In Profile A CONNECTED COOK

83 year old Eva and her husband arrived in Australia forty years ago after escaping Cyprus with ”just the clothes we were wearing”. Raising three boys, Eva quickly adapted to her new life and community in suburban Melbourne. With her family now all grown up, Eva still loves living in her own home, with dog Bella and the bird with ”no name”. A proud family matriach, Eva is ”YiaYia” to six grandchildren and five great grand children. A passionate cook, Eva is happiest in the kitchen cooking and baking for her brood. ”They all love coming around” she says proudly and who can blame them with the delicious treats on offer! Eva keeps active and walks every day down to the shops or to catch the train to the Cyprus Social Club,

where she is a member. Always open to new things, Eva is also well connected online with a laptop and iPad set up by her son. ”I love looking up the Cypriot recipe websites” she explains and she stays connected with family and friends all over the world via Facebook. In fact Eva’s iPad always travels with her as it is now her portable photo album. ”I love it because I can show everyone the latest photos of the children”. Eva utilises Calvary’s services as part of her Home Care Package. Matched with a Greek speaking Support Worker, Eva books in communty access visits and domestic assistance support.

Life Lessons ON THE ROAD

Truck aficionado Rod Lee lives independently in his own home in Canberra. Rod’s van is fitted for easy wheelchair access and he is always out and about in the Capital. In the 1990’s, Rod was in the Army and was deployed to Bosnia in 1993. He was a delivery driver of supplies and drove trucks overseas.

Going on holiday was my big goal and recently we reached the Gold Coast. It’s such a great feeling when you achieve a goal.

Rod loves to share photos with family, friends and Calvary staff and visit the museum, shows and the cinema with his support workers.

Follow your Passions

I’m allergic to wives but treasure my family! I have a tribe of five kids and three grandchildren and love having them over for a big Christmas soiree every year. My brother Greg is a great companion and an integral part of my life. He put together a family history and I have really enjoyed exploring my ancestry. Set goals to achieve what you want in life Whatever your circumstances goal setting is very important. Big or small, write them down so everyone knows and so that you are all on the same page. 8

Since I was a small boy I have always loved trucks and vehicles. I worked as a mechanical engineer and owned trucks in my business. I am still mad about trucks and visit the Penrith truck show with my Calvary Support Worker every year. Communicate with the people around you I accept that I need support to live independently but you can’t expect everyone to understand your perspective straight away. I try and communicate as much as possible and be open and accepting of new people. Do the stuff you enjoy You can do anything. But be careful. Think about things first, take time to consider the consequences and then do it.

Get into the garden this winter with the Stephanie Alexander Kitchen Garden Foundation. Although the weather cools down in winter, it’s still a great time to get active out in the garden. So rug up and head out to the veggie patch to do some winter planting. Gardening has many health benefits, and your efforts will be well rewarded with delicious home-grown produce. You can also prepare your beds for spring by digging in organic matter such as well-rotted compost, blood and bone or well-rotted animal manure. In late winter start mulching with sugarcane mulch, pea straw or lucerne, so your garden is ready for the next round of planting. If you already have an established veggie garden, winter is the time to harvest broccoli, cauliflower, cabbage, kale, spinach and celeriac. Once you have harvested all your lovely winter produce, spend a day in the kitchen cooking up some hearty winter fare.

The Foundation is now helping more than 1000 schools and early years learning centres across Australia teach children the joys of growing, harvesting, preparing and sharing fresh, seasonal, delicious food. Roasted Spiced Cauliflower Salad w Yoghurt Sauce Recipe by Stephanie Alexander Kitchen Garden Foundation INGREDIENTS

METHOD

• 2 tsp coriander seeds

Preheat oven to 200°C. Dry roast the coriander and cumin seeds in a small frying pan.

• 2 tsp cumin seeds • 1/2 cup pepitas • 1/2 cup sunflower seeds • 2 tbsp sunflower oil • 1 red chilli, de-seeded and finely sliced

Grind roasted seeds in a mortar and pestle.

• 2 garlic cloves, peeled and finely sliced • Pinch of turmeric • 1 cauliflower cut into florets

Dry roast the pepitas and sunflower seeds, and set them aside.

• Salt and pepper • 1 handful of coriander • 2 lemons, cut into wedges to serve YOGHURT SAUCE

• 1 tsp cumin seeds • 1/2 cup sesame seeds • 1 tsp salt • 2 cups plain yoghurt • 1 small handful mint, finely chopped 14

Combine the coriander, oil, cumin, chilli, garlic and turmeric in a large bowl. Add the chopped cauliflower and toss to coat the cauliflower in the spiced oil. Roast the seasoned cauliflower for 30 mins or until browned and tender. Allow to cool.

Toss the cauliflower with the pepitas, sunflower seeds and spinach. FOR THE SAUCE

Dry roast the cumin and sesame seeds in a small frying pan and then grind in the mortar and pestle. Add the salt, allow the seed mix to cool, then add to the yoghurt and mint in a medium bowl.

Serve the cauliflower with coriander, lemon wedges and the yoghurt sesame sauce.

Introducing the New Five Senses Garden at Calvary St Joseph’s With a waterfall, chicken pen and edible plants (herbs and apples), the new garden at Calvary St Joseph’s Retirement Community has been carefully curated to offer an experience that will engage all the senses. Designed by Maintenance Manager Paul Campbell and gardener Miro Disciascrio, the garden allows residents, especially those with dementia, to enjoy nature in a safe and tactile environment. Paul undertook significant research to ensure that the garden would be safe for the residents. Paul explains, “I had to make sure the plants would be safe. They needed to be edible and not sharp to touch. We also had to think about the materials we used around the garden”.

Sensory Gardens can also make a great contribution to emotional and physical health. They can be beautiful places to relax, reflect, meditate, contemplate and talk. Calvary St Joseph’s Manager Helen Gayner has found that “the residents just love sitting in the peaceful surrounds of the garden”. Values in Action VOLUNTEERING IN THE COMMUNITY

Volunteering is a great way to get involved in your community, meet new people and make a difference to the lives of others.

Across Calvary over 1400 volunteers generously devote their time to care for others and help bring the values of hospitality, healing, respect and stewardship to life.

It provides experience that you can use to gain employment. It also shows prospective employers that you are a reliable and committed individual”.

Their contributions are making a difference every day to our clients, residents and patients and vice versa. For volunteer Rhonda Halverson for example, the reward is all about “seeing the smiles on the residents faces”.

This was true for volunteer Doug Thoma who is now working as a care service employee at Calvary Cessnock after cooking barbecues, driving the bus and running the Mens Shed.

Calvary’s volunteer program also provides opportunities for individuals to learn new skills and make new friends. According to Calvary Cessnock Volunteer Coordinator Therese Fitzgibbon “volunteering is a great way to kick start your career.

Fresh & Quick OOH LA LA! SOUP-ER SPECIAL

1

French Onion Soup

INGREDIENTS

• 2 kilos of white onions • 1 tablespoon of butter • 100mls of brandy • 1/2 cup of white wine • 50g of plain flour (or gluten free flour) • 4 cups of vegetable stock • 2 bay leaves • 1 teaspoon of sugar • 4 slices of bread or baguettes • 50g of cheese METHOD

Beat the chill with a steaming bowl of hearty soup. Packed full of nutritious goodness, these simple solutions can be prepared and frozen for a quick and healthy go-to meal on a cold winter’s evening.

Finely slice the onions and fry the onions in butter until they are golden brown.

Cut up bread and cheese and melt under a grill to create croutons for the soup.

Add in 100mls brandy, 1/2 cup white wine and reduce heat. Add 50g of plain flour, 4 cups of vegetable stock, 2 bay leaves, a teaspoon of sugar and cook for about 2 hours.

Serve the soup in bowls with the baguettes on top. Délicieux.

Minestrone Soup METHOD

Cook pasta & set aside. Sauté the pancetta in a pan until cooked and drain on paper towel.

Add olive oil to the pan with the pancetta juices then sauté the onions, garlic, potatoes and carrots for 10 minutes or until tender. Add the zucchini, squash, celery and green beans and then sauté for an additional 6 minutes.

INGREDIENTS

• 6 cups chicken stock

• 1 can cannellini beans

• 1 cup diced pancetta

• 1 can of kidney beans

• 2 cups diced carrots

• 1/2 cup chopped parsley

• 2 cups diced onion • 1 cup string beans cut in 2cm pieces

• Salt and pepper

• 2 cups zucchini and squash diced

• Olive oil

• 1 cup celery sliced • 2 cups diced potatoes • 4 cloves crushed garlic • 1 can crushed tomatoes

• 2 cups cooked pasta

• Parmigiano cheese • Optional 50g pesto

In a large pot add chicken stock, tomatoes, cans of beans and bring to a boil. Lower heat and cook for 15 mins.

Ladle pasta into bowls then pour the soup over the top. Serve with chopped parsley, a drizzle of olive oil or pesto and grated parmigiano.

Pea and Ham Soup

INGREDIENTS

• 500g unsmoked ham hock

METHOD

Trim and discard skin from ham hock and set aside.

• 8 cups water • 2 tbsp butter • 2 carrots, diced • 2 sticks celery, diced • 1 onion, diced • 2 cloves garlic, crushed • 1 and 3/4 cup dried yellow split peas • 2 bay leaves

In a large casserole pot, melt butter over medium heat. Cook carrots, celery, onion and garlic until golden and softened about 15 mins. Stir in split peas, bay leaves, thyme, salt and pepper and cook stirring for 2 mins.

• 1 tsp dried thyme • 3/4 tsp salt • 1/4 tsp pepper • Garlic Toasts - 1 baguette - Butter, softened - 1 large garlic clove halved - Sea salt 24

Stir in 8 cups water, add ham hock and bring to the boil. Reduce heat, cover and simmer, until peas are very soft and soup is thickened, 1 and a 1/2 to 2 hours.

Discard bay leaves. Transfer ham hock to plate and let cool enough to handle. Discarding bone and any fat, dice the meat and return to the soup to heat through.

Cut baguette into 12 slices and spread with butter. Grill until golden, about 2 minutes. Rub with garlic and sprinkle with salt. Serve with soup
