I
can recall only a few times in my life when I have been rendered speechless, though with a head filled with racing thoughts. Today, an otherwise beautiful almost-spring day in Miami, is counted as one of those moments. As I see the numbers of coronavirus cases rising in our nation and in our very own city, the safety of our residents comes to mind and I wonder for the very first time in a long time what the future will bring. Then I remember Hurricane Andrew in 1992 and Wilma years later. The economic crash of 2008, and of course, on a national level, September 11, 2001. What we are facing is without a doubt shocking and incomparable to anything we’ve had to endure in the past, but I’m confident that the South Florida community will band together to move forward — because that’s what it has done unfailingly in trying times. One way to demonstrate solidarity is through the #SupportLocal movement, something we highlight throughout the Spring 2020 At Home issue. While this was originally our annual travel edition (a considerable amount of pages had already been finalized before the coronavirus scare erupted in Miami), the dedicated INDULGE team and I revised some of the content to reflect what everyday life so quickly became by the third week of March: a total restart that found us reacquainting ourselves with the simple comforts of staying home. Always three steps ahead of what’s hot in fashion and decor, our talented Style Editor, Claudia Miyar, gives us the 411 on the latest trends for our living space in stress-soothing pastel and neutral shades (p. 20). In our beauty section (p. 26), INDULGE contributor Erin Michelle Newberg offers up advice on the must-have tools and products to try at home on what a lot Jenny Starr Perez of us consider our “mane” attraction physically: our hair. Some of these items can be found at local retailers that have recently Editor in Chief closed temporarily, but have websites where you can still purchase these beauty essentials. Our friends in the restaurant industry have been greatly affected by the necessary measures taken to keep us safe. Presently, a number of the city’s eateries have shut down regular dine-in hours and are offering meal kits and curbside pickup service instead. In an effort to lend much-needed encouragement, INDULGE is highlighting the recipes of some of our favorite menu items in a new editorial series called “The Daily Dish” on our website. If you don't own an apron, but still want to enjoy a homestyle meal in one hand while you master the TV remote in the other, browse Gourmet To Go in The Life: Dish (p. 61). We've gathered a handful of our favorite gourmet markets, along with their popular specialties — and taking out is a delicious way to support our local businesses. From stone crabs and vegan-friendly empanadas to pot pies and orange-ginger duck breast, a night in never tasted so good. The topic of “moving Miami forward” has never been more prevalent than it is now. For the industry leaders featured in our cover story (p. 86), it’s an ever-present box to check on their to-do list. Miami Mayor Francis Suarez (who at press time has released a video journal of his first day of self-isolation due to testing positive for COVID-19), Emilio Estefan, Melissa Medina, Carla Hill and Patrick Goddard are all on the frontlines of positive change, be it through causes that help fight poverty and homelessness in the community, events that bring brilliant minds in technology to Miami, or programs that raise the bar on inclusivity in our schools. INDULGE Features contributor Shayne Benowitz chats with each of our subjects about the projects and people that are closest to their hearts, as well as where they like to jet off to (when the occasion arises). Fun fact: Mayor Suarez and I graduated together as part of Immaculata-LaSalle High School’s Class of 1996. I’d like to send special wishes to every member of South Florida’s senior classes, whose exciting year has turned out differently due to mandated school closures. The future is bright, I promise.

nprecedented times, these are. Paris, March 15: LVMH, the world's leading luxury company and INDULGE advertising partner is converting its perfume and cosmetics factories to manufacture free hand sanitizer for France in response to the novel coronavirus pandemic. Miami, March 16: Mayor Francis Suarez, who tested positive for COVID-19 barely a week after being photographed for our cover, keeps a daily video journal of his experience in quarantine. Thankfully, he is experiencing “mild to almost no symptoms right now” and he is strongly encouraging social distancing. Washington DC, March 16, 17: The White House advises the public to avoid groups of more than 10 to limit the spread of the coronavirus. And the virus is now in all 50 U.S. states. These are just a handful of bewildering headlines weighing heavily on my mind as I sit down to write this letter. So where to begin? Every issue of INDULGE comes together with meticulous planning. Our readers tell us how they appreciate the diversity of our content: the people that make this paradise their home; the unique restaurant dishes representing a world of delicious flavors; the remarkable nightlife, arts and retail experiences. We bring you what’s new at iconic hotels like the Fontainebleau, Lesley DeCanio and hidden gems like Life House in Little Havana. We transport you to faraway destinations like the Galapagos Islands, a bucket-list experience beautifully captured by Angela Caraway-Carlton in our Escape feature (p 77). And we recommend fabulous staycations, as Angela does with Ponte Vedra in northeast Florida — a place so exquisite, I now wish she had invited me to ride shotgun in her aging convertible. Next time, and soon. Of course, “soon” can’t come soon enough, as our carefully considered editorial plans have been upended by this crisis. My hope is that by the time this Home issue publishes, these destinations will hold the same allure as when Angela shared the journal of her travel experiences — and possibly even more, as a cure for cabin fever. I feel much the same way about the many local stories lovingly penned by our staff. A handful of these are top of mind for me now, as they fill my personal need for staying close to home and supporting our community. Two people who appreciate both staying home and supporting their community are Jose and Heide Dans, profiled by lifestyle editor Daisy Olivera in The Local: Creative Manor (p. 28). For those of you who know the Dans family from their passion for organizing fundraising galas or their personal philanthropic efforts, take a peek inside their stately home, designed specifically for entertaining. Inspired by their travels in Europe and the Caribbean, this magnificent retreat is a showcase for their impressive Cuban art collection, and a place they enjoy to the fullest with their family, friends and fortunate guests. Whether at home with local gyms closed, or when traveling, sometimes we need to get creative with our workouts. In The Local: Fitness (p. 30), Ginger Harris brings us several do-anywhere exercise moves customized to your preferred routine. Since we live in such tropical splendor, you may be inspired to practice your yoga asanas in the privacy of your own backyard. And if the “couch potato” has been your go-to move, I recommend the Superman — just don't attempt it on the couch! Feeling refreshed from your outdoor stretch? Consider taking on a new recipe. The Argentinian Locro, by rising star chef Pablo Lamon from Nativo Kitchen + Bar and featured in The Life: Recipe (p. 64), is the perfect comfort food for long days at home. The image of the dish captured by photographer extraordinaire Felipe Cuevas is so appetizingly rendered, you’ll reach for a spoon and a glass of Caymus to wash it down. They say home is where the heart is, and right now during these challenging weeks, our home-bound hearts go out to everyone touched by the effects of this pandemic, like our ever-optimistic Mayor Suarez. It’s times like these when we draw strength from knowing we’re all in this together. So from the entire INDULGE team, be safe, be well, be helpful and be grateful. he moment they saw the expansive, Plantation-style home, nestled within lush, mature trees on their house-hunting journey five years ago, Jose and Heide Dans were smitten. “It reminded us of a favorite house we’ve visited at Casa de Campo in the Dominican Republic. We wanted a resort feel with large indoor and outdoor spaces for entertaining,” explains Jose. The 8,000-square-foot house, built in 2005, had great bones but desperately needed a modern revamp. The dazzling upgrade began by replacing ubiquitous white marble floors with wide planks of ebonized, Brazilian walnut. “We loved the contrast of dark floors with white we’d seen in St. Tropez,” recalls Heide. Adding substantial crown moldings and tall baseboards was more in keeping with the home’s soaring ceilings and stately grandeur. “It was a beautiful, blank canvas,” she says about the elegant backdrop for their art collection. “We are passionate about our Cuban roots and collect Cuban art,” says Jose about the works that surround them by Cuban master Cundo Bermúdez, Mijares, Tomás Sánchez, Milian, Kcho, Portocarrero and more. The family room centerpiece is a painting commissioned from artist Humberto Calzada. “We got to select our favorite things to depict the ocean and stained glass from Cuba,” says Heide.

A CONTEMPORARY TWIST But after the remodeling, the couple, known for their definitive taste in fashion and lavish entertaining, had not found inspiration for the rest of the interior. It was a walk through the Miami Design District that would unexpectedly provide the springboard for the décor. “I saw it in the window at The Rug Company. A showstopper in brilliant, cobalt blue and white,” explains Jose. The hand-knotted Tibetan wool and silk masterpiece is a riff on ancient Chinese porcelain and was designed, not surprisingly, by Rodarte, the high-end fashion label. Like the house, the rug is a contemporary twist on the traditional. Making bold, creative decisions is not foreign to Jose. He is the exuberant marketing innovator behind Wow Factor, the company he founded with Heide in 2005 as a premiere marketing and event production company, celebrating its 15th anniversary in May. In 2016 it evolved into WOW MKTG, the fastest-growing, full-service marketing agency in the state of Florida, with clients including the Adrienne Arsht Performing Arts Center, UHealth, Maserati and the Marlins. The celebrated couple is also well-known in philanthropic circles. They chair various fundraising galas each year and have inspired their family and company to give back to the community, together donating more than $3 million to major

nonprofits in the markets that WOW MKTG serves. Prior to co-founding their company, Heide served as Associate Director for Alumni Events at her alma mater, Florida International University, where she produced fundraising events for capital campaigns for then-president Modesto Maidique.

ENTERTAINING DETAILS The home, where an outdoor party for 200 is executed as breezily as a cozy dinner for eight, had to have a cleverly planned setting. “Every inch of the exterior is set up for entertaining,” confides Jose. “After so many years of event production it changed how we entertain at home. Our goal is to create a unique experience that’s completely memorable.” “We knew we loved bright, bold colors, but needed courage to go down that path on a big scale,” explains Heide laughing. So they tasked interior designer Vivian Mata with the project. “Vivian knows how to achieve an elegant, tropical feel because she designs a lot of homes in Cat Cay in the Bahamas,” adds Jose. Mata was a knowledgeable sounding board for ideas. With aplomb, they chose imported fabrics, upholstery and wall coverings, such as the richly textured grass cloth wallpaper throughout. Travel with their three children, whom they include in many decisions, plays a significant role, whether buying art or adding to the home’s ambience. A stay at the Four Seasons Hotel George V in Paris inspired them to have a custom fragrance created for their home, while a trip to Capri nailed down the décor for the outdoor dining area, replete with lemon trees and colorful mosaic tiles. “When I’m home relaxing, away from the hustle and bustle of our hectic life, I feel like I’m at my own private resort with Old World charm and modern amenities,” Heide confesses. “I disconnect and enjoy what to me real life is all about, our family.” WORDS BY DAISY OLIVERA / PHOTOGRAPHY BY NICK GARCIA

Lower down to low plank then inhale to upward facing dog leading with chest. Exhale to downward facing dog. Separate fingers wide on mat, lifting the tailbone high toward the ceiling. The gaze is at the belly. Take five deep breaths, then step back to front on mat and repeat exercise. Repeat 5 to 10 rounds.

MEETING OF THE MINDS That would be the legend himself, Pierre-Yves Rochon. “He had an office five minutes away,” Defortuna recalls. “We took a taxi over — we were in Paris for two days. His assistant said Pierre-Yves was booked for next three weeks. I told her we were leaving tomorrow, but here’s my business card, and asked if he could please look at our projects.” An hour later, the Defortunas were granted a 10-minute appointment. The couple rushed back to Rochon’s office. The meeting lasted two and a half hours, and the Defortunas ended up hiring the esteemed designer to work on their Key Biscayne home. That’s how the Defortunas roll. So when it became time to develop Jade Signature, Defortuna asked himself, “Why can’t we give our clients the same look and feel as our home?” Rochon, as everyone now knows, became the designer of the luxury residences in Sunny Isles.

Lightning also struck with Herzog & de Meuron. After a 10-hour flight to Zurich, the Defortunas were driving to Basel, in the snow. Ana took Edgardo’s hand. “What are we doing here?” she asked as the windshield filled up with white. “We have wonderful architects in New York and Miami.” But they took the meeting, the inconveniences soon forgotten. “They’d come up with everything on our wish list,” Defortuna says. “Every detail had been studied. We left saying, ‘This is it. This is who we want to work with.’” That’s how the Pritzker Prize-winning firm came on board as Jade Signature’s architects. It’s not about celebrity for the Buenos Aries-born real estate titan; it’s about chemistry. SEASONED STARCHITECTS And now, with Fortune International’s latest addition, The Ritz-Carlton Residences, Sunny Isles Beach, more marquee names have put their stamp on a Fortune International condominium: Arquitectonica is the architect, while Michele Bonan, the Florentine master known to Miamians for his work on Cipriani Downtown, created the interiors. Defortuna says that to see what Bonan did with the club room on the 33rd floor — perfect for an Aperol Spritz — is to see “the reality surpassing the dream.” A LIFE REALIZED As he tools around in his Rolls-Royce, playing chauffeur to clients or to Ana Cristina and their three boys, life is indeed a dream — one that he conjured. And as the Defortunas are enjoying branzino and burgers at Jade Signature’s grill, residents tend to drift up to say they can’t believe he’s given them their idyllic Miami lifestyle. icture the scene: Edgardo Defortuna and his wife, Ana Cristina, his closest collaborator, were in Paris at the Four Seasons Hotel George V. This is the hotel that turned Paris on its ear. Its 1920s heyday was long past, so when it was announced, in the late-1990s, that the property would be resurrected to rival the City of Light’s famed “palace hotels,” Paris sniffed. Then the George V reopened; Paris, which enjoys novelty even more than snobbery, cheered. For their part, the Defortunas were suitably impressed. Many well-to-do couples would have left it at that. MUSICAL EXPECTATIONS Currently working on a new project — a musical — and a return to Lincoln Road’s Yuca restaurant and lounge, where she will perform later this year, Albita is also preparing her annual Mother’s Day concert at the Dade County Auditorium, where fans can witness the star’s show-stopping onstage collaborations with other top female names in Latin music. “Lucrecia, Lena Burke and I will join for a musical tribute to celebrate our experience as female artists, mothers and daughters.” The singer is still proving why her success was not a matter of star alignment or a simple stroke of good fortune. “There are no tricks here. rgentinian transplants Diego Colmenero and Charlie Porchetto began their real estate business back home two decades ago, and when the developers transformed one of their properties into a boutique hotel, they caught the hospitality bug. That’s how their stylish Urbanica brand was born. But with political and economic troubles in Buenos Aires, the pair went looking for opportunities in Miami. The search did not bear fruit right away.
EMERGING LOCALE And then they came upon the Meridian Hotel, an abandoned property on South Beach at Fifth and Meridian. Fifth Street was not a prepossessing destination, to say the least: It feeds into the MacArthur Causeway and until recently, was known mostly for its car rental storefronts. The dividing line between a modest part of residential South Beach and upscale SoFi, the busy thoroughfare lacked a neighborhood feel. But things have been changing in the last few years. Buon Pane Italiano Bakery opened a few years ago and became a local treasure; then the organic juice joint Under the Mango Tree relocated to Fifth. Foot traffic increased. “Immediately, we saw the potential,” Colmenero says. The partners snapped up the adjacent building as well, connecting the two with bridges. When the 71-room Meridian reopened in 2017 under the Urbanica flag, it represented a design-forward, entrylevel luxury category perfect for its location, featuring rich materials and a tropical-urban aesthetic. When its first guests were handed a mojito as they approached the lobby desk, which was constructed from vintage luggage, they knew they would be in for an experience that would be a cut above the usual on South Beach. But the goal was not to come across as desperately trendy. “You can find very luxurious hotels in Miami, and very edgy hotels, with a motorcycle on the wall,” is how Porchetto describes the landscape. “We are right in the middle — design-savvy but approachable.”

EXPANDING EMPIRE Urbanica The Euclid Hotel, boasting Orilla Bar & Grill, followed the Meridian in 2019 with 30 rooms. “We have the same restaurant in one of our hotels in Buenos Aires,” Colmenero says. “It’s a chef-driven modern steakhouse.” Executive chef Fernando Trocca oversees the kitchen and the 2,000-square-foot space, where flat-iron steaks straight off the charcoal grill are set down in a stage outfitted with wood finishes and jungle-themed murals. Porchetto has his mind on the future hotels: one on Collins and 67th Street (one of the last lots on the water) and another on Biscayne and 32nd Street. And the Meridian will soon be able to nod to a second Urbanica on Meridian and Fifth, on the opposite corner, with 50 rooms and a Spanish dining venue. The two partners, who met at St. Andrews University in Buenos Aires, make each other laugh, demonstrating a camaraderie that bubbles above a deep reservoir of respect. “I take care of the financials, and Charlie is more on-the-ground, in terms of construction,” Colmenero says. For his part, Porchetto thinks of himself as aggressive while his partner is “centered,” providing stability. The final judgement comes from Colmenero: “We’re a great team. hose who know, know. Danielle Smith is the lady to have on speed-dial (or WhatsApp) if smooth, flawless skin is your personal holy grail. The sought-after Smith has every intention of making Miami’s residents feel beautiful. At the Sunset Harbour location of her Smith & Co. offices, Smith uses her favorite Allergan products to execute her work, the proof of her commitment to perfection reflective on the faces of those she transforms. “Sometimes going more natural, and other times more enhanced, depending on the needs of the client,” she says. A plumper pout? A more defined jawline? Clients attest to finding that here on the reg. But for Smith, the important thing is that her loyal following never has regrets. LIFE LESSONS FROM THE ICU With dreams of becoming a doctor, Smith moved to South Florida in 2007 to attend the University of Miami. After working under the fast-paced stress of the ICU, she realized that the doctor life for her was less M.D. and more N-O. Not for her. “I decided to shift the trajectory of my career knowing that I wanted to help people,” she says. “When I was accused of being overly compassionate toward my ICU patients, my integrity came into play, and I knew it was my time to depart. Funnily enough, what was perceived as a weakness by my colleagues became the recipe to my success.” She set her sights on the plastic surgery industry, where her natural empathy could be put to good use in helping patients with their confidence, which sometimes means enhancing the outside to feel happier on the inside. “I cold-called a few doctors and was hired by Dr. Leonard Hochstein, where I merged my nursing and ICU expertise to prep all of his patients pre- and post-operation,” recalls Smith. It was during her tenure with Dr. Hochstein that her skills were ultimately honed and with his blessing and guidance, Smith was set up on trainings. The rest is history. “I still reminisce sometimes about the first injection I ever did. It was on my father,” she laughs, “I knew I belonged.”

Marc Angles The contractor brings his impeccable eye for architecture and design to one of the city’s most anticipated projects, Chateau Miami.
M
arc Angles was destined for the architecture and construction business. A native of West Miami, he began his career as a drafstman at his father Manuel Angles’ MA Architects firm before striking out on his own as a developer of high-end spec homes. He soon leveraged his portfolio to win contract clients and shifted his focus to a full-service construction company. With a background in architecture and design, he’s earned a reputation for taking on challenging projects that other contractors might shy away from, including lifting a century-old historic home, originally designed by John Volk, five inches above its foundation for new foundation to be installed, and building a Jeff Smith-designed Mediterranean mansion with duct work running underground to accommodate a vaulted ceiling, both in Palm Beach. On a three-acre estate in Coconut Grove overlooking Biscayne Bay, his team spent eight months prepping and installing an elaborate Bisazza mosaic pool where each of the tiny golden, green and white squares were laid whole without cutting a single tile. “Throughout the years I’ve accumulated guys who are highly specialized and only do work for me,” says Angles of his team of about 30. Their expertise includes everything from the aforementioned tile work to painting, carpentry and wood flooring. “It affords me control of the end project.” For clients, that quality in a contractor is priceless. A NOUVEAU CHATEAU It wasn’t until he was hired to restore Chateau Miami — the forthcoming restaurant by James Beard Award-nominated chef Clay Conley situated inside a historic 1930s-era chateau in Brickell — that the role of project manager took on a whole new dimension. “Marc not only became our builder, but also the glue that brought this project together,” says Mary Chappell, owner of Chateau Miami. Angles was tasked with bringing the historic building up to structural code and modern-day hurricane standards, while also preserving its original historic architecture, which was modeled after a chateau in Douy, France. He also installed their chef after a chance encounter and tip from Evan Benn, Indulge’s former editor-in-chief, at South Beach Wine & Food Festival in 2017. Conley, the celebrated chef of Palm Beach’s Buccan and formerly of Azul at the Mandarin Oriental, Miami, was interested in a Miami comeback. Angles would go on to assemble the project’s entire creative team, including interior designer Ken Fulk, landscape architect Nievera Williams and Smith Architecture Group. Nicki Galper This Miami-based stylist shows off her knack for jewelry design with a collection of pieces that bring the “oh” to faux.
W
hen Nicki Galper was gifted a faux-diamond necklace from her grandmother, it sat hidden away in her jewelry box for years. While the sought-after stylist for luxury fashion brand Intermix has always been a jewelry addict — her signature look consisting of rows of bracelets inching up her arms, stacks of rings and layers of necklaces — in her mind, costume jewelry was reserved for black-tie events. One day, Galper pulled out the necklace, and started pairing it with day-to-night outfits. “People thought it was real, and I kept getting so many compliments,” she says. It became crystal clear what Galper should do next; in 2019, she revisited a previous jewelry line that she had designed, and reinvented it into Nicki Roxx, a faux-diamond line offering the look and feel of the real thing.
FAUX-SHION SHOW The jewelry business is a serious side hustle for Galper, who is one of a few select fashion stylists and brand ambassadors for Intermix. She’s constantly shuttling between the flagship store in swanky Bal Harbour and north to Boca Raton where she pulls, and curates looks for South Florida’s fashionistas and a range of loyal international clients. “I love seeing people walk out the door wearing a hot outfit. I live for what I do,” she says of her day job of 14 years, which always leads to new inspiration for the jewelry line. “I design with my clients in mind, considering what would go with these fabulous pieces they’re wearing.” With an accessible price range of $130-$400, it’s easier to buy more Nicki Roxx pieces for mixing and mingling. “That’s the point. I don’t want to sell one ring. My clients are buying three or four rings, and two necklaces to wear together,” says Galper, adding that she also promotes layering her

pieces with other high-low jewelry lines. And, if you’re a first-time buyer, she has a plan for making the ultimate statement with her jewelry. “Start with the Sasha Floating Stars necklace, then add a Sydney choker, and the Zoe, a single star necklace,” she advises. (DON’T BE) FOOLED BY THE ROXX With a flair for the whimsical and glamorous, Galper creates a colorful palette of edgy-yet-soft and ethereal necklaces, rings and earrings showcasing simulated diamonds of the highest quality — so authentic looking that we dare you to spot the real from the fake — set in sterling silver and plated with 14-karat gold and rose gold. Most impressive: her now burgeoning business started with one ring in 2018. “I had no capital to start this business, and I came up with a ring that I sold at $50 each. People were buying four or five at a time, which gave me the money to manufacture more jewelry,” she says. “One ring made this entire company. That’s the proudest part of my business.” The designer’s current collection, The Floating Collection, includes 25-30 pieces which allow you to drape your neck in chokers and lariat necklaces and pile on vibrant rings that dangle with sparkling stars, butterflies and hearts. “My pieces are game changers for any outfit,” she says of the line that can be found at Jessie Boutique, Veronica Beard and stores nationwide including Shop Marcus from Aspen to Montecito.

T
he message Pablo Lamon’s family instilled in him growing up in Buenos Aires was unquestionably an uncommon one. It was, whenever possible, to be as wild as you want to be. At the parties that broke out anytime family got together, the absolute hardest-partiers were his grandparents. Often, everybody had to hide the wine from them. “They kind of showed me the way to be crazy,” Lamon remembers of his family. “They let me be the way I wanted to be.” Maybe — admittedly now — a bit too much. When Lamon was 22 he had an absolutely awful motorcycle accident. By the numbers: 2 surgeries, 2½ months in bed, 1 year relearning how to walk. Afterward, he decided change was in order and set off on the path that led him to where he is today, at the helm of the new Nativo Kitchen + Bar, with a lot of people (foodies and beyond) watching to see what’s next. He’s a long way from home now, and when we asked Lamon for a favorite recipe, he gave us one that reminded him of his family. It seemed appropriate for our Home & Away issue, a dish that, even while away, always manages to bring him back to his roots. CIRCLING BACK After Lamon’s accident and the long recovery, he took a job on a Celebrity

cruise ship. “Just like everybody said,” he says, “it was super, super hard.” Working the line double shifts without a break no doubt honed his skill. He eventually landed in Miami and found a mentor under chef Jeremy Ford. It was Ford, who won “Top Chef” season 13, who convinced Lamon to apply for the show. Lamon appeared on season 16 before coming back to Miami and into his old job as chef de cuisine at 27 Restaurant & Bar. But with his new acclaim, that wouldn’t last long. When the ownership team approached him about Nativo, now open in the Conrad Miami, Lamon said yes quickly. “Their offer was for me to do what I do. The limitations were close to none.” NATIVE INTUITION Taking over in January, Lamon didn’t want a concept that was pigeon-holed to one type of food, so he looked for inspiration in his adopted city. He considered the mix of cultures we have and how, at any point in the day, food from every corner of the planet are a few blocks away. He also takes inspiration from Argentina. He hasn’t been back in five years, and so he uses food to bring him there. Like the dish on these pages, locro — it’s a recipe his grandmother wrote down for him a few years back, before she died, on an old scrap of paper. “It’s one of the strongest memories I have from Argentina,
ABUELA’S ARGENTINIAN LOCRO INGREDIENTS 2 tablespoons, plus cup paprika 4 links Spanish chorizo colorado cup cumin 2 teaspoons cayenne pepper 3 cups canola oil 2 yellow onions 3 red peppers ½ lb smoked bacon 1 lb stew beef, cut in 1-inch cubes
30 oz canned tomato sauce 17 oz beans, soaked overnight 26½ oz white hominy corn, soaked overnight ¼ head green cabbage, diced 2 medium Idaho potatoes ½ butternut squash 2 medium boniatos (or sweet potato) 2 medium carrots Salt and pepper to taste
1. Bring to a simmer in a saucepan 1/8 cup paprika, one link chorizo colorado diced, cumin, cayenne pepper and canola oil. Let chorizo colorado oil cool 2 hours, strain and refrigerate. 2. In a deep pot, sauté yellow onions, red peppers, 3 links chorizo colorado, bacon and roast beef for five minutes. 3. Add tomato sauce, beans and rest of vegetables and cook five minutes. Season with salt, pepper and 2 tablespoons paprika. 4. Add water until covered and simmer. Cook until beef is tender, about 45 minutes. Add water if necessary to achieve thick stew consistency. 5. Like Lamon’s grandmother, serve locro with tablespoon drizzle of chorizo colorado oil. my grandmother making me locro,” he says. “For me, there is nothing greater than when people cook for you. or some of us, the thought of tequila sends shooting pains straight to our head as foggy images of salty shots and sour lime wedges creep into our memories. It’s a bad rap for a spirit that’s been around for centuries. But The Ritz-Carlton Key Biscayne and Casa Herradura are changing all that by allowing us to go behind the curtain and beyond the gates of the tequila brand’s hacienda in Mexico, where the agave spears rise from the copper-colored soil.
DREAM TEAM As a way to elevate its tequila selections, The Ritz-Carlton Key Biscayne began a tradition eight years ago of annually selecting an exclusive barrel of tequila from Casa Herradura to bottle and serve to its distinguished guests. “The passion and dedication that the Casa Herradura team puts into creating a beautiful, delicious and quality product is truly aligned with The Ritz-Carlton’s core values,”

says Rosa Tamajon, the hotel’s food and beverage director. But choosing a barrel that has the flavor profile to suit a variety of palates is harder than it seems. This year, Huseyin Ozdemir, food and beverage manager for Cantina Beach — one of the Miami hotel’s restaurants — was entrusted with the task. Ozdemir was presented with three barrels while in Mexico. Using the metal venencia, he gracefully poured the honey-hued nectar into our tasting glasses and we settled in at the hacienda. From notes of spearmint, cinnamon and marshmallow to cooked agave, orange peel and pepper, tequila has layers that I’d never experienced. Then again, it’s hard to notice those subtle tones when slurping down a shot. The tequila inside the American white oak double reposado barrel, which Ozdemir ultimately chose for the hotel, is aged for 12 months before being poured into 240 bottles and shipped to the island resort for guests and visitors to enjoy.

ROOTED IN TRADITION Casa Herradura began distilling tequila in 1870 in Mexico’s Jalisco state, tequila’s mecca. The hacienda is located in the town of Amatitán, about an hour from the western state’s capital of Guadalajara. Named for the Spanish word for horseshoe (a storied lucky charm), the family-owned business flourished and persevered for 137 years until 13 years ago when spirits company Brown-Forman purchased it for nearly a billion dollars. This year it celebrates its 150th anniversary; an accomplishment considering it has survived rebellions, wars and political upheavals and is now the only tequila house that still produces at its original hacienda. The drive to Casa Herradura is checkered with symmetrical rows of agave plants — resembling a spiky vineyard landscape — nestled on the foothills of the inactive Volcán de Tequila. As the wrought iron gates peel open it’s hard not to marvel at the historic buildings, cobblestone paths lined with hundred-year-old trees and the colossal cement mill, imposing itself on the horizon. Jimadores, or agave farmers, work in the fields to harvest the agave plants from where tequila is derived.
Plants can only be harvested after the seventh year by carefully stripping the heart, or piña, from the leaves, or pencas, using a sharp paddle-like metal instrument called coa. In this volcanic land, there is no harvest season. The hacienda produces tequila year-round. A jimador can strip a plant in about two minutes, a team of farmers harvests 200 tons of agave every day, and it takes approximately 12 pounds of agave to make one liter of tequila. The piñas are cooked for 26 hours and then cooled inside the ovens for 9 hours before they are removed and crushed to extract the syrupy juice. While some companies have replaced their ovens with stainless steel pressure cookers, Casa Herradura’s dedication to its original recipe ensures that up to 40 tons of piñas are hand loaded into 15 clay ovens that run daily. “The better sugar you have, the better alcohol you can produce,” says Rubén Aceves, the brand’s global ambassador. “It’s like cooking a ribeye (steak) on the grill versus the microwave,” he illustrates with a smile. Other ways the brand elevates its tequila is by its natural source of water from its five spring wells, only using natural yeast during fermentation and double distilling to remove all impurities, which if not taken out do attribute to those killer hangover headaches. Each year, sixty thousand guests enter through the hacienda’s gates, each with a different perception of tequila. Upon our departure, we all leave with a new appreciation for the spirit and this legendary brand. So next time the opportunity rises, think twice about hastily taking that shot of tequila. Never heard of Ponte Vedra? You’ll want to keep this slice of heaven on Florida’s northeast coast a secret.
aking my way from Miami to the ritzy seaside enclave of Ponte Vedra Beach, located about 40 minutes from historic St. Augustine on Florida’s northeast coast, A1A escalates into an eye-popping parade of homes. And by homes, I mean extravagant mansions not often seen in cookie-cutter beachside communities. The top is down on my aging convertible, and the salty ocean breeze is like medicine to my lungs after five hours of interstate driving. Pulling into a red-bricked roundabout, a fountain festooned with seahorses that sweetly spew water into a pool signals my arrival at the Ponte Vedra Inn & Club, a AAA Five-Diamond resort that’s been a landmark vacation spot and private club since 1928. While many have never heard of it, the resort’s laidback luxury and amenity-rich offerings

draw a who’s-who of past presidents, celebs, athletes and families with standing reservations. Swallowing up 300-plus acres, with a half-mile of private beach, it’s a stately place where attendants know your name, but it’s easy to disappear for secluded relaxation.
SEASIDE RECHARGE Boasting a historic inn with beautiful magnolia floors and crackling fireplaces, 10 buildings, and posh sister property The Lodge & Club located two miles away, guests can choose how they want to vacation. Each building has its own décor
ranging from beach house-chic to French country, and most offer the chance to have your toes in the silky sand within a few steps. The resort will even set up beach chairs/ umbrellas in front of your place, so you can conveniently pop in and out of your room. I spent two nights in the contemporary Atlantic House, where my room was decked out in a crisp, beachy palette, yet modern with a marble bathroom fitted with a freestanding oval tub and a high-tech mirror with a TV in it. While staying there put me in easy walking distance to all the sprawling resort’s offerings, it was my night at The Lodge & Club, the 66-room sister property with a more intimate feel, that captured my heart.

After enjoying their complimentary daily afternoon tea, I literally didn’t leave my spacious suite. A gigantic king bed, soaking tub, a parlor with a fireplace and cozy window seat meant for languorously gazing at the ocean, and room service — this place gets me. Guests have access to all the amenities of the Inn & Club, but you’ll want to linger at the adults-only pool or the fire pit on the oceanfront lawn. AT YOUR LEISURE Each morning, still wearing my pajamas, I slid open my door and stepped into the sand to watch the sun gloriously emerge over the ocean. People were already walking the wide stretch of beach or scouring the shoreline for fossilized shark’s teeth. The resort has a clever plan: they don’t want guests to leave the property. That means never-ending activities thanks to two golf courses, 15 tennis courts, four pools, and two fitness centers offering more classes than most gyms; parents can even drop their kids at daycare for three hours as part of the resort fee. A full day should be devoted to the spa, the biggest in northeast Florida, where a towering fountain made of mermaids and seahorses is the centerpiece of a huge relaxation room which feels more social than tranquil (however, there is a dedicated quiet room). I suggest hitting the steam room/sauna before a treatment, like a rubdown with warm Himalayan salt stones, then posting up at the private pool to sip cocktails in the sun. If you want to venture off-property, book a guided kayak eco-tour to explore the wildlife rich Guana Preserve, where you could spot bald eagles, wading birds and possibly a skittish alligator. ON ISLAND TIME For us who live in South Florida, the Caribbean’s proximity lets us vacation in our familiar warm sun, white sand and winsome sea without much effort. In the same amount of time it takes to drive from Miami to Key West, you can fly to one of the islands from where SeaDream departs and be rewarded with new adventures, discoveries and cultures. A World Within Itself
Darwin may have put the Galápagos Islands on the map, but a bucket-list luxury voyage brings the fearless wildlife and drama of the remote islands alive in the modern-day world.
W
ithin minutes of our Zodiac fastening off the island of Española, one of the oldest in the wildlife-rich Galápagos Islands, what feels like a scene from a Discovery Channel special unfolds in front of our eyes. Yards from the beach, a sea lion has just given birth to a pup in the sand, and the baby is hungrily nursing for the first time. Above, a frigate bird known as the “pirate of the sky” circles, angling to steal its next meal. “There’s always a lot of drama here. It’s like a soap opera,” says our guide, Fernando Sánchez, as the mother sea lion begins barking, and her baby sweetly echoes her distinct call. “If you look around, there are so many stories happening.” Sánchez’s words ring true as he continues to lead us along a designated trail, where other than the skittish Sally Lightfoot crabs who scurry back and forth along the lava rocks, the animals barely seem to notice us. We’re forced to navigate around clusters of red-and-teal marine iguanas — that look nothing like our
South Florida friends — who refuse to move from their spots in the sun. Like the Big 5 in Africa, they’re one of the fascinating must-sees here, as they don’t exist anywhere else in the world; and these particular ones amazingly morph from black to their present Christmas-like colors during mating season. Winding along the trail, we quickly grab our cameras, as another captivating story plays out. Two magnificent waved albatrosses are involved in a comical courtship dance, the birds rapidly clacking their bills like swords, “mooing,” then bobbing and weaving, as they check to see if the other is a worthy mate for life. All of this as a nearby blowhole theatrically shoots saltwater into the air. As we arrive back to our Zodiac an hour or so later, our minds already racing with stories and our fancy cameras full of images, the newborn sea lion is being nudged into the shallows by its mother, taking its first ceremonial dip in the ocean. Travelers can lay back and take in the inimitable sights on the deck of Ecoventura’s mega-yachts, the Origin and Theory.

the life THE LAND BEFORE TIME That breathtaking drama of the Galápagos Islands, a remote archipelago situated around 600 miles off mainland Ecuador that served as the inspiration for Charles Darwin’s theory of evolution, comes to life while sailing aboard Ecoventura’s newest mega-yacht, Theory. It’s one of two identical luxury yachts in the Galápagos touting the prestigious Relais & Châteaux brand (the other its sister yacht, Origin), offering guests the chance to embark on a 7-night cruise with two different itineraries. During the week, you’ll visit around 8-9 islands, each with different personalities, astonishing landscapes that drastically range from idyllic beaches to barren volcanic rock, and mindblowing animal encounters — all while soaking up the posh amenities and gourmet food that are synonymous with the Relais & Châteaux name. The crisp navy-and-white yacht boasts ten staterooms with large, comfy beds, rainfall showers and floor-to-ceiling windows that forever connect you with the ocean. A plush communal living room that rivals one of a hotel leads to a bar and dining room, where a seemingly neverending banquet of snacks and food awaits each day. In between activities, bartenders who’ve mastered your favored drink greet you with a cold beverage on the sun deck, where a dip in the hot tub is encouraged after long hikes. One of the biggest advantages: the yacht’s two uber-knowledgeable naturalists/guides, who break guests into small groups to explore the islands each day. A staggering 97 percent of the Galápagos is protected by the National Park, which means visitors must be with a registered guide and stay at least six feet away from the animals to minimize the impact on the fragile environment.

“Otherwise, what we have here will not be around. The animals are still unafraid of people, and we’ve been able to preserve the unique flora and fauna because of these regulations,” says Sánchez, who keeps a strict eye out for excited guests who wander off designated trails or unleash camera flashes. “We’re still in a bubble. The islands haven’t changed much since Darwin visited.” BUCKET-LIST EXPERIENCES When Darwin visited the Galápagos Islands for two months in 1835, he fondly wrote, “The archipelago is a little world within itself,” and this cruise plunges you into that dynamic world. Days are jam-packed with three-to-five activities, with the chance to zoom off on Zodiacs to hike and explore the island of the day, or shimmy into a wetsuit for snorkeling. During our first full day on San Cristóbal, we found ourselves dipping in the cerulean blue waters and basking in the sun with the everpresent sea lions, who sit in yoga-like poses along the shore. Even if you’re not a birder, the seabirds of the Galápagos will amaze and capture your heart. Hiking around Punta Pitt, we’re met with weeks-old blue-footed boobies — adorably enveloped in fluffy feathers and whose feet haven’t yet burst from white to bright blue — who wobble and fall as they awkwardly test out their wings. This is the only place to see all three of the iconic species, including the red-footed booby and Nazca booby, and as we continue along the rugged trails, we spy all

three perched in trees and on rocks nestled close to the walkway. They inquisitively stare back at us, allowing us to photograph their brilliantly colored beaks and feet that I’ve only seen in books. Things become somber, though, when our guide reminds us that sworn enemies like the thieving frigates often sleep in the same trees. “While it can be heaven for us, these desolate islands can be hell for some species. It’s a constant fight for food, partners, or a nest,” says Sofía Darquea. “You’re always sleeping with the enemy.” Our hope is later renewed on the small island of Floreana, where we stalk (from afar) bright pink Galápagos flamingos wading in a brackish lake, and then giddily watch as the flock pierces the sky in a pink explosion. And, one of the most incredible spectacles happens on North Seymour Island, where male frigates grandly inflate red pouches on their chests (that look like they could burst at any moment) in an effort to look more attractive to female mates. The strangest feeling came on day five, when after visiting mostly uninhabited islands, we were abruptly launched back into civilization on the bustling island of Santa Cruz, which is

dotted with hotels, shops and restaurants. That overwhelming feeling quickly fades when we ascend into the highlands to see the world-famous giant tortoises with their dome-shaped shells and long necks roaming free at El Chato Tortoise Reserve. Even after snapping tons of photos, none truly captured their massive size. Later in the day, during a visit to the Charles Darwin Research Station, we meet a super-hero of sorts, Super Diego; the tortoise was brought in from the San Diego Zoo to help bring back his subspecies after goats and rats threatened to wipe them out. “He’s the father of 800 babies,” Sánchez informs us, as we look at the 100-yearold-plus tortoise who barely moves and is in “retirement” after a job well done. BELOW THE SURFACE If you travel between June and November, the Humboldt Current brings cold, nutrientrich waters to the Galápagos, which means an extraordinary abundance of marine life. “Shark!” yells someone in our group, as everyone scrambles off the side of the Zodiac into the water, eagerly paddling to the area off Bartolomé

Island where the shark was spotted. The shark is quickly forgotten, as tiny Galápagos penguins dive from rocks and dart through the water, while playful sea lions eagerly lead our group through their playground of underwater caves. As I float in the shallows, leisurely following a group of brightly colored fish, what looks like a rock on the ocean floor catches my attention. A pair of eyes suddenly flip open and stare back at me — forcing me to blink to see if I was imagining things — until a smartly camouflaged octopus reveals its hiding place in the sand. All of those once-in-a-lifetime moments, and those brilliantly adaptive and unique animals, are why the park and guides work so hard to keep this natural jewel unchanged. As Darwin wrote, “The love for all living creatures is the most noble attribute of man,” and a trip to the Galápagos will leave you completely in awe of nature’s glory, and hopefully with a stronger drive to protect our planet. MAYOR FRANCIS SUAREZ Named to the 2019 TIME 100 Next List, Miami Mayor Francis Suarez has an eye toward the city’s future as a hub for both technology-based entrepreneurship and climate adaptability. As chair of the environmental committee for the U.S. Conference of Mayors, Suarez is on the frontlines of environmental policy across the nation. Locally, he’s created the Miami Forever Bond, a resiliency bond that counts affordable housing a top priority. “We have to make sure we have a Miami that’s not just here forever, but is also here for everyone,” says Suarez.
What exciting things are on the horizon for Miami? Miami is so diverse and it’s growing incredibly. We continue to have these global events like the Super Bowl, the launch of the Inter Miami soccer team and Formula One. Next year, we also have the College Football National Championships and we just announced the World Baseball Classic. The sky is the limit for this city. What’s your go-to restaurant for a dinner out with the family? My wife Gloria and I live in Coconut Grove with our two children, Andrew, 6, and Gloriana, 2. We love going to Bellini at Mr. C — it’s incredible what’s going on in that area. We also enjoy Strada in the Grove and Tigertail + Mary. I just became vegan — it’s something I’ve been

doing for the last six months. There’s a great place that serves healthy dishes downtown called Manna Life Food that I order from often. As a now-vegan mayor, how are you leading a healthy lifestyle movement in the community? We’ve worked with organizations like DeliverLean on a healthy city campaign. During Hurricane Irma, through the city’s emergency procedures, we procured meals through DeliverLean to feed thousands of elderly people. I want to build on that to make sure our first responders in natural disasters are eating healthy and that the homeless and those below the poverty line in the city are getting nutritious food. We are working on programs that will be announced later this year to help increase the city’s nutrition profile.

EMILIO ESTEFAN World-renowned music, television and film producer, Emilio Estefan has shaped the careers of superstars like Jennifer Lopez, Shakira and Ricky Martin — not to mention his powerhouse wife Gloria. Over the span of a 40-year career, Estefan’s racked up honors including a Presidential Medal of Freedom, a star on the Hollywood Walk of Fame and countless Grammy Awards. Where do you go for live music in Miami today? I’m so proud of the Performance Series that we produce in the Miami Design District’s Palm Court in the spring and fall. It’s a weekly series that’s free and open to the public. We’ve had incredible artists perform like The Wailers, Il Volo, Gloria Gaynor, Arturo Sandoval, Jon Secada and my daughter Emily. What are your go-to spots for shopping and art in the Design District? There are great stores like Tom Ford, Bvlgari and Gucci. After shopping, you have to stop at Estefan Kitchen
for lunch or dinner and our famous mojitos. We also have live music on the weekends. For art, Gary Nader’s gallery in nearby Wynwood features amazing pieces you won’t see anywhere else in the world. What’s a travel destination you return to time and time again? Gloria and I love heading north to Vero Beach, where we have a second home. We go with the family. Costa d’ Este is an award-winning beach resort that we opened in Vero. It’s quiet, relaxing and only a three-hour drive from Miami.

What's your favorite Florida destination for a weekend getaway? Ocean Reef Club in Key Largo is a quick one-hour drive from our house. My family and I spend time in the water, take in the ocean breeze and most importantly, disconnect and spend a lot of quality time together. What’s your top travel hack? As a mom of five, it’s very important to travel as light as possible. I discovered the Away brand carry-on luggage and it changed my life! Now, we travel everywhere with our carry-ons. If we’re going somewhere that requires thick clothing, like ski gear, I ship that in advance. What do you love about Miami in the springtime? I love that the weather allows you to be outside more than ever. CARLA HILL “I believe Miami has lived in the cultural 21st century for quite some time,” says Carla Hill. As an education veteran of over 15 years, Hill is the director of inclusion and community engagement at the elite Ransom Everglades School, where she leads their diversity and equity initiatives. “As a community we’ve adopted each other's traditions in such a way that we see a morning cafecito and a lunchtime sprinkling of Haitian pikliz on our rice and peas, for instance, as a Miami norm,” says Hill. “We have so many unique stories that make up our city.”
What's your favorite family-friendly restaurant in Miami? Jamrock Cuisine in West Kendall has the best Jamaican-style Sunday breakfast. My husband Marlon was born in Jamaica and he says that their Sunday breakfast reminds him of cherished childhood meals with his grandmother in Kingston. I love their hominy corn porridge. It's deliciously sweet and creamy with subtle Caribbean spice notes of nutmeg and cinnamon. What’s a travel destination you return to time and time again? I make my way to my family's home country of Trinidad and Tobago at least once a year no matter what and I love going for the famous Carnival celebration. I’ll arrive in time to experience about five days of nonstop fetes before the official two-day-long parade of costumed bands. I'm surrounded by everything I love — soca music and family. Most importantly, the parade is my way of honoring my ancestors and participating in the legacy of this passed down living ritual of freedom. What’s your ideal Miami stay cation? Almost every Fourth of July my cousins, who reside in the Atlanta and DC areas, have met us in Miami for a long weekend at the W Miami on Brickell Avenue. After spending a day by the pool, we join the masses of people downtown to watch the fireworks. Directly after the fireworks end, we make a mad dash to Calle Ocho and order what seems like pounds of ice cream at Azucar.

PATRICK GODDARD As president of Brightline Trains, Patrick Goddard is changing the way we get around in South Florida. The high-speed rail already connects Miami to Fort Lauderdale and West Palm Beach with plans for expansion to Orlando, Boca Raton, Aventura and PortMiami. “From the daily pleasures of having dinner in a different city to connecting businesses to new markets, I believe the future of South Florida will continue to move in the direction of a car-free lifestyle,” says Goddard.
What’s your ideal Brightline train hopping itinerary? So many of our weekend guests from Miami enjoy taking Brightline to Restoration Hardware in downtown West Palm Beach for brunch. After trying it myself, it’s easy to know why. Anytime you’re in Palm Beach, you can’t forget about the Breakers. I am in awe of the beauty and history within that property every time I visit. It’s also great for Fort Lauderdale to have a Wharf locale now and I enjoy taking the train there on the weekends for a casual bite that’s just a short stroll from the station. What’s your most memorable experience traveling by train before joining Brightline? My father is English so growing up in Ireland, we used to take the Car Ferry from Rosslare in Ireland to Holyhead in Wales, visit with my aunt for lunch and continue by car to Liverpool, where my grandparents lived. My three brothers and I all looked forward to loading up on the included complimentary English breakfast. They didn’t know what was coming for them! What do you love about South Florida in the springtime? Brightline doesn’t go to the Keys, but I really enjoy taking the family down to Islamorada and being on the water. The Miami Heat season is usually pretty exciting and now with Inter Miami FC kicking off their inaugural season, there is really no shortage of things to do.

Honoring philanthropist and collector Pamela Joyner, Pérez Art Museum Miami’s Art + Soul event highlighted the artistic institution’s Fund for African American Art, which allows the museum to purchase and showcase contemporary art by African American artists for its permanent collection. The fund’s most recent art acquisitions by artists Theresa Chromati and Vaughn Spann were revealed by PAMM Director Franklin Sirmans during the evening, which also included an intimate dinner by chef Amaris Jones, and entertainment by Guitars Over Guns, a nonprofit that offers students from disadvantaged backgrounds both music education and mentorship.
