Keeping the barbecue tradition alive, vibrant By Christina Martinez christina@theleadernews.com Walk into Pizzitola’s Barbecue restaurant off of North Shepherd and you’ll find history written on the walls. Travel back in time to the 1930s and Shepherd Drive would look a bit different. Interstate 10 had not yet swallowed up everything in its tracks, and a neighborhood family barbecue joint sat where I-10 and Shepherd intersect now: Shepherd Drive Barbecue Stand. The stand was run by John and Lela Davis and, at the time, segregation was in full force. Most restaurants were following the Jim Crow laws – blacks enter through the back and whites through the front. But this wasn’t the case when it came to Houston barbecue, and to Shepherd Drive Barbecue Stand barbecue. Blacks came through the front and sat in Davis’s table ser-
vice restaurant and whites entered, ordered and sat in the back. Eventually, I-10 made its way to Houston and the stand was relocated to 1703 Shepherd Dr. One customer in particular has fond memories of eating brisket with his father back in the day. “The place was known for its brisket,” Pizzitola’s Barbecue owner Jerry Pizzitola said. “My father loved barbecue and would bring me to eat with him and it was like clockwork. John didn’t open the doors until the stroke of noon and the line was already out the door. This wasn’t a place you were going to get a quick meal, but the wait was well worth it.” The Davis family eventually decided to get out of the barbecue business and Jerry Pizzitola, a recent graduate from Texas A&M UniSee Pizzitola P. 7B

Get to know your grill. A great understanding of what you are using can go a long way to having a great cooked meal. Read your manual, ask questions to professionals, watch videos online of people cooking on your style of grill and never be afraid to ask questions. No question is a dumb question when you are grilling! Test out your grill before entertaining others. Give yourself a few cooks on your grill to understand how it heats up, where it may lack in heating capacity and how long it takes to cook certain things. Familiarizing yourself with the cooking system of your grill will ensure the best cooks. Always maintain the main components of your grill.

Keep your grates as clean as possible by burning off the excess grease and drippings after every cook. Continue this the next time you cook by using a well-made grill brush to clean off the grates.

Once a month, clean off your burners with a wire brush to assure that you are getting an even flame and heat distribution throughout the grill. If you are using a charcoal grill, clean out any ash build up and make sure there are no airflow restrictions for proper heating.

Before each cook, have a plan of action. Ask yourself the following questions: What will I cook? How many am I cooking for and what do I have in my fridge and pantry that I can use for the cook?
Marinate and rub in advance. Some of the best competition grilled foods are marinated overnight and we think no differently when it comes to the meat going on your grill. Some things, like steak, don’t need to be marinated overnight, but if you have some chicken or nice fajita, cooking the next day after being marinated overnight is a great option. Always preheat your grill. It doesn’t matter if it’s the most expensive grill or a simple Weber Charcoal grill, preheating your grill helps to reduce sticking and ensure that you get that even cook all the way through. Once your grill is preheated, you can begin your cook.
Diversify! Try to use zones when you are cooking to be more versatile in your cook and get more done. Try reverse searing for an amazing steak. Simply zone your grill into a hot and low side or if you have enough space you can do Hot, Medium, and Low. Once your zones are at proper temp put the steak on the low side for a tick, then transfer to the high heat side for a lovely char and sear crust.

from when they were young,” he said. “I learned to barbeque from my father and uncle, and when I was older I picked up my own tastes. Whatever we do here, we want to win people over with good food, and almost as important, a good experience.” He sometimes thinks about opening another location and says they’ve had offers from Humble, Sugarland, Katy, and Pearland, but the importance of family time has put the brakes on expansion plans for now. Of operating a restaurant in the social media age, Gatlin says that people have a right to say what they want and he welcomes constructive criticism. “I like to know and I have thick skin,” he said. “You know who you are and what you

on the north side of 610. “We were down three and a half months,” Gatlin said, referring to the permitting delays in opening. “That first Saturday, there was no way to know how people were going to react or how many were going to show up. We had new staff and were meeting new customers.” They quickly got up to speed with the quantities needed to keep up with a barbecue loving public. “We wanted to figure out the right amount,” he said. “We didn’t want to cook and reheat.” While asking Gatlin to pick menu favorites is like asking a parent to choose a favorite child, he was game. “For sides, I like the cucumbers and tomato salad, the dirty rice, and the mac and cheese,” he said. “They’re all
have to offer.” He laughs about an early complaint from someone who didn’t think parking was at all adequate. “I said, they must have not visited us on 19th,” he said. Gatlin is appreciative of all the good reviews from the neighborhood and says it keeps him motivated. “You really relish in that, that people do like what you do,” he said. “It gives you hope.”

“You don’t go to school for barbecue,” said Gatlin’s BBQ’s Greg Gatlin. Or at least, you couldn’t, until recently. Gatlin, a Rice University graduate working in business until he opened up Gatlin’s BBQ with mother Mary in 2010, just returned from a barbeque seminar organized by Texas A&M’s Meat Sciences department. The topics included pit design and meat flavoring, wood anatomy, and yes, carcass cutting. “They rolled the racks out with a whole side of a cow and a pig,” said Gatlin. “People learned about the anatomy and how to cut.” Gatlin, along with Joe Riscky from Riscky’s Barbeque in Fort Worth and Ryan Zboril who owns Pitt’s & Spitt’s in Houston, was there to pass along his knowledge to others – some of whom came from as far as Massachusetts – but says there’s always something for him to learn too. “I build on my knowledge base,” he said, noting that he found the sessions about the chemistry of wood especially interesting. “They talked about the process of how wood combusts and turns to coal,” said Gatlin. “When it’s burning soot, you don’t want to put your meat in because it’s not clean fuel.” Although Gatlin uses a traditional offset pit, he said the seminar covered other ways to construct a pit too, including reverse flow which provides another way to even out the temperatures across the length and width of the pit. When the talk got around to seasonings, Gatlin said he was able to share some things he’s learned without giving away too many of Gatlin’s secrets. “There are a lot of different flavor profiles and influences, including Spanish, Latin and even Mediterranean,” he said. “Of course salt and pepper is a base. You just need to be careful with the potency of additional spices. Sometimes a little goes a long way.” Gatlin’s will celebrate their one-year anniversary in their

Father of two turns hobby into craft I had lunch with my friend Mike Peyton to talk about options for getting his art out “there” and recognized. Not all art is as easy to market as paintings or photography. Peyton creates sculptures out of gourds and then embellishes [some] with various objects and adds intricate patterns and designs with extreme detail, all freehand and amazingly all with Sharpie pens. Much of his work is inspired by the Anasazi Indian art, but Peyton’s animals, snakes and shaman really do stand out. Gourd art is probably as old as cave drawings and fairly common today, too. Not quite like the six foot tall sculptures I’ve seen Peyton make. Peyton hasn’t always been an artist, but lately he’s been exploring ways to take it full time. Hence our lunch. He tells me that about ten years ago he had to make a few lifestyle changes; being a single father to two young boys, he needed a hobby. Pre-children, when money didn’t vanish so quickly, Peyton was an avid art collector and one day while looking at his familiar, no longer growing collection, he wanted something new. He decided to do it himself. Using scrap wood and a band saw, Peyton created his first works of art, 2D Oaxacan lizards to fill the transom window openings in his house. Then a chance online purchase of some gourds got him started on the cheap. Today, with awards under his belt, like best in show at the prestigious Southwest Gourd Fine Art Show, two years in a row I might add, Peyton has come a long way from just looking for ways to fill his evenings at home with his boys. His work covers a wide range of sizes and subjects, from both functional and formal styled bowl shapes, to animals like lizards, snakes and crows. There are a few “aliens” in the mix and a few that are even re-purposed after losing battles with his boys. His signature work, though, are highly intricate, interwoven pieces that range in size from a couple of feet in diameter to standing at over six feet. Some of this work takes upwards of six months to complete. That’s gotta be a lot of Sharpies! Notice is hereby given that the United States Department of the Interior is hereby commencing a forfeiture proceeding against the following items of wildlife or wildlife products, which were seized at the Cargo Facility at the Houston Seaport in the Southern District of Texas on the date indicated because they were involved in one or more violations of any of the following laws: Endangered Species Act (16 USC 1538(D)): Import/Export - License; Endangered Species Act (16 USC 1538(c)): CITES Violation. Any person with an ownership or financial interest in said items who desires to claim them must file a claim with the U.S. Fish and Wildlife Service, Office of Law Enforcement, 19241 David Memorial Drive, Suite 175, Shenandoah, Texas, 77385. Choosing the right cut for your barbecue By Rebecca Kroger For The Leader With almost 60 years of experience in the meat business, B&W Meat Co., located at 4801 N. Shepherd Dr., and its employees know exactly what to look for when shopping for the best barbecue. When shopping for a good piece of meat, the most important thing to look for is the marbling of fat on the cut. Marbling refers to the white streaks of fat within the lean sections of a piece of meat. Romeo M., a worker for the B&W Meat Company says that “marbling is what brings out the flavor in a cut.” Marbling also determines the quality of the meat. “There are three grades of meat,” Romeo said. “Prime, choice and select. Prime is the top rate meat, while select is the cheapest.”
B&W Meat Company is a meat packing industry that started in 1959 and still continues to provide fresh meats, according to the group’s website. “B&W is an old style butcher shop” said Romeo. “If you have ever seen the scene from Rocky where he is punching meat on hooks, then you know how we prepare meats.” Unlike meat at the grocery store that is pre-packaged and pre-cut, B&W’s meat is fresh off the animal and can be cut in any preference made by the customer. Although B&W has the regular and popular meats like ribeye, brisket and chicken, they also have some unique meats as well. A customer can get frog legs, rabbit, alligator meat, and much more. Pizzitola from P. 1B versity who came from an industry family that had a love for barbecue, knew this was his next step. Fast forward to 2016, and the Pizzitola family has been running the business and following some of the Davis family traditions since 1983. “Most barbecue places aren’t table service, not saying they should be, but John Davis had table service and that is something we continue,” Pizzitola said. A mainstay you can find at Pizzitola’s, one that is historically unique, are the brick pits they cook on. Each brick that you find within the kitchen has been relocated from the original Davis family location. “No one opens a place today with this type of pit,” Pizzitola said. “This is just the way they did it in the old days. It can be tedious, but it makes all the difference in the flavor. Those bricks
have 80 years of seasoning.” There’s a couple of things that Pizzitola’s stands by. First, Pizzitola gives gratitude to his dedicated staff, two that he’s had from day one and a third that just recently passed. Second, is their spareribs and table service. Pizzitola said that utensils are important here when it comes to enjoying a sparerib properly, and they’ll continue to stand by linen napkins, a hot towel at the end of your meal and the servers who provide that service. The sign may read Pizzitola’s Barbcue, but Pizzitola still sees it as Davis’ institution and says he’s just working to keep the love of barbecue and the sparerib tradition vibrant. His mother’s dessert recipes on the menu and Wednesday dine-in specials are the icing on top of the cake.

There has been a lot of talk about neighborhood name affiliations lately and there’s a brand new restaurant that finally got it right: Liberty Kitchen Garden Oaks. I had dinner at the newly opened restaurant this week and everything went swimmingly from the start. My server made a great drink recommendation with the Liberty mimosa and deviled eggs with bacon jam to start, shout out to Kandra. The trout was for dinner and pie for desert. All great dishes, but that’s no surprise with Robert Hebert at the head of the kitchen, previously at the Heights location. The interior of Liberty Kitchen Garden Oaks is beautifully done and the restaurant group made the most of the space as they can seat 125 people. Bar manager Mark Edwards says Liberty Kitchen loves the neighborhood because many, like him, live in the neighborhood. Find them at 3715 Alba 77018.
