much urging, walked me out of the room towards the living room and out to the veranda. Cool Amihan breeze greeted me. It was one December morning, my last day in Boracay. I peered down the hotel’s swimming pool, blue as the depth of the ocean. And just a few distance away, I could see Bulabog Beach, waving its gentle white and green view at me. Ah! My mornings at 7Stones Boracay Suites - serene, quiet and beautiful. What more could a vacationer like me ask for? If I am to count the stones (best points) of the resort, I’d simply look around at the (1) 72 square meter Deluxe Suite that has been my haven during my stay. The (2) super king size bed is such a tempting sight, I long to just lie down and sleep that impending flight back to Manila away. Peeking through the bathroom door is the (3) Jacuzzi! I’ve had my fill of that exciting piece of equipment the night before and what a night cap it was. And, as if the island runs short on entertainment, 7Stones make it a point to equip each of its rooms with flat screen televisions (in the bedroom and living room), DVD players with surround sound systems and hi-speed wi-fi and cable internet. In the living room, my eyes went wistfully to the U-shaped sitting lounge and to the fully equipped kitchen with a stove and refrigerator. I made a mental note to entertain, host a movie night perhaps, in my next visit. 7Stones is just (4) an 8-minute walk from D’Mall in Station 2, that near to the white beach and the main island happenings. During my stay, I must have traversed to and fro the white beach a hundred times but have I enjoyed it. I get to pass by the locals (not just the happy vendors teeming along the white beach), interact with them if I want to and imagine their way of life. And, as a huge bonus, you get to have the (5) idyllic Bulabog Beach all on your own especially at that time of the year (around late November to February), perfect, especially if you happen to be on a romantic getaway.

Why I must frequent the white beach at that time of my stay at 7Stones is a question to me now. The luxurious resort has already much to offer – large rooms and extra large suites with its own kitchen and entertainment system, the gorgeous (6) swimming pool, deep blue as that of the ocean, and at night, you can have your little party at a bar by the pool or order a sumptuous dinner at the (7) resort’s 7th Note Cafe (they have the best steaks in the island!). Just ask their ever-attentive and accommodating hotel and kitchen staff, they could lay down a personalized dinner or party for you. So if luxury, peace and quiet and amazing steaks are what you’re in for, 7Stones is the quintessential hotel, but do prepare for an extended stay. A 7Stones experience is meant to last long (most guests linger a day or two). Dining to the 7th Note Beth Jalea

he hills are alive with the sound of music”, sings Sister Maria in that famous musical, as alive as my tummy and palate were when I dined at 7th Note one fateful night.

7th Note Café is one of the few places on the island that is able to execute a gluten-free menu with a wide selection of pizzas, nachos, noodles, soups, entrees and desserts. For those who like to spice up their life, the Chefs create weekly Thai specialties.

I could say I have a spontaneous palate. I love to eat and try out new restaurants and cafes in Manila and oftentimes, depending on my mood, I would order the bestseller, or the Chef’s recommendation or what’s new. And, much as I love fine dining (who doesn’t?), I veer away from multicourse meals. (If I have my way I’d like to have the desserts served first). That was until I experienced “personalized dining” at 7th Note Cafe, a bar and restaurant at 7 Stones Boracay Suites. Stardust must have been sprinkled on my mojito that night or else I could have said no to a multi-course meal of sorts that Brian, the ever-indulging Dining Supervisor of the Cafe, offered. Besides, the Mojito that I ordered as an aperitif was already teasing my tastebud and Brian promised me a Steak Night even on a Monday (7th Note holds a Steak Night every Saturday). First up was the Spring Roll of meat and vegetables wrapped in a non-wheat lumpia. The term, “non-wheat” got me curious. I found out that the Cafe is serving a selection of gluten free food especially developed for those with wheat allergy or gluten intolerant. The spring roll was light and non-greasy, easy on the palate. Next came the Roast Beef Pizza (P390), a crisp square pizza crust topped with tender and flavourful roasted beef with bell pepper and onions, enough to serve a group of four, I must say. And to add to my anticipation of that steak, I was given a taste of their Bolognese (P240) -- a ragout of minced lean beef, red wine and tomato sauce with my perfectly chosen spaghetti which, for me, was perfectly Italian. The sauce was made out of freshly picked tomatoes, the taste play along well with that of lean beef and the tanginess of the red wine. I could have asked for more but hey, I’ve got to save room for that much-awaited steak.

I was practically clapping my hands with glee when the Tenderloin Steak (starts at P745net on Steak Night, dished up with sidings and a glass of wine or beer) was finally served. It was to be my first time but I did hear their steaks were good, much that they hold a Steak Night. And indeed, the medium-rare steak with mushroom sauce did it for me. The beef was perfectly cooked, still pinkish and juicy in the center and perfectly peppery on the outside. And most importantly, tender and moist, with sidings of mashed potato and greens. I would have been happy with just that dish and a glass of red wine. Lastly, for dessert, the Blueberry Cheesecake. There are health and digestive reasons why desserts are served last apart from tradition. This time though, I appreciate it being served last as I get to enjoy a moment of bliss – a moment of totally relishing how a dining experience should be: spontaneous, enjoyable and full of surprises. That’s how they do it at 7th Note Cafe. And now you know why my tastebuds were alive and singing along with Sister Maria. And, multi-course meal of sorts, regardless, another visit to this foodie getaway in Bulabog beach will be mandatory.

I

love chocolates and I do enjoy the occasional glass of wine. What makes these so attractive to many people? In movies, soap operas and books they have been the standard gifts to make friendships, win someone’s love or favor, and to show respect and admiration. When I was a little child in the 1970’s, chocolate (that is, good chocolate) was difficult to have. It had to be imported or brought into the country by a world-travelling friend or relative. American brands like Hershey’s, Nestle’s and See’s were the favorites. On rare occasions you could get European chocolates like Toblerone and Godiva. We had local brands of candies which produced a fair but not so chocolatey product that fell short of the taste of the foreign ones. The scant supply made good chocolate such a rare treasure, and having it seemed to give you a higher social status. People made sure that other people knew that they had some in their possession. My grandmother used to put a bar in our school lunchboxes so that schoolmates would be witness to our good fortune. Because it was not easily available, people coveted it more. Sometimes, chocolates could “disappear” from your lunch container.

The same mystique holds for wine. We enjoy the legal right to drink alcoholic beverages when we reach young adulthood. Our status seems higher now that we can partake of what was once forbidden. The media portrays wine as a sophisticated person’s drink and many

gladly partake of it to fit into the mold. Beyond the social image, there are reported health benefits from consuming wine and chocolates. For many years, researchers have been studying the “French Paradox” which suggests that the regular consumption of red wine has allowed the French people to enjoy a diet of fatty and creamy foods and yet have some of the lowest reported cases of heart disease and hypertension. Studies have shown that it is antioxidants called polyphenols in grape juice and red wine (white wine has less polyphenols) that offer numerous health benefits. In moderation, drinking red wine has been linked to lower bad

cholesterol levels, reduced arterial damage, lesser chances of heart attack and stroke by reducing formation of arterial blood clots, and lower pressure. Researchers say to get these health benefits, drink in moderation. Drinking too much may lead to symptoms of heart failure in some people. People with weak hearts and pregnant women should not drink alcohol. As with wine, chocolates contain polyphenols, catechins and flavonoids which have been shown to be good for the body. The suggested benefits included better use of insulin, reduced blood pressure, better formation of blood platelets and improved vascular function. Eating Dark chocolate in small but regular amounts has been associated with a lower risk of a heart attack. So we can tell people we drink a bit of red wine and devour those chocolates because we are watching our health. But many afficionados will honestly admit it is because they just taste so darn good!

n Valentine’s Day we buy the best bouquet of flowers and chocolates available, we think of the most unusual ways of surprising our loved ones and back in the day, we even compose the best possible love letter.

We have also seen the most unusual things done by lovers on this day. Elaborate marriage proposals, stage a huge couple kissing event, attend the best possible concerts and yet, the very thing that all Filipinos do on this day whether in a restaurant, in a beach resort or at home is to have a dinner date. The challenge on every Valentine’s Day is to find a good restaurant where you can impress your loved one, not only of its looks but also most importantly, for its food. Along with this challenge is the hassle of traffic, full-packed venues, and more expensive menu than the usual. This brings us to the idea of “Why not do it at home?” The recipes I would like to share are similar to the ones I teach my students in our cooking RAW classes at PACE. I hope they bring out the romantic chef in all of us! These recipes are easy to prepare, with most ingredients very accessible nowadays. 1. Heat olive oil in a pan, sauté garlic and onions. Deglaze with white wine, simmer until all see. 2. Add-in mussels and butter, season. 3. Add-in cream and water, simmer. 4. When mussels are cooked, sprinkle with parsley. 5. Serve hot with crusty bread.

150g Pork Tenderloin, Trimmed 15ml Olive oil 15g Butter 10g Shallots, minced 5g Garlic, minced 30g Mushrooms, sliced 30ml Brandy 5g Dijon Mustard 30ml Heavy Cream 30ml Brown Stock 5ml Worcestershire Sauce 1g Spring Onions 15g Butter, diced 1g Parsley, minced Salt & Pepper to taste Dash of Tabasco

1. Season Pork. 2. Heat Oil on high. Sear pork on all sides. Brown. Remove meat and and set aside. 3. Saute vegetables in the same pan. 4. Add brandy and flambé. Stir in mustard and cream. 5. Add stock, remaining liquid ingredients and pork back. Sprinkle with spring onions. Bring to a quick boil. 6. Butter mount sauce. Transfer to a place and top with parsley.

1. In a bowl, Toss tomato with rosemary, oil and season. Transfer in heat proof pan. Roast for 1 hr at 180C or until lightly caramelized. 2. In a sauce pan, simmer stock with saffron, parsley, garlic and butter in pasta. 3. Transfer pasta in a bowl. Top with cheese.
