T

his issue of Cambria Style and the relationship with Steven Tyler is not really about music, or countertops. Our relationship with Steven flourished for one reason, GIVING. Our friendship that has developed was spawned in that spirit. The enormous gift we both receive in our charitable work, is born simply of an unbound choice we make in our giving to others. The giver, truly is the benificiary of the greatest treasure when the endeavor completes its circle. Steven Tyler’s, Janie’s Fund, like Cambria’s, Camp Cambria for Kids with Juvenile Arthritis, have the complete commonality of helping young people who, to no fault of their own, bear pain and suffering each and every day. Whether it by the grace of God, as one’s health challenges a youth’s well-being, or by pain afflicted upon a young person due to the random cruelty and dysfunction of society, the result and need are the same. A child, with the gift of a helping hand, can gain the strength and confidence to conquer what has unfairly become a daily burden making their childhood often devoid of simple, unfettered joy and everyday youthful pleasure. The giver, again, is enormously enriched. Janie’s Fund and Camp Cambria, and all giving endeavors like them, remind us of the great need for those who have been so blessed, that we commit to things greater than our talents or business opportunities, to tend to all, especially young children, enriching their precious, youthful journey. Cambria lauds all that the Tyler team does for the many youth suffering under the oppressive atrocities of childhood abuse, and we thank all of those who make our Camp Cambria bring hope, confidence, and the all-important normalcy to a young child. Giving, while most certainly providing support to those in need, is clearly to the great benefit of the so called, GIVER.

IF THERE IS ONE THING THAT’S CERTAIN, IT’S THAT LIFE IS NOT. With all of its challenges, ups and downs, and bumps (or potholes) in the road, it’s in those moments—if you choose to roll with or embrace them—that inspiration, growth, and, many times, out-of-this-world creativity happens. I’m not talking about regular old change, but the kind of change that propels you forward and really makes a difference in your life or, more importantly, the lives of others. The secret, it seems, is to stop hoping and wishing for something different and twist your own lens to gain a new perspective. Pretty close to a living, breathing testament of this sentiment is our cover story profile. In the most iconic and colorful way, he runs the gamut of a life lived to its extremes. Steven Tyler has seen, done, tasted, driven, and experienced it all at a breakneck speed and now, it seems, he is choosing not only to “kick back” with his new country album and house in Nashville, but to “give back” with the launch of Janie’s Fund, a campaign to help address the trauma of sexual abuse for teenage girls. After spending an afternoon with Steven in his new Nashville digs, although the gritty, raw rockstar is ever-present, the energy around him and in his world is surprisingly Zen. Discussions about the new fence around the property, the sweet new Cambria bathroom in the works, and the makings of a perfect donut are among the hot topics on set. Don’t kid yourself, a “runof-the-mill” day for this rockstar is still outside the norm for the rest of us (the vintage Rolls-Royce in the story is a good example), but writing, making music, and a good cup of coffee rounded off with an afternoon ride on his motorcycle are the makings of a day well played with this rockstar. At the onset of creating this issue, it was clear that we would be paying homage to music via Steven Tyler and Kimberly Schlapman of Little Big Town. And as we began to wrap up the issue, the passing of Prince, Minneapolis’ hometown musical icon, reminded all of us to celebrate music and the beauty that it brings to any moment in time. I

f you’ve ever stood in awe of a burnished red Roman fresco in a museum, the colors still as vibrant as they were thousands of years ago, or gazed up at a radiant blue ceiling in a centuries-old Italian church, you’ve experienced the enduring power of decorative plaster. As part of the Cambria® passion for craft, our editor invited Minneapolis-based artisan Darril Otto to share the art of decorative plaster with Cambria Style. A true craftsman, Otto has been creating what he refers to simply as “surface treatments” for several decades. Working with plaster, as well as wood and metal, he and his team apply their talents to interiors everywhere from Hawaii to Saudi Arabia. Like the artisans who work with Cambria, Otto’s craft is ultimately about creating harmony—between people, materials, light, and space. His favorite part of the process is collaborating with clients, architects, builders, and interior designers to create a vision for a project. From there, he uses his own signature brand of alchemy to develop colors with just the right hue and value to capture and reflect the light in the space. Once the colors are perfect, the team uses classical techniques (and a few trade secrets) to achieve the vision. A man of few words but many colors, Otto concocted a special mix of pigments from Italy and Germany for Cambria Style and named it Blue Hue #3. While it’s

Otto’s favorite part of the process is the collaboration. Before creating the luminous blue wall for Cambria Style, he sat down with our editor to understand her vision. As she explained her ideas, he pictured a specific blue in his mind. He then used richly colored mineral pigments from Italy and Germany to create the extraordinary Blue Hue #3.

similar to colors found in classical frescoes, this exact blue has technically never existed before. After mixing Blue Hue #3 with lime putty and finely crushed marble, Otto used simple, timeworn tools to apply paper-thin layers of the plaster to a plain white wall. True to his talent (and humility), the luminous blue wall in our Style Report on page seven of this issue is even more magical than our editor could have imagined. Such is the nature of craft.

Gone is the era of the formal dining room used only on special occasions. “If my clients decide to include a dining room—and most of them do—they want it to be a room they’ll actually enjoy,” says design-build contractor Ramsin Khachi, of Khachi Design Group in Oakville, Ontario. San Francisco-based interior designer Will Wick agrees. “Square footage is at a premium in so many markets, it’s just not an option to have a room that’s rarely used,” he says. But making the dining room an integral part of the

home takes careful planning. “If you don’t want your dining room to sit empty while everyone hangs out in the kitchen, you have to make it not just beautiful but comfortable, and inviting,” says Wick. “You have to create a space that will draw you in.” Here are some designer secrets for how to do just that.

“Having a butler’s pantry or servery between the kitchen and dining room is really the ideal situation,” says Khachi. “And, remember when planning spaces and elements to support the dining room—like a butler’s pantry or even a sidebar—to select beautiful, but hard-working materials, like Cambria®. Your goal is to create a space that’s as great looking as it is easy to spend time in.” If your home has an open floor plan, Khachi advises against including both a breakfast table and a dining table in the same flowing space. “We see that a lot, and it’s really a waste—you don’t need two tables within eyesight of each other,” he says. If you want both formal and informal eating areas, he suggests planning a dining area with a large table and an island with barstools instead of a breakfast table.

There’s only one good place for a dining room, according to the experts we interviewed: close to the kitchen. “If the dining room is too far away from the kitchen, you’ll never use it,” says Khachi. Since you (or your caterers) will be carrying dishes from one space to the other, the dining room and kitchen should be connected by a door or a pantry.

If you’re looking for a place to make a color statement, the dining room could be a good choice. “It’s typically a separate room, and one you only spend a couple of hours in at a time,” says Andrea Magno, Benjamin Moore Color and Design Expert. “So consider a bold, festive color you might not use someplace else.” But, she notes, neutral wall colors can look just as rich, especially if you use a higher-gloss sheen. “A shiny finish reflects light beautifully, particularly at night,” she says. Here, Magno offers top picks for dining room walls, all from Benjamin Moore:

questions for your own space will help you make key decisions, like how long the table should be, what types of materials you use, and how much storage to include. When it comes to the table, keep in mind that it has to fit the space as you use it most. “My clients usually want a table that seats 10 or 12, but most of the time they’re only eating there with four or five people,” says Wick. “Choosing an extendable table gives them the seating they need a couple of times a year, but feels cozier the rest of the time.” Wick favors narrower tables (about 36” wide) over larger ones because they feel more intimate, and will sometimes opt for a 60”-round style. As you shop for dining chairs, look for comfortable upholstery your guests won’t mind lingering in—and make sure they’ll fit under the table. “Check the depth of the skirt on the table and the height of the arms if the chair has them,” advises Kaiser. Also, choose a rug that’s at least three feet wider than the table all around, so the chair legs won’t get caught on the edge of the rug as guests pull back. Storage is a sometimes-forgotten but truly essential ingredient. “I don’t favor big glass breakfronts, because the more display space you have, the more you tend to store there, and it just looks distracting,” says Khachi. Instead, he says, plan mostly closed storage—hiding cabinets behind wall panels is a favorite storage tactic of his—and provide some open space, like on top of a con-

sole, so you can easily serve buffets. “Including a bar in the room is really convenient,” says Kaiser. “Some dining rooms have bay windows, and that’s a perfect place for a freestanding bar cart,” says Khachi.

ADDING ATMOSPHERE

Perhaps more than any other room in the house, the dining room is, as Khachi puts it, “an opportunity to serve up an experience.” As such, it’s important to consider everything from the upholstery materials to the window treatments to the wall colors with an eye to the kind of atmosphere they’ll create. Lighting is one of the most important factors in the ambiance equation, say the designers. Khachi suggests creating layers of light with a mix of recessed ceiling fixtures, chandeliers, and wall sconces, all on dimmers so you can raise and lower the levels according to the occasion. When choosing a chandelier, use the size of the table as a guide. “There should be about 10 to 12 inches from the sides of the chandelier to the edges of the table,” says Wick. “If you have a really long table, it can look better to use two or three smaller fixtures instead of one big one.” And finally, don’t forget the soundtrack. “Music is so important for entertaining,” says Khachi. “Integrated speakers come in a number of styles—some are actually invisible, others are as small as two inches by three inches—so it’s very simple to work a sound system into any design.”

As the name suggests, the Showcase Home features the latest trends in interior design and innovative products and construction techniques. As a sponsor, Cambria is featured throughout the house. The three-week tour is a must for interior designers, architects, builders, editors, stylists, and other creative professionals. Steve and Margo Henke, owners of Steve Henke Studio, a Minneapolisbased photography studio, toured the Showcase Home with longtime friend Billy Beson, interior designer and Cambria brand advocate. At the end of their visit, the trio gathered in the kitchen around the spacious center island crafted of Cambria Ella™. Steve and Margo have a long relationship with Cambria, as they’ve been shooting their designs for Cambria Style for years. In all their time shooting the natural stone, they couldn’t decide on the right design for their kitchen. Until the moment where they fell in love with Ella, the design that inspired their kitchen remodel. As Steve and Margo admired the island’s pristine, sparkling surface, they were both struck with the same thought: “We knew Ella was the right choice for us,” Margo says. “Our kitchen serves as a studio for all of Cambria Style’s gorgeous food features. We typically shoot as many as five dishes on the island in an afternoon, so a hard-working surface for food prep is an absolute must.” “Ella is one of my favorite Cambria designs,” Beson says. “I use it often in my projects, because it’s got so much movement and personality and it goes with just about any other color.” With Ella as their inspiration and Christmas as their deadline, the Henkes decided to give their kitchen a facelift. The room had great bones and high-quality European cabinetry, and the appliances and flooring were in good shape, so they knew they could easily transform the space with a new color palette and some smart, simple updates. On their short list: new countertops, a new look for their existing cabinetry, a new backsplash, a new sink, and new light fixtures, among other details.

the cabinets, sprayed them in the garage, and installed the original hardware. Cambria’s expert installers replaced the old stained countertops with Cambria® Ella™ in just one afternoon. “The Cambria guys are like the ancient Egyptian builders,” Steve says. “It was amazing to watch their process, as they’re so incredibly precise. When they slid the countertop into

the existing space, it fit perfectly, like the lid of a handcarved sarcophagus.” Steve set glossy Spanish subway tile with gray grout on the backsplash, hung new light fixtures, and replaced the old window shutters with steel shelving from IKEA. As a final flourish, the walls were finished with cool, blue-gray Italian plaster. “Now that the kitchen is finished, it’s even better than we expected,” Steve says. “Cambria Ella™ was definitely the right choice. Our old, honed-slate countertops were cracked and showed marks from every wine glass, every olive oil container, and every spill from six years ago. Our new countertops look the same as they did on the day they were installed.” “We love the look of marble but not the upkeep, so Cambria is perfect for us,” Margo says. “No matter how many cooks are in the kitchen during our shoots —literally—everything wipes right off. constantly throwing comments, throwing food. Italians talk and talk and talk. Italians rarely do not talk. A lot of it was arguing, but being forced to sit at a table with lots of people of all ages was how I was brought up. And I remember being forced to sit under the piano in our apartment in the Bronx and listen to my father play the deepest of classical cuts of all time. Bach. Brahms. Beethoven. Debussy. The Classical Greatest Hits ever. For me, that was the beginning of life as usual—or in my case, life unusual. I got the language of music from my father. I got my social skills from interacting with my Italian family in the craziest ways, and that’s where I got my

sense for crazy wordplay that’s allowed me to write so many lyrics that have lasted me a lifetime.” As for his singing voice, Tyler says interestingly it was one female vocalist that changed everything for him. “Janis Joplin is the one who turned me around,” he says. “She’s turned me from trying to have an angelic voice to trying to express myself. I try to sing with a kind of emotional truth. I wrote down this thing when I was young and I called it AMCED. I don’t think I’ve ever talked about it. AMCED stands for Accumulated Memorized Cognizant Experiential Dissonance. If you think about that for a second, it’s something that comes from having


INDULGING THE CREATIVE SPIRIT “If you think about it, Cambria and I have a lot in common,” Steven Tyler says with a sly grin when asked about his burgeoning relationship with the company. “See when you get down to it, we’re both in the rock business!” As befits the man who so soulfully sings “I Don’t Want To Miss A Thing,” Steven Tyler throws himself into absolutely everything he does—and that very much includes his own lifestyle choices and sense of personal style. And so it’s not too surprising that Steven Tyler is now very passionate and excited by about his new relationship with Cambria. And though it may surprise some observers, Steven Tyler doesn’t call just any place he puts his famous scarves and microphone home. He likes everything he does to have a personal touch and a strong sense of style. As Tyler recalls, “The whole relationship began when I got

to the house in Nashville, and I felt female energy there, so I went to the backyard and the pool, and the hot tub, and the little koi pond and the chairs, and I loved it all. It was like a beautiful treehouse cabin buried in the woods with a beautiful feeling bordering protected Forest Service land. I walked in. It was writerproducer Darrell Brown’s place. The singer Ke$ha had lived there. Then I went into the bathroom, which was kind of small, and there’s a tub where Ke$ha took a lot of baths, but the sink was not my style. See I’m a real splasher, so I need a big bowl for me to get down into and get washed and ready. So I thought before I even met the Cambria people that I would love to do something great with the bathroom—redo the whole thing. After I went down to the Cambria Showroom in Continued on page 35

your eyes opened and experiencing life, which is a trip on many levels and reflecting that in your art. It can’t all be harmony. You also have to experience some disharmony too. That’s why I keep stretching even now—because I think it’s important not just to experience the same-old, same-old.” That same passion for experiencing all of what life—especially his life—has to offer helps explain Steven Tyler’s continuing interest in boldly going where few other legends would dare to go. That’s reflected beautifully in his current “Out On A Limb” tour, which finds Steven entertainingly telling his own life story and singing songs old and new in a way that is daring and not simply some easy or obvious act of nostalgia. As Tyler sees it, “The experience of doing this kind of show has been so absolutely wonderful because I think to myself, how much would I pay to go see Paul McCartney or Paul Simon or any Paul who’s a great artist and have them sing their amazing songs and talk about what was going through their mind when they wrote “Yesterday” or “The Sound Of Silence.” I ask myself why everybody I love wouldn’t do

that—go up there and take an artistic leap without a net? And I guess it’s because you get too rich to want to get up there and expose yourself. But for whatever reason, I still want to be out there, so I live on an elliptical machine to make sure I am in still in shape for life, onstage and off.” Even though Steven is currently “Out On A Limb” by himself, he is the last man on Earth that would ever disrespect all that the brotherhood of Aerosmith has meant to him and to the world. As Steven puts it, “Once I started writing songs, I realized the songs were bigger than any of us. ‘Dream On’ is bigger than me. It’s bigger than Joe [Perry, Aerosmith’s lead guitar player]. ‘Sweet Emotion.’ ‘Walk This Way.’ These songs are a lot bigger than any of us in the band, and we know that. Songs like that should put you in your place, and make you realize that you’re a lucky bastard to be a part of something so much bigger than yourself. I still hear these songs on the radio anywhere I go. They follow me and I don’t want a restraining order against them. They will outlast the band; they will outlive the band. We created a monster, a fucking flat-out miracle. Sometimes you take that all in and you realize how much joy you’ve brought to people and it knocks you on your ass.” Over the past year or two, Tyler has been knocked off his ass in the best way possible by exploring the musical world of Nashville. As Steven recalls, “I met Scott Borchetta, who’s a great executive from there who brought the world Taylor Swift and so much else. Scott said, ‘Come on down to Nashville, and join my label.’” So I had a home there before I even had a

home. Scott was reactivating Dot Records, a label I grew up buying records from, so I was intrigued, and I started thinking, ‘Let’s see what I can pull out of my hat here.’” Once Tyler settled down to work and live in Nashville for a time, he says he instantly felt at home. “You instantly realize why Nashville is called Music City, because there are so many people there who can sing and play. Everyone’s a songwriter. And it wasn’t entirely new to me. There’s always been country and some field

hollers in what I do. I wrote ‘Cryin’—which is really a country song with Joe Perry and a Nashville guy, Taylor Rhodes, years ago. Now I’ve enjoyed working with so many songwriters down there—the Warren Brothers, Chris DeStefano, Hillary Lindsey—I could go on and on. And I’m co-producing this album with a real legend like T-Bone Burnett. You think I don’t get up in the morning, get on my knees to thank God, and wonder if this isn’t all just a dream? At a stage when others are getting bored, I’ve never been more excited.” Asked what inspires him at this point in his life and career, Tyler laughs. “In a way, the inspiration is fear—if I’m afraid of something, then there’s something there that excites me, and takes me out of any comfort zone. So I came down here, rented a beautiful place, brought the dogs, set up a couple writing sessions with people. It’s the way things happen here. You can wake up and go meet someone you’ve never met before and instantly be in the throes of collaboration with them. After a few hours of coffee and bullshitting, you get down to business and write. Eight hours later you walk out with a full song off of Pro Tools you can send through Dropbox. It’s an old tradition happening in new day and age. And it has the same appeal for me that made me such a drug addict back in the day— instant gratification. I love the creative environment in Nashville. There’s only three months of winter and no state tax. And the girls like to sleep with their boots on!” Beyond all the good fun, Steven Tyler is also focused on doing good works for a great cause through Janie’s Fund, a new philanthropic initiative that he has launched to raise money and awareness to help girls who have suffered the trauma of sexual abuse. The inspiration for his philanthropic work stems from his hit song, “Janie’s

Sometimes the biggest sign of success is being able to return to the place you had to leave in order to succeed. Country music star Kimberly Schlapman left her small hometown of Cornelia, Georgia, to attend college in Alabama and then moved to Nashville, in pursuit of musical fame. She got what she wanted. And then some. Little Big Town, the band she co-founded in 1998, has sold over 1.5 million records and won a slew of Grammy, Academy of Country Music, and

Country Music Association awards. As if that weren’t enough, Kimberly has used her culinary skills to host a Great American Country Network cooking show and author a cookbook, Oh Gussie! Cooking and Visiting in Kimberly’s Southern Kitchen. She’s also collaborated on a successful line of vintage-inspired kitchenware, also called “Oh Gussie!” (The expression is an all-purpose Southern exclamation, usable whether you’ve just won an award or dropped a heavy can on your foot.)


“FOOD HAS BEEN A PASSION SINCE I WAS A TINY GIRL,” KIMBERLY SAYS. “IN MY FAMILY, ALMOST EVERYONE COOKS, AND EVERYBODY LIKES TO GET IN ON THE ACTION— CHOPPING, STIRRING, FLOUR FLYING!"

But at 46, her biggest joy is that soon she’ll get to and Phillip Sweet completed the group, and by 2006, move back home. The Schlapman family—Kimberly, Fairchild and Westbook had married. recalls. “I’ve had Daisy sitting on the counters next to me since she was so little she sat in a jump seat. She loves to bake, and she’s been inventing her own recipes since she was three. At first...whoo, she was very heavy on the baking soda and sometimes I had to pretend to eat what she made! But now she’s really good at it. She still likes to climb up on the counter to help me. “It sounds crazy, doesn’t it?” Kimberly says happily. “Some venues are lush and spacious and the kids can ride their scooters and it’s wonderful. Sometimes there’s no backstage and we’re stuck on the bus all day. The worst is when it’s also raining!” It’s a challenge, she admits, but adds: “We try to make life as normal as we can.” The Schlapman family schedule shows no signs of easing. In the summer and fall of 2016, her “Oh Gussie” line of utensils, décor and dishes for Cracker Barrel Old Country store will expand to include a few clothing pieces, and even a rustic end table. Many items are embellished with daisies, in honor of her beloved daughter. And Little Big Town is more in demand than ever. The song “Girl Crush” from its sixth album “Pain Killer” was named American Country Countdown’s Digital Song of the Year and a finalist for Billboard’s Top Country Song. The band’s 2016 tour covers cities from

Washington D.C. to Wichita to Las Vegas. But on the rare, precious days when Little Big Town isn’t traveling and the world doesn’t call, the Schlapmans look forward to just being together. “When I’m home, I want to be at home,” Kimberly says. “I just soak it in as much as I can.” The first stage of their lakefront home has been completed, a barn-like guest house designed by Stephen, with a bedroom and kitchen upstairs, and lots of room for visitors to park. Soon, the dream house itself will be done, and Kimberly will once again be at home, surrounded by those she loves. “Family will always be my top priority,” she says emphatically. “My amazing husband—my soul mate— my precious daughter, my parents, sister, brother and their families. I know that the wonderful success I’ve found could fade away. But the people who love me will always be by my side.”

TOPPING INGREDIENTS 1 cup champagne vinegar ½ cup granulated sugar ½ cup water 2 tsp. salt 1 red bell pepper, cut in strips 1 yellow bell pepper, cut in strips ½ Serrano pepper, cut in strips ¼ cup extra-virgin olive oil

DIRECTIONS Place peppers in a heatproof bowl. Combine the champagne vinegar, sugar, water, and salt in a medium saucepan and bring to a boil. Pour over the peppers, set aside, and let cool. Place the pizza stone on the center oven or grill rack and preheat to 500ºF. Brush the center of the pizza crusts with olive oil and sprinkle with Taleggio and mozzarella cheese. Arrange the asparagus and peppers on the pizzas. Transfer to the pizza stone and grill or bake for 10 to 15 minutes or until crust is golden and baked through. Remove from heat and sprinkle Grana Padano on top. Arrange the watercress on the pizzas, cut into slices, and enjoy.

TOPPING INGREDIENTS ¼ cup extra-virgin olive oil 2-3 shallots, sliced 10-12 Brussel sprouts, sliced 5 or 6 slices of bacon, chopped, sautéed, and drained 8 baby heirloom tomatoes, cut in half 1 14-ounce can of San Marzano tomatoes, drained and cut into small chunks ½ cup shredded mozzarella cheese 4 eggs ¼ cup grated Grana Padano cheese DIRECTIONS Preheat grill or oven to 400F. Toss shallots and Brussels sprouts with olive oil in a roasting pan, season with salt and pepper and roast for 15 to 20 minutes. Place the pizza stone on the grill or center oven rack and increase temperature to 500ºF. Brush the center of the pizza crusts with olive oil and sprinkle with mozzarella cheese. Arrange Brussels sprouts, shallots, bacon, and tomatoes on the pizza. Transfer to the pizza stone and grill or bake for 5 to 7 minutes or to your liking. Remove from heat and crack two eggs on top of each pizza-dough ball. Continue cooking the pizzas until the eggs are just set. Remove from heat, sprinkle Grana Padano on top, cut into slices, and enjoy.

Cider has been on tap for centuries. The Romans first recorded the fermented apple drink upon reaching England in about 55 BC. After a free-flowing history in Europe, cider traveled across the pond with the earliest settlers and was Colonial Americans’ tipple of choice. But tastes change, and in the U.S. popularity of cider eventually faded as an influx of German immigrants and easier grain transportation along rail lines helped beer replace cider in our pint glasses. Fast forward to 2016, when cider is having a bona fide moment. Sales have tripled since 2012, with both major beer manufacturers and craft brewers joining the apple-picking party. If

Not surprisingly, the flavor of cider depends on the apples used in its production— traditionally, a combination of sweet, sharp, and bittersweet apples. “Sweet apples like Fujis are very low acid, and low-tannin,” says sommelier and cider enthusiast Leslee Miller of Amusée Wine in Minneapolis.

“Sharp apples, like Granny Smiths, are mostly tart. And bittersweet apples—the secret to giving cider a bit of pucker and bite—are low in acid and high in tannin.” England is the world’s top producer of cider apples, partly because American makers face a dearth of the right kind of orchards.

“When Prohibition came along, it devastated the U.S. infrastructure of bitter apple trees, as orchard owners replaced them with other varieties,” says Jim Watkins, co-owner of Sociable Cider Werks in Minneapolis. Vermont is known for its heirloom apple varieties, giving New England cideries

the luxury of plenty of the “spitters” (a nickname for bittersweet apples derived from their acrid flavor) they need. “But in the Midwest it’s nearly impossible to find them in meaningful volume,” says Watkins. “So we’ve turned to hops and grains to add bitterness and body.” Sweet ingenuity.

Sampling ciders is similar to tasting wine or flights of beer: Best done with the guidance of an expert and with a little foreknowledge. Leslee Miller shares her expert tasting advice: 1

“Pour your cider into a wine glass, not a pint glass, and never drink from the bottle. Swirl it very gently or not at all—if the cider is carbonated, swirling will make it bubble up.”

Macroproducers— the best known is the Boston Beer Company’s Angry Orchard brand, which dominates the market— overwhelmingly use apple concentrate from China to produce their ciders, which have typically been light and sweet “alco-pop”, according to Jim Watkins of Sociable Cider Werks. Craft producers, on the other hand, press their own apples and create a dryer, more complex product that appeals to craft beer lovers. Look for mass market brands to follow the lead of the little guys as craft cider gains traction.

Picking A Winner

Every country around the world has its own style of cider, says sommelier Leslee Miller. “English ciders tend to be dryer, French can be a bit sweeter, and Spanish more acidic.” American cider has influences from all over, says Michelle Foik, co-founder of Eris Brewery and Cider House in Chicago. “American ciders are less narrowly defined,” she says, “you’ll find mass-market hard ciders, herbal ciders, winestyle ciders, and many more.” So whatever your tastes, you’re sure to find a style you like. HARD CIDER sometimes also called “Cider,” hard cider is a fermented drink made from pressed apples, yeast, and sometimes sugar. Most hard ciders range from four to seven percent alcohol by volume. CIDER A broad category produced from pressed apples and yeast, cider may also contain the addition of other ingredients, including hops, grains like rye or barley, and fruits from cherries to blackberries, herbs, spices, and more, says Foik.

CIDER WINE most commonly produced by French cider-makers, cider wine is higher in alcohol than hard cider and cider, with levels up to 11.5 percent alcohol by volume. Some makers add sugar or honey to the fermentation process, and the cider bottles are conditioned with a second fermentation, much like Champagne. The result is complex and dry, says Miller.

“If you’ve been presented an arrangement of flights, drink them in the order they’re given to you. You’ll notice a range of flavors and sweetnesses, from very dry, to sweet, to spicy, to herbal.” Where to go for a great tasting experience? “Ciders are particularly delicious with roasted meats, and they’re the ideal mate for a cheese plate because the crispness and acidity cuts through the creaminess of the cheese,” says Miller.

pantry HOMEMADE MARSHMALLOWS INGREDIENTS Vegetable oil, for brushing 3 Tbsp. plus 1 ½ tsp. unflavored gelatin 3 cups granulated sugar 1 ¼ cups light corn syrup ¼ tsp. salt 2 tsp. pure vanilla extract 1 ½ cups confectioners' sugar DIRECTIONS Brush a 9-by-13-inch glass dish with vegetable oil, line with parchment, allowing it to hang over the sides, and brush lightly with more oil. Put sugar, corn syrup, salt, and ¾ cup water into a medium saucepan. Bring to a boil over high heat, stirring to dissolve sugar. Cook without stirring until mixture registers 238 degrees on a candy thermometer, about 9 minutes. Put ¾ cup cold water into the bowl of an electric mixer; sprinkle with gelatin and let soften 5 minutes. With mixer on low, whisk hot syrup into gelatin mixture. Gradually raise speed to high; beat until very stiff, about 12 minutes, and add vanilla. Pour into prepared dish, and smooth with a spatula. Set aside, uncovered, until firm, about 3 hours. Sift 1 cup confectioners’ sugar onto a work surface. Unmold marshmallow and remove parchment. Using a sharp knife brushed with oil, cut marshmallow into 2-inch squares. Sift remaining confectioners’ sugar into a small bowl and roll marshmallows in sugar to coat. Recipe adapted from marthastewart.com
