W H Y KO M B U C H A ? the history of kombucha began thousands of years ago and most likely began in china. initially kombucha was used to create alcoholic beverages but later focused on the fermentation of fruits and vegetables. it can be described now as a fermented sweet tea. tea is the foundation of kombucha with other ingredients i n c l u d i n g w a t e r, s u g a r, bacteria and yeast.
