Hughie’s Shaking Beef By Betsy Denson betsy@theleadernews.com
Tender filet mignon marinated for hours and then flame broiled on a hot wok so that the flavor is seared inside. Put your salivary glands on alert. Hughie’s Shaking Beef is The Leader’s entree of the month and a deal at $12. Readers Nicole Aboudaher and David Meng were two people who wrote in about the dish. “The meat is so flavorful and tender,” said Aboudaher while Meng simply called it “awesome.” Manager and cook Thinh Hoang is the brother of the
owner Peter Hoang and said that his passion is cooking: “I’ve been cooking all my life.” He said that Shaking Beef, along with Vietnamese noodles, is a must have at any Vietnamese restaurant but he is particularly proud of his version which has been a specialty since the restaurant opened in July of 2013. “We select the best beef and only marinate what we are going to use that day,” he said. “We cook it at a high temperature on the wok and add 5 or 6 cloves of garlic and half an onion. We don’t burn them but want them to be aromatic.” The dish is served with ei-
ther brown, fried or steamed rice and also a salad with a sweet, yet tangy, raspberry vinaigrette. Hoang also touts the lemon pepper dipping sauce for the meat. “It’s just fresh lemon, salt and pepper but people love it,” he said. Hoang is very appreciative not only of the restaurant staff but also the reception from the local community. “Your food could be the best but if there’s not support, then you won’t be successful.” Judging from the lack of empty tables at Hughie’s on any given night, it looks like there will be Shaking Beef for years to come.
Ben Fullelove is a self-proclaimed hophead. Translation: he appreciates a highly hopped beer. This has served him well as co-owner of The Petrol Station since 2005 and as a beer brewer, which he does as a contract brewer with Brash Brewing Company out of Massachusetts. Now, he is close to living his dream of owning his own brewery, right down the street from The Petrol Station. “It’s about half a mile away” he said. “We looked at 10 or Ben Fullelove visits with patron Emily Shaw on a recent Saturday. so places before we decided on this one. Little Bitty’s Famous Chicken Wings By Betsy Denson betsy@theleadernews.com
The Little Bitty Burger Barn may be under new ownership, but their Famous Chicken Wings are just as popular - and addictive - as ever according to Leader readers who named them Best Hot Wings in the Leader’s Choice awards last year. Manager Tonya Norris says that it’s the sauces and seasonings that make the wings such a standout. Options include: Mild, Hot, Nitro, Honey BBQ, Cajun, Lemon Pepper, Mango, Parmesan, Honey Mustard, Garlic, Thai Chili, Teriyaki or Pineapple Chipotle. All are served with ranch or blue cheese dressing and celery sticks. A new flavor, the Mango Thai Chili, came about after the wings in Norris’ to-go box got inadvertently mixed in with the mango. Thai Chili wings took top honors at Wingtoberfest last year. The 2013 entry, the jerk chicken wings took second. Darn you Underbelly. The size of the Little Bitty wing is also a plus. Norris said that people will either order them as a meal or an appetizer. You can also get a six piece with a burger, as many do.
The Tailgater basket pairs 10 wings with fries. If you get at least 10 wings you can get two different flavors. Popular parings are garlic and parmesan and teriyaki and BBQ. One flavor people don’t generally order: the Nitro. “Very few people can tolerate it,” said Norris.

Sarah Garvey likes to talk. Which makes her popular behind the bar at Frida’s Mexican Restaurant. She’s been the bartender at Frida’s since the bar opened two months ago and says that they have a lot of regulars already. Owner Diana Davila said that the bar is bringing in new customers and also increasing their food sales. New lighting on the sidewalk outside the restaurant makes it a more appealing nighttime hangout. On Fridays, there is live music courtesy of Alex Garza (aka Guitarzza). Review: Capellini’s a good overall experience ing Parents from the North had the Fettuccini Scampi, a mushroom and shrimpsupped up Fettuccini Alfredo, and the standard Spaghetti and Meatballs. The Bomber got the kid’s version of the classic, too, a half-sized bowl of spaghetti and marinara, but wasn’t really feeling their take on the dish (plus, it came out a good five minutes after the adult entrees). Like a lot of neighborhood Italian joints, Capellini’s is never going to win the James Beard Foundation’s Outstanding Restaurant Award, but it will provide you a more than agreeable offering of the Italian classics. Add in a live version of “Fly Me to the Moon,” only a buck per bottle corking fee and Cappelini’s Italian food can make you forget a faulty first impression.
Studewood Place Announces Restaurant Tenants The mixed-used development at 1111 Studewood Pl. has officially announced that Piatto Ristorante and Los Cucos will be opening on the first floor. Piatto is a family-owned Italian restaurant with a location in The Galleria area, while Los Cucos is a larger chain of Tex-Mex eateries throughout Houston and the surrounding areas. Verts Kebap coming to Yale German street food is coming to the Heights - specifically 107 Yale Street - in the near future. The Houston Business Journal first reported the Austin-based chain’s plans for expansion into Houston, including three other locations set to open in the greater Houston area. The fast food concept focuses on the German street food known as doner kebap, a sandwich similar to the Greek gyro made of rotisserie-cooked meats with Turkish seasonings, flatbread and sauce.
Bradley’s Fine Diner Opening Delayed Those salivating for a meal at Bradley’s Fine Diner at 191 Heights Blvd. will have to wait just a little longer than expected. The second-to-open sibling of the Ogden family’s growing Houston restaurant empire has delayed their opening due to a busted water line. The originally scheduled grand opening event to benefit Recipe Success was scheduled for March 15, but has
Coltivare’s Open Bar The Heights’ most popular new Italian restaurant (from the folks behind Revival Market) gave patrons yet another reason to wait hours for a seat when they finally procured their liquor license and officially stocked the bar. The selections are a study in Italian liquors with 23 amaros and fernets available for sipping, along with cocktails made from Italian spirits. Wine and beer are also available.
Roost Chef Comes to Oak Forest Where El Gran Malo once served infused tequilas, Montrose’s Roost’s chef, Kevin Naderi will be opening a new restaurant. Naderi promises to spill details soon, but remains mysterious on the concept at this time. Developing. I consider myself a patient patron at restaurants; it’s a rare occasion when Leader Eater contemplates leaving one in advance of ordering anything. But I found myself in this situation recently at Capellini’s on Main Street. Our family had been seated without menus and when they finally came (and we had one of our bottles of wine opened) we sat there. And sat there some more. Anyone who has a six-year-old knows that an evening meal out can turn into an unpleasant event if they don’t get some sustenance in them soon after arriving. Even a basket of bread can be a panacea. When we got to Capellini’s, self-described as “The Best B.Y.O.B in the Heights,” its dining room was filling up and a Frank Sinatra impersonator was setting up his gear. Clearly a popular place on a Friday night – families, young couples and even a large party had pulled together tables – there were only two servers attending to the now-near-capacity restaurant. But just as mine and The Bomber’s (my six-year-old going on 16) blood sugar (and tolerance) hit rock bottom and we were seriously contemplating a move to the exit, one of the waiting duo swung through with his pen and pad at the ready. Things then turned around in a hurry for Capellini’s. The bread showed up and the toasted slices were a basket of blessings as they went briskly sent through the small plates of oil and spices and into our bellies. As if to make up for the early wait, our appetizers were whisked out and although the Gambrini – shrimped-topped toast doused in a lemon butter sauce – will probably not make my list of top appetizers, Capellini’s Sausage and Peppers was divine. Typically Leader Eater isn’t keen on a pepper and onion medley but this dish, with a stout slick of tasty marinara and plenty of sliced sausage included, was an ideal topper for the bread, still warm in the basket. By this time, the Heights version of Ol’ Blue Eyes had his stark black suit and bright red tie tightened up and was belting out Sinatra renditions into a vintage Shure microphone. Capellini’s Chairman of the Board kept his shtick to a tolerable level, garnering a good response from the diners, who were beginning to sing-a-long more and more as the wine bottles brought from home got emptier and emptier. Bringing in a Frank Sinatra doppelganger for a Friday night dinner is a bold move because of the ease in which it could turn tacky in a hurry, but the room was digging him and six-year-olds can be enthralled with covers of “That’s Amore” (even if their dad is geekily trying to sing it note for note too). Leader Eater tested out Capellini’s Veal Piccatta, which had a touch too much tart in the sauce but the veal was decently prepared and the capers really helped round out the dish. The side of capellini pasta and its nice lemon butter wine sauce was perfect, the thin strands of pasta providing a light balance next to the veal. My Co-Pilot enjoyed the Pollo Capellini, which was basically just a version of Chicken Parmesan. The Winnebago-Driv-
Taking over the space that once hosted Oak Forest’s Popcorn Plus, Nuts, Etc. is Houston Panini & Provisions, currently in a soft opening phase that began on March 7. Co-owner Charles Martin calls it part farmers’ market, part sandwich shop, with lots of popcorn options still available for purchase. Martin explained they’re currently awaiting permits for the onsite kitchen, but have in the meantime been preparing sandwiches in a commissary kitchen, transporting them to the storefront and pressing them in-store. Once everything is firing on all cylinders, guests will be able to find not only fresh-pressed sandwiches, salads and popcorns, but prepared foods from vendors like Pat Greer’s Kitchen, Sinfull Bakery, Angela’s Oven and more.

the popular location, 1200 Durham Dr. McKibben has been adding different items to the menu. “I fell in love with the concept of creating a new menu,” said McKibben, who previously worked as a chef at the Atascocita Country Club, north of Houston. “I’m developing recipes that have been around for years, and putting my own twist on them.”
Woodrows Heights was previously known as Mardi Gras Grill. The overhaul of the menu has been gradual, as McKibben has to train his staff on how to cook the new items. One example is the Chicken Fried Steak. It used to be basic, but McKibben has upgraded it with fresh cut vegetables, and fried onion rings The Gourmet Hamburger

Shepherd Park Draught House’s Liz McCain Liz McCain has been working as a waitress/bartender at Shepherd Park Draught House, 3402 N. Shepherd Dr., for almost two years. “I love everything about it,” McCain said. “When I walked in for the interview, I said ‘and I’m home.” McCain, a Houston area native, has worked at bars and concert venues all over the city before coming to Shepherd Park. “There is a theme involved ‘there has to be music,’” McCain said. McCain has a Master’s degree in Chinese Medicine from the American College of Acupuncture and Oriental Medicine.
“I love (working in a restaurant, and acupuncture),” McCain said. “I just like helping people, so it all kind of falls hand in hand.” What’s your favorite drink at Shepherd Park? “I love our Bloody Marys. I think they’re just phenomenal. It has a really good flavor.” What’s your favorite dish? “The El Chito Burger. All of the flavors work together. It’s making my mouth water just talking about it.” Do you have a lot of regulars or a wide variety of folks?

“A lot of regulars, but since other Delicious Concepts entities have opened up, we’ve had more of a variety of people.” When you were working at concert venues, was it
difficult to bartend a show for a band you liked? “No, it’s the perfect situation. You can listen to music not be in the middle of the crowd.”

Scarborough names new football coach By Michael Sudhalter

Ajani Sanders remembers some of the advice he gained while playing for legendary football coach Lou Holtz at the University of Notre Dame. “One of the biggest things he told us was ‘never
Scarborough High. Sanders spent the past two seasons as the secondary coach at Klein Collins. “I felt like personally and professionally there was opportunity for growth and go back to the reasons why I became a coach‚“ said Sanders, a
1995 graduate of Northbrook High in Spring Branch ISD. The Spartans have lost 46 consecutive games, and head coach Jayson Merren stepped down to accept a position in the energy industry, in January.

LHN boys soccer falls in state semis The Lutheran High North boys soccer team finished the season with a 15-4 record after losing to district rival, Awty International, 4-0, in the TAPPS 4A semifinals on March 7 at St. Thomas High’s Granger Stadium. The Lions, who defeated Awty twice during the regular season, will compete at the 3A level next season. Grapevine Faith defeated Awty, 2-1, to win the 4A state title last Saturday. While TAPPS playoff soccer has wrapped up, the UIL is just beginning. The Scarborough boys soccer team, which reached the third round of the playoffs last season, will open the postseason on March 24 or 25 against Fort Bend Willowridge. The SHS girls qualified for the playoffs and will begin the postseason on March 24 or 25. The Reagan boys soccer team will play Austin High on Friday in a tiebreaker game to determine which team quali-

Houston ISD athletic director Marmion Dambrino, a Heights resident, was presented with the National Interscholastic Athletic Administrator Association’s Kelly Reeves State Award of Merit on March 3. The award recognizes an athletic administrator who has made significant contributions to national organizations which have impacted high school activities. Dambrino became HISD’s first female athletic director in 2010. She previously taught, served as a high school administrator and coached basketball, volleyball, track and swimming in the district. By Michael Sudhalter St. Pius X head football Blake Ware resigned this week to accept the offensive coordinator position at New Caney, a UIL Class 5A program in Montgomery County. Ware’s son, SPX sophomore quarterback Timmy Ware, will follow his father to New Caney later this month. The younger Ware had a breakout season, finishing with more than 3,000 yards of total offense last fall. Coach Ware broke the news to his players last week. “It was the hardest thing ever,” Ware said. “They worked hard, and they deserve the best. I appreciate them so much for their effort. It was a hard decision because
I have an incredible love for St. Pius X. Wherever I go, I’ll always love St. Pius X.” Ware expects that his son will make a smooth transition to the NCHS Eagles, who finished 2-8 last season. “He’s fired up, he’s excited,” Ware said. “He’s pretty good at what he does. He knows the offense and what we do.” Ware, who arrived at SPX after coaching at The Woodlands Christian, went 20-15 in three seasons, with two trips to the TAPPS 5A State Quarterfinals. In 2012, the Panthers, led by senior All-American quarterback Kohl Stewart, defeated Sealy High at Parsley Field in a nationally televised game on ESPNU. SPX athletic director Jason Kimball said he expects to name a new coach soon.

ed a fifth season of eligibility. Last fall, Mark only played in three games due to injury. In 2012, Mark was an AllAmerican as a punt specialist and helped lead the Wildcats to their first bowl victory in 64 years, a 34-20 triumph over Mississippi State in the Gator Bowl. Northwestern opens its season on Aug. 30 vs. Cal. Henderson coaching in Austin
Former Reagan High boys basketball coach Thomas Henderson served as an assistant coach at the University of St. Thomas last season. He just completed his first season as a collegiate head coach at Huston-Tillotson University in Austin. With a lot of young players on the team, the Rams finished 8-21 this season. One of his players, freshman guard Sterling Lampley, played for him at Reagan.
