Welcome! Hello! Pleased to meet you! We are Greg and Stacie Humpherys and we run Caboose Spice & Company from just outside Boise, Idaho. We create seasoning blends and gifts for people who love to cook, but don’t have time for long, complicated recipes. Our seasonings collection comes in 6 well-rounded flavor profiles to suit today’s busy home chef. While the flavor profiles may be complex, our seasonings couldn’t be any simpler and easier to use. Our aim is to help home cooks coax eye-rolling, tastebud-tingling “oohs” and “ahhs” from their families and friends without a lot of fuss (that kinda takes the fun out of it, don’t you think?) More importantly, we hope to help families sit down to dinner more regularly, stow the mobile devices, and engage with one another over a great meal. Our blends are Greg’s original recipes in packaging designed by Stacie, and developed in our own home kitchen. Our seasonings are blended and packaged in a state-of-the-art facility, with the extra step of gluten-free certification. We love to cook together, and we are constantly coming up with new ways to help inspire our customers to create amazing dishes. Ordering is fast and easy. 30-MINUTE SHEET PAN FAJITAS WITH KANSAS CITY SOUTHERN

EASY INSTANT POT CHEESESTEAK FRENCH DIP SANDWICHES WITH ABILENE DEPOT

2 tablespoons olive oil, divided

2 tablespoons oil (such as avocado), divided

2 teaspoons Kansas City Southern seasoning blend, divided 1.5 lb flank steak 1 tsp lime juice

3 bell peppers (red, green, yellow), sliced lengthwise 1 red onion, sliced

8 fajita-size flour tortillas

Limes, cilantro, avocados, sour cream, etc (optional) 1. Preheat oven to 450. Rub flank steak with olive oil, lime juice, and 1 teaspoon Kansas City Southern seasoning. Toss peppers with the remaining seasoning and olive oil. Place the steak in the middle of a parchment paper-covered baking sheet, arranging the peppers around the edges of the sheet (see photo). 2. Bake for 15 minutes, or until steak reaches desired doneness level when measured with an instant-read thermometer.* Broil for an additional 2 minutes to develop a nice crust on the steak. 3. Remove steak from oven and transfer to a plate; cover with foil and allow to rest for 10 minutes. While steak is resting, wrap tortillas in foil and place in warm oven. 4. Slice steak across the grain and serve with peppers and warm tortillas along with your desired toppings. *Rare: 125℉ (52℃); Medium Rare: 135℉ (57℃); Medium: 145℉ (63℃); Medium Well: 155℉ (68℃); Well Done: 170℉ (77℃). ACTIVE TIME: 10 MIN | TOTAL TIME: 30 MIN | SERVES: 4

1 2-lb chuck roast (about 2 inches thick)

1 tablespoon Abilene Depot Seasoning Blend, divided 1 yellow onion, sliced and divided 3 sprigs fresh rosemary 1 cup chicken stock

8 oz cremini mushrooms, sliced

1 yellow bell pepper, sliced lengthwise 6 sandwich rolls, sliced and buttered 6 slices Provolone cheese

1. Season roast with 2 teaspoons Abilene Depot. Set Instant Pot to Saute. Brown all sides of roast in 2 tsp oil. Add 1/2 onion, chicken broth, and rosemary to Instant Pot. Set to high pressure for 38 minutes. When time is up, allow to slow-release pressure for 25 minutes. Remove roast and cover with foil to rest. Preheat your oven’s broiler to high. 2. While the roast is resting, saute remaining onion, mushrooms, and pepper for 5-7 minutes in 2 tsp oil over medium heat, or until onion is translucent and mushrooms are softened. Place rolls cut side up on a baking sheet, and toast under broiler about 5 minutes. Meanwhile, slice beef. Remove rolls from oven. Top with beef, mushrooms, onions, peppers, and 1 slice of provolone cheese. Place under broiler again, until cheese is melted. Strain the jus from the Instant Pot into a gravy separator. Serve sandwiches with jus and enjoy! ACTIVE TIME: 20 MIN | TOTAL TIME: 35 MIN | SERVES: 6

HERBED TILAPIA AND CITRUS-LIME MAYO WITH RIVER OF NO RETURN

COCONUT-LIME CHICKEN RICE BOWLS WITH KASHMIR STATION

4 tilapia fillets

1 lb boneless, skinless chicken thighs, roughly chopped

1 teaspoon River of No Return Seasoning Blend

4 squares of parchment paper, about 12 in x 12 in Fresh herbs such as basil 1 cup matchstick carrots 1 zucchini, thinly sliced 1 lemon, sliced 1/2 onion

1 bell pepper, sliced

1/2 pint grape tomatoes, halved For the citrus mayo: 3 tablespoons mayonnaise, 1/4 tsp lemon zest, 1 teaspoon lemon juice, 1/2 teaspoon River of No Return seasoning blend, 1 tablespoon chives.

1. Preheat oven to 425 F. Season tilapia with River of No Return seasoning blend. Fold parchment paper in half, crease, and open. Divide tilapia, herbs, carrots, zucchini, lemon, onion, bell pepper, and tomatoes among the 4 parchment squares, placing all ingredients on one side of the fold. Fold parchment paper over ingredients, rolling edges inward as you would a calzone. Bake 12-15 minutes, or until the tilapia reaches 145 F internal temperature. 2. Meanwhile, whisk all of the citrus mayo ingredients together in a bowl. Serve opened tilapia packets with a dollop of citrus mayo. Enjoy! ACTIVE TIME: 10 MIN | TOTAL TIME: 20 MIN | SERVES: 4

1 cup brown rice

1 teaspoon Kashmir Station seasoning blend 1 tablespoon sweet chili sauce

1 tablespoon coconut oil, divided 1 lime

1/2 cup matchstick carrots 1 cup shelled edamame

2 green onions, sliced (white and green parts separated)

Sesame seeds, cilantro, chopped basil (optional, for garnish) 1. Cook rice according to package directions. Meanwhile, season chicken thighs with Kashmir Station and sweet chili sauche. Heat 2 teaspoons coconut oil over medium heat in a skillet. Cook chicken, stirring occasionally, for 7-8 minutes or until internal temperature reaches 165 F. 2. Add carrots, edamame, and white parts of green onion. Stir fry 1-2 minutes or until colors brighten. 3. Divide rice and chicken mixture among 4 bowls. Top with sesame seeds, cilantro, green parts of green onion, basil and additional sweet chili sauce if desired. ACTIVE TIME: 20 MIN | TOTAL TIME: 35 MIN | SERVES: 6

SMOKY WHITE CHICKEN CHILI WITH THREE KINGS

INSTANT POT KOREAN STYLE SHORT RIBS WITH OLD NO. 1

1 lb boneless, skinless chicken thighs, roughly chopped

2 teaspoons Old No. 1 seasoning blend

1 tablespoon Three Kings Seasoning Blend, divided

1 tablespoon high-heat oil (such as avocado), divided 2 medium yellow onions, diced

2 jalapeno peppers, seeded and minced 4 garlic cloves, minced

1 can diced fire roasted green chiles (7 oz), with juices 1 32-oz carton low sodium chicken stock

2 15-oz cans white beans, drained (Great Northern, Cannelini, or similar)

Avocado, cheese, sour cream, cilantro (optional, for garnish) 1. Heat 2 teaspoons oil in Dutch oven or heavy bottomed pot over medium-high heat. Season chicken with 1-1/2 teaspoons Three Kings seasoning blend. Cook chicken in hot oil for 5-7 minutes until done. Remove chicken from pot and set aside. 2. Add 1 teaspoon of oil to the juices in the pot. Cook onions over medium heat until tender, about 5 minutes. Add jalapenos and garlic, saute for 1 minute until garlic becomes fragrant. Add green chiles, chicken stock, beans, and cooked chicken. 3. Simmer over medium-low heat for 10 minutes. Season with more Three Kings to taste. Serve topped with avocado, cheese, sour cream, tortilla strips, or anything your heart desires! ACTIVE TIME: 15 MIN | TOTAL TIME: 25 MIN | SERVES: 6

2 lbs pork rib tips

1/4 cup low-sodium soy sauce

2 teaspoons grated fresh ginger 4 garlic cloves, minced 4 oz applesauce

1 cup jasmine rice

2 teaspoons coconut oil 1 lime

1 tablespoon honey 1. Season ribs liberally with Old No. 1 seasoning blend. Combine ribs, soy sauce, ginger, garlic, and applesauce in the Instant Pot. Set the Instant Pot to Manual High Pressure for 30 minutes. Quick release pressure. 2. Meanwhile, cook rice according to package directions. When rice is finished cooking, stir in coconut oil, 1 teaspoon lime juice, 1 teaspoon lime zest. 3. Preheat your oven’s broiler. Place cooked ribs on a parchment-covered baking sheet. Brush with honey and place under broiler for 5 minutes or until ribs are nicely browned and crisp. Take care not to burn the ribs. Serve ribs with rice. Optionally, strain the juices from the instant pot into a gravy separator, and use as a delicious sauce over the ribs and rice. ACTIVE TIME: 10 MIN | TOTAL TIME: 50 MIN | SERVES: 4

HOW TO USE SEASONING BLENDS & RUBS ⊲⊲ Meats, poultry & fish: sprinkle seasoning over

all surfaces, patting and gently massaging into the flesh. Use enough so that you can still see the meat underneath and so all seasoning sticks to the meat. You can also use a bit of oil to help seasoning stick.

⊲⊲ Salads and pastas: Add seasoning to taste. ⊲⊲ Fruits and vegetables: Brush a thin layer of

oil on all surfaces. Sprinkle seasoning to taste. Grill, bake, or saute.

⊲⊲ Popcorn: Pop popcorn with your preferred

method. Add melted butter and season lightly to taste.

⊲⊲ Soups and sauces: Replace the total volume

spices, salts, and peppers in a recipe with 1/2 the volume of your favorite Caboose seasoning blend. Add more to taste. 16

LEAD TIME Orders of in-stock items placed before 1 PM MST ship the same day. Orders placed after 1 PM will ship the next business day. PAYMENT TERMS First orders and any orders under $100 must prepay with a credit card. A minimum opening order of $100 is required. A $10 surcharge will be applied to orders under the minimum. Special requests for less than pre-packed quantities will be considered o a case-by-case basis and will incur a minimum $15 handling fee per order. Checks will be deposited upon receipt and must clear prior to shipment (allow 7-10 days). Returned checks are subject to a $50 fee. A delinquent charge of 1.5% per month will be assessed on all accounts over 30 days past due. Prices subject to change without notice.
