Eggs in a Basket (aka One-Eyed Willies) What You Need: ● ● ● ●

Sliced Bread Eggs Butter or cooking spray A griddle or skillet to cook in

Instructions: 1. 2. 3.

Heat your griddle or skillet to medium/medium-high Spray with cooking spray or grease with butter to prevent sticking Cut out one eye shaped hole in your bread (you can use a round cookie cutter or simply use your fingers to poke a hole in the bread) Place the slice of bread onto the greased cooking surface Crack an egg into the hole Cook until the egg white is stuck to the bread Flip and cook the other side Cook until the white part is no longer slimy but the yellow is still runny Enjoy!


Peanut Butter Banana Green Smoothie What You Need: ● ● ● ● ● ●

Handful of mixed greens 1 banana ¼ cup mixed berries 1 big scoop of peanut butter almond milk (or milk of choice) Blender

Instructions: 1. 2. 3.

Stuff a big handful of mixed greens into the blender Add peeled banana, mixed berries, and peanut butter to the blender Pour enough almond milk to almost cover the greens (for a thicker smoothie add less milk. Remember you can always add more milk later.) Blend until liquid Pour into a tall cup Enjoy with a straw!


October Mexican Food ● Strawberry Empanadas ● Charro Beans (Instant Pot) ● Homemade Corn Tortillas


Strawberry Empanadas What You Need: ● ● ● ● ● ●

½ cup of butter (softened) 3 oz of cream cheese 1 cup all-purpose flour 1 cup fruit preserves (or jelly/jam) ⅓ cup sugar 1 tsp cinnamon

Instructions: 1. 2. 3. 4. 5. 6. 7. 8. 9.

Cream butter and cream cheese together until smoothly blended. Beat in the flour. Shape dough into a smooth ball, wrap in foil or cling wrap, and refrigerate overnight (or at least 30 min) Preheat oven to 375°F Roll out dough. Cut with 3 or 4 inch round cookie cutter. Place small spoonful of jam in center of each round Fold round over and press edges together with fork Bake on ungreased cookie sheet 15 to 20 minutes Immediately roll in sugar mixed with cinnamon. Charro Beans--Instant Pot Recipe What You Need: ● ● ● ●

1 pkg of bacon, chopped 1 pound dried pinto beans 5 cups water Salt to taste

Instructions: 1. 2. 3. 4. 5. 6.

Spread the beans out on a counter and discard any rocks In the Instant Pot using the sauté setting, cook the chopped bacon until crispy. Add beans and water to the Instant Pot and cook for 30 minutes using beans/chili or normal setting. When the time is up, allow the pressure cooker to do a complete natural release before removing the lid. Taste and add salt as needed. Enjoy! Homemade Corn Tortillas

What You Need: ● ● ● ●

Maseca Flour Water Tortilla Press Plastic to cover tortilla press

Instructions: 1. 2. 3. 4. 5. 6.

Follow directions on Maseca package to form dough Roll dough into small balls Place ball in the center of the tortilla press between two pieces of plastic. Close and press down until flat. Cook tortilla on a heated griddle. Cook fully on one side before flipping. Store tortillas between a dish towel to keep warm until ready to eat Enjoy with food or butter! November Potato Recipes ● Oven Roasted Rosemary Potatoes ● Mini Twice Baked Potatoes ● Sweet Potato Casserole


Oven Roasted Rosemary Potatoes What You Need: ● ● ● ● ●

1 pound baby potatoes (yellow) - washed and dried 1 tbsp olive oil (enough to coat potatoes) Freshly chopped garlic (to taste) 1 tbsp freshly chopped rosemary Salt (to taste)

Preheat to 400°F Cut potatoes into bite-sized pieces In a bowl, combine potatoes, olive oil, garlic, rosemary, and salt. Mix with hands. Transfer potatoes to a baking sheet and arrange in a single layer with the cut sides facing the pan. Roast potatoes, flipping occasionally, until soft on the inside and crispy on the outside (about 30 to 45 minutes) Enjoy! Mini Twice Baked Potatoes What You Need: ● ● ● ● ● ● ● ●

16 baby potatoes washed (about 1 1/2 pounds) 2 tablespoons olive oil 1 tsp of salt ½ tsp of pepper ½ cup shredded cheddar cheese ¼ cup sour cream 1 tablespoon butter melted 2 strips bacon fried and crumbled

Instructions: 1. 2. 3. 4. 5.

Preheat the oven to 450°F Poke each potato a few times with a fork. Microwave potatoes for 4 minutes. Flip the potatoes over and microwave for 4 more minutes. Let cool. Cut potatoes in half and scoop out the middle into a bowl. Arrange the potato halves cut side down (skin side up) on a baking sheet. Brush the tops with olive oil and sprinkle with salt.

Bake for 10 minutes or until the skins are crispy. Remove from the oven and set oven to broil. While the potato skins are baking, add cheese, sour cream, butter, salt, and pepper to the potato filling in the bowl. 9. Scoop the filling into the crispy potato skins. Put filled potato skins back into the oven and broil until cheese is melted and bubbly. 10. Watch oven carefully to avoid burning while using the broil setting. 11. Remove from oven and top with bacon bits. 12. Enjoy!

Sweet Potato Casserole What You Need: ● ● ● ● ● ● ●

3 sweet potatoes olive oil 3 tbsp melted butter 1 tsp. salt 1/3 cup orange juice 2 tbsp brown sugar 1 1/2 cup mini marshmallows

Instructions: 1. 2. 3. 4. 5.

Cut the potatoes into quarters and coat with oil. Roast potatoes on baking sheet at 400°F until they can be easily mashed with a fork (about 35-40 minutes) Mash the potatoes and mix with butter, salt, orange juice, and brown sugar. Top with marshmallows and broil in toaster oven until they're lightly browned. Enjoy! Christmas Oreo Balls What You Need: ● ● ● ●

1 package Oreos 8 oz. cream cheese, softened 12 oz. white melting chocolate Sprinkles (for topping)

Place the Oreos in a food processor and blend until fine crumbs are formed. Mix in the cream cheese until a sticky dough has formed. Roll dough into bite-sized balls. Place into freezer-safe container. Freeze the balls for at least 30 minutes. Place the white melting chocolate in a small microwave safe bowl and heat for 30 seconds at a time, stirring in between, until melted. Mix in food coloring. Cover a baking sheet with wax paper. Remove Oreo balls from the freezer. Drop them into the melted chocolate and roll them around carefully with a fork. Top with sprinkles immediately after dipping in the chocolate. Santa Hat Brownies What You Need: ● ● ●

Brownie Mix + ingredients required Vanilla Frosting Strawberries (with the leafy part removed)

Follow directions on the brownie box to bake brownies. Allow brownies to cool. Cut brownies into squares. Scoop frosting into ziplock bag and cut the corner of the bag to use as a piping bag. Use ziplock bag to pipe a small circle of frosting onto the top of a brownie. Place strawberry on top. Pipe a small dot of frosting on the top of the strawberry. Enjoy!

Jammy Dodgers (aka Jam Filled Butter Cookies) What You Need: ● ● ● ● ●

3/4 cup butter, softened 1/2 cup white sugar 2 egg yolks 1 3/4 cups all-purpose flour 1/2 cup fruit preserves (or jelly/jam)

Instructions: 1. 2. 3. 4. 5. 6. 7. 8.

Preheat the oven to 375°F In a medium bowl, mix the butter, white sugar and egg yolks. Mix in flour a little bit at a time until dough forms. Roll dough into small balls. Place balls 2 inches apart onto cookie sheet. Use your thumb to press down the center of each cookie. Fill the hole with preserves. Bake for 8 to 10 minutes in the preheated oven, until golden brown on the bottom. Remove from cookie sheets to cool. Cutout Sugar Cookies What You Need: ● ● ● ● ● ● ● ●

3 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup Crisco® All-Vegetable Shortening (do NOT substitute butter or other shortening) 1 cup sugar 1 large egg 2 tablespoons milk 2 teaspoons vanilla extract

Heat oven to 350°F. Mix shortening and sugar in large bowl with mixer on high speed until light and fluffy, about 5 minutes. In a separate bowl, mix flour, baking powder and salt. Add egg, milk and vanilla to shortening and sugar mixture. Slowly add in flour mixture. Lightly coat a clean counter with flour. Roll out dough evenly on floured surface. Cut with cookie cutters. Flip cookie onto a plate of sprinkles. Bake 8 to 10 minutes or until bottom edges are very light brown. Cool 2 minutes on baking sheet. Enjoy!

Christmas Rice Crispy Treats What You Need: ● ● ● ● ● ●

3 tbsp Butter 6 cups Rice Krispies Cereal 10 oz Marshmallows Green Food Coloring Wilton Holly and Berry Decorations. Red Fruit by the foot

Instructions: 1. 2. 3. 4. 5. 6. 7. 8.

In a large pot, melt butter over low heat. Add the marshmallows and stir until completely melted. Stir in enough food coloring to make the marshmallows very green. Remove from heat. Add Rice Krispies cereal and stir until cereal is well coated. Form wreath shapes using hands Decorate with Fruit by the Foot Enjoy!
