I’ve got a better argument By Christina Martinez christina@theleadernews.com I moved to Houston a year and a half ago, from San Antonio. When I first moved to the city, I rented a house in Garden Oaks, and days after my arrival, my great uncle called with his neighborhood recommendations. He gave me everything from grandma Tex-Mex restaurants, to where to get my oil changed. The one that stuck out the most was the Garden Oaks icehouse. My forgetful uncle couldn’t remember the name of the place, but claimed it to be one of Houston’s best. Those words stuck with me. For the next couple weeks I walked the neighborhood in eager search for this holy land. Finally, after an evening run, I stumbled upon the mecca – Petrol Station. It was everything my uncle said it would be and everything I wanted it to be. Within our Big Beer issue, you can find evidence on these pages that show how much Houston has taken off in the beer industry, leading Texas in production numbers. Even with just a walk into your local icehouse, you can see proof with Houston taps dominating the tap wall, even inching out big name domestics. Something I find interesting is the culture that has developed with this beer boom, specifically brand loyalty. My story is testament to that brand loyalty. Brock Wagner likes to say that what he did in 1994 turned out to be brilliant in 2006. And just what was that? Well, if you’re at all into craft beer you know that Wagner, along with former partner Kevin Bartol, founded Saint Arnold Brewing Company, originally located at 290 and 34th Street. As with any startup, Wagner was a jack of all trades. “It was me and a partner and one other employee,” Wagner said. “I brewed, I cleaned the floor, you name it, I did it.” When Saint Arnold opened, Wagner thought they’d be the only brewery in town for about five years. It turned out to be fifteen. Craft beer didn’t have the following then as it does now and Wagner describes some of the
early years as “brutal.” But he persevered, brewing high quality beer and then educating the public about it through tours and tastings. Over time, the public’s view of beer evolved. They outgrew their space in Northwest Houston and in 2010 moved into a three story, 104,000-square-foot building just north of downtown that can be easily seen from the highway. Today, there are 80 full time employees and “an army” of part time people. According to marketing director Lennie Ambrose, last year they brewed around 63,000 barrels of beer. There are two meeting rooms for receptions, meetings and other events – one that seats 300 and one that holds 100. Local residents tap into home brewing, growing By Betsy Denson betsy@theleadernews.com Brewing beer is not just a commercial enterprise in The Leader area. Increasingly, more people are brewing beer as a hobby, but that doesn’t mean that they aren’t serious about it. Farmboy Brew Shop, 3814 North Shepherd Drive, just celebrated its year anniversary. The shop offers classes, equipment, hops and other ingredients as well as hands on help and tutorials to those looking to brew beer. “It’s a good milestone to have,” said Natalie Weiershausen who works a day job as a civil engineer while helping her husband Landon out with the shop on weekends. Weiershausen said that they started a local group, Brewers of the Hood, a couple of months before the store opened. About six months ago, the group, with about 25 active members, became an official club under seperate leadership although they are still affiliated with Farmboy. Vice-president Sean McClure said the group holds events each month, such as bottle shares and style meetings where they talk about what goes into making a particular style of beer. They also have three to four beer competitions each year where professional brewers evaluate the entries. While it might seem daunting to the uninitiated, Weiershausen says that anyone can brew their own beer. “It’s as easy as you want it to be,” she said. With an extract, the process takes half the time, but for those who really want to get into it – they can go “all grain.” All-grain brewing is the process in which the brewers create
By Jonathan Garris jgarris@theleadernews.com Johnny Orr, proprietor of Premium Draught on Studewood Street, said he’s been running into the best problem to have as a business owner and craft beer establishment. Three years ago, Orr said he was fighting with breweries and retailers alike over limited supplies for craft brews. These days, the market has pulled a one-eighty. “I call it a first-world beer problem,” Orr said with a laugh. “I was doing ordering and I couldn’t pick which beers to order because there are so many good ones. I was so overwhelmed and I didn’t know what to bring in to satisfy my customers.” In just those three short years much has changed, on both a local level here in the Heights area and statewide in terms of legislation making it easier for craft brews to share their creations with specialty stores like Premium Draught. Karbach, Town in City, Brash Brewery and others here in the Leader area have been big pieces of the ever-changing and diverse Houston beer scene. With 117 craft breweries statewide, up from about 60 in 2011, the rising number of craft brewers contributes an estimated $3.8 billion to the Texas economy, according to the Brewers Association. That $3.8 billion places Texas at third place behind Pennslyvania and California, second and first respectively, and the state ranks eighth in the total number of breweries and seventh in barrels of craft beer produced per year at over 982,000. Yoga instructors take class to new level, venue By Kim Hogstrom For The Leader While yoga classes are not necessarily remarkable these days, the location of one in The Leader area certainly is. This class was held at Karbach Brewing Company, located at 2032 Karbach St. on the edge of the Houston Heights and attracts a diverse set of residents. The students in attendance seemed to thoroughly enjoy the experience. Music gently encouraged the motion of their bodies, while the chirping of birds drifted in on the breeze through big, open doors. When the class was complete, the students retired to the Karbach Brewery taproom to enjoy Karbach’s handcrafted beer. What is the name of this creative, new concept? Yoga and Hops, of course. The creator of the program said the classes started off small but have since ballooned into large gatherings. “I have been an instructor for years,” said Yoga and Hops co-owner Angie Homb. “One day I was driving by the 8th Wonder Brewery and thought that it would a be a cool place to hold a yoga class, so I called them. In our first class, we had nine students, and we worked our way up. Soon, we had 80.” Homb and her Yoga and Hops co-owner Cindy Agnew launched their company in 2014. The one-hour class costs $20 and includes three glasses of handcrafted beer, specific to the brewery hosting the event. Karbach Brewing Company is thrilled to have the class. “We know it is unusual, but it is also well within the sort of activity we support,” said Karbach Retail Manager, Drew Goodman. “We are always interested in matters of health and exercise, and Angie and Cindy are great instructors.” Yoga and Hops has been such a success that Homb and Agnew now have classes scheduled in Katy, and Sugar Land, with more breweries to be put on the schedule in the works. What explains this phenom-
enon? “I hadn’t done yoga in 10 years, and it is fun to get my moves back,” said student Monica Garcia. “It feels great and then there’s the beer.” “I am here because I work behind a computer all day and I need to stretch,” explained student Corey Marx. “The exercise helps me make it through a workday, and the beer after class doesn’t hurt either.” The two owners are quick to point out that their classes are by no means limited to 20something-year-olds, stating that there is a healthy mix of people in their 40s, 50s and 60s who attend regularly. “We want everyone to feel welcomed at Yoga and Hops, because everyone is welcomed,” Homb said. “What we really do is bring together a community to have fun, get some exercise and make new friends. Our students leave feeling good, with ten new friends, and who doesn’t love that?” As part of the Karbachtoberfest, Yoga and Hops will be conducting a class in the Karbach Brewery Biergarten from 11 a.m. to noon on Sunday, Oct. 25.

Now Ben is brewing his crazy concoctions, delivering it all across Houston and I can’t get enough of his brews. Everyone has a story like this. Whether the first Houston beer you tried was from Brash, Saint Arnold, Karbach or Town In City, everyone has a memory of their favorite Houston beer and that is what makes this issue so great. Some of you will turn to page three and see Town In City highlighting their City Porter and you will remember the first beer you tried of theirs on their beautiful patio. Maybe you’ll see the owner of Premium Draught at the bottom of this page and remember him greeting you into his business and recommending one of the best Houston beers you’ve ever had. There’s a talking point that goes with special issues like
the one we’re bringing you this week, one that resonates in the beer community and and that’s the craft versus crap argument. I’m sure you can guess what side of the argument I’m on, but I could care less about this arguement because people will always drink what they like, and I hope you always do. A better talking point to this argument is how our backyards have become a staple in the Houston beer industry and several are neighbors to many of us. These neighbors are brewing fresh beer and bringing business into our area and on most days, you can walk into many of these places, shake hands with the owners or the head brewer and remember the face behind the beer. That’s the talking point that I like and the beer that I want to drink. Plus, beer that’s walking distance from home always seems to taste a little better, don’t you think? Cheers! fter working at a couple beer bars here in Houston, gaining experience with imports, specialty beer, and observing the market, Johnny Orr decided to change gears and open up his own beer shop that specialized in growler fills, and a mix and match selection of craft beer. “We wanted to create an environment that was friendly, comfortable and human,” Orr said. “Where there’s interaction around beer, but something different from a pub.”

A look back into icehouse history with the Heights’ oldest species By Kim Hogstrom For The Leader What exactly is a Texas icehouse? Some argue that it’s a structure with a bar inside, a large outdoor seating area, and one that serves beer. However, icehouse purists insist that a real Texas icehouse is an open-air building, serves beer iced down in big tubs, and that any hint of air-conditioning eliminates nearly every possible contender. While disagreements persist regarding the definition, there is one aspect on which all agree - Texas icehouses are an endangered species. Heights resident Jimmy Murray opened his small grocery and ice store at 2803 White Oak Dr. in 1945, but Murray quickly changed his mind. “It was soon that Jimmy said, ‘to hell with this, all we are selling is ice and beer, I’m calling it Jimmy’s Ice House from now on,’” said today’s owner and manager, Eric Quinn. “Then Jimmy brought in dominoes and opened for business at 7 a.m., every day of the year. He never looked back.” “A lot of the customers here have been coming for 20 years or more,” said regular patron Pat Haley, who considers himself a newcomer with only 10 years to his credit. “It’s a wonderful crowd; all ages and backgrounds, working folks and millionaires. And there are no scuffles, ever. On Sundays, we even have potlucks.” Still, as the Heights have changed, so have the patrons of Jimmy’s.
“Unfortunately, we’ve held a number of wakes for regular customers recently,” Quinn said. “With the influx of new people to the area, we are also seeing a younger crowd, but they enjoy it. They always come back.” Is Jimmy’s a true Texas classic? Would it pass the “real icehouse” test? Earmarks, purists insist, include low prices and a blaring lack of pretension. While the selection of beer is modern at Jimmy’s, the prices seem to be stuck in the 1980s, and the wine list is memorable. It’s a large book with a stunning, hand-painted tableau on the front. Inside, one finds only three words. No offer of glass or bottle, no graduated prices and no fruity descriptions. The three words are “Red,” “White” and “Pink,” with “Pink” crossed-out by hand. “Yeah, we got rid of pink,” said Quinn, laughing. Sadly, icehouses in Texas are all but gone. For nearly a century they thrived in working class communities, and on the edge of urban development. Then, in the 1990s, suburban flight reversed itself and people flocked back to cities. Treasured icehouses found themselves suddenly sitting on gentrified, highly desirable real estate. Many were sold to developers for the dirt beneath. But Jimmy’s is holding its own. It remains in the care of the Murray family to this day, and there are no plans to change that. On the question of air-conditioning, Quinn is quick to step up. “I want to show you our air-conditioning units,” he said, pointing at one of several 5foot industrial fans basking the bar area in a cool breeze. “They really do the job, and they last forever.”

Erik Ogershok, a brewmaster and beer veteran who helped develop brews at Real Ale Brewing Co., will be helping Delicious Concepts open their new brewpub over at the former site of The El Cantina in the Heights. The establishment will offer a full kitchen alongside its brews and Ogershok says he’s looking forward to being in a part of Houston that is so excited to embrace its new local brews. “I think there is good energy in the Heights from what I’ve seen so far,” Ogershock said. “There’s a lot of momentum for craft beer in the area if you look at the cool places that have been opening.” Ogershok says Houston is actually quite young when it comes to its beer scene, and its beer “identity” hasn’t matured as quickly as other parts of the country – something that he noted when he moved to Texas years ago. That means this area is prime real estate for brewers both big and small to make an impact with aficionados and casual drinkers alike. “At the time [I moved back to Texas], I thought Texas in general was about eight years behind the craft beer movement,” Ogershok said. “Texas has caught up a little bit, but it’s still behind as far as some of the beer knowledge and technique is concerned. I’m not sure why people weren’t building breweries sooner but that’s obviously changed.” Brewing change The desire for brewers to build their establishments might have been stymied by a complex legal code that only got clarification on a state level in 2013. A production cap for brewpubs, previously limited at 5,000 barrels per year, was raised to 10,000 barrels per year. A Brewer’s Permit bill also addressed production limits – previously, producers making less than 75,000 barrels per year could self-distribute any amount, however this production limit was raised to 125,000. Perhaps one of the biggest changes came in bill SB 518. Producers traditionally could conduct samplings of their products off premises, but could not sell directly to consumers or serve other producers’ beverages.
“Before the new legislation it was kind of a backdoor exchange between brewers and customers,” Orr said. “You paid for a tour and got a ‘complimentary’ beer tasting afterwards. You’re not paying for it directly.” SB 518 altered the law, stating producers making less than 225,000 barrels per year may sell up to 5,000 barrels per year of what they make to customers for on-premises consumption – until midnight, seven days a week of course. Because these changes have come relatively recently, some breweries have been slow to adopt having things like a taproom to offer tastings to customers. However, with the recent growth and more philosophical change in the beer market, particularly in the Heights area, business owners like Orr say that is changing. “Saint Arnold’s and Karbach were both ahead of the game with their offerings as both had deep pockets,” Orr said. “Others haven’t quite embraced the idea of a taproom to its full potential, but I think a lot of breweries opening up have that in mind as it offers a new revenue stream from having people able to drink on site.” Many of these smaller breweries are using their taproom as part of a strategy to concentrate on smaller, more dedicated areas, Orr says. Not so much an entire city or even region of Texas, the best customers that can walk in to these local taprooms are often right in their own neighborhood. All of these smaller beer communities, particularly here in the Heights and Northwest Houston, adds up into a beer identity that is still very much in development. “I don’t know if it’s possible for a city as large as this to have a singular identity through beer,” Ogershok said. “I think what might be closer to developing would be an attitude about brewing beer more so than a particular style.” That sort of uncertainty is a goldmine for businessmen like Ogershok. “I’m not coming to Houston to pigeonhole myself into one thing and be known as a hoppy-type beer maker or anything like that,” Ogershok said. “I’m here to brew whatever I want. If you look at a new brewer like Brash Brew-

Wagner said that a restaurant was always the plan with the new location, but it took a while to build out the space. “First and foremost we’re a brewery, but we wanted to get people out to come visit,” said Wagner, who professes to have a man-crush on executive chef Ryan Savoie, who spent time working under Robert Del Grande at the Grove and was also the chef at Ava & Alto. Wagner’s admiration in Savoie is well placed. While he says that he never expected to make money from the restaurant, its success has been a welcome surprise. “We wanted a real executive chef and we didn’t want just bar food to start,” said Ambrose. “We gave Ryan freedom [with the menu] and ended up with really good food to go with really good beer.” Savoie, who says that he homebrewed for years, actually applied for a job on the bottling line at St. Arnolds some years back. Now in the kitchen, he uses his expertise and imagination to marry food with beer. He says it’s a collaborative process with other members of the staff. “We’ve tried a lot of stuff but some of it is tried and true,” he said. “People are going to want a burger.” He said that new offerings are based on what he wants to see on the menu, or maybe a riff on something he remembers eating a long time ago. “I really like the French Dip, it’s something I would order,” he said. “And the Reuben.” Not everything has been a keeper, though. Savoie said that the Old Timer was a shareable plate with pickled eggs, beer nuts, pimento cheese, crackers, beef sticks, and a tin of smoked oysters. “I think in three months we only sold four of them,” he said. Savoie’s favorite St. Arnold’s beer is the Weedwacker so he likes the Weedwacker Mussels Mouclade, which serves up the mussels in a beer broth
with hand cut frites and a baguette. The Steak au Frites are a hit too, especially if you add the blue cheese and caramelized onions. The menu changes every couple of months and is also different every Saturday during the brewery tours and on their Pub Nights. “We really built something from the ground up,” said Savoie. Brock Wagner said that the recent growth of commercial craft brewers is a good thing. “Competition makes for a better market,” Wagner said. While St. Arnolds is the biggest microbrewery in Houston and now the oldest in Texas, Wagner said that was never the focus. “It’s always been organic,” Wagner said. “Our main goal has always been to brew a world class beer.” To that end, Wagner is currently on a hop selections trip in Germany and the Czech Republic. They also get American hops from Washington State. Although Wagner doesn’t have to order in person, he enjoys meeting the farmers in person. “[They] appreciate it,” he says. “And it gets the juices flowing for us.” Right now, Saint Arnold has nine year round beers in addition to their seasonals and the Icon series. The Imperial Stout Pumkinator is getting ready to hit shelves – and fly off them, no doubt. And the once seasonal Art Car IPA is being offered year round, in cans, not bottles, starting this week. Saint Arnold is available throughout the state of Texas, and in Louisiana and Florida. Ambrose said that the Weedwacker just got a gold medal at the Great American Beer Festival and also represents well at the World Beer Cup. That identity is in your face and the attitude behind it is ‘I’m doing what I’m going to do,’ having that confidence, is what helps bring success.” Brewery bash But are all of these breweries opening in a relatively small amount of time headed to some sort of beer saturation? Not even officials with the Brewer’s Association are sure. “You can look at other markets and get an indication of where they may be in three or four years, as we have been a bit delayed in our development of our own beer culture,” Orr said. Orr mentioned places like Portland as a potentially similar model Houston might follow where less savvy breweries might end up shuttered over the next five years or so primarily because they’re poorly managed from a business standpoint or their quality not being up to snuff. “There’s also an esoteric aspect to the market we’re seeing, particularly in spontaneously fermented beers like Jester King and other brews, which are more wine-like that have growth potential.” What it might come down to in the Leader area, much like everywhere else, might be marketing. “For small breweries trying to make traditional style ales or Belgian-style beers, you have to differentiate by high quality or have really savvy marketing,” Orr said. “It’s getting so competitive that if you don’t do one thing great or all of the things involved in beer making very well, you’re just going to putt along before we see a shakeout in the next five years, depending on local and national economic strength. I think it’s all tied together but I don’t know exactly what factors would dictate that happening. Ogershok admits he may have been a little naive about coming to an area like the Heights and Houston in general as he has only been here for barely a month, saying it’s “a wide open market.” “I wasn’t aware of the degree of fervor people have for what’s going on here,” Ogershoke said. “Not having the brewery open now is killing me.”

the wort, or sweet liquid drained from mash, by extracting the sugars from the malted grain themselves instead of having it done for you as in extract brewing. This allows the brewer much more control over certain characteristics of the finished beer, including color, body, texture and overall malt flavor. The equipment for brewing costs can be as little as $130 and the ingredients for about five gallons of beer will run you $30 to $50. Along with the popularity of homebrewing and craft beer, some hops come in and out of fashion, and sometimes Weiershausen says this means farmers cannot produce enough to meet the demand. An example of a ‘hot hops’ is Mosaic, which is rich in fruit and pine notes and can be found in a multitude of different commercial beers as well as homebrew. Weiershausen also notes that Houston isn’t the best climate for growing hops, but that doesn’t stop intrepid beer brewers from trying. Kenneth Darmer has been home-growing hops for three years now and although he says his last name is one letter different than farmer, he is still trying to get a good crop. “I still have a lot of learning to do,” Darmer said. Darmer says he’s been surprised at how many people he meets who homebrew. “Houston is a huge city and I think the success of the brick and mortar homebrew supply shops is proof there is a strong homebrew community,” Darmer said. “Growing hops at home is fun and one more way to make your beer personal. It’s good for ‘bonus hops’ to use, but there are lots of variables and uncertainties so it would be somewhat of a risk to rely on them exclusively.” He notes that breweries typically have contracts with growers to buy a certain amount, and if there are shortages then homebrew supply shops may run out of certain types. Darmer’s brewing buddy for the past two
years, and former college roommate, Tyler Arrington is a geologist who grows his own hops in his backyard. “I used a variety that should fare well down here in the south, Chinook,” Arrington said. “I’m on my second year, and it provided enough hops to do one 10 gallon batch of beer. So, I suppose in short it is a lot of work, but it is satisfying to know that I was able to hop my beer, with my own.” He said his plant required a lot of water and that it can grow about two inches a day if it is in the perfect environment. “I’m fortunate enough to have a friend in Colorado who privately grows upwards of 20 different varieties, and he has coached me quite a bit, although our geography is different here,” Arrington said. “Typically the plant will grow from spring, through fall.” Homebrewer Paul Phillips says he isn’t into the community facet of brewing as much, but ever since he brewed his first batch in high school, which he and his friend christened Scheißenbock, Phillips had homebrew on the brain. Six years ago, he picked it up again. He says he’s been successful growing hops, specifically the Cascade variety. “They’re on their second year and produced quite a bit this spring when it was raining consistently,” Phillips said. Although they did not produce a large crop the first year, he now uses them to brew beer. “I made a batch with hops exclusively from my backyard earlier this year and it was pretty good,” Phillips said. For some homebrewers, the desire to share their product is the impetus for a commercial endeavor. Darmer and Arrington are exploring the idea of opening their own brew pub. Of the permitting process, Arrington said it might take a little while but they are excited about the possibility of serving guest beers – as well as their own creations.

Fall is here, bringing Bi-Annual Art Opening at Winter, Spring, Silo Studios Is it really mid-October already? I wasn’t ready for my favorite time of year, but we better buckle up, the busiest art season is upon us. While I have some amazing interviews with artists coming, I also have some great events to share. So grab a pen! This Saturday, Oct. 17, and Oct. 24, artist Lizbeth Ortiz of the East End Studio Gallery will lead a Dia de los Muertos mini altar building workshop at Casa Ramirez Folkart Gallery at 241 W. 19th St. The Dia de los Muertos holiday is Mexican in origin and is a day to

We’ve got some great beer that’s being brewed in our neighborhoods, but something interesting about these breweries is how they aren’t just bringing beer, they’re bringing the full package with food, music, art and entertainment venue space. It’s not just about the beer anymore, it’s the experience you take away and that is what brings you back. Brash Brewing Co. Located on the north side, near sister icehouse, Petrol Station, Brash is located at 510 W Crosstimbers Rd. 77018. The brewery just celebrated their grand opening of their tasting room, entitled “Brashland� and will now be open starting at 7 p.m., Thursday, Oct. 15.
