This is a way to escape, drive to a small town. It’s like a mini-vacation, and it only takes a day. Just that day really breaks up your routine.”

Here’s how it works: You pick your departure city, your day, and your vibe. Are you feeling beachy? Or maybe you’d prefer a desert destination, or an afternoon in the vineyard-dotted foothills. Hendry has several options available from each destination city, with just enough information to whet your adventure appetite —

Once you book, you get your road trip itinerary, via mail or email. Each itinerary takes you within a two- to three-hour drive from your departure city, and includes places of interest, dining, and sightseeing recommendations along the way. The full day typically ranges from 8 to 10 hours, though Hendry also offers hotel recommendations for those wanting to extend their adventure.

The best way to approach these trips? Don’t look at the full schedule all at once. Take it one stop at a time, and let the itinerary give you unexpected surprises along the way. “The idea is, you don’t know where you’re going next, until you arrive at the first stop,” Henry explained. “It’s like a scavenger hunt,

but not enough to ruin the surprise of it all.

mailed to you, you’ll receive a package with five envelopes. Four will be your destinations for the day, and one will be “trip essentials,” with suggestions on things to pack and how to prepare. There is also a digital option, where you can “unpack” the stops as you go. Of course, with either choice, you can opt to view all the stops at once.

Hendry’s itineraries aim to support locally owned businesses. “There are no chain restaurants and no big, overly popular tourist attractions,” she said. Of course, the must-see spots are noted, and recommended at each destination. But the goal of the itineraries is to provide off-thebeaten-path suggestions. “There are hundreds of destinations within a few hours drive of, say, Los Angeles,” Henry noted. And each offers a whole different vibe, and totally different local culture, she added. “Ojai is very different from Carlsbad.”

Not only does Hendry aim to support local economies, she also is cognizant of her impact on the environment. “Road-tripping releases emissions,” she acknowledged. “Any kind of travel is not truly sustainable.” Thus, Hendry partnered with 1% for the Planet. “I’m committed to donating one percent of annual revenues to environmental charities, (and) California-based organizations.” All of her printed materials use forestry certified recycled paper, and there’s an option during checkout to donate $1 to plant a tree in California. “Reducing the carbon footprint is a big part of it,” she said

For Hendry, the creation of One California Day was a natural, if perhaps unexpected, step. After a brutal Canadian ice storm in 2014, she decided to leave her culinary walking tour business in Toronto and move to L.A. Once there, she began working with hotels, restaurants, and public relations firms. That gave her great exposure to California. When the pandemic hit, she found that getting out and about in her car was a safe and enjoyable way to unwind from the daily grind. It gave her the chance to see some of the beautiful and underexplored parts of California. All those day trips — and her background working in hospitality and P.R. — inspired her to create One California Day.

No matter where you go on the Central Coast, this region is always ready to serve up new surprises. Among our favorite new discoveries are the enticing, creative restaurants in the eastern portion of Ventura County. Often referred to as the Conejo Valley or simply East County by locals, this enclave has been making a name for itself amongst food and wine enthusiasts. Here are a few we love.

Casa Nostra Ristorante

Ristorante is located where you would least expect to find an inviting restaurant — in a somewhat obscure Westlake Village business park. When you enter the parking lot, just look for the flags! Then, get ready to enjoy an evening of classic Italian fare in a welcoming, friendly, relaxing atmosphere. If the name sounds familiar, it’s probably because there are a few other locations around Southern California.

There is an elegant dining area inside, but outside, on the spacious patio area, is where the true Italian spirit and magic happen. Sitting under the stars, surrounded by twinkling lights, sipping a Prosecco as you peruse the menu … it all creates an ambiance of perfection and romance.

Of course, every Italian meal (heck, every meal) is enhanced by wine. Order off their wine list or bring your own bottle. And note that Casa Nostra has no corkage fee Sunday through Thursday nights!

Made In Italy

Made In Italy is another hidden gem you may drive right past if you didn’t know to look for it across the street from the Thousand Oaks Auto Mall. There, you will find chef-owner Antonio Sessa and his chef-partner/wife, Giana, bringing a fresh, creative, authentic Italian food experience.

Chef Antonio was born in Italy and grew up very much immersed in that food culture. He earned his culinary degree and then worked at a trattoria in Florence, where he perfected his craft. Moving to the United States, he found his way to Los Angeles, becoming a private chef to the stars. But his dream was always to open his own, true Italian eatery. Chef Giana, a secondgeneration Italian, grew up smelling, eating, and cooking Italian fare alongside her grandmother and

The inspired Italian menu has ample options, and features freshly sourced, house-made, and authentic Italian imported items. Consider starting with the Fritto Di Casa Nostra for the table. This assortment of calamari and crunchy vegetables is lightly and perfectly fried (NOT oily) and served with marinara sauce. I have to admit, for an entrée, I had a tough time ordering anything except the Tortellini di Gamberetti. The pasta, stuffed with shrimp, is served with a vodka pink sauce and jumbo crab (and is amazing!). Of course, I did sample my wife’s Osso Bucco di Maiale, a 24-hour braised pork shank that simply falls off the bone into your mouth.

father. After earning her degree from Le Cordon Bleu, Giana also worked in a restaurant in Florence then found her way to California, where she met Antonio. Together, their passion for creating genuine Italian food — and sharing it with others — was realized when they opened their restaurant, Made In Italy, in 2019.

This is a scratch kitchen. The freshest of ingredients are used, and dishes are made daily. Fruits and vegetables come locally from organic growers; the meats are free-range sourced. As you look over the menu, be prepared to be transported to an authentic Italian cucina, right here on the Central Coast. Many of the recipes are handed down from generations and are meant to be enjoyed in their original form.

Don’t overlook the impressive, select wine list, focusing on excellent Italian varietals. You’ll find wines that will pair perfectly with your meal.

Now, let’s talk about the pizza! Chef Antonio is recognized as a master pizza chef through the Scuola Nazionale Maestri Pizzaioli Academy in Italy. Certified in Neapolitan-style and gluten-free pizza, Antonio is also a certified pizza instructor. Pizza is a must when you come to Made In Italy, so do yourself a favor on arrival and order one for the table. As you decide what to order, you can nibble on the light, melt-in-yourmouth, homemade focaccia. It was truly the most memorable focaccia we’ve ever had.

To top off the night, we enjoyed the tiramisu and ricotta cheesecake. If you love gelato, the house-made chocolate gelato is creamy and dreamy! But don’t overlook the sorbet. We loved the passion fruit sorbet, which simply bursts with flavors of the tropics.

community support that Leila’s did. The restaurant is named after an area in Afshar’s hometown of Portland, OR. It’s an area that re-invented itself to become a go-to hub for fine dining, featuring eclectic and creative food experiences. That is what you will enjoy at this Westlake Village dining destination.

Begin with an innovative artisan cocktail, a California craft beer, or choose from the excellent and thoughtful wine list — which includes several small production, handcrafted California wines (plus many of my favorite Paso Robles producers). Then, sit back and peruse the menu, as you watch artfully created mouthwatering dishes parade past you to other tables.

Dining at The Pearl District is a gastronomic event, melding together the artistry of presentation, aromas, and flavors

to excite your palate. I’ve been dining at Leila’s and then Pearl District for about 20 years. My favorites dishes, you ask? Pretty much everything. However, the lobster tempura appetizer, braised short ribs, sautéed wild mushroom, and the other appetizers are some notables. And, when available, the heirloom tomato, avocado stack is a must!

As for a main course, if you don’t have any particular food restrictions, close your eyes, throw a dart, and order whatever it lands on. You will not be disappointed. The freshest of ingredients, the highest quality meats, and locally sourced vegetables are used. What Chef Richie does is create food art that teases your senses. Taking your first bite, close your eyes while savoring the experience.

Don’t forget to save room for dessert! You will say “wunderbar” as you delve into the Wonder Bar, but you may want to try the fresh cobbler of the day, or the bittersweet chocolate bread pudding, or — okay, you get the picture. Pearl District is a dining event the first and every time you experience it.

Tarantula Hill Brewing Co.

Small lot, hand-crafted specialty beers have taken off over the last several years across the country, and East County Conejo Valley is no exception. It has an assortment of brew pubs offering excellent craft beers as well as casual (and delicious) eats.

Tarantula Hill Brewing Co. is unusual in the universe of brew pubs, and one you won’t want to miss. Forget your preconceived notions; at Tarantula Hill, you will have a fun time, a great assortment of beers, tasty pub food consisting of burgers, sandwiches, wings, salads, tacos, pizza out of their pizza oven, and some of the best ice cream ever, from the owner’s family recipes. You may also find entertainment and special events (check their website for the schedule).

Tarantula Hill is both kid and pet-friendly! They offer a select kid’s menu and four-legged friend treats, as well! However, it’s the adult menu that will make you salivate.

But let’s get to the main event: the beers! Sporting about two dozen brews on tap, you will be hard-pressed to choose just one, so you’ll be coming back, probably a lot. No matter your taste in beer, you’ll find what you’re looking for here. There is a great selection of IPAs, in addition to pilsner, ale, porter, lager, hard seltzer, hard kombucha, and more. And while you are studying the menu, you’ll chuckle at some of the creative names, such as Jakalope Hoppy Pilsner, RxPils, What the Fruit, and Knott Your Berry Farm.

Of course, beer is made to go with food, and there is no shortage of that at Tarantula Hill! Pizzas come fresh from their wood-fired pizza oven and are Neapolitan-style. They use house-made dough, and fresh, mostly locallysourced ingredients. Their Cubano sandwich was to die for, and I can’t wait to go back to try one of their many burgers, tacos, salads, or a charcuterie board. At Tarantula Hill, it’s easy to become a regular.

Once done, you’ll want to sample some (eventually all) of the many ice cream flavors made from the freshest ingredients. The flavors are from the owner’s father, who had a creamery in Hawaii! This is the place to go for beer-food-ice cream fun and gathering.

Alma Sol Winery

Fun, energetic, vivacious, friendly, and really good wine — that just about sums up the Alma Sol Winery tasting room experience.

Winemaker John Shaw and wife, Lisa, became enamored with Paso Robles, its people, and its wines about 20 years ago. As they learned more about the region, the pair eventually

decided to start making their own wine, about a decade later. Sourcing from personally selected, well-regarded Paso vineyards — in addition to using fruit from their estate Cuevas vineyard – John focuses mostly on Bordeaux single varietals and blends.

John’s enthusiasm is contagious as he pours you through the lineup of Alma Sol wines while explaining his winemaking process and philosophy. Seclusion near the city: Western Santa Monica Mountains

The entire Santa Monica Mountain range stretches east to west about 40 miles starting in West Los Angeles all the way to Camarillo in Ventura County. The elevation begins at sea level and reaches upwards to 3,100 feet. The Ventura County portion of the range sees less foot traffic than the busier regions closer to Los Angeles. This allows for more tranquility, and I daresay even solitude, especially on weekdays. Springtime is the ideal season to explore since the winter’s rains have led to bursting hues of green grasses and a rainbow of wildflower colors. And, waterfalls like Sycamore Canyon Falls near Newbury Park are more likely to be gushing with water.

Hikers, runners, and mountain bikers can explore to their

heart’s content in the western Santa Monica Mountains. Painters and photographers will also love the area. The scenery is simply stunning, especially for city dwellers who might not expect to find such natural grandeur so close to urban life. Many of the best places to explore on foot or bike are easily accessible off Highway 101 or Highway 1 (Pacific Coast Highway). Other exploration will require 20 to 30 minutes of driving up the scenic and twisty Yerba Buena Road from Highway 1, or Highway 23 from Westlake Village.

Point Mugu State Park is the largest maintained space in the western Santa Monicas with 14,000 acres of land and more than 70 miles of trails. One of the best spots is the highest point in the entire mountain range:

Sandstone Peak. There are a few ways to reach the summit. The most direct is either up the Mishe Mokwa Trailhead or Sandstone Trailhead. Both trails are approximately 3 miles round trip and start right off Yerba Buena Road. Because you have already driven up to about 1,500 feet in elevation, mountain and ocean views are spectacular the entire hike. Once you reach the top, you can jaunt your way around 2 to 4 miles of other offshooting trails. This area is explorationcentral, with countless places to scramble around boulders or relax with a picnic while soaking up some incredible views. You’ll definitely want to remember the Rancho Sierra Vista/ Satwiwa Trailhead, which is located right off Potrero Road in Newbury Park. This is the start to many hiking and mountain biking trails which range from half-mile easy strolls to 12 miles of serious hiking.

You can reach the iconic Boney Mountain from the

Rancho Sierra Vista/Satwiwa Trailhead. This is a strenuous hike of about 10 miles total, with about 2,700 feet of elevation gain. Don’t worry, there are a few excellent family-friendly destination spots where you can turn around if you don’t want to make the whole trek. From the trailhead, follow signs to the Satwiwa Native American Indian Culture Center and continue left up the wide dirt Danielson Fire Road. Keep in mind that no dogs or bikes are allowed on this trail (mountain bikers, you have other excellent options). Around mile 1.5 — when the trail makes a sharp right turn uphill — instead of following, continue straight onto another trail, and you’ll find Sycamore Canyon Falls. This is a popular spot, so you’ll likely find other people who can help direct you if need be. This is one of most idyllic waterfalls in the entire range. It cascades down approximately 60 feet of numerous boulders and small pools. This is a wonderful place to take the

whole family, if they can manage a round-trip hike of about 3 miles and 500 feet of elevation gain. After leaving the falls, continue upwards about 1.5 miles to another picturesque spot to eat lunch and stretch your legs. It’s the shaded grove of Danielson Monument. This is a tribute honoring Richard Ely Danielson, Jr., who purchased the land in 1947. Danielson lived on 7,800 acres for more than three decades, and donated over 5,500 acres which became part of Point Mugu State Park. You can meander around the remnants of Danielson’s cabin.

At this point, you continue up the steep, rocky, and densely wooded trail, which you’ll find behind Danielson’s old rock

chimney. Good shoes or hiking boots are highly recommended since the trail is lined with some low hanging bushes and steep gorges. After about 3 miles of this rough terrain, the views will open up and the trail will flatten (mostly). From here, rest up, relax, and enjoy the views. This makes for an epic day of hiking. No matter where you choose to explore in these mountains, don’t ever forget to bring plenty of water, snacks, sunscreen, and appropriate clothing. And be mindful of your physical limits.

cleaning a trail sign. He has been volunteering here for more than 20 years and is part of the Santa Monica Mountains Trails Council. They are a nonprofit organization that establishes, preserves, and maintains public lands throughout the mountains. There are lots of ways to get involved if you feel compelled (see smmtc.org).

The Rancho Sierra Vista/Satwiwa Trailhead is also the start to many more casual hikes and short strolls. Once at the trailhead you’ll encounter a large map, and probably other friendly walkers who can help direct you. The trails are clearly marked for peace of mind too. You can meander Old Boney Trail or the Satwiwa Loop Trail for 1 to 3 miles of leisurely fun.

If you’d like to add a bit of history and learning into your day, then visit the Satwiwa Native American

Indian Culture Center on Saturday or Sunday between 9 am and 5 pm. Here, according to the National Parks service website, you’ll find “Native Americans, representing Native cultures from throughout the United States, lead workshops, presentations, and art shows throughout the year.” It’s a great opportunity to learn more about the region. The native Chumash people who lived in this area considered Boney Mountain a sacred space.

Next is a very versatile trail, especially for biking. From the Satwiwa Native American Indian Culture Center, veer right to stay on the paved Sycamore Canyon Trail. The pavement is quite smooth, but it snakes downwards steeply for about three-quarters of a mile, then flattens out to hard-packed dirt. You can take this all the way to the beach! It ends at Sycamore Canyon Campground, which lies right off Highway 1. Of course,

you can start at the campground and move northbound, which is an excellent option for a leisurely walk or bike ride. Lying in a steep canyon, the only sounds you’ll hear are the chirping of birds and the trickle of the stream. Depending on the rainfall, it could be more than a trickle!

The Sycamore Canyon Trail has many offshooting side paths, which are a mountain biker’s paradise. Guadalasca Trail

and Overlook Fire Road will reward cyclists with gorgeous views of Boney Mountain and the ocean. Bear in mind that this area is quite secluded, so be prepared and plan ahead.

The duo makes the most of the area’s spectacular scenery, offering a selection of eight distinct locations for their picnics — ranging from public settings such as the Old Creek Ranch Winery to more exclusive spots like the Ojai Labyrinth or Rolling Oaks. “One of our favorites is Taft Gardens because there’s so much to explore,” enthuses Cassandra. “After enjoying their picnic, guests can wander freely around the botanical gardens, visit the Artist’s Cottage, or hike up to the lookout to take in the Topa Topa Mountains.”

Ojai Picnic Moments offers the aptly titled Pink Moment Picnic package, named after Ojai’s famous sunsets. This accommodates up to 32 guests and includes handmade, low wooden picnic tables complete with stunning table settings, comfy pillows and rugs for seating, cozy throw blankets and umbrellas, as well as dried floral arrangements, LED candles, and a custom message board with a personalized note. “Our picnics last three hours and include setup and cleanup,” Cassandra says. “If our picnickers prefer a more customized

affair, we can curate their picnic with add-ons such as fresh floral arrangements, celebration cakes, or photography.”

All picnics include a charcuterie grazing box with an assortment of cheeses, meats, nuts, fresh fruits, crackers, and spreads. This can also be substituted for a crudité option which comes with raw veggies and more fresh fruit. There’s also the option to supplement the grazing boxes with a heartier meal, and the VanKeulen sisters have partnered with local restaurants such as Ojai Rôtie, The Nest, or Marché Gourmet Deli. “We’ve also worked with several local chefs and caterers for clients who prefer a more tailored menu,” Cassandra adds.

Events are as diverse as the offerings and locations. “We have hosted almost every type of event you can think of from bachelorettes, birthdays, and baby showers, to corporate retreats and brand collaborations,” Cassandra says. “Some unique events we have been a part of were goat yoga for a Toyota company excursion, a beachfront rehearsal dinner at the Rosewood Miramar in Montecito, and styling for a Ninakuru photoshoot.”

Suzanne Ambrecht dreamed up the idea for her Central Coast based picnic company in 2021 when her son was graduating from high school. “We were still in the midst of the pandemic and people were still being very careful, so I was trying to come up with an idea to celebrate our graduate while still caring for others’ wellbeing,” she recalls. Inspired by her travels to Japan and Morocco, Ambrecht set up her elaborate graduation picnic and it was such a big hit that the idea for her California Dreaming Picnic Company was born.

Hosting groups from one up to 30 people, Ambrecht offers a variety of different packages for any occasion and budget. The Simple Pleasures package includes rugs, a low table complete with full table setting, blankets, games, and nonalcoholic drinks. It is perfect for an intimate picnic for two, allowing clients to bring their own food. Her packages go all the way up to the Jetsetter, which includes both food and drinks and a beautifully designed dining area, along with a comfortable teepee, cabana, or special umbrellas for photographs. Santa Barbara native Nicole Leza launched her luxury picnic company in the summer of 2018 because her favorite pastime was picnicking with friends. “I loved to elevate each picnic by using different blankets, or incorporating vintage glassware,” she recalls. “That’s when I realized I wanted to create a styled picnic service for locals and visitors to experience the beautiful parks and beaches around Santa Barbara in a new and fresh way.” Her business flourished during the pandemic, as people sought creative ways to experience the outdoors in small groups.

Leza has created picnics for events ranging from intimate dates to backyard house concerts and wedding ceremonies and everything in between. She says the most popular occasions vary throughout the year, but during springtime it’s mostly proposals, engagements, and bachelorette parties. “Anniversary picnics are always very popular, too, and farewell wedding brunches are becoming more popular each year,” she says.

While Santa Barbara Picnic Company focuses all its attention on its décor and settings, it doesn’t offer food or beverages. This gives clients the freedom to bring their own food or order from their favorite restaurant or caterer. “We also offer recommendations to our picnic clients, and these vary from those who specialize in grazing platters to private chefs and drop off caterers that supply sandwiches, salads, onsite taco bars, and any custom menu that a client might create for their event,” Leza adds. “Picnics are timeless, and I think people will always enjoy gathering outside and connecting over our food and drinks in a cozy setting.”

Edible and Medicinal Herbs of the Southern California Coast

The Southern California Coast stretches from the Santa Maria River in the north to the U.S.-Mexico border. This fertile region is home to countless edible and medicinal herbs prized by foragers and herbalists. Both native and non-native species can be found in Southern California’s springtime mountains, canyons, valleys, yards, and gardens.

The “pineapple express” of atmospheric rivers this winter transformed the local landscape, closing access roads and trails and scouring the lush waterside (riparian) habitat of the rivers, creeks, and canyons. At the time of this writing, there is limited access to the wild native plant communities that have sustained the Indigenous Chumash for generations. This is when modern SoCal foragers consider themselves blessed to live in a region where so many useful plants from around the globe have become naturalized in and around our neighborhoods. And once the backcountry is open again — as it likely will be when you read this — you can expect to see the lifegiving effect of all the much needed rain and snow on the growth of native vegetation.

Before we take a virtual herb walk to look at a few native and non-native plants common enough to be foraged, let’s break down the concept of sustainable collecting. To start with, be sure you’ve properly identified the plant. Herb Walks and plant identification hikes are best for that, but if you’re searching books or the internet, use the scientific (Latin) name for the plant. Those names are included here for all plants described below. Learn your plant’s conservation status to make sure it’s OK to forage, and know the right time of year to collect its various parts. Pick only where local laws allow it and only where sufficient quantities of your intended herb are growing. Never take more than 10 percent of the mass of any single plant, and prune carefully while picking to try to encourage new growth and leave the plant looking better than you found it.

Native plants are those that were here before European contact, about 500 years ago. They are fiercely protected by environmentalists, state and national parks, land trusts and conservancies, botanical gardens, and various other preserves. With permission, some can be legally collected in small amounts for personal use. Even better, try growing your own. See the sidebar for a list of native plant nurseries, botanic gardens, and nature preserves where you can see the plants growing and, in many cases, buy starts and seeds.

Non-native plants threaten biodiversity and are often called ugly names like “weed,” “noxious,” and “invasive.” Once established, they are considered “naturalized.” They are often the best choice for foraging. Picking non-natives frees up space for natives to thrive in their historic ecosystems where they have co-evolved with insects and other wildlife for millions of years.

The Indigenous peoples of the Americas share a tradition of giving thanks to the plants before collecting. Anyone can

1. Blue elderberry (sambucus nigra subsp. caerulea)

No list of edible and medicinal plants of California is complete without elderberry, and not just for this part of the world. Due to its popularity with birds and its honored place in our nomadic ancestors’ medicine bags, elderberry can be found around the globe, mainly in the northern hemisphere. Elderflowers appear throughout the spring in dense clusters of creamy-white to yellow flowers 2 to 10 inches across and are often flat-topped. The blue berries typically ripen in early summer. Please note: All flowering and fruiting times described here can vary a lot from year to year, from north to south, and from sea level to the inland mountains.

Both dried elderflower tea or berries and the juice of the berries cooked to a syrup are well-documented anti-virals, capable of affecting the onset, duration, and severity of colds and flus. The Chumash and other native Californians had been using it for that very purpose for thousands of years before Juan Cabrillo set foot on their soil in 1542.

Caution: All fresh parts of elderberry, mainly the green stems and leaves but also the seeds, contain cyanideforming compounds that can be avoided by drying the flowers and cooking or drying the berries. The dried berries can be eaten as a tasty medicinal snack while the delicious syrup can be added to many other juices and beverages. Who said all medicine has to taste bad?

2. The sages (salvia species)

Thanks to the Mediterranean climate of the Southern and South-Central Coasts of California, several members of the salvia genus — the true sages of the mint family — have evolved here as natives, producing oily, aromatic terpenes to protect them from the summer sun and ward off insects and other leaf-munching predators. Their equally aromatic European cousins in the same family, such as common garden sage, rosemary, basil, thyme, and mint (to name just a few) can easily be grown in the garden. All mint family plants have opposite leaves, and flowers with an upper and lower lip.

Our local region is home to five native salvias: white sage, black sage, purple sage, hummingbird sage, and chia sage. Yes, chia seeds come from a sage! Salvia

columbariae grows on steep slopes of the Coast Range — the mountains you can see from Highway 101. Chia seeds are tiny, and these small annual plants are not common, so please don’t collect the seeds, especially when imported chia seed is readily available in markets. All of the other sages described here are abundant and have edible flowers and seeds, with the exception of the hard chunky seeds of hummingbird sage.

Each of the Southern California sages has its unique claim to fame in the world of herbal medicine. Some Chumash healers consider the whiteflowering white sage (salvia apiana) to be the foundation of healing and add it to most other medicinal preparations. Indigenous and modern herbalists alike use it as a decongestant to treat head colds, taken as a hot tea, or used as a steam inhalation. A 1991 study confirmed that a tincture of white sage can inhibit the growth of staphylococcus, candida, and klebsiella infections. Sadly, its popularity for burning as a purifying smudge has led to a huge black market of poachers. Growing your own or buying it from a reputable supplier are the only ethical ways to obtain it.

Black and purple sage (salvia mellifera and salvia leucophylla) have blue and purple flowers, respectively, and can be prepared as sun teas for soaking the feet to treat pain throughout the body. Dr. James D. Adams, Professor Emeritus of the USC School of Pharmacy, has published studies explaining how this works and includes the recipe in his book, Healing with Medicinal Plants of the West. The recipe and description can also be found in my book, Medicinal Herbs of California. Purple sage leaves have a flavor profile closest to the European garden sage sold commercially.

Hummingbird sage (salvia spathacea) is the only one of the local sages that prefers to grow in the shade. Its long, tubular red flowers are pollinated mainly by hummingbirds, hence its name. Hummingbird sage leaves make a uniquely fruity tea with a reputation for relieving anxiety and soothing sore throats.

3. The artemisias (artemisia species)

Have you ever heard of or tried absinthe, the infamous green spirit used by Van Gogh and other artists and writers of his day to reach an altered state of mind? It’s made with artemisia absinthium, commonly known as wormwood. We have two native artemisias in our region, although both have just a small fraction of thujone, the intoxicating compound that put wormwood in the art history books. Both are known as medicinal herbs.

One is mugwort (artemisia douglasiana), a common, fast-spreading colony plant of the riparian habitat. It grows where poison oak grows, and many people swear by the ability of its leaves, when mashed or juiced, to relieve the itch of poison oak rash and help it disappear. It has a long history of use by California’s Indigenous tribes and American herbalists alike for easing menstruation and PMS as well as treating the symptoms of menopause.

The other is artemisia californica, a medium-sized shrub called sagebrush — even though it’s not related to the true sages described above. Like the sages, though, it contains aromatic terpenes shown to be pain-relieving, anxietyrelieving, and antibacterial. Dr. Adams’ Chumash mentor, Cecilia Garcia, recommends a sagebrush liniment for pain. It works through the skin by the same means as the sage foot soak.

Sagebrush is antifungal, too. The dry brown leaves that hang on the branches were powdered and used by traditional Chumash mothers to prevent diaper rash while their babies spent hours in a cradleboard. And like its cousin mugwort, sagebrush is used to treat various women’s issues in small internal doses.

Caution: Due to the possible thujone content, artemisias are best used under the supervision of a clinical herbalist or naturopath and should not be ingested by pregnant women.

4. Stinging nettle (urtica species)

Here we have a plant represented in our creek-side habitat by a tall native species, giant stinging nettle (urtica dioica), and in our yards and gardens by its low-growing non-native cousin, dwarf stinging nettle (urtica urens). The leaves of both are equally edible once they are dried and/or cooked to wilt the stinging hairs. If you plan to collect the leaves, gloves are recommended. The sting can be relieved by rubbing the skin with the leaves of dock (rumex species) or “sour grass” (oxalis pes-caprae), two herbs with high oxalic acid content.

Pound for pound, cooked wild nettle leaves rank among the most nutritious foods on the planet, with high quantities of protein, iron, fiber, vitamins A and C, and many other nutrients often missing in agricultural soil. Cream of nettle soup is a longtime favorite in French cuisine.

The German Commission E — set up by the German government to study medicinal herbs — approved drinking nettle leaf tea to increase urine flow in treating inflammation of the lower urinary tract and to prevent and treat kidney stones. They also approved its use as a supportive therapy for arthritis. Nettle root is Commission E-approved for difficulties in urination.

5. Prickly-Pear Cactus (opuntia species)

While native prickly-pears abound in our region, their sharp spines and irritating hairs (glochids) require lots of processing. Fortunately, we also have many old plantings of spineless mission prickly-pear (opuntia ficus-indica), originally from Mexico. Known as “nopal” in Spanish, it is preferred by aficionados for its edible pads and fruits. The first-year pads are often diced and served with eggs in a dish called “nopalitos con huevos.” The ripe so-called pears (“tunas” en Español) can be carefully peeled, revealing fruit with the texture of watermelon and a wonderfully sweet taste all its own. Kitchen gloves are recommended for handling, while cleaned pads and fruit are available year-round in Mexican markets.

From Mexico to South America, preparations of prickly-pear pads and fruits continue to be widely consumed to help regulate blood glucose levels in adultonset (type 2) diabetes. Among its external uses, the soothing gel inside the pads is used like aloe vera to soothe sunburn.

This bitter, non-aromatic member of the mint family is one of those invasive, European weeds that are usually free for the taking. Cursed by dog owners for its Velcro-like seed heads that coat canine tails, horehound has a storied reputation as an expectorant, a cough medicine that thins phlegm so the lungs can expel it. Ever seen “horehound candy” on a tourist shop candy rack? It’s really a cough drop made from a syrup of horehound leaves because the tea is just too bitter to drink. Try making your own

The Central Coast is home to some of the best polo competition in the world, and the Santa Barbara grounds are a destination for both diehard polo fans and those looking to watch the sport for the very first time.

Nestled between the Pacific Ocean and the base of the mountains surrounding Santa Barbara and Carpinteria, the Santa Barbara Polo and Racquet Club has a special feel about it and is a special place to spend the day with friends and family.

“We offer a magical experience for our guests and have full-service food and beverages, including the best margaritas in town. Most people do not know that we are open to the public, but we cater to groups and parties. Our club is fun, social, and a beautiful place to be,” said

The Santa Barbara Polo and Racquet Club is the third-oldest polo club in the country, having been around for 114 years. It also boasts the longest active polo season in the United States, which runs from May to October. “If you have never seen polo live, I highly encourage everyone to come see the action for

themselves. It is amazing, fast, and exhilarating,” added Sigman.

position to oversee the action. The pace is so fast that riders will rotate through multiple horses, sometimes up to eight or ten times per game. A polo match will usually conclude within a twohour period, which include four to six chukkers, or periods.

Known as the King’s Sport, polo has exploded in popularity in recent years,

especially in Florida and California. According to Sigman, polo teams follow the weather and compete in Florida during the winter months and then return to California in the spring and summer. Polo has also started to get primetime coverage on ESPN, proving its gain in popularity across the United States.

“Polo is a beautiful balance between the

players and the horses. The horses get going up to 30 miles per hour with the players maneuvering around the horses as though they are one. It is impressive and thrilling to watch,” added Sigman.

The Santa Barbara Polo and Racquet Club season offers 22 polo Sundays and 16 Friday Happy Hour events. The season also features four high goal tournament events, which are highly competitive and bring out the sport’s biggest enthusiasts.

Game day at the Santa Barbara Polo and Racquet Club consists of a pony parade, the national anthem, line-up announcements, the ball toss, the match, divot stomps, and a trophy presentation. And then, the real party begins.

“The polo lifestyle is all about being seen, getting dressed up, drinking champagne, and just enjoying the competition. It is also a great place to meet new friends,” remarked Sigman.

Cruising the Central Coast by the

Concerned about rising gas prices and wasting time sitting in traffic? There is an alternative way to explore the Central Coast: Amtrak’s Pacific Surfliner and Coast Starlight!

Long before U.S. Route 101 was commissioned as a highway in 1926, the region was connected to the rest of California by the Southern Pacific railway. When the road through the Gaviota Pass was still just a narrow dirt track, Southern Pacific had established a train route from Los Angeles through Ventura and Santa Barbara, to San Luis Obispo, Paso Robles, and beyond. That route still exists and has been operated by Amtrak since the 1970s. These days, you can hop on the train in L.A. and in just a few hours be on the Central Coast, walking on a quiet beach or exploring the vibrant downtown areas of wine country.

Amtrak currently runs five trains a day each way between Los Angeles and the Central Coast. One in each direction is the Coast Starlight. It leaves L.A. each morning, reaching Santa Barbara by midday and San Luis Obispo and Paso Robles in the afternoon before continuing to northern California and beyond. On the way south, it stops in Paso Robles and San Luis Obispo in the afternoon, Santa Barbara

Pacific Surfliner and Coast Starlight

Amtrak’s historic railway offers an alternative to Highway 101

at dinner time, and L.A. at night. The other four trains are the Pacific Surfliner, which stop more frequently. Two of them in each direction — one in the morning and one in the afternoon — go all the way to San Luis Obispo. The other two (one in the late morning and one in the evening) only go as far as Santa Barbara.

For the first hour after leaving Los Angeles Union Station, the trains run through less aesthetic parts of Glendale, Burbank, the San Fernando Valley, and Simi Valley, then through orchards and fields of Moorpark, Camarillo, and Oxnard. This part of the route parallels the Metrolink train and the ridership can include commuters; thus, in many ways, it still feels connected to Los Angeles. But the feeling changes as it approaches the Ventura station, and the Pacific Ocean comes into view.

The Ventura train station is not much to look at — just a little rain shelter next to a parking lot. But in reality, it’s just steps from the beach and Downtown Ventura. Long ago, the train station was more connected to downtown Ventura, but the 101 freeway is now a barrier in between. But walk back a block to Figueroa Street and turn left under the underpass, and in five minutes you can be strolling along Main Street with its many boutiques and restaurants. Some of my favorite restaurants on the Central Coast are here: Rumfish y Vino, with its relaxed patio and Belizean menu; Immigrant Son Caffé, which features authentic Italian dishes; Rocks and Drams, with its elevated cocktails and

Asian fusion cuisine; and Winchesters Grill and Saloon, whose storied burgers I told you about in the Summer 2022 issue.

The parking lot by the train station is connected to the Ventura County Fairgrounds, which hosts the annual Ventura County Fair as well as concerts, swap meets, and myriad other events. Years ago, I would take my kids on the train in August from Simi Valley to Ventura for a day trip to the county fair and the beach, without having to worry about traffic and parking. On the other side of the

parking lot from the train station is Surfers Point Beach, one of the region’s premier surfing spots, along with the Ventura Promenade, which connects San Buenaventura State Beach to the Ojai Valley Bike Trail. You can actually bring your bike on the Amtrak and ride from the beach to Ojai.

The beach at Ventura is just a preview of what is to come on the rail journey north. After the train crosses the Ventura River and passes through Emma Wood State Beach, it hugs the coastline for the next 100 miles. Since Amtrak’s doing the driving, you can gaze out the window (make sure you sit on the left!) and see surfers and sunbathers — and, if you are lucky, dolphins.

The Pacific Surfliner briefly stops in the laid-back beach town of Carpinteria, while the Coast Starlight hustles straight through to Santa Barbara. Santa Barbara has a feel that is all at once luxurious and relaxed. A century ago, it made a name for itself as a destination for the well-todo, who would take the train and spend the winter there to enjoy the health benefits of coastal breezes. You can still step off the train, breathe in the ocean air and immediately feel more at ease, away from the madness of the megalopolis.

The Santa Barbara station is just two blocks from the beach and is close to The Funk Zone, a vibrant district of eateries, wineries and breweries, hotels, art studios, antique stores, and a fun children’s science museum. In the heart of the Funk Zone, two blocks east of the train station, lies The Lark Santa Barbara. The

restaurant gets its name from the Southern Pacific overnight luxury train that ran from San Francisco to Los Angeles from the 1940s through the 1960s. It is an eye-catching restaurant with a seasonal menu that celebrates the Central Coast with simply fantastic food. Just around the corner is the aesthetic Dart Coffee Co., with its own hidden oasis garden that they say has been there since the 1920s. Also nearby is Mony’s Tacos, which serves the best street tacos in Santa Barbara with unique salsas like pistachio and peanut. And across the street from the train station is McConnell’s Fine Ice Creams, frequently cited as one of the Central Coast’s finest ice

cream shops for over 70 years! You may have to wait in a long line, but it’s worth it!

A short walk south brings you to Cabrillo Boulevard and the bike bath that runs for almost 5 miles along the waterfront. You can rent pedal surrey bikes to ride beneath the tall palm trees or just take a break and sit on the sand. Because of the south-facing coast, the surf is gentle in Santa Barbara adding to the chill vibe.

There are more than two dozen hotels in this area, providing a diversity of

style, amenities, and price along the beach to make your stay complete. I’ve stayed frequently at the Santa Barbara Inn, about a mile down the beach, with the amazing Convivo Restaurant and Bar on the ground floor. Here you can watch the sunset, the sailboats, and the distant islands while dining on inventive local cuisine like beet salad with burrata, butternut squash, crispy Brussels sprouts and apple, or charcoal grilled avocado, ponzu, pomegranate, and radicchio. A little further is the recently renovated Mar Monte Hotel, built in 1931 to attract the elite of L.A. It still has some

of its original architectural elements, though the rooms, pool deck, and restaurant have been updated. Behind it is the original Motel 6. Founded here in 1962, it still offers a more budget conscious alternative, and with partial views of the ocean.

If, instead of stopping in Santa Barbara, you ride one of the trains that keeps going, you are in for a treat: a scenic journey you can’t see by car. When the 101 turns away from the ocean at Gaviota Pass, the train continues to follow the coastline around Point Conception. Once it leaves the highway behind, you feel like the train has taken you someplace special — because it has! The journey skirts remote cliffs overlooking miles of secluded beaches with the western end of the Santa Ynez mountains towering on the other side. There is a glimpse of civilization as the train races over a trestle bridge at Jalama Beach Park. Then,

you’ll move on to more remote coastline around Purisima Point in front of Vandenburg Air Force Base. At Surf Beach station near Lompoc, you can literally step off the train and onto the sand. From there, the train turns inland, though the Grover Beach stop is a five-minute walk over the dunes to the waves. It crosses under the 101 near Pismo Beach without stopping and turns further into the hills, winding its way through Price Canyon. After zipping by vineyards in Edna Valley, the train pulls into San Luis Obispo station.

Kreuzberg California combines the hipness of a European cafe with the chill vibe of the Central Coast, and makes my favorite Mexican mocha. Dine on the outdoor patio at Luna Red which serves inspired tapas like bacon-wrapped dates and coconut shrimp tacos. Flour House makes award-winning pizza worth the train ride by itself. And there is so much more within just a few blocks.

There is an art museum, a historic mission, and the strange landmark of Bubblegum Alley For decades, gum has been left stuck to the wall until the 15-foot high, 70-foot long alley has become coated in it, and is now an odd tourist attraction. On Thursday nights, several blocks of downtown are closed to accommodate the Downtown SLO Farmers’ Market featuring local produce, crafts, and live music. To stay for a night, there are several hotels downtown. My favorite is the Granada Hotel & Bistro, located in a 100-year-old building right in the heart of downtown with a sophistication unexpected for a small town.

For the Coast Starlight train to continue on to Paso Robles, it must get over the West Cuesta Ridge, which rises more than 1,000 feet above San Luis Obispo. The California 101 Highway climbs the Cuesta Grade, but the train follows a longer path, first heading a few miles west before curving up the hillside and turning back across the face of the ridge, revealing expansive

views back toward San Luis Obispo. Turning once more, the train climbs the Cuesta Grade on the opposite side from the 101 before entering a tunnel near the top of the pass. After passing through Santa Margarita, Atascadero, and Templeton

without stopping (though it once did), the train arrives in Paso Robles.

The current Paso Robles station building was built in 1997 but the original 1886 station building still stands next to the tracks, reborn to accommodate wineries and restaurants. At the north end of the building is Cypher, a woman-owned winery where you can taste exceptional wines and browse a line of olive oils, vinegars, infused sea salts, seasonings, and wine jellies. Junction, a new restaurant at the south end of the old station, serves delicious South American-inspired tapas like empanadas and canelones. Across the street from the train station is Vivant Fine Cheese shop, a delight for cheese lovers. In addition, the Paso train station is just three blocks from the heart of downtown with many more restaurants, wine tasting, shopping, and hotels (see Downtown Paso, page 113).

For less than the gas it might cost you to take the same journey, you can experience the amazing beauty of the Central Coast and enjoy the great downtowns of the region. The journey itself is so memorable, it’s no wonder this train route is known as one of the most beautiful in the United States.

Paso Robles is known as wine country — a place for getaways spent driving through oak groves and rolling hills to visit vineyards. But the heart of Paso, the Downtown area, has an incredible life of its own with enough dining, wine tasting, shopping, and places to stay to make an amazing vacation in itself — all without venturing more than a few blocks.

When Paso Robles was founded in 1889, two blocks in the center of town were set aside as a public park. The 5-acre City Park features massive oak trees, a gazebo, and a playground, as well as lawn areas and picnic tables. The park is used for events like the wine festival, holiday tree lighting, and farmers’ market. What was once the historic Carnegie Library, in the center of the park, is now known as the Paso Robles Historic Society and Museum. Downtown has grown up around the park, and within a few blocks in any direction is everything for a complete Paso Robles experience.

Start your day in downtown Paso with breakfast at AMSTRDM Coffee House or at the aptly named Brunch. AMSTRDM makes great breakfast sandwiches and excellent cappuccinos. Brunch is known for its breakfast pizzas. Red Scooter Deli , just opposite the southeast corner of the park, is also an ideal place for something to get your day going. They feature an extensive list of wraps and sandwiches as well as soups, salads, and smoothies.

In Downtown Paso, you can have the experience of wine country without having to get in your car. Without the vineyard setting as a backdrop, these tasting rooms let their personality take front and center. Many of them are small boutique wineries where you may be served by the owner and winemaker and get to engage in a discussion of wine, food, music, life, and all things Paso. There are almost 30 tasting rooms within downtown! Here are just a few that I have visited.

As the day ends, Downtown Paso has impressive dining options in a small area. Within a short walk of the park is an incredible range of cuisines – Italian, French, Mediterranean, Thai, Mexican, Japanese, Steakhouse, barbecue, farm-to-table organic, and more. My favorites are in the blocks between the park and 13th Street.

Side-by-side on 13th Street are The Hatch and Della’s . They are owned by Maggie Cameron and Eric Connolly. Most nights, Eric patrons one or the other. They opened The Hatch first as a rotisserie and bar famous for its black pepper honey roasted chicken and hot skillet cornbread. Della’s was opened in 2021 and focuses on wood fired pizza. The pizzas have fun names and flavor profiles like “Girl Crush,” topped with pepperoni, jalapeño, and hot honey, or “Smoke Show,” topped with short rib, pickled pineapple, and roasted jalapeño.

Across the street is Fish Gaucho , serving modern Mexican cuisine including an extensive margarita list. The nachos are amazing and like a meal in themselves, layered with beef, cheese, avocado, and pickled onions. The tacos, ceviche, and house-

Down an alley in the middle of the block towards the park is Jeffry’s Wine Country BBQ . Jeff Wiesinger spent years working at winery kitchens and owned a food truck until the opportunity arose to establish his own restaurant in Downtown Paso. He has an array of smokers to make his own style of barbecue with a wine country twist. He’s won awards for his mac and cheese, but what really blew me away was the paella that eclipsed any paella I’d ever had before.

Close to the park is Alchemists’ Garden , which focuses on innovative botanical cocktails and globally influenced food. The menu includes the most amazing non-alcoholic cocktails I have ever seen. The menu also contains exciting small plates — beet pickled deviled eggs, cast iron fondue, corn ribs, and the single best desert ever: a brûléed banana split.

After the sun goes down, Downtown Paso remains alive. Done with wine? There is a thriving beer and cocktail scene in Paso. The Backyard on Thirteenth is an outdoor beer garden made from repurposed shipping containers and featuring live music on Friday nights. The CANE TiKi Room provides a fun, lighthearted experience of tiki-style cocktails in whimsical mugs. The Remedy , located in the Alchemists’ Garden, is a more serious speakeasy-style lounge where cocktails are an art form.

When staying over in Paso, I have enjoyed several of the hotels downtown. Hotel Cheval was named a top hotel in California. It’s conveniently located next to just about everything — it’s just a block away from the park. But it truly sets itself apart with its interior courtyard and private patios, which are an intimate refuge. And in the evening one of the staff acts as a S’mores Butler, making decadent, custom s’mores at the oak

fireplace in the courtyard. A block away from the other side of the park is Piccolo , a contemporary hotel with a hip rooftop bar and a self-serve Moet champagne vending machine. Behind the Piccolo, facing toward the park, is the Paso Robles Inn , which is almost as old as Paso itself and has seen a lot of famous visitors in its history. It was renovated in 2014 and since the hotel was built on the site of mineral hot springs, it includes deluxe mineral spa rooms. Two blocks south, the Stables Inn is a charming collection of horse themed cabins that are unpretentious, yet stylish in every detail. A little further is the Farmhouse Motel . It is currently being renovated to reopen by mid-2023.

My favorite discovery on a recent visit to Paso was Libretto . This jazz club is in the basement under Fish Gaucho and features a nine-foot concert grand Steinway piano. This model is advertised by Steinway to be the overwhelming choice of the world’s greatest pianists, and it has drawn the talent from far and wide. Grammy award-winning pianists have traveled from all over to perform here. Libretto also showcases local talent. I saw the G2 Project, which features George Garcia — a San Luis Obispo architect who moonlights as a jazz pianist — along with Ken Hustad on bass and Darrell Voss on drums. They performed an incredible set of cool jazz classics, originals, and reinterpreted popular songs like “Roxanne” and “Smells Like Teen Spirit.”

Flowing through everything that I experienced was the Paso spirit. I was told several times that Downtown Paso Robles has evolved over the past decade to become a much more vibrant place. There is so much creativity, passion, and style. Creators compete to be the best, but they support each other with a sense of community. I found Downtown Paso an inspiring place to be.

Cinco de Mayo Menu

Cinco de Mayo is a national holiday in Mexico and is celebrated throughout our Southwest. Growing up in the 1960s, I used to think Cinco de Mayo was like our Fourth of July.

Cinco de Mayo, however, is a celebration of Mexico’s military victory over French colonialists in 1862. When Mexico declared a temporary moratorium on the repayment of foreign debts, troops from England, Spain, and France invaded. By April 1862, the English and Spanish had withdrawn. Still, with the support of wealthy Mexican landowners, the French remained in an attempt to establish a monarchy to curb U.S. power in North America. On May 5, 1862, a poorly equipped mestizo and Zapotec force under the command of Mexican General Ignacio Zaragoza defeated French troops at the Battle of Puebla. Although the French withdrew from Mexico five years later, this battle symbolized Mexican resistance to foreign domination.

I am making this for my family in celebration of Cinco de Mayo. I think you will also enjoy making some (or all!) of these for your family.

Chorizo Stuffed Poblano Peppers Appetizers

Makes 10 servings

Ingredients:

5 Poblano peppers

1 tablespoon extra-virgin olive oil

½ white onion (chopped fine)

1 small jalapeño pepper (seeded and chopped fine)

2 chorizo sausages (chopped into ¼-inch pieces)

1¾ cups cooked brown basmati rice

1¼ cups canned black beans (rinsed and drained)

1 cup fresh corn off the cob (about one corn cob)

½ teaspoon California chili powder

1½ teaspoons cumin

1 teaspoon Mexican oregano (not Mediterranean oregano)

Salt and pepper to taste

2½ cups Monterey Jack cheese (finely shredded)

3 green onions (sliced for garnish)

Directions:

Preheat oven to 375 degrees. Cut peppers in half lengthwise. Remove seeds and ribs. Rinse and place on a baking sheet. Place the peppers in the center rack of an oven set on broil. Roast for 4 to 5 minutes on one side, turn over and roast for another 4 minutes. Remove

from the oven and set aside. While the peppers are roasting, chop the chorizo into ¼-inch pieces. Measure out 1½ cups and set aside. My omnivore wife, Robin, likes this dish with either meat or vegetarian chorizo. I like Soyrizo, but if you are an omnivore like Robin, substitute your favorite meat chorizo.

Heat the oil in a large skillet on mediumhigh heat. Add in the onion and jalapeño and sauté for 2 minutes. Reduce heat to medium. Add the sausage, then stir and sauté until the sausage is warmed, about 6 minutes more. Stir in rice, beans, and corn. Sprinkle in the seasonings (chili powder through salt and pepper) and stir well to combine. Remove from heat and set aside.

Place the cooked peppers on a baking sheet and mound the sausage mixture onto each pepper. Top liberally with shredded cheese. Bake for 20 minutes or until the cheese begins to brown. To serve, sprinkle with green onions. You can also drizzle a creamy chipotle dressing over each one for extra taste. I enjoyed a vegetarian Tex-Mex dish at Café de la Paz in Berkeley in the gourmet ghetto neighborhood. I tried duplicating the dish from memory when I returned to Ojai. What I came up with was more of a Mexican lasagna than the “Tamal Azteca” on the menu at Café de la Paz. I call it Lasagna Azteca.

Lasagna Azteca

Make 6 to 8 servings

Lasagna Ingredients:

1 batch of Azteca Sauce (see below)

9 stale corn tortillas

12 ounces fresh baby spinach

16 ounce package of frozen corn (thawed)

12 ounces Oaxaca cheese (cut into 1-inch pieces)

¼ cup cilantro

(chopped – for garnish)

Assembly Directions:

Preheat oven to 350 degrees. Boil two quarts of water. When water is boiling, add spinach and allow to cook for 90 seconds (no more). Immediately remove from heat and drain well. Set aside.

Lightly coat a deep baking dish (approximately 9”x9”x3”) with vegetable oil spray. Spread a thin layer of sauce over the bottom. Cover sauce with three tortillas. Spread spinach over the tortillas. Top with ¼ of the cheese and one cup of sauce.

Place three tortillas on top and press down gently. Spread the corn over the top and cover with one cup of sauce and ¼ of the cheese. Place three more tortillas on top and press down. Spread the remaining sauce on the tortillas. Sprinkle the remaining cheese on top of the sauce. Cover tightly with

foil and bake for 30 minutes. Uncover and bake for another 10 minutes. Sprinkle cilantro on top of the cheese before serving.

Azteca Sauce Ingredients:

1 small white onion, chopped (about a cup)

½ tablespoon extra-virgin olive oil

1 clove garlic (chopped)

28 ounces crushed tomatoes (do not drain)

1 cup hot water

1 teaspoon Better Than Bouillon

Vegetable Base

½ teaspoon salt

1½ tablespoons red chili powder

¼ cup chopped cilantro

Azteca Sauce Directions: Heat the oil in a frying pan over medium heat. Add onion and cook until translucent (about 5 minutes). Add garlic and cook for another minute or two. Add crushed tomatoes, water, Better Than Bouillon, salt, and chili powder. Stir till well mixed. Simmer uncovered over low heat for approximately 15 to 20 minutes until the sauce thickens. Stir in cilantro, remove from heat, and let cool. When still warm (but not hot), put the sauce in a blender

and puree.

This sauce stores well in the refrigerator for up to one week.

We can all agree that a good burrito is made with fresh ingredients. The right combination of ingredients distinguishes a good burrito from a great one. Here are my recommendations for what a great burrito must include at a minimum:

- Fresh flour tortillas. Handmade tortillas are preferable to store-bought ones.

- A variety of colors, textures, and fresh flavors. Mono-filling burritos are bland.

- Beans. I love rice but not in my burrito. Rice tends to make a burrito mushy and doesn’t add all that much flavor.

- Pico de gallo, made with farm-fresh ingredients. This provides texture and flavor.

- Creamy guacamole. This is an additional flavor layer.

- Tangy Monterey Jack cheese. ‘Nuff said.

- Grilling. This provides a crispy outside texture – but not too crispy. The burrito must still be chewy.

I like my burritos to be uncomplicated yet tasty, familiar yet unique. I’m not convinced that burritos should include a mound of fancy fried potatoes or French fries. Too trendy for me.

My use of local, farm-fresh tomatoes, onions, cilantro, chilies, garlic, avocados, kale, and limes makes them unique. Fresh cactus leaves with which to make nopalitos are available at many Certified Farmer’s Markets, or you can find them already processed and pickled at one of our local markets.

A Great (and tasty) Burrito

Makes 4 burritos

Ingredients:

5 medium and firm tomatoes (¼-inch dice)

1 medium white onion (peeled and diced)

¼ cup fresh cilantro (chopped fine)

2 jalapeño chilies (seeded and chopped fine)

1 medium clove garlic (peeled and minced)

2 tablespoons fresh lime juice

Salt and fresh ground black pepper to taste

4 ripe avocados (peeled and pits removed)

3 tablespoons red onion (chopped fine)

¼ cup fresh cilantro (chopped)

1 large clove garlic (peeled and minced)

1 teaspoon fresh lime juice

2 tablespoons Mexican Crema

½ teaspoon salt

2 serrano chilies (retain seeds and chop fine)

½ cup pickled nopalitos (drained - Doña María is a good brand)

½ teaspoon extra virgin olive oil

1 teaspoon lime juice

⅛ teaspoon cumin powder

Pinch of salt

3 large fresh kale leaves (ribs removed and leaves cut into ribbons)

2 cups cooked or canned black beans (rinsed and drained)

2 cups Sonoma Jack cheese (grated fine)

4 flour tortillas (12-inches in diameter)

Directions:

Combine the first seven ingredients (tomatoes thru salt and pepper) in a bowl, cover, and set aside. This is the Pico de Gallo.

Add the next nine ingredients (avocados thru nopalitos) to a blender and blend until smooth. Pour into a bowl, cover, and set aside. This is the guacamole.

Combine the next five ingredients (olive oil thru kale) in a large bowl and toss to mix well. Set aside. This provides color, flavor, and crunchiness.

Assembly

Gently heat one of the tortillas on a grill over medium heat for about a minute. Place the tortilla on a clean work surface and add a base of beans down the middle of the tortilla (about ½ cup of beans per burrito). Layer two heaping tablespoons of Pico de Gallo on top of the beans. Layer two to three tablespoons of guacamole on top of the Pico de Gallo. Layer ¼ of the kale mixture on top of that. Finish with ½ cup grated cheese.

Once you have all the fillings in place, pull the bottom half of the tortilla over to meet the top half. Then, pull the tortilla back. This will form the filling into a nice roll. Fold both ends of the tortilla over and tightly roll your burrito. Set the completed burrito aside (with the seam side down) and repeat this process three more times.

Place the burritos on a grill preheated to medium-high heat. Grill each burrito for 1 minute on one side, then turn it over and grill for another 30 to 45 seconds on the other. Put the leftover Pico de Gallo and guacamole in dishes and serve as sides to the burritos.

and not five? Five would have been fantastic because the title could have been “Cinco Salsas for Cinco de Mayo,” which sounds much better. I wish I had a better answer, but the truth is that I only have three different salsa recipes in my culinary bag of tricks. These salsas are so good, however, that three are good enough. Give them a try and let me know what you think.

Tres Salsas for Cinco de Mayo

Grilled Peach and Avocado Salsa

Ingredients:

2 ripe Haas avocados

2 ripe peaches

1 tablespoon extra-virgin olive oil

3 tablespoons fresh lime juice (divided)

¼ cup shallots (chopped fine)

2 garlic cloves (minced)

2 jalapeños (seeds removed and sliced thin)

¼ teaspoon salt

Ingredients:

Tres Salsas translates as “three salsas” in English. Cinco de Mayo translates as “Fifth of May.” So, what is this title trying to say? It’s my clumsy way of saying I’m offering three different salsa recipes to celebrate Cinco de Mayo. Why do I offer only three different salsas

Preheat your grill on medium-high heat (400 to 450 degrees) for 10-15 minutes. While the grill is heating, slice the avocados and peaches in half lengthwise and remove the pits. Brush a mixture of one tablespoon of olive oil plus one tablespoon of lime juice on the flat sides of each half. Make sure they’re coated generously to avoid sticking to the grill.

Once the grill is hot, add the avocado and peach halves, cut side down, and close the lid. Grill for 4 minutes. Use grill tongs to carefully remove the peach and avocado halves to a plate. While the peaches are still hot, they can

be easily peeled. Allow them to cool before dicing. Use a large spoon to scoop the avocado flesh away from the peel.

Combine the remaining lime juice, shallots, garlic, and jalapeños in a large bowl. Dice the avocados and peaches into small pieces and fold them into the salsa. Refrigerate for approximately 30 minutes before serving.

Mango Habanero Salsa

Ingredients:

2 fresh mangoes

¼ teaspoon fresh habanero chiles (seeded and diced fine)

3 tablespoons red bell pepper (chopped fine)

2 tablespoons white onion (diced fine)

1½ tablespoons fresh cilantro (chopped fine)

2 teaspoons fresh lime juice

½ teaspoon salt

Directions:

Remove the skin and seed from mangoes. Puree enough fruit in a blender to provide ½ cup mango pulp, and cut enough mangos for another ½ cup diced mango.

Remove the seeds from the habanero and dice finely. Note: when removing seeds, use gloves if necessary and wash your hands thoroughly afterward. If you like hot salsa, use ½ teaspoon diced habanero chiles.

Place all ingredients in a bowl and stir to mix well. Cover and let sit for one

hour to allow flavors to blend. If the salsa is too thick, add a small amount of water.

Salsa Fresca

Ingredients:

5 - 6 medium tomatoes (diced)

1 medium white onion (diced)

¼ cup fresh cilantro (chopped fine)

2 jalapeno chiles (seeded and chopped fine)

1 garlic clove (minced)

Juice of 1 lime

Salt (to taste)

Directions: Combine all ingredients in a large mixing bowl, stir, and enjoy.

Jalapeños in Escabeche

Escabeche is a Mediterranean cuisine, generally referring to a dish of poached or fried fish marinated in an acidic mixture before serving. In addition to Mediterranean countries, escabeche is common in Salvadoran, Panamanian, Peruvian, Philippine, Puerto Rican, Dominican, Guatemalan, and Mexican cuisine.

And although escabeche is generally identified with fish dishes, it also refers to the vegan marinade itself. In Mexico, sliced or whole jalapeños en escabeche are used as a garnish for various dishes.

Ingredients:

16 ounces jalapeño peppers

1/3 cup olive oil

2 - 3 medium white or yellow onions (thickly sliced)

3 medium carrots

(scrubbed and thickly sliced)

1 head garlic

(cloves separated and peeled)

4 cups apple cider vinegar

1 cup water

2 tablespoons Kosher salt or sea salt

2 bay leaves

½ teaspoon dried oregano

4 sprigs of fresh marjoram or ¼ teaspoon of dried

4 sprigs of fresh thyme or ¼ teaspoon of dried

1 tablespoon sugar

Directions:

Wash the chiles, leaving the stems intact. Cut a cross in the tip end of each chile so the vinegar can penetrate. Heat oil on medium heat in a large, deep skillet. Add the chiles, onions, carrots, and garlic. Cook for about 10 minutes, turning them over occasionally. Add the vinegar, water, salt, herbs, and sugar, and boil. Lower the heat and simmer for 10 minutes. Make sure the chiles are entirely cooked through before canning.

Pack 4 pint-sized sterilized jars with the chiles and vegetables. Top with the vinegar and seal. Process in a hot water bath for 10 minutes. Share with friends and family.
