Fairtrade is about better prices, decent working conditions, local sustainability, and fair terms of trade for farmers and workers in the developing world and enables them to improve their position and have more control over their lives.
From fighting deforestation and climate change to building economic opportunities and better working conditions for rural people, the Rainforest Alliance is working to solve urgent environmental and social challenges.
Organic coffee means farmers don’t use unnecessary chemicals and pesticides - good news for plant and animal life. It’s also good news for farmers, organic certification means they command higher prices, on top of the Fairtrade premium.
CERT I FI E D CO FF E E Certified coffees take one or more aspects of sustainability into account. This means the coffee was grown in a healthy environment, is economically viable for farmers, promotes fairness among farmers and workers, or all three aspects. To us, certifications are not just badges, they’re principles. We were an early adopter of Fairtrade coffee back in 1991 and we continue to help certified cooperatives grow and improve.

DIRE C T T RA D E CO FF E E We are commited to buying as much of our coffee direct from the producer as possible to make sure we have full control over our quality as well as making sure that producers are paid fairly. Our target is to buy 90% of our coffee direct from the producer by 2023. (We need to leave a little room for certified coffee which comes from certified cooperatives).
We have 5 key targets for our direct trade coffee: 1. Full visibility. We can tell you about the farm, the farmer and their story. 2. The farmer receives a fair, sustainable price. Always above the Fairtrade minimum. 3. Our farmers commit to sustainable farming methods and best practice and refute child labour. 4. A continued micro-lot program. We regularly get ‘one-of-a-kind’ coffees which are unique, inherently seasonal and above all; sensational! 5. Guaranteed quality! Whether its speciality coffee or commodity coffee, we will always portray the coffee in its best light.

Mió is a coffee farm in Monte Santo de Minas, Brazil, that exports, imports, stores, and sells coffee. Coffee harvested with care by Mió workers. A family owned / run farm that has been in the family for over 100 years, it’s owned by Carlos and Renata Pellicer and promoted by their daughter Ana Luiza Pellicer.
The Farm
The farm spans a total of 1,589 hectares. A third of the land is used for the coffee processing and milling facilities, some pasture areas and the plantation of eucalyptus trees, which is home to some lovely bees. The rest of the land is equally divided between the coffee trees and the native forest reserve. MIO pride themselves on a 100% traceability guarantee for the entire crop every year. Each stage of the journey, from where the cherries were harvested, which trucks moved them, how and when they were processed, is tracked using satellite imagery. Being a technology-driven farm improves the farmworkers’ quality of life, ensures an abundant harvest and guarantees the highest processing standards for the crop.

A dry process, which doesn’t involve a wet-mill — considered the most eco-friendly coffee process there is. Used for most of Mió’s microlots to increase the fruity and citrus aromas while retaining the sweetness in the cup.
Honey
This involves the mechanical de-pulping of the cherries at the wet-mill while ensuring the mucilage stays attached to the beans. This sticky part of the cherry contains high amounts of sugar, resulting in a pronounced body and developed, chocolaty sweetness in Mió’s coffee.

EQ UA L I T Y I N C OF F E E FARMI NG Women in remote and rural coffee communities face a host of challenges that keep them trapped in poverty. Many of these isolated women live in male-dominated societies and have very little financial control or decision-making power. In 2003, 464 women farmers in Northern Peru decided to change this dynamic by separating their coffee production from the men’s. In that moment, for the first time, this group of women created their own product and income. Their coffee cooperative CECANOR joined their commercial partner Organic Products Trading Company (OPTCO) to create Café Femenino—a gender-focused program to support social justice and empowerment for women coffee producers worldwide.

The association that produces the Tacueyó Reserve coffee, Asprocrit, is made up of 540 families who each own a very small farm. Together they produce coffees that are distinctive in flavour and mouthfeel.
The Yirgacheffe region of Ethiopia is renown for some of the best coffee’s in the world and this wet-processed coffee is no exception; the coffee profile is high quality and full of floral and citrus tones, which makes for a delicious cup of coffee.
This firm favourite is cultivated on the farm that’s been in the Chaves de Brito family for three generations, and is run by the inimitable Ucha Lucia, her passion is clearly evident in this delightful coffee that works so well as either espresso or brewed coffee.

This sweet and nutty coffee is a blend of beans grown by female coffee farmers at the Café Femenino Cecanor Cooperative in Peru and beans farmed at Permato Gayo, a cooperative in the region of Sumatra.
A blend of beans from Brazil and El Salvador. The Cerrado itself is the youngest coffee growing area in Brazil and the rest comes from the El Molino Farm in El Salvador, one of the most important and significant estates that sits amongst the Apaneca Ilamatepec mountain range.

The Blue Mountain and Arusha varietals coupled with extremely fertile soils and high altitude growing regions (up to 2000 metres above sea level) combine to create a truly unique and characteristic coffee.
A clean and classic El Salvador with raisin, underlying gentle cherry and fig, grown by farmers on the El Molino farm. The beans are selected from the most productive Bourbon and Pacas trees on the farm by current owners Jose Antonio Jr and Antonio Salaverria.

TRAINING PR OG R A M M E S There are 3 levels of training available, each course adds points towards your SCA diploma which requires 100 points. Once earned the learner will be certified as a coffee professional. Foundation Level: 5 Points The Foundation level provides the first taste of a specific coffee discipline and is a great way to get insight into a module to help you decide if you want to go on to learn more. The Foundation level requires no previous experience. Courses at this level usually take 1 day. Intermediate Level: 10 Points The Intermediate level is suitable if you are already part of the industry, working in the field covered by the module, and have a firm knowledge of the basic skills. Experience working in the field is recommended for this level. Courses at the Intermediate level usually take a minimum of 2 days. Professional Level: 25 Points The Professional level is suitable if you want to pursue specialist knowledge at a high level in your subject. Success at this level should indicate to employers competence to work in the field. Extensive relevant experience is recommended before attempting this level. Candidates must hold the Intermediate qualification in the module before attempting the professional level. Courses at this level would be expected to take a minimum of 3 days.

This is where our Brand Champion Programme comes in, we will help to create that brand standard, then monitor it through mystery shopping visits and periodic brand guardian visits to train and educate staff.
3. Promotion
Having a robust marketing plan not only drives the bottom line but gives the customer assurance that the outlet is a forward thinking, consumer centric organisation that is staying abreast of food and drink innovations. We have created annual marketing plans for our customers taking into account, local competition, seasonality and current market trends.

What We Provide Brand Manual – A comprehensive manual of the whole concept, tailored to your operation, including; best practice guides, planograms, ordering and stocking protocol as well as all drinks recipes, ‘how to’ guides and cleaning regimens. Brand Standards – The first job of our Brand Champion Team is to work with you to produce your very own brand standard. This gets documented to form a key part in the brand manual and becomes the back bone of the whole operation. Brand Monitoring – Through regular mystery shopper visits and periodic visits from our Brand Champion Team, the standard of the whole coffee shop will be monitored and assessed in-line with the documented brand standards and reported back to your Senior Management Team.
