IMPORTANT: Wear heat-resistant gloves and apron. This procedure can be used with all fryer models. NOTE: An alternative to the cold soak procedure is to complete a boil out following the boil out procedure.
BEFORE CLEANING

• Empty and discard oil by opening the drain valve. Make sure the fryer is turned off. NOTE: Ensure the oil is completely cooled before discarding.

• Close the drain valve. Fill with warm water to 3-5 cm below the overflow level. DO NOT OVERFILL. • Add 2/3 bottle of Heavy Duty degreaser to the empty vat.
• Briefly scrub sides and back of fryer with your fryer brush.
• Cover and remove any exposed products/raw ingredients from the grill area. • Turn grill to 120°C and allow to cool to this temperature (approximately 20 minutes). Leave toaster cover open. WARNING: Applying Grill & Toaster Cleaner to the grill at a high temperature may cause the grill to smoke and trigger fire alarms. 5

• Allow Degreaser Solution to soak overnight.
• Place fryer baskets in the vat to soak overnight.
Spray grease solution directly onto the toaster surface. Use the 9 sprayer as a mist.

• Remove the fryer plate to access the bottom of the vat. Use your dryer tool to scrub all hard-to-reach areas of the fryer vat (such as burner tubes and bottom of the vat).

Scrub the upper and lower platens with the Grill Cleaning Pad in a circular motion until soil liquefies.

• Clean the exterior of the fryer vat with Heavy Duty Degreaser.

• Remove 1/3 of water using a high temp bucket. Only half fill bucket to prevent water from spilling.
Allow product to sit for 2 minutes. 11
• After the vat has been scrubbed clean, rinse the vat with warm clean water. • Drain and discard water into the mop sink. Repeat 3 times. • Splash water on sides and back of the fryer to get all residual oil.

• After rinsing, dry the vat with clean dry paper towels. Make sure the vat is completely dry.

• Re-assemble the filter drawer. Return the fryer plate to the vat. Attach the fryer basket holder with baskets.

Thoroughly rinse both upper and lower platens with clean, sanitiser-soaked cloths. Change rinse water as it becomes visibly soiled. Repeat until no residual cleaner remains. AUS NZ FIJI

• Use the your fryer tool to scrub away build up from the upper part of the vat.

PRIOR TO OPENING
Empty drip tray into mop sink; then, wash, rinse, and replace. Use Glass & Multi-Surface Cleaner and a clean, cloth to wipe sides and top of toaster.
• Check that the fryer is completely dry. Refill with new oil. • Turn the fryer on and bring to temp.
