Singing is good for the soul. This is not just another wellbeing cliche, there’s a weighty body of scientific evidence to prove it. In one study, of choir members by Canterbury Christ Church University College scientists in the UK, 40 per cent of choristers said that “singing helps to make my mood more positive”. A bunch of other studies have found that singing can actually improve physical health, cut stress and anxiety levels, reduce pain and help breathing. So it stands to reason that our three divas (P14) are in a pretty good place. “But,” I hear myself saying, “they can actually hold a note! Of course they are happy because they sound beautiful, not the hoarse cat-pain wail that usually issues forth from my mouth (apart from SingStar. I rock at SingStar).” The studies also venture that it doesn’t matter if the vocaliser is in tune, it’s the very act of making that sound – having the courage to send your voice into the world – that brings the benefits. All I can say to that is thank heavens my car is soundproof, and my apologies to my neighbours.

It may be double the workload but Brisbane theatre doyenne Margi Brown Ash could not be happier performing two of her plays in one night. Margi, as the actor and writer, is thrilled that Eve and He Dreamed a Train, which were conceived as companion pieces, will finally be performed together. The hour-long plays, with an hour break between them, open at Visy Theatre, Brisbane Powerhouse tomorrow night (Thu, Jun 29). “It’s double the work and we have two different and very skilled directors to please,” Margi says. “But it’s such a wonderful opportunity to put on these works side by side because they were written to be performed together. “These plays have similar themes about home and belonging … and it’s interesting to see how the same space can be transformed with a different atmosphere.” Margi, 65, of Pullenvale, also values the opportunity of reworking material in the revival of the plays. The two-handers also feature her youngest child, Travis Ash, 25, who
performed He Dreamed a Train with his mother two years ago. He Dreamed a Train is a bittersweet autobiographical work about how a family can be disrupted when a loved one is diagnosed with a terminal illness. Margi plays a version of herself, a sister who chose a career in the arts, while Travis plays her real-life brother, David Brown, as a younger man who wants to revive the rural railway network. Margi says it has been almost six years since her older brother David was diagnosed with a degenerative disease. “He’s not good, he can’t move or eat but the thing which is very much alive is his spirit, and so you always come away inspired,” she says. Eve is about the balance between fulfilling an artistic and creative life as well as the demands of motherhood, based on the life of 20th-century political writer Eve Langley. Margi and her family moved to Brisbane in 1989 and she says even when her children were young she aimed to write, direct, produce or perform in a show every year. She first approached the subject of Eve in 1994, as the mother of four young children, but didn’t have time to finish the play until 2012. “Brisbane is a beautiful place to create art. We have opportunities here and we can afford to live as artists,” she says. Belinda Seeney We’d gorge on images of the sugary entities inside and compile a mental wish list Growing up, the most coveted and valuable of my family’s possessions was The Australian Women’s Weekly Children’s Birthday Cake Book. Its pages patched with stickytape, marked with dog-eared corners and tacky with smears of icing and batter, this baking bible reigned supreme from the top shelf of the pantry. Occasionally my siblings and I would scale the pantry shelves and sneak it down between birthdays. We’d gorge on images of the sugary entities inside and compile a mental wish list that took us well into our teenage years. I was a bit of a tomboy but I never could go past the Sweet Shop: a hacked-up vanilla sheet cake patched together with globs of pink icing and candy-striped paper bunting and decorated with a teeth-rotting quantity of boiled lollies, jubes and musk sticks. As a child, it was the most glorious cake I’d ever seen. As an adult, it’s fair to say it has lost a bit of its shine.
I went hunting for my own copy of the then-out-of-print book nearly 15 years ago and found one in a secondhand bookshop. The garish Choo Choo Train still adorned the cover, its jam roll locomotive pulling popcorn-laden, licorice-trimmed carriages on Mint Slice wheels. Brimming with childlike excitement, I cracked the spine and prepared to unleash the cookbook’s technicolour magic on my own child. It may have been breathtakingly beautiful when first published in 1980 but sadly the old girl was not ageing gracefully. As the pages turned, so did my stomach. Remember the Swimming Pool? Who decided that scooping out the guts of a perfectly edible chocolate cake and replacing it with jelly the colour of bile was appetising? And Rubber Ducky? A tortuous construction phase, an avalanche of fluffy buttercream then a
baffling instruction to top it with popcorn and crinkle-cut chips. Kids’ Birthday Cakes, a sequel to the bestseller, didn’t fare much better. The Palace of Dreams with its cluster of vertical spires – a delicate balancing act of cake, jam rolls and ice-cream cones – was a nightmare. A sea of black icing made the Ghostly Galleon ghastly and it wasn’t just the Echidna Ice-Cream Cake that was prone to meltdowns. My first attempt at replicating a Birthday Cake Book recipe – a simple number “1” – was an unmitigated disaster which was rescued only by one bottle of green food colouring, two bowls of icing and three gin and tonics. I learnt the hard way that “pillar box red” is actually hot pink and wholly unsuited to Spiderman’s complexion, that electric blue icing retains its colour as it passes through a child’s digestive tract and that there was a reason mum tried to hide the book up and away out of our reach.
Watching MasterChef makes me feel inadequate. I’m not much of a cook and that show makes me realise that. I used to eschew cooking programs. Except, of course, for Nigella’s. But now I have become fascinated with MasterChef and have been thinking of offering myself up for it. Not to cook, you understand, but rather to help the three amigos taste the stuff. Mind you, I could probably pick up a few tips while I was on set – God knows I need help. I love the idea of cooking, but who has time? We do a lot of Jamie Oliver’s half-hour and 15-minute meals at our place. But my repertoire in the kitchen is pretty slim. I do a nice stir-fried beef with black bean sauce and I make a mean bacon and eggs when required. When I was a student, I used to do a pretty good date loaf too. My mother wrote the recipe on a slip of
paper which I had pinned to the wall of our student digs. But you can only eat so much date loaf. I also had a chicken tarragon dish in my quiver although I’ve forgotten how that one goes. My soya sauce chicken still makes a semi-regular appearance though. That’s a secret family recipe so don’t ask me to reveal it. Cooking seems very therapeutic and I probably should have lessons one day. I probably should have joined the Thai cooking class my wife did at Phuket a few years ago. It was at the Blue Elephant Cooking School which is quite well known and is housed in an old colonial building in Phuket Town. The class included a trip to the local market, which my son and I went on. After that us boys just lounged around drinking coffee while my wife did her class and when it was over we were on hand to eat the results. We like to help where we can.
Phil Brown At the end of the meal I dabbed at the corners of my mouth with the napkin and said, “Our work is done.” I do like spicy food and used to cook a pretty mean curry. At our house, curry was always accompanied by lots of condiments and usually, because my father was mad for it, some Bombay duck, which is not duck at all but an Indian fish which is dried and can be sprinkled over your meal. When we were first married I cooked a curry for my wife and put the Bombay duck in the oven to crisp it but left it in for too long. When I went to see how it was going, I opened the oven to be greeted by a pungent cloud of smoke because the Bombay duck was burnt. No matter what I did, I couldn’t get rid of the pong and it was only halfway through the following morning that I realised the smoke had lodged in my hair. I got some funny looks that day.

She oozes glamour but Natalie Christie Peluso could not be further from the opera diva stereotype. “I’m a huge fan of leaving your diva persona on stage because I’m certainly very down to earth. I’m not a diva in the haughty sense but … singing is what I’m meant to do,” Natalie says. If she chose to, Natalie would have justification for acting the prima donna. She’s sung the key role of Zerlina in Don Giovanni at the Royal Opera House, Covent Garden, and has performed before Prince Charles. She has the lead in next month’s OperaQ production, Gilbert and Sullivan’s Ruddigore, or The Witch’s Curse, at QPAC Playhouse Theatre. Then Natalie, of Everton Hills, will head to Sydney to play Ottavia and Drusilla in the Pinchgut Opera production of Monteverdi’s Coronation of Poppea. Following that, it’s a yet-to-be-announced lead in an OperaQ production next year. At 42, Natalie says she is just hitting her prime. She points out that her idol Dame Joan Sutherland (1926-
2010) did not get her break until she was 37. “The operatic voice is like good wine, there’s a lot of depth and layers,” she says. “So much about singing is about what is going on with your voice and your head. It’s such a special instrument … while you can also bring more, psychologically and emotionally, as a more mature person.” Victoria-born Natalie, who won the Australian Singing Competition’s Marianne Mathy Scholarship, graduated from London’s Guildhall School of Music and Drama and was principal soprano at Welsh National Opera for five years, after getting her break playing Constance in Phyllida Lloyd’s production of The Carmelites. She has four children – Ava, 13, Sophia, 9, Dante, 7, and Isabella, 5 – with husband Antonio. “I’m so grateful to have had an early international singing career, then to have had time out to have my beautiful large family and then to be able to step straight back into a career,” she says. “As an opera singer you need to be very fit especially for this production (Ruddigore) because Lindy Hume (director) demands a lot physically from her performers.”

RISING DIVA Irena Lysiuk There was a time when Irena Lysiuk thought about pursuing her rock chick dreams, but now her hard work to become an opera singer is paying dividends as she secures her first main-stage diva role. She has the part of Gretel in OperaQ’s Hansel and Gretel, and this month will sing on the QPAC stage for the first time, in the chorus of Gilbert and Sullivan’s Ruddigore, or The Witch’s Curse. Yet two years ago Irena, 25, of Mt Gravatt, was well on her way to a pop career after her group Ava won acclaim on radio as a Triple J Unearthed band. “I love rowdy music and performing in bands but in the past few years I’ve taken classical music more seriously,” she says. “When you look into the world of opera you realise it’s a difficult profession. You need to know language, stagecraft and movement. “Gretel is a wonderful role … I’m nervous and excited to be in the foreground. I love getting on stage. If I could do it 24/7 I would. “I love the thrill of the theatre … you have to bring that special energy and I love transporting the audience somewhere else.” The former All Hallows’ School student says her dream is to sing the same roles as Dame Joan Sutherland because, like the Australian legend, she is also a coloratura soprano, and is developing her ability to produce notes above high C. “I’m working on being able to pop up to those ridiculously high notes with strength,” she says. Irena, who works at a Brisbane city restaurant, is saving money to head overseas and hopes to attend several auditions next year.

IN THE WINGS Anna Stephens Sitting in the stalls of London’s Royal Opera House, captivated by Sonya Yoncheva, one of the world’s biggest stars, Brisbane’s rising talent Anna Stephens realised that she had discovered the full meaning of opera diva. “Sonya was so captivating and her voice was so stunning. I think the whole opera diva thing comes from the glamour of it,” she says. Anna, 20, of Kenmore, has just returned from a six-month student exchange at London’s Guildhall School of Music and Drama. She was centre stage for the Queensland Conservatorium production of Chabrier’s L’Etoile and will play the Storybook Princess in
Ravel’s L’enfant et les sortileges. “There’s something really satisfying, having these amazing roles which have depth of emotion and playing make believe,” she says. “I like the challenge of the music and being on stage, the rush you get before a performance and the high afterwards.” Anna, who is completing her Honours at the Queensland Conservatorium, says it will take years to master all the qualities required to be an opera diva. “You need to learn stagecraft, to be able to move in costumes, to perfect your singing technique, to become proficient in languages such as Italian, French and German … and then there is the acting side,” she says. Anna received an OP1 but knew
she had chosen the right career path when she won the Elizabeth Muir undergraduate prize for the highest recital mark of her first year cohort at the Conservatorium. “I’ve always loved singing but I got serious at the end of Grade 12. I have launched a series of fifties, sixties, seventies and eighties dance parties at New Farm Bowls Club, and there will be a Kate Bush Day on Jul 15, and the 12th annual Brisbane Madonna Party, Australia’s biggest and longest-running Madonna party, at the Wickham Hotel, Fortitude Valley on Aug 19.
Why do you do it? All of my events stem from my own passions – retro music and cult/classic cinema. I grew up listening to the music of the sixties and seventies, and immersing myself in cinema from classic Hollywood. I realised from running these events, I am tapping into audiences and creative people who share similar interests.
How did you get into this line of work? When I left school, I wanted to form a The Rocky Horror Picture Show shadow cast. I succeeded in 2000 and we have continued, still performing to sellout Brisbane audiences.
Why film? Movies are historical artefacts – the perfect representation of a certain time and place. It started as a need to see some of my favourites on the big screen, then I realised that most movies attract a different atmosphere and crowd each time. I ask, “Is Brisbane ready for this type of event? Should I celebrate that anniversary?� It keeps things fresh and exciting.
What’s your favourite movie? A tie between The Rocky Horror Picture Show and Beyond the Valley of the Dolls. I would have seen Rocky Horror more than 1000 times for sure. kristianfletcher.com

Mojo man’s mission Taryn Davis Ashwin Segkar is mourning the death of rhythm. Now, the Paddington comedian is on a mission to help us get our groove back, through his one-man show at Metro Arts next month. “We used to have much more complex rhythms, but if you look at dance music now, we’ve really hit rock bottom,” he says. “It says something about the evolution of our culture.” He says his show is a mix of standup, drumming and video sketches, with a rhythmical music exercise as part of audience participation. “But don’t worry, it’s nothing too scary. It’s a way to get our mojo back.” The 30-something comic has been making waves since he landed on the scene about three years ago at Raw Comedy. Ashwin had a successful career in comedy writing, with an animated YouTube series, Boymongoose, attracting about 10 million views. But he says he didn’t have the nerve to try stand-up. “But then I thought, ‘What’s the worst that can happen?’ If you bomb on stage it’s no big deal.” His whip-smart wit and talent for working the crowd have earned him plaudits and ABC radio slots.
In this show, the globetrotting comedian will be sharing tales of a childhood spent as an outsider. As a child, Segkar lived in India, England, New Zealand and Malaysia before settling in Australia, and regales audiences with tales of cultural cringe and efforts to fit in. “When my parents are talking to relatives and they ask about me, my parents find it hard to explain I do a 10-minute slot at the Newmarket on a Wednesday night. It’s just not part of the culture. They’re all doctors and dentists – they’re not really involved in the arts.” Ashwin does about three gigs a week. He says it’s a craft that needs constant practise and fine tuning – particularly getting used to the heckling. “I was doing a gig down the coast, and these two meth addicts stood up and started having a fight outside the window right next to me. WHITNEY: CAN I BE ME (M) hhhkj Director: Nick Broomfield, Rudi Dolezal Starring: Whitney Houston, Bobby Brown Running time: 105 minutes If Whitney Houston’s rise was meteoric, her downward spiral was excruciatingly slow. “For 10 years or so I started waiting for the phone call we eventually got,” the singer’s longtime hair stylist and friend Ellin Lavar says in Nick Broomfield’s new documentary Whitney: Can I Be Me. Burt Bacharach recalls her “trainwreck” of a rehearsal for the 2000 Oscars. At midnight on the Friday, organisers made the call to replace Houston for the Sunday show. “It was the right decision,” he says. “It was live television. There was no salvation.” A year later, a shockingly emaciated Houston appears in a Michael Jackson tribute concert.
For the most part, however, Broomfield is judicious in his use of material from Houston’s final decade. “I didn’t dwell on her life at the end because I couldn’t. It was just too sad,” he told The Irish Times. Instead, the filmmaker uses neverbefore seen archival footage shot by German director Rudi Dolezal for an unfinished documentary about the singer’s 1999 My Love Is Your Love tour. Houston’s voice was damaged by drug use even then, but these
gospel-tinged live performances are extraordinarily powerful. “I’m playing behind her,” drummer Michael Baker says. “And I’m watching the muscles on her back expand. She was like a goddamn body builder. And that’s how she sang every night.” Can I Be Me has footage of Houston’s first solo performance, aged 12, at church. It canvasses the singer’s relationship with her domineering mother; her beloved father, who broke her heart when
he filed a $100 million lawsuit against her; her extremely close, possibly sexual relationship with best friend Robyn Crawford; and her tumultuous marriage to Bobby Brown (above, Crawford, Houston and Brown). Contrary to popular belief, the bad boy of R&B did not introduce her to drugs. She first dabbled, as a teenager, with her brothers Michael and Gary. “I taught her to drive. We played together – everything that you do together as you’re growing up – and then when you get into drugs, you do that together too and it just got out of hand,” Michael says. Can I Be Me is a touching, empathetic portrait of Houston as a daughter, mother, powerhouse performer and flawed human being. VICKI ROACH

Sizzling start RESTAURANT Tony Harper There is a dish at Nativo that’s a game changer: gamberi aglio e peperoncino. Translating to prawns with chilli and garlic ($21), the starter’s magic is in the hot platter – just like an old-school sizzling Mongolian lamb which caramelises the good bits, splits the sauce and makes for something that’s simple and truly delicious. Of course it wouldn’t be good without the benefit of decent prawns and a well-considered blend of other bits, but here everything is in sync. It could be merely OK, but there’s an aligning of the stars. It arrives with a hunk of toasted sourdough – a couple would be better to make good use of the delicious pan dripping. This is the best dish I eat at Nativo, not by a whole lot but there’s magic in the way the prawns rely on simple ingredients and time-tested technique. There’s also a really smart carpaccio of yellowfin tuna ($19), dressed with olive oil, slivers of fennel, basil, cress and crumbs of dehydrated olive. Again it’s a dish that doesn’t stray too far from the textbook (OK, the dehydrated olives are a good trick), but relies perfectly on simplicity and good ingredients. Vitello tonnato ($22), possibly my pick of all the Italian classics, looks artful; twirls of properly rare veal perched on pillows of creamy sauce with capers and leaves strewn over the lot. I hanker for a little more of that slightly drying, fishy character,

but this is a civilised rendition. That aside, it’s very good. In the mains, duck breast ($38) is better – again perfectly rare, partnered with a nicely intense jus, cherries, creamed chestnut, fennel and witlof. It’s wintry, earthy, delicious. There’s a good selection of pizzas (10 in total), a handful of pastas, four scallopini dishes ($30-$33) and greats such as osso bucco and lamb shank. It is truly good food that combines Italian tradition with elegant, understated, contemporary thought. And food is the high point of the

Nativo experience, with the drinks list coming in a close second, then a little daylight between them and service. Italian varietals, cunningly encompassing sauvignon blanc, chardonnay and pinot noir (no doubt to include New Zealand’s Craggy Range wines) account for the whole list. But it includes good Australian renditions of vermentino, arneis, fiano and nero d’avola. There is a decent sauternes list (well outside the Italian theme) and a collection of decent Barolo, Brunello, super Tuscans and their ilk. The serious stuff peaks at
$390 for a 2009 Aldo Conterno Barolo Cicala, but most of the list lives between $30 and $70 a bottle. Beers run from traditional labels such as Corona and Peroni to Australian independents (Stone and Wood, Feral, Red Hill) and a couple of imports. Nativo is the third restaurant to be opened by the NKB Group, and it’s the most complete. For a new venue, it feels well rehearsed and confident. Service is generally fast, friendly and attentive with the odd small lapse, but it’s the Nativo kitchen that spearheads this restaurant.

AM Coffee Anthology, city Strolling down Margaret St, I can’t resist the delicious, strong coffee aroma coming from Coffee Anthology. A sleek, modern industrial interior beckons throngs of city workers, enticing with a promise that each milkbased coffee will be served at 60C every time (unless you want it hotter). The menu is inventive and I took the opportunity to order The Paris Hilton. At a reasonable $14, this salad includes prosciutto, poached pear, walnuts, stilton blue cheese and fresh salad greens. It was a delight – I can’t wait to return for the coconut and cardamom panna cotta ($14) and the pumpkin spiced waffle ($17). Back in the early 1980s, I spent an entertaining and educational couple of hours with the late Carlo Corino, then chief winemaker for Mudgee’s Montrose Wines. Carlo was justifiably proud of a few reds he made from a few Italian varietals he had planted in the 1970s – barbera, sangiovese and nebbiolo – among the earliest planted in Australia. Sadly, there wasn’t a great deal of interest in non-mainstream varieties in those days, with shiraz and cabernet sauvignon ruling the red-wine drinkers’ roost and it was many years before people realised how well the alternatives could perform in Australian conditions. I was reminded of that meeting by the arrival of a half dozen bottles from David Hook Wines, based in the Hunter Valley. There were four Italian varietals from the 2015 vintage (barbera, sangiovese, nebbiolo and vermentino) and two blends, 2014 De Novo Bianco (chardonnay, sauvignon blanc, riesling and pinot grigio) and 2015 De Novo Rosso (barbera, nebbiolo and sangiovese). All the fruit for the wines came

from the Central Ranges of NSW, mostly around Mt Canobolas at Orange and from Young. They’re all very good examples of what these Italian varieties can do in Australia and a reminder of how food-friendly these wines can be. I’ve nothing against a big, rich Barossa or McLaren Vale shiraz. They can be amazingly complex and satisfying but it’s hard to team them with anything short of a big steak or roast beef. With the Hook wines, I enjoyed the sangiovese ($24-$30) with some grilled lamb chops, the barbera (same price) went well with Greek-
style lamb souvlaki and the vermentino ($28-$35) was a good match with a richer fish dish. The nebbiolo ($30-$38), with its earthy savoury fruit, dried flowers, raspberry and dark cherry and a long fine tannin finish, goes well with a hearty winter casserole, particularly those featuring mushrooms. All the wines, including the whites, were fermented and matured in older oak barrels and left on lees for six to 12 months, thus adding richness and complexity to the palate without overpowering the fruit with new oak. If you are after some well-made and true-to-variety Italians you could do worse than ask for these at fine wine outlets or contact the winery (davidhookwines.com.au). Sadly, Carlo, who left Montrose to help revive and revolutionise the wines of Sicily, died this year, far too early. His pioneering work with Italian varietals, along with Mark Lloyd at Coriole and the Brown family at Milawa, helped add an extra dimension to the Australian wine landscape. Tonya Turner A dark and cold worker’s cottage in Red Hill was transformed into a bright space usable all year round by owners David and Rachel. The pair brought architect Karen Ognibene from KO&Co Architecture on board to guide their home renovation. Built in the 1900s, the cottage had undergone some ill-fitting renovations in the 1950s and 1980s before the couple bought it, including a
false low ceiling that ran throughout the home. The positioning of the rooms was also a problem, with the kitchen tucked away at the back of the house separated from the living room at the front. “We wanted a relaxed area where everything could happen in one space, so when we had friends over we could be cooking or barbecuing and socialising at the same time. And it just didn’t have a good feel because of the compressed ceiling,” David says. One of the main challenges for Karen was working with the orientation of the block to bring enough light and warmth into the new open-plan kitchen, living, dining and outdoor rooms at the south-facing back of the house. A stepped ceiling with clerestory windows was designed to solve the

problem, allowing light and breezes into the rooms. “It’s one of the best ideas in the house,” David says. “In summer you can open up all the windows and it lets the breezes in, and in winter when the sun is lower it keeps the house quite warm. The old house was really dark and cold before – we were always looking for a jumper.” The false ceiling was also removed and the original three-metre-high ceiling reinstated. However, to create a sense of compression and release in the open-plan living area, a lower ceiling was installed in the kitchen and between the dining and living rooms. “It divides the space up into rooms, so it’s a distinct dining room, a distinct living and a distinct kitchen without having walls,” Karen says. It also solved the problem of hiding the airconditioning ducts. On the western wall, solid openings were integrated including timber louvres inside and casement windows outside. “For most parts of the day you can have them open but in the afternoon they keep the heat out,” Karen says.
The kitchen is separated from the western wall by an internal staircase and features a pressed metal splashback. Although the splashback was difficult to install, Karen says the result was well worth the effort. “It’s a contemporary kitchen otherwise, with just that little bit of nostalgia,” she says. The house was moved forward one metre on the block, and raised just under a metre to build an extra living
room, bathroom and laundry downstairs, in addition to a massive four-car garage to accommodate David and Rachel’s three cars, their campervan, bikes and a workshop. A bracing system was designed to create one large open area without any pesky posts in the way. “The result is amazing because you can utilise the whole space,” David says.
As the couple often travel for work and stay in motels, David says it’s a joy to return home now. “It feels like we’re coming home to a resort where we can just chill and relax,” he says. Tranquil retreat Tonya Turner This Carindale garden had served its owners well, seeing them through 20 years of family fun. But after the adult children moved out, the owners decided it was time for something more suitable for their new life as empty nesters. Landscape designer Aaron Worth of Utopia Landscape Design was brought in to create a more usable, and instantly calming, front yard that looks as good at night as it does during the day. First, the front yard was made more private with a fence – a mix of high, cement-rendered brick stretches broken by cutouts infilled with metal fence posts. A statement entry next to the driveway was created by combining a landing at the front gate, a feature planter, a wide path to the front door and a water feature. Retaining walls were built to level out the slope affecting the rest of the front yard. A bench seat was fitted, and the garden bed between it and the fence filled with bromeliads, glossy philodendron xanadu, heliconias, lush grasses and foliage. Savour the flavour Meat eaters and vegetarians alike will find savoury feasts in One Pan Roasts, a new cookbook by New York City food stylist and writer Molly Shuster. A compendium of comfort food, perfectly suited to winter nights, it includes standouts such as duck with apple and onions, red vegetable curry and this recipe for the perfect pork roast. Sunday lunch – sorted.
PORK SHOULDER ROAST INGREDIENTS 1 bone-in pork shoulder, about 3-3.5kg, left at room temperature for 1–2 hours before cooking Salt and freshly ground black pepper 1 bunch of rosemary, half leaves very finely chopped, half of stems reserved 1 bunch of sage, half leaves very finely chopped 650g parsnips, cut into short lengths, halved lengthways if large 2 onions, cut into fat wedges 500g pink lady apples (about 8)
METHOD Preheat oven to 220C. Using a sharp knife, score a cross-hatch pattern into the pork skin, leaving a thin layer of fat and being careful not to cut down to the flesh. Season pork well on all sides and into the score marks. Rub all over with chopped herbs. Place skinside up in a large roasting tin and roast for 30 mins. Lower heat to 160C. Cover tightly with foil and roast for four hours. Uncover, add parsnips, onions, apples and reserved herbs and toss with fat in the tin. Roast, uncovered, for about one hour 15 mins until pork is tender. Rest meat for 10 mins before serving. Serves 6.
