Trumpet Royale: Cook these beefy shrooms like you would a good piece of meat — roasted, grilled or sautéed. Oyster: Very tender and chewy, with a mild, almost sweet aroma and flavor. Grows in delicate clusters. Clamshell (Brown Beech): Fairly bitter when eaten raw, these come in clusters and feature chunky stems and tops. Chanterelle: Most often foraged, this stunningly beautiful, beloved variety has a fruity scent and nutty flavor.
