ALAN VAN HEERDEN has worked in kitchens in the United Arab Emirates, Morocco and Saudi Arabia―but there’s no place like Stratford for the South African native. This fall, Alan signed on as Executive Chef at the Parlour Steakhouse. And running the popular Stratford eatery is an opportunity he’s really looking forward to. Using his wealth of experience with different international cuisines like French, Indian and Thai foods, Alan will be creating menus that offer a little something special for every palate. He’ll also be working closely with Stratford area farmers so that he can bring more fresh local produce to the table at The Parlour Steakhouse. Alan began his career at the age of 19 working as a modest dishwasher but was quickly attracted to the varied life of a chef. “I discovered that it’s almost impossible to master all dishes,” he says. “It would take a lifetime. With cooking, you’re always in a state of non-stop learning.” Throughout his career, Alan has gone from country to country and experienced a little bit of everything―from working on cruise ships to serving kings and queens. But he particularly loves being around talented individuals―like his brand new staff at the Parlour Steakhouse. “A team’s not a group of people working together,” Alan says of the kitchen life. “It’s a group of people that trusts each other to work as a team.”
