T

he first time I discovered what it feels like to convey love through food was 15 years ago. I was cooking a birthday dinner for the woman who would eventually become my wife. We were college seniors. The cramped kitchen she shared with roommates had no frills or fancy gadgets. They wouldn’t have mattered — I didn’t know the difference between a slow cooker and sous vide. But I knew that when we would go on dates, she liked to order salmon, and I never saw her turn down a dish with feta cheese. So I bought some ingredients, followed a recipe for roasted salmon, and winged it on a homemade tomato-feta sauce and a side of couscous. When we sat to eat it on disposable plates paired with a bottle of Two-Buck Chuck from Trader Joe’s, Teri’s reaction told me that she knew what I was trying to say, which was: happy birthday and I love you and I want to pay attention to you forever, all wrapped in one basil-garnished package. Throughout this special issue of INDULGE, you’ll find stories of local people who are expressing themselves through food. Chefs like Francisco Antón of Cardón y el Tirano on Calle Ocho. When I interviewed him for our Recipe feature (p. 66), I asked who taught him to cook. His answer — a beautiful story of the aromas and flavors and lessons of his grandmother’s kitchen in Venezuela — was so moving, so full of Evan S. Benn emotion, that we printed it in its entirety, in his words. Editor in Chief Threads of cooking from the heart also run through The INDULGE 25 (p. 104), our definitive list of the people, places, dishes and drinks firing up South Florida’s food scene right now. One of them is Val Chang, a Miami cook of Peruvian-Chinese descent who runs the kitchen at Dizengoff, an Israeli restaurant in Wynwood. During a recent Shabbat dinner at Dizengoff, I was floored at the seamless way Val fused her own heritage with the restaurant’s cuisine, working things like roasted plantains and Peruvian potatoes into the menu. All of us can remember specific moments based on flavor memories. When I first started as a reporter at the Miami Herald — just a few months after cooking that salmon dinner for Teri — I lived close to Las Olas Boulevard in Fort Lauderdale. Infrequently but indulgently, I would camp out at a sidewalk table at Johnny V restaurant and devour a tricked-out cheese plate. The cheeses always came with a ramekin of pickled grapes, a mind-bending combination of sweet and sour, and I’d savor them while watching the world walk by. While Johnny V ended its longtime run in 2016, that vivid flavor memory will stay with me forever. Now Las Olas has a litany of new restaurants primed to create new memories for the next generation of voracious eaters. My first visit to their classy yet laid-back bayside spot in Sunset Harbour lingers in my memory. Was it the mouthwatering Lobster Mac ’N’ Mushrooms or the fun Buffalo Fish Wings with their salty, lemony crunch? Maybe it’s the clever way they showcase the day’s fresh catch in ice-filled claw-foot tubs. Whatever it is, you’ll leave satisfied and eager to return for more. And it’s just the same with one of my all-time favorite Argentine restaurants. Raised in Miami, I grew up on Graziano’s Provoleta Parrillera. Our family would place an order before perusing the rest of the menu, every time. The restaurant’s patriarch, Mario Graziano, instills the virtues Lesley DeCanio of every immigrant family – work, work, work. After 25 years, Mario is still using his meatcutting skills at their Coral Gables location. What an inspiration! Learn more about this month’s Rainmakers, Mario and Leo Graziano (p. 47), and enjoy the tastes of Argentina without ever packing a suitcase. Or perhaps you’d prefer a trip to the City of Light? Blend quirky with delightful, add a dash of amour, and you get La Fresa Francesa Petit Café and Gourmet Market. You can't help but feel personally welcomed by owner Sandy Sanchez's beaming smile. Pre- and post-dinner, the market entertains by showcasing chocolates, cheeses and wines while French music plays in the background. The café is designed to give you the sense you’re in the middle of Paris, and it’s so authentic that on a recent visit I found myself looking outside to confirm that yes, I was still in Hialeah! If you’re in search of the next must-have kitchen gadget or entertaining tabletop piece, check out Claudia Miyar’s picks in The Local (p. 23). For the kid at heart this Valentine's Day, surprise them with a Tiffany twisty straw – everything sipped through it will taste utterly decadent. And speaking of decadence, designer José Levy's unique art of fusing glasses to create a colorful and multipurpose menagerie is brilliant. I've often used wine glasses as tea-light vessels, so I am adding these exquisite pieces to my Valentine’s wish list. And because February is the time of year in South Florida when we all want to be outdoors, grab yourself an Uber and spend an exhilarating day watching Olympic volleyball professionals make our Fort Lauderdale sand their own at the Swatch Beach Volleyball Series (p. 26). North of Havana, nobody knows ropa vieja and maduros as well as Miamians. But in the documentary Cuban Food Stories, you’ll discover the little-known regional cuisines of the island, like Toa River shrimp that are beloved by locals. Rablat suggested they open a market, where customers could peruse a selection of small-production wines, fine French cheeses, artisan charcuterie and other European delicacies. “We realized there were no gourmet markets in the area,” Sanchez said, “and we wanted to open a place where foodies like us would want to shop.”

Founding the restaurant in 2015 upon the suggestion of her sister, Sanchez was pleasantly surprised to find that rustic-refined French food with Cuban influences was exactly what was missing in Hialeah. RARE WINE FINDS Like their wildly popular bistro (the name is Spanish for The French Strawberry), Sanchez and Rablat’s market is an exhilarating gem in an otherwise traditional neighborhood. Rablat, a chef who previously worked as a sommelier in San Francisco (“We went to every wine tasting in the city!”), curates a selection of wines from across Europe, with an emphasis on boutique vineyards from his native France. For the discerning connoisseurs who frequent the shop, Rablat and Sanchez offer some bottles so rare and special that they keep them in the back. “We try and stay away from the usual suspects,” Rablat said, “so we can expose people to new treats.” EVEN THE DOG IS FRENCH Alongside a selection of wines, the market offers the typical sundries you’d find in a corner market in the south of France: onyx-colored Le Puy lentils, freshly whipped butter from Normandy, and a selection of charcuterie, cheeses and olive oils sourced from Spain, France and Italy. One of Sanchez’s favorite olive oils, chartreuse in color and rich in flavor, goes for $22 per bottle, a veritable bargain. The shop also has started to bring in housewares and trinkets — Laguiole cutlery, crystal etched glassware and Art Deco-inspired Parisian tins. Coinciding with the restaurant's hours, the market is open from Wednesday through Sunday. Sanchez and Rablat frequently host wine tastings, often inviting the winemakers themselves to present their vintages and educate guests. Who else might you find scattering about the couple's intimate market? A dainty little French poodle named Valentine, who makes the experience of shopping at La Fresa Francesa feel as cozy as home. VITALS 73, Mario; 45, Leo. Owners of Graziano’s, the Miami-based Argentine market and restaurant empire. Mario Graziano was 8 when his family fled Italy after the war and settled in Argentina. His parents opened a convenience store and butcher shop. Mario studied mechanical design in the mornings and worked at the shop in the afternoons. By the time he left Argentina in 1989 to avoid its financial crisis, he owned six butcher shops and a meat distribution business. Then he started all over again in Miami. Mario bought a small market on Coral Way, where he worked alongside his wife and three children: Leo, Cecilia and Carolina. On the weekends they would set up tables in the parking lot, and Leo would grill meats over quebracho wood imported from Argentina while his sisters waited tables. This was the birthplace of the now-famous Graziano asado. Over the years, Graziano’s has expanded from that shop and pop-up asado into an enterprise of Argentine markets and restaurants from West Miami to Weston. REIGNING KINGS OF ARGENTINE FOOD The family has four restaurants (Brickell, Bird Road, Coral Gables and Hialeah) and five markets (Bird Road, Coral Gables, Doral, Hialeah and Weston). Two restaurants are set to open this year, in Aventura and Doral. PIZZA PARTY Graziano’s also is opening a pizza parlor on Sunset Drive in South Miami. The family’s first foray into pizza opened on Bird Road in 2003 and closed after five years. Now, they are ready for a second helping of pie. The restaurant will be called Lucia, after Mario’s mother. WHO DOES WHAT Mario still cuts meat at the Coral Gables market every morning. “It’s like therapy for me,� he said. Leo is the one in charge of operating all the businesses and overseeing more than 350 employees. He enjoys creating new menus and selecting the wines for the restaurants.

SO CHEESY Everyone loves fried cheese, but the way Argentines make it will change your life. Provoleta starts with aged provolone cheese imported from Argentina, which is lightly floured and grilled until the outside is golden and the inside melts into gooey deliciousness. Topped with beefsteak tomatoes and a hit of oregano, it’s one of the best ways to start any meal. “It’s simple and basic but so tasty,� Leo said. “It’s because of the quality of the ingredients.� EATERS AT HEART “I don’t cook,� Mario said. But his emerald-green eyes light up when talking about his wife’s homemade pastas. Leo, on the other hand, is the grillmaster of the family. A WHOLE NEW WORLD “When I opened my first shop, I was speaking Spanish to customers but charging them in U.S. dollars,� Mario said with a chuckle. “It was something new to me, and it was amusing.� FAMILY TIES “I’m very proud of my family and that everyone works together,� Mario said. Graziano’s currently employs five family members. BEST BOSSES A once-a-year tradition: closing all of the locations for an employee-appreciation barbecue and soccer tournament at Tropical Park. HARD WORK PAYS OFF “I work hard, like my dad did,� Mario said. “People now want to have everything without working hard.� IT’S ALL ABOUT THE FOOD Leo: “When I eat the Milanesa at Graziano’s, it’s the same one my mom makes at home. Most of our recipes are from my mom or grandmother.� Mario: “We are teaching people about our food and opening them up to our culture. Julie Frans

She’s a chef, a gardener, a restaurant consultant, a COO, a Slow Food ambassador, a culinary educator and a mom — and she has a lot to teach us about healthful eating.

J

ulie Frans always figured she’d be a teacher. She even studied English at the University of CaliforniaSanta Barbara. Although her career took a different turn — to being a chef and culinary consultant — she still spends her days sharing her knowledge and passion with others. Her classrooms are kitchens and edible gardens. Her students are fellow chefs, restaurateurs and lifelong learners. “I think I’m an educator in a totally different way,” said Frans, 38, who is Chief Operating Officer and Chef at Large at Della Test Kitchen at The Wynwood Yard, where she also serves as Director of Community and Culinary. “I’m at the Yard every day. It works in a way that I can oversee, support and offer guidance.”

FRESH AND LOCAL Frans came to Miami from San Diego six years ago with her husband, a private chef, and their two kids. She led the kitchen at Essensia at the Palms Hotel in Miami Beach for several years before starting her consulting business. Digging gardens for schools and mom-and-pop restaurants, she eventually met Wynwood Yard founder Della Heiman. Ever since, Frans, Heiman and their peers at The Wynwood Yard, Miami’s first culinary incubator, have been teaching us about the benefits of fresh, local and sustainable food. “As I got to know the local food scene, people seemed confused on what was good to eat, when to eat it and how to incorporate it into meals,” Frans said. “I felt like I could be a connector between farms and chefs, teaching about seasons here and my firsthand experience.”

GROWING THE YARD The Wynwood Yard team is preparing to expand this year to two new locations. First up: Jackson Hall, an ambitious, 10,000-squarefoot culinary space in Miami’s burgeoning Health District, set to debut this spring. Frans and fellow chef Nicole Votano will oversee globally inspired, responsibly sourced menus that are free of fried foods, partially hydrogenated oils, proteins with antibiotics or growth hormones, artificial preservatives, or highly refined sugars. After Jackson Hall, the next project is North Beach Yard, which will be closer in concept to The Wynwood Yard but customized to that community’s needs. “It's more family-oriented,” Frans said of North Beach Yard. “There will be a demo kitchen, a farmer’s market and an actual Della restaurant. A bigger, more permanent space.” SLOW IT DOWN Frans’ penchant for making goodtasting, good-for-you food more accessible to everyone aligns with her role at Slow Food Miami, where she serves as Director of Chef Community. Slow Food promotes food that is grown and consumed in a way that’s beneficial to the environment and the people who eat it. Essentially, it’s the opposite of fast food. “Slow Food Miami has a really strong base of people who show up and connect,” she said. “I feel the traction from the inside, but there are still so many more people to reach.” As Jackson Hall and North Beach Yard get ready to open, along with all of Frans’ ongoing culinary projects, she said her biggest struggle is finding balance. “There are never enough hours in the day to do all the things I want to do,” she said, turning appropriately to a culinary reference. “Your eyes are bigger than your stomach.” WORDS BY DORI ZINN / PHOTOGRAPHY BY NICK GARCIA

Robert Battle

Bullied as a kid in Liberty City, he returns to his hometown as Artistic Director of the internationally acclaimed Alvin Ailey American Dance Theater. ack when Robert Battle was growing up in Liberty City, after the school kids chased him home, he’d escape up a mango tree. He used to climb his way into the canopy, crawling along branches until he had a spot looking over the things that defined his life. Then he’d imagine himself as the world’s most famous dancer. With wind passing through the leaves, he could hear the applause. “I loved being elevated off the ground when I was trying to imagine my own life being elevated,” said Battle, 45. “It was an elevated existence, because the imagination is such a powerful tool.” It’s unlikely that the kid sitting up there in the tree could have imagined just how real his hopes would become. After studying at Miami’s New World School of the Arts and The Juilliard School

in New York, Battle made it big in 1994 when he danced with the Parsons Dance Company. MASTER OF DANCE He has since danced in and choreographed most of the world's biggest dance companies and festivals. Of Battle’s many accolades, perhaps the most significant came in 2005, when the Kennedy Center declared him among the Masters of AfricanAmerican Choreography. All of that would have satisfied the hopes of the kid escaping the bullies. But in 2011, Battle was selected as Artistic Director of the Alvin Ailey American Dance Theater, a New York company declared by Congress to be a vital American “cultural ambassador to the world.” He is only the company’s third Artistic Director in its 60-year history. Battle returns to his hometown in February, when his company will perform five times over four days at the Adrienne Arsht Center for the Performing Arts. For choreographer, Battle tapped fellow Miami native Jamar Roberts, who will debut a blues-inspired work called Members Don’t Get Weary, incorporating music by John Coltrane. The shows conclude with Alvin Ailey’s signature masterpiece, Revelations. GO BEYOND FEAR Battle will, as usual, find a place to watch from the wings or up in the back, where he likes to see the reactions of the crowd. He also will return to Liberty City, thinking back to the days when he began studying martial arts and carrying himself in a more confident way that kept the bullies from singling him out. “The kids, still to this day, misunderstand what it means to be a male dancer,” he said. “They focus on the fear that they have of their own sexuality that has always been taboo. When I go home, I go back to the starting place.” He also hopes that his appearance back home and the story of how he made it will inspire a child today who needs a version of the mango tree to hide. If Battle could talk to that kid? “Start with your imagination,” he said, “because that is something you don’t have to share with anybody. Picture the thing it is you would love to be doing. If it’s dancing, if it’s playing baseball, whatever — imagine yourself doing it better than anybody in the world. And imagine people delighting in that. A trove of torches offers deeper meaning to this trailblazing lobbyist, lawyer and onetime Olympic hopeful.

T

here’s a secret museum, of sorts, hidden within Aventura. Nestled on the 10th floor of an office building, some of the most precious political and sports memorabilia of the 20th and 21st centuries hangs on a wall. But there are no tickets to this exhibit. For access, you’ll have to make an appointment to see Ron Book, the highly successful lobbyist and longtime chair of the MiamiDade Homeless Trust. Book’s collection of torches from the Olympic Games goes as far back as the 1936 Berlin Olympics, and there is a good chance that one from this month’s Winter Olympics in South Korea will find its way to his Miami-Dade office or home.

COMPETITIVE SPIRIT Book, who is known for his determined approach in politics and his advocacy against child abuse and homelessness, credits his tenacity to playing competitive sports as teen. “I learned most of that determination, focus and discipline from my years running track” in high school and college, he said. “My coaches really taught me what it was to be competitive, what it was to be hungry, what it was to fight for the things that matter to you. Track and field were important to me, and I always loved the Summer Olympics, so I started collecting torches.” Book is a fierce collector — if he doesn’t already have it, that means

He recalls a time when he watched the sun rise as he was participating in three simultaneous overnight auctions. Of his more than 40 Olympic torches, many still hold the residue of the mother flame, which Book notes adds to the torches’ value and desirability. He is hesitant to estimate a total worth of his collection, but he points to one that will forever remain priceless to him. It’s from the 1996 Summer Olympics in Atlanta — one that he carried as part of the official Torch Relay Team.

ONCE IN A LIFETIME “One of the things I always wanted to do was run in the torch relay, and I did in 1996,” Book said, tapping his finger to the glass case that holds the torch, the uniform he wore and a photograph of him during the relay. “At home, I have one just like it, but it’s one of eight that Muhammad Ali held and used to light the big torch in Atlanta.” That opportunity of a lifetime came thanks to Jimmy Carnes, Book’s late track coach and friend. Carnes did it to give Book another shot at Olympic glory —

the young runner had qualified for the Olympic trials in Eugene, Oregon, in 1972 but blew his Achilles tendon two weeks before the tryout. “I surrounded myself with things growing up that taught me the meaning of fighting for what you wanted and working at it,” Book said, adding that he doubts he’ll ever stop collecting, because it reminds him to stay focused. “Torches are important to me. This is why, at the end of a 30-minute show, we add a blooper reel.” What are your three favorite Miami restaurants? “I like simple! I love BarMeli 69, Upland and Estefan Kitchen.” Who’s a really fun celebrity chef to interview at the South Beach Wine & Food Festival? “I love Rachael Ray — what she is on TV, she is in real life. She’s sweet, but she’s got some snark and sass to her. I love that.” How do you prep for Bite with Belkys? “I prep for two days before we film. All the chopping and dicing is already done; so it’s all sear it, fry it, and we’re done. If I bake a cake for a segment, I’ve actually made the whole cake the day before.” How do you get food stains out of nice clothing? “My advice: Always wear an apron. I have a closet with at least 50 aprons! We rotate my aprons like I rotate my clothes to do the news.” What advice do you have for budding chefs? “I’m not a chef and I don’t claim to be one. Don’t be afraid! You’re better than you think. All you’ve got to do is try. Don’t try to make steak and foie gras. Make some tacos and get the seasoning packet — it’s fine! Start small and see where you go.”

What’s your favorite episode? “I’m picking two: ‘The Kiko Burger,’ where Pinch Kitchen came up with a burger in my name; that was really cool. And ‘The Kiko Shake,’ at Bocas Grill. It was really fun.” What’s your most embarrassing on-camera moment? “At Pinch I spilled something on my shirt and didn’t have anything to change into, so I had to film the episode with a stain on my shirt.” How do you get food stains out of nice clothing? “My stepmother says milk and vinegar can take out any food stains. Talcum powder can lift up tomato sauce or grease. Trust me, I’m the king of food stains.” What’s your go-to Miami neighborhood for food? “Little Havana. I think it’s at the forefront with new and interesting spots. I tried Sanguich de Miami the other day — spelled with ‘g-u-i’ like Abuelo says it. It’s in a transport container that’s super fancy, with gold trim and gold leaf. They make Cuban sandwiches or old-school shakes with a touch of modernism. It really impressed me.”

Top three Miami restaurants? “A local favorite is BarMeli 69 — the owner, Liza, is great. A fancy restaurant that I love is La Petite Maison. Sushi Republic is a momand-pop place near my house that I go to all the time. Tap 42 is a fourth favorite. I actually crave their guacamole.” What’s your most embarrassing moment on camera? “I never try the food before we tape, so I give my exact opinion as the food is in my mouth, on air. But talking and eating don’t always go together! Sometimes I get so excited because I want to get my thought out right away, and it can get messy. We edit those out.”

I’m not a huge blood sausage fan.” What’s your favorite episode? “I always have fun with chef Ralph Pagano at his restaurants. This feels like picking a favorite child! Really, Taste of the Town is about celebrating South Florida food, so they’re all fun.” What do you snack on between shoots? “I’m a tuna fish junkie. It’s really pathetic. I eat all this gourmet food for work, but tuna on crackers is my favorite thing in the world. I try to be

healthy and would love to say it’s fruit as well, but really, it’s all about tuna.” Any tricks for getting food stains out? “A bib. Ha! I do carry around a Tide pen, but if that doesn’t work, it’s going straight to the dry cleaners.” What do you love about the Miami food scene? “We’ve become so diverse. There’s really something for every palate here, in all price ranges. 'SSOMRK from the Heart With no formal culinary training, chef Francisco Antón of Cardón y el Tirano relies on lessons passed down from his mother and grandmother. He shares his story — and a sweet dish from his Venezuelan-Italian heritage. AS TOLD TO EVAN S. BENN / PHOTOGRAPHY BY FELIPE CUEVAS

y grandmother moved to Venezuela from Italy to escape poverty and war. I still remember the flavors and aromas that came from her kitchen on Margarita Island: gnocchi on Mother’s Day, bacalao on Christmas, spaghetti with walnuts and anchovies on random afternoons, biscotti with café con leche, red sauce with summer tomatoes that we canned ourselves. “It was real food, and it was knowledge that was passed from generation to generation, all the way down to me. I did not realize it at the time, but the sights and sounds of my grandmother’s kitchen were the most important lessons I received as a chef. “I came to the United States when I was 16, first to New Orleans, then to Orlando for college. After graduation, I moved to New York. Chef Máximo Tejada gave me a shot at his restaurant, Macondo, cooking Latin American food. “Before he died in 2012, chef Máximo and I had the most amazing conversations about food and the role of the chef. He said we have the power to transmit our

feelings through food, the way my grandmother’s cooking felt like she was telling me that she loved me. “When I was looking to open my own place, I was drawn to Calle Ocho. Our inspiration for Cardón was to create a restaurant where we could experiment with different cultures and ingredients, but always with a Latin American element and with elevated wine pairings. My mom works with me in the kitchen, and one of my brothers runs the dining room. “The Plantain Bomboloni dessert comes from different places — Italy, obviously, but also from Maracaibo, Venezuela. They make these delicious mandocas there, basically a mix of cheese, cornmeal and ripe plantains that are twisted like pretzels and fried. You eat them hot with cheese. “Our version gets a dusting of powdered sugar and is served with roasted pistachios and chocolate hazelnut spread. But you can also skip the sugar, and they taste really good with a soft cheese. YELLOW PLANTAIN BOMBOLONI MAKES ABOUT 20 BOMBOLONI

INGREDIENTS 1 large ripe plantain 8 ounces fresh white cheese, grated ½ cup shredded panela or dark brown sugar 1½ cups cornmeal

teaspoon ground cinnamon teaspoon anise seeds cup water quart grapeseed or vegetable oil for frying Powdered sugar for dusting

1. Bring about 6 cups of water to a boil in a medium saucepan; reduce heat to simmer. Peel plantain, cut it into four pieces, and add them to the water. Cook until soft, about 10-15 minutes. 2. Remove plantains from water. In a mixing bowl, mash the plantains with a fork or potato masher until they form a smooth paste. 3. Add the cheese, sugar, cornmeal, cinnamon and anise seeds to the mixing bowl, using your hands to mix into a thick dough. Slowly add water and continue kneading until dough feels firm but pliable. Cover with plastic wrap and refrigerate for 45 minutes. 4. Heat cooking oil to 350 degrees in a heavy-bottomed saucepan or Dutch oven. Form the dough into walnut-size balls and, working in batches, fry until dark brown and crispy on the outside, about 3-5 minutes. 5. Place bomboloni on paper towels to drain excess oil; dust with powdered sugar and serve with Nutella or dulce de leche. NOTES: Chef Francisco Antón recommends using very ripe plantains — when the peel turns black — to accentuate their sweetness. Leftover dough can be covered and refrigerated up to four days.

A new generation of restaurants is keeping Denmark’s capital on the world culinary map. ood vacations make you want to return to the destination someday soon. Great vacations make you want to move there now. A recent week in Copenhagen had me ready to pack my bags for a permanent state of hygge — the Danish term for the inherent coziness that finds its way into everything there, from design to food. The people are friendly, the streets are clean, the food is otherworldly, and everyone manages to get on just fine despite the fact that Uber doesn’t exist in Denmark. The easiest way to get there is Scandinavian Airlines’ nonstop flight from Miami, which puts you in Copenhagen in less than nine hours. And the most luxurious ride may be in the newly upgraded business-class cabin of SAS’ Airbus 330, where meal services feature cold-water lobster and Norwegian gin, and the lie-flat seats get a dose of hygge from Hästens bedding.

EAT Copenhagen spent most of 2017 without the restaurant that put it on the world’s culinary map: Noma by chef René Redzepi. He closed it, took it on the road for some far-flung popups, and reopened it this month in a different neighborhood than its original location.

In that original Noma space is now Restaurant Barr, an ode to rustic-refined Nordic and North Sea cooking in collaboration with Redzepi. Chef Thorsten Schmidt shows his German-Danish roots through dishes like pork schnitzel that sizzles under a brown butter caper sauce, and sourdough pancakes with caviar and wood ants — yes, ants — that taste remarkably like lemon zest. An in-house brewmaster elevates beer pairings to a degree usually reserved for wine and cocktails. Chefs who put in time at Noma have gone on to

open lauded restaurants throughout the city. One of the most well known is Christian Puglisi, whose mini-empire includes Michelin-starred flagship Relæ, bakery Mirabelle and organic wine bar Manfreds. Although vegetables and fish are the main focus of Manfreds’ kitchen — as evidenced by a bracingly fresh salad of mackerel and justpeeled fava beans — Puglisi’s beef tartare is a showstopper. Raw beef dressed with watercress, rye croutons and aioli, the dish is a simple delight of contrasting textures and balanced flavors. Copenhagen’s Nyhavn neighborhood, above, is a pedestrianfriendly, canal-lined area full of sidewalk cafés and pastelpainted buildings. A walking bridge connects Nyhavn to Restaurant Barr, where chef Thorsten Schmidt cooks creative Nordic comfort food like sourdough pancakes with mussel sauce, caviar and ants, left.

Another Noma alum, San Diego native Matt Orlando, is the chef-owner of the hot-andgetting-hotter Amass. His tasting menu is a tour de force progression based on what’s in season — menus are completely overhauled several times a year — and what’s growing in Orlando’s garden, where he regularly hosts local school kids to teach them about food. One thing that never comes off his menu: fermented potato bread, an addictive starter that he serves with a herbaceous oil dip. (We have the recipe posted at miamiindulge.com.) While caraway-infused aquavit may be the spirit of choice throughout Scandinavia, Denmark has a proud beer history that carries into today’s brewers. Mikkel Borg Bjergsø was a physics teacher before his homebrewing experiments led him to create Mikkeller, which has morphed into one of the most sought-after craft breweries in the world. He has more than a dozen brewpubs and bottle shops all over Copenhagen, but two of note: Mikkeller Baghaven, which pours barrelaged beers and is located a stone’s throw from Amass (and from the city’s famous Little Mermaid statue), and War Pigs, a barbecue-meets-beer collaboration with U.S. brewer 3 Floyds. In the same meatpacking-turned-hipster district as War Pigs, Kødbyens Fiskebar was

one of the city’s first fish restaurants when it opened in 2009. That’s surprising in a nation surrounded by water and where pickled herring is in every home-cook’s repertoire. But owner Anders Selmer, a former sommelier and manager at Noma, and British-born chef Jamie Lee have lured in locals and visitors with stunning dishes that show a sense of place: seared squid with pine and celeriac, Norwegian king crab with red cabbage and roasted koji. My favorite place to sit at any restaurant is a counter overlooking the kitchen. So Bo Bech’s Geist won me over immediately with its seats surrounding a spotless, low-volume, perfectly choreographed kitchen. His food ranges from out-there combinations (scallops with chicken wings in lobster sauce) to simple elegance (meticulously cut avocado with caviar). The avocado dish’s conception and execution gets 87 full pages in Bech’s recently released cookbookmemoir, What Does Memory Taste Like? STAY D’Angleterre is Copenhagen’s five-star grande dame of luxury hotels, and it cuts no corners: Rooms are immaculate, location is ideal, spa is exquisite, restaurant is world-class. D’Angleterre can wrap guests in serenity at its Amazing Space Spa, then

New Kids on the Block How a girl from Australia and a boy from the Florida Panhandle met over meatloaf, fell for each other in the kitchen and opened a crazy-good restaurant in Miami’s best dining neighborhood.

unset Harbour’s Stiltsville Fish Bar is an homage to the love story of chef-partners Janine Booth and Jeff McInnis. The culinary power couple met when McInnis was executive chef at Gigi in Midtown Miami, and Booth paid a visit twice in the same day, lured by his meatloaf special. “I’d never even heard of meatloaf,” recalled Booth, a native of Australia, who was in culinary school at Le Cordon Bleu at the time. “But of course, it wasn’t just any meatloaf. It was made with short rib and caramelized onions and smoked plantains and barbecue sauce. It was amazing. I wanted to know how to make it.” The chance encounter led to an internship with McInnis at Gigi and moving with him to Yardbird Southern Table & Bar when he opened it in Miami Beach in 2011. Since then, Booth and McInnis went north to open the wildly popular Root & Bone in New York as chef-partners, and they returned to Miami in 2016 to open The Sarsaparilla Club inside the Shelborne Hotel. That restaurant converted into a Root & Bone offshoot around the time Stiltsville was gearing up for its launch late last year. Booth and McInnis, both Bravo Top Chef alums (her, Season 11; him, Season 5) also are the proud parents of a baby girl, Sunny.

STRIKING COUPLE On the sun-drenched patio of Stiltsville during a lull before a recent brunch service, the couple reminisced about how their attraction simmered in the kitchen before either of them acted on it. “I think Jeff was a little more interested at first,” Booth said innocently. “Whatever, you liked me,” he rebuffed, unfazed. “Well, maybe I thought you were cute,” she conceded. They have an easy chemistry, and their love is apparent in the way they interact with each other and the way he looked at her during our photo shoot that morning. Both are blessed with beautiful bone structure and beachy blonde hair, making for a striking couple. Their first date actually started across the street from the restaurant, at the boat ramp in Sunset Harbour next to Maurice Gibb Memorial Park. McInnis took Booth out on his boat, cruising across the Venetian Islands through Biscayne Bay to the original Stiltsville homes, first erected on the bay in the 1930s. “We put a couple of lines in the water,” Booth said. “I don’t think we caught much of anything.” McInnis is a native of the Florida Panhandle who grew up fishing the Gulf and working on his grandparents’ farms in Alabama. In many ways, Stiltsville unites his longtime passions for locally caught fish, farm-fresh produce and Southern hospitality. “We have the Atlantic, the Gulf and the Caribbean right here in our backyard with this abundance of fish, and there really wasn’t a chef-driven fish house,” he said. “For a long time, seafood in Miami meant sushi flown in from other parts of the world.”

CATCH OF THE DAY Two claw-foot tubs filled with ice showcase the day’s fresh catch at the front of Stiltsville Fish Bar: yellow jack, black grouper, wahoo and triple tail, all sourced from local fishermen from the Keys to Stuart. The daily catch figures prominently onto the menu, served with choices of sauces (everything from cilantro salsa verde to aji amarillo) and sides (stoneground grits to sweet plantain mofongo). Other creative menu highlights include smoked scallops with crispy ham chips, corn spoon bread with butter-poached lobster tail, and an elevated take on coconut shrimp: sweet local Royal Red shrimp wrapped in shredded phyllo dough, flash-fried in coconut oil and topped with toasted coconut bits. The restaurant’s design plays up the seaside fish house concept with a convertible open-air dining room and a chic-ramshackle aesthetic with exposed wooden rafters, support columns resembling pilings, beer taps made of dramatic swordfish bills, translucent-shell chandeliers clusters of purple barnacles as objets d’art. There also are plans for a forthcoming rooftop deck to savor prime sunset views alongside their rum-forward cocktail menu. So what brought Booth and McInnis back to Miami after their success in New York? “It was really this neighborhood,” McInnis said, polishing off a preshift salad of butter lettuce topped with Florida avocado and heirloom tomatoes. He gestured at the unobstructed views of Biscayne Bay from his sidewalk table in Sunset Harbour. “I mean, look around. There’s no other place in Miami like this. The city’s best chefs are here. And did we mention the food? Barely spanning three blocks, this micro-neighborhood is densely populated with both casual and upscale restaurants from some of Miami’s most beloved and under-the-radar chefs. Peppered into the mix are locally owned indie shops, a gourmet grocery store, and mod beauty salons and fitness studios, giving Sunset Harbour a decidedly laid-back and original feel. Miami’s craft beer scene continues to thrive with recent brewery openings (Bousa, Veza Sur), distribution expansions (Biscayne Bay, M.I.A.) and creative collaborations. J. Wakefield Brewing leads the pack in that last category. After Hurricane Maria, Wakefield and Lincoln’s Beard Brewing partnered to brew Coqui Rechazado, a tart beer made with guava, oranges and bay leaves, with all proceeds benefiting storm victims in Puerto Rico. Wakefield’s third-anniversary party, WakeFest, takes place February 17 in Wynwood. A slightly younger brewing outfit, The Tank opened its tap room last year in west Miami-Dade and is already churning out some fantastic only-in-Miami brews. Two years into their pursuit to raise the bar for locally roasted coffee, Chris Nolte and Paul Massard can measure their success by the numbers. The co-founders of Per’La Specialty Roasters, who became friends as undergrads at the University of Miami, are now roasting more than 1,100 pounds of beans every week; one of their Ethiopian coffees just won Per’La its first Good Food Award; and dozens of Miami chefs are pouring Per’La at their restaurants, including Jeremy Ford, Giorgio Rapicavoli and Jose Mendin. n building their illustrious fashion house, Domenico Dolce and Stefano Gabbana have always insisted that Sicily be a fundamental concept in everything they design — and that each piece is instantly recognizable as a Dolce & Gabbana. The duo can check off both of those boxes in its new collaboration with the design-focused Italian appliance maker Smeg. The brands commissioned Sicilian artists to hand-paint 100 one-of-a-kind refrigerators, each representing a slice of Italian life. This one, from artist Michelangelo Lacagnina, is called Taratatà, the name of a traditional song and dance said to help fertilize farmers’ fields in spring. Lacagnina’s colorful depictions of local produce, historic churches and — on top — a map of Sicily leave no doubt where this fridge is from or that D&G had a hand in it. $50,000.
