Strawberry Cake Preparation time: 30 minutes Serves: 8 • • • • • • •

125 g butter 1⁄2 cup caster sugar 2 eggs 1 teaspoon vanilla essence 2 cups self-raising flour, sifted 1⁄2 cup milk 1⁄2-1 cup fresh strawberries, mashed Strawberry essence (optional) • Strawberry icing • 3 medium strawberries, mashed 11⁄2 cups pure icing sugar

1. Preheat oven to 180°C (160°C fan-forced). 2. Lightly grease and line a 20 cm cake pan. 3. Beat the butter and sugar until light/fluffy. 4. Add eggs and vanilla, then beat until smooth 5. Fold in the flour and milk, mixing well. 6. Add strawberries to the mix and fold together, add strawberry essence. 7. Spoon mixture into the cake pan. 8. Bake for 40-45 minutes.Allow to cool. 9. Strawberry icing: Add icing sugar to strawberries, mix until combined. 10. Spread onto cold cake and serve.





White Chocolate & Rasberry Slice

Preparation time: 15 minutes or less • • • • • • • • • •

125 g butter 200 g white chocolate melts 3⁄4 plain flour 3⁄4 self raising flour 3 eggs 1 teaspoon vanilla 3⁄4 cup coconut 3⁄4 caster sugar 1 cup fresh or frozen raspberries Extra melted white chocolate, or icing sugar for serving

1. Lightly grease a slice tray and line base and two sides with baking paper. 2. Preheat oven to 180°C. 3. In a large mixing bowl, sift the flours, then add sugar and coconut. 4. Melt butter and white chocolate in the microwave, or in a saucepan over a very low heat. 5. Stir mixture until smooth. 6. Add eggs and vanilla and whisk until mixture thickens slightly. 7. Pour chocolate mixture into dry ingredients and stir until just combined. 8. Very gently fold raspberries through mixture. 9. Pour and spread the mixture into the prepared tray, then smooth the top. 10. Bake for approximately 30-40 minutes until golden brown on top. 11. Allow to cool before cutting into squares. 12. Serve warm or cold, drizzled with extra melted white chocolate or dusted with icing sugar.
