Editor’s Letter SOMETHING MAGICAL HAPPENS when you create a space that is truly your own. How do you do it? Through thoughtful design choices that reflect your own personal style, inside and out. As simple as it may sound, that is the formula that creates a home. A home that lives and breathes with you as you grow and only gets better with age. We had the opportunity to feature two families who did just that—create their dream homes, their personal escapes from a busy Hollywood lifestyle. Actress Amy Smart and husband Carter Oosterhouse created a hilltop haven, minutes from the manicured lawns of Beverly Hills that feels more like a lush, green slice of paradise than one would think possible in the heart of L.A. In keeping with the reverence they have for environmental stewardship, the couple carefully selected sustainable products that were both responsible and beautiful for their home during the remodel, including repurposed wall tiles and wood floors as well as Cambria countertops. Every detail was weighed in terms of not only aesthetics and design, but its impact on the environment. The result? A home filled with design-minded and comfortable spaces, each cozier than the last. Our second feature, profiling Tim DeKay—of USA Network's White Collar fame— and his family, is equally inspiring. Mature trees, an old-style fire pit, a backyard suitable for whatever sport strikes your fancy, vegetable gardens, and a Cambria island large enough to hold everything necessary for an impromptu BBQ with family and friends. In a nutshell, a home built for family and the life they choose to live. On a tastier note, we've selected some delicious seafood recipes, this time straight from celebrity chef Rocco Whalen. The formal entrance or foyer is a transitional space that plays a range of important roles. As a bridge between exterior and interior, it should provide an architectural link between your home and its surroundings as well as offering a convenient place to shake off cold, wet, or heat—or preparing to brave them. Of course, since the entry is the first and last impression family and friends will have, style is just as important as practicality. “Think of the foyer as the prelude to the rest of your home,” says design and build contractor Ramsin Khachi, of Khachi Design Group in Oakville, Ontario. “You want to use the entrance to set the tone for what is to come, to create continuity. If you have an elegant, formal home, the design and decoration of the entry should follow suit.”

home, then turn to furnishings and accessories to complete the look. A careful approach to color selection is essential, as well. “I like soft neutrals for entrances,” says Naples, Florida-based designer Julie Coleman, of District Design. “White with a touch of cream or gray creates a sophisticated backdrop that you can continue through all the common areas of the house.” Khachi agrees with the appeal of a neutral palette. “You don’t want to shock people with a bold color the second they walk into your house,” he says. “And, opting for a pale wall color makes sense in a space that typically doesn’t have much natural light.”

As you select materials and furnishings, remember the basic function of the space and make choices that will stand up to the elements. Flooring is perhaps your most important decision. Tile—stone or ceramic—is a natural option, since it resists moisture and staining well. “I love to do a tile ‘rug’, with tile inset into hardwood,” says Khachi. If you won’t be replacing the flooring, consider protecting hardwood floors with a fabric rug. “Indoor-outdoor rugs of soft, synthetic fibers look great and stand up to heavy use,” says Coleman.

The right lighting is a necessity, both for the sake of safety and for creating a visually appealing look, say the pros. Your goal is to create layers of light, with recessed ceiling fixtures providing soft overall illumination, a hanging fixture—a pendant or chandelier, depending on the size and style of the foyer—and wall sconces or a table lamp. In terms of furniture, don’t go overboard trying to fill every bit of empty space. “That’s one of my pet peeves,” says Khachi. “If you put a chair in the entry, it should be there because it’s a handy place to sit to take your shoes off, not because you have a pocket of bare wall. Think about function, and let it guide your furniture plan.” When placed correctly, a chair or two or a bench can be a convenient spot to set a bag down or to sit while you pull on a pair of boots. A console table is an ideal choice for most entrances, says Coleman. “They have a very simple, classic look.” But, she says, “in a larger, more open entry hall, think about featuring a beautiful round table for a more dramatic impact. Timeless hardwood is always appropriate, especially if you have a covered front porch or live in a temperate climate. “Hardwood looks beautiful in an entry,” says Khachi. “You just have to take care to wipe up any water.”

Wall art enlivens any space—and a mirror is a natural choice. “Pick a gorgeous mirror and hang it above the console,” says Coleman. “It will reflect light around the space, making it look bigger—and you’ll be able to check your lipstick as you head out the door.” Complete the design with some thoughtful extras, like an antique umbrella stand, a basket for shoes, a small dish to drop your keys. “It’s those little details that make you, and anyone else coming to your home, feel cared for—truly welcome,” says Khachi.

hink, for a moment, about the last night you spent in a really fine hotel. Remember the fine materials used in the design, the way the smooth hardwood floors felt under your bare feet. How the bed managed to both support your back and envelop your body in luxurious softness. How the window treatments slid aside easily to welcome sunlight and delightful views by day, but kept the room perfectly dark by night. Remember the small, thoughtful details—from the iPod dock on the clock radio beside the bed to the comfortable seating area where you collapsed after a day of shopping—that made the space feel like a true getaway. Now, imagine having the same experience every time you step into your own master suite: feeling pampered, restored, relaxed, just as you do when you’re on vacation at a five-star resort. Creating that effect is easier than you may think, says Minneapolisbased interior designer Billy Beson of Billy Beson Company. “Your bedroom is your personal sanctuary. If you tailor every element to fit your needs, you’ll end up with a space that nurtures you—which is exactly what the bedroom should do.” Here’s how. SETTING THE SCENE

First, says Beson, you have to think about the kind of mood you want to create in the space. “Make a list of adjectives that describe how you want the room to feel. Some people want a serene, spalike feeling, and others prefer a more dramatic look.” To create a light-and-airy effect, Beson suggests choosing pale, natural colors—watery blues and greens, accented with white and cream—and keeping contrast to a minimum. “For this look, you don’t want to shock the eye. You want it to travel easily around the space. That creates a feeling of relaxation.” But if your style is edgier, contrast is your friend: Dark walls and floors, highlighted by white trim and bedding will create a space that’s bold by day and moody by night. The suite pictured here is a great example of this approach. The charcoal walls lend depth and richness to the large space and emphasize the elegant architectural details, which are set off with bright white paint. “Art looks great against dark walls as well,” says Beson. Once you have a sense of the look you want, think about how you’ll use the space. “Most people actually use the bedroom for a lot more than sleeping,” Beson says. “So consider what else you’ll do in the room—dress, read, watch TV, eat, work.” Think of it as creating a series of retreats within the main oasis: A cozy nook for reading the Sunday paper, a chair and ottoman where you can watch your favorite shows, and, even for small spaces, a countertop to hold a coffeemaker so you won’t have to go all the way to the kitchen in your bathrobe. “Think beauty and durability,” says Beson. He recommends the Waterstone Collection from Cambria as something that will stand the test of time in both style and resilience. “Whatever your choices, let your lifestyle guide you,” he says. “If you have guests frequently, it can really help to give yourself a bedroom living area so you have someplace to relax alone after a long day of togetherness.” How you position your furniture will mostly depend on the particulars of the room itself. “You can look up Feng Shui guidelines for the best place to put your bed,” says Beson, “and that’s not a bad thing to do. But most rooms only have one wall that’s big enough for a king- or queen-size bed and nightstands, so you may not end up with much of a choice.” After your bed is in place, choose bedside tables that are big enough to hold the essentials. “It shouldn’t be so big that it’s likely to attract clutter,” says Beson. Ideally, he suggests, you should choose a nightstand with a drawer or two, so you can stash necessities inside, keeping the top surface clear. And, don't underestimate how much wear and tear your bedroom and its furnishings will get. “I even go so far as to replace my clients’ nightstand tops with Cambria. That way they’ll never have to worry about water rings from their drinking glass.”

In any bedroom, the bed should be the star of the show, so take care to make it look and feel luxurious and indulgent. Choose linens that are soft and supple to the touch—look for sheets with a thread-count of 400 or more, says Beson, noting that prices have come down for even the finest linens—and pillows and duvets that are dense and covered in heavy-duty cotton. You can’t go wrong with an all-white bed, especially in a room with deeply or brightly colored walls, but you’ll find a nearly endless array of patterns available at every price point, so you’re sure to find bedding that suits your style and budget to a T. It’s equally important to keep more practical features in mind, too. Lighting, for example. All bedroom lighting should be on dimmer switches, says Beson. And in a room shared by a couple, each side of the bed should have a switch or remote that controls all the lights in the room—so if your partner falls asleep before you do, you can turn his or her light off without jostling. Controlling natural light is key, as well. W WHEN FILM AND TELEVISION ACTRESS AMY SMART SITS IN HER FAVORITE SPOT AT HOME, A BREEZY, BRIGHT KITCHEN NOOK, SHE LOOKS OUT ON A DAZZLING SWEEP OF GREEN. Her hilltop, only minutes from the manicured lawns of Beverly Hills, faces acres of gloriously untamed wilderness—chapparalcovered canyon walls, majestic live oaks and sycamores. It’s the perfect setting for Smart, 38, and her husband of three years, Carter Oosterhouse, 37, host of HGTV’s Carter Can

and Rowhouse Showdown on the new FYI network. For this non-Hollywood Hollywood couple, love of land is a way of life. Both are ardent environmentalists, who purchased this charming, midcentury home specifically for its lush surroundings, and made renovations sparingly and with care. Cambria Torquay, milky white with swirls of cream and gray was a natural choice for the sun-washed kitchen. “I love that some Cambria designs have the look of marble but are so much more eco-friendly and durable,” says Amy. “It will last forever.” Casually dressed, with blond hair and a fresh-scrubbed beauty, Amy looks like the stereotypical California girl. In this case, appearances are deceiving. She did grow up in Los Angeles, but far outside its glitzy neighborhoods. Amy spent her childhood in Topanga Canyon, a rural enclave that’s just a few miles from Malibu, but a completely different universe: a funky, rustic community “where people weren’t label-oriented or materialistic,” she says. Rather than passing the summer on the local beach, she traveled with her family to Traverse City, Michigan, a charming town of 15,000 on the shores of Lake Michigan, where her Florida-based grandparents rented a cabin to escape the East Coast heat. The result was not a typical city childhood.

“My younger brother and I didn’t amuse ourselves with technology,” says Amy. “At home, we rode bikes and made forts in the woods. At the end of our street was a creek with a rope swing and these great rock caves that, in the winter, had amazing waterfalls. In Michigan, we'd hike in the forest, collect pinecones, and swim in the lake. We lived outside.” Smart’s outdoor life, along with her mother’s emphasis on recycling and conservation, fostered a desire to preserve the world around her. “Having your feet on the earth every day reminds you how precious and vital it is for all of us,” she says. By 18, she was working for and with Heal the Bay, a group devoted to cleaning up local coastal waters and watersheds. Through her 20s and into her 30s, as her career took off—she appeared regularly on the TV series Felicity, and in films ranging from Road Trip to Starsky and Hutch to Just Friends—her activism grew along with it. She became a Board Member of both Heal the Bay and the Environmental Media Association (EMA), which taps the power of the entertainment industry to raise public awareness of environmental issues, and still works with both. She also lobbied for a ban on single-use plastic bags in the city; an ordinance prohibiting grocery stores from offering free plastic bags went into effect last January. It was through Amy’s participation in a 2010 EMA project pairing celebrities to build and adopt school gardens that she first met Carter Oosterhouse. A friendship blossomed, though nothing more, since both were already in romantic relationships. A year later, though, that wasn’t the case, and when the two happened to be in the same part of Michigan at the same time, sparks flew. Amy was visiting her parents, who had fallen in love with the Traverse City area, bought some land and built a house there. Carter, who grew up in the area, was restoring an impossibly romantic 100-yearold lakefront Victorian and outbuildings on the nearby Old Mission Peninsula that he’d purchased some years before. “He had an organic garden at the house,” Amy recalls, “I told him I wanted to see it...” The rest was history; seven months later, they were engaged. No one who’s seen Carter would be surprised: the tall, dark carpenter is strikingly attractive; most descriptions of him tend to be a variation on the word “hunky.” “My husband is very good-looking,” Amy agrees, laughing. “But he’s even nicer than he is handsome. He’s a good friend with a heart of gold who loves his family dearly.

THE COUPLE’S CONCERN FOR THE ENVIRONMENT WAS EVEN EVIDENT AT THEIR WEDDING IN MICHIGAN THREE YEARS AGO. IT FEATURED LOCALLY-SOURCED FOOD AND DECORATIONS MADE OF RECYCLABLE AND RECLAIMED MATERIALS, EVEN BIODEGRADABLE DISHWARE. REMARKABLY, THOUGH MORE THAN 200 GUESTS ATTENDED, THE WEDDING PRODUCED ONLY HALF A BAG OF TRASH.

Midwestern Bicoastals. Their September 2011 wedding was held at Carter’s Victorian house in Michigan, and the couple regularly return to the area and the graceful house, with its old-fashioned porch, wide lawns and towering trees. “I’ve always loved the Traverse City area, and we both have family and friends still living there,” says Amy. “Carter’s mother and brother are nearby and I’m still close with a girlfriend I met up growing up there during the summers. We have the best time. If we’re not filming, it’s our goal to spend several months a year there.” In fact, their Michigan roots continue to expand. The Old Michigan Peninsula area is known for its cherry trees and vineyards, and Carter and his older brother have been building a winery and tasting room there, with an opening tentatively set for this August. Carter also recently did a free remodel of the Old Mission Peninsula Fire Department building; Carter’s Kids, a charity he founded to promote awareness of fitness and build self-esteem for youth through recreational facilities, built a playground in a nearby township. Some Bicoastals eventually find their loyalties tip to one side or the other. Carter has said that he’d like to move back to Michigan full-time one day, especially if he was raising a family. Amy’s less sure. “We definitely want to have children at some point,” she says, “but we're so busy traveling and working right now it’s hard. I think Michigan would be a great place to raise kids, though I don't know if I personally can handle the winters.” She laughs. “I grew up in L.A. I love the sun.” The couple’s love of the outdoors includes being mindful of it in everything they do. So, keeping control on waste and making a good ecological choice of material was a priority when it came to renovating their California hilltop retreat, the couple’s first home together, purchased not long after the wedding. The house itself had great “bones,” and was a charming, but not at all pretentious, one-story, ranch, with three-bedrooms and four baths. “I wanted a home,” says Amy, “Not a museum.” Its location, atop a steep driveway at the dead end of a winding road, seduced her immediately. “We back up onto protected state land, which can never be developed, so it’s really private,” she says. “All we can see of other houses are the rooftops. I also loved that it was older; to me, older houses have more energy, charm and character.” Not surprisingly for an older house, this one needed updating. Walls painted dark colors were lightened with a fresh, clean white, and floors lost some unfortunate leopard and tiger print carpets and “wood that had been sanded so many times it couldn’t be restored,” says Amy. The replacement was engineered wood, “the ecological choice because the wood was only a quarter-inch thick and produced by a local company,” says Amy. “In general, Carter and I have similar tastes, but we weren’t sure about the floor color. Dark would have been in the tradition of this house, and I’m more inclined toward tradition. But Carter said ‘let’s step outside the box,’ and we went lighter, which turned out great. It makes the whole house feel airy.” The kitchen was a bigger challenge, says Amy. “It was narrow and a little oddly shaped. I love to cook and I wanted our kitchen to be the heart of the house.” The couple pushed out a wall some six feet to make room for Amy’s beloved breakfast nook, and the room is now open and flooded with natural light and fresh air, “a warm, friendly environment.”

Amy was thrilled with the design options Cambria offered. “We considered going with white, but I loved how the Torquay has texture and a vintage look that perfectly complements the house,” she says. “As a cook, I really appreciate that it doesn’t stain. It’s so beautiful that it’s clear no one has to compromise on style to make an environmental choice. I also appreciate that Cambria is made in the U.S. and is a family owned business.” “The kindred spirit found in both Cambria and Amy and Carter is how comfortably we find pleasure and inspiration in our roots,” says Cambria President and CEO, Marty Davis. “The tenets of those roots emanate from family centered foundations and a Midwestern flavor, some of which, for Amy, were born in the “back country” of Malibu—a place in which we find a Midwestern spirit. It’s no wonder Cambria and the Smart/Oosterhouse family connected so naturally.” Both Amy and Carter continue to work at full speed.

She’s appeared in six films this past year, as well as holding a regular role in FX’s hit series Justified. A longer-term project is a script that she is developing and hoping to produce. Performing isn’t her only focus, though. “Acting’s always been important to me, but it’s not all of me,” she says. To that end, she recently completed a year of instruction for certification as a health coach, and is a certified kundalini yoga teacher. She and Carter are restoring a “teeny, charmingbut-run-down and rat-infested barn on our Michigan farm property to be my ‘yoga barn,’” she says. And when that work’s done, she says, some new task will surely take its place. “When it comes to renovating, I like things to be finished. Carter always likes to have a few projects going.” She’s also developing a line of “sustainable, clean, and nourishing” oils for the nails, hair and face called “A Little Love.” The products should be available next spring. But in her rare moments of free time, she treasures the sunlit peace of her L.A. home. “I love that we’re so close to the city, but feel so far away,” she says. “At dusk, we see deer coming to graze. There are hawks flying above the trees. It’s like we found our own paradise.”

fireplace. An adjacent 600-square foot guesthouse has its own bedroom, bath, kitchen and front patio. The DeKays chose Cambria for counters in the kitchen, bathrooms, dressing room and laundry room. As they saw the huge slabs coming in during construction, Tim admits he took a deep breath. “These countertops come in and they’re big, they’re daunting, and you hope they go in properly. But all of the people associated with Cambria are wonderful. I felt comfortable with the installers. They were prideful of their work.” Since then, the DeKays have been delighted by how well its good looks are complemented by its durability. “Jamis will throw his dirty baseball mitt on it,” explains Elisa. “Danna has

is not exactly GQ-ready as the FBI Agent Peter Burke in the USA Network original series, White Collar. He wears his non-descript suits like a bland uniform in the popular police procedural, now entering its sixth and final season. But while his character Burke can’t tell Armani from Old Navy, the 6-foot 2-inch DeKay is another story. He appreciates enduring style, whether it’s in clothes or architecture. Not a clotheshorse by nature, DeKay has nonetheless learned a lot about fashion during his six years on White Collar. His con man sidekick, played by Matt Bomer, has style to spare, so manufacturers send suits for possible use on the show. Tim took notice. “My style is fashionable but not trendy. I like a timeless look,” he says. “I have a Yankee mentality. Somewhere in the back of my mind—or the front of it—I’m thinking, ‘Can I still wear this in ten years?’” It made sense, then, for him to choose a product that can last a lifetime when he and his wife, Elisa, started choosing materials for a new home. “It’s incredible how many options one has,” Tim recalls of their two-year home-building project that ended in August 2013. “We limited our choices to companies that were environmentally conscious and Cambria was one of them. We started looking at their samples and really thought they had attractive designs, simple yet unique.” Attracted to the classic stone look, Tim and his wife Elisa wanted to remain faithful to their environmental credo, yet still attain the appearance they wanted. The DeKays were tipped off to the advantages of Cambria by their friend, actor Bryan Cranston, who chose it in the construction of his beach house. “Bryan and I did a pilot together years ago and stayed in touch,” Tim explains, citing how pleased the Cranstons had been with how the product performed, despite being steps from the sand and salt air. Constructing a new house from the ground up was not initially on the table when the couple sought more space for themselves and their two children, Jamis, 14 and Danna, 11. “I thought we would just go buy one that was already up and running,” laughs Tim. But once he saw the 25,000-square foot property in a leafy Los Angeles neighborhood, he was hooked, despite the overgrown trees and dilapidated house. After consulting with their architect, the DeKays realized they would have to start from scratch. The house they wanted, and were determined to create, would be a relaxed gathering place for family, friends and the household menagerie of the Sheltie-Corgi mixed-breed dog “Spice” and Russian tortoise “Dribble.” In the end, they got what they wanted, and more. What stands today is the couple’s modern take on a classic farmhouse, with nods to Tim’s eastern roots in rural upstate New York, such as beadboard in the master bath and vintage-style lighting. They named the house “Stone Pine Farmhouse” for the numerous Stone Pine trees on the property. “‘Farmhouse’ came from our desired design and my growing up in farm country,” Tim explains. The 5,250-square-foot home has five bedrooms, five baths, and a family room with a soaring ceiling and

been known to bounce her volleyball on it.” Likewise, the Cambria in snowy White Cliff in the children’s bathrooms combines fashion with function. “It’s amazing how much toothpaste and hair care products kids need to get ready for school,” says their dad. “Cambria is indestructible.” While Tim is now known to millions as Peter Burke on White Collar, he previously starred or guest-starred in numerous TV series including Scrubs, Friends, The New Adventures of Old Christine and Seinfeld, in which he played “Bizarro Jerry” in a now-classic episode. His first screen-acting job was in 1995 when he played a business tycoon in the futuristic TV show, seaQuest 2032. He has also starred on HBO as a series regular in both the award-winning Carnivale, and Tell Me You Love Me. Tim is a New York native, having grown up in tiny Lansing, New York, outside Ithaca. His parents, though not actors, are funny, he says. His father is an inveterate observer of behavior, a trait Tim says he absorbed. An athlete as well as an actor in high school, Tim played varsity baseball and basketball.

While a business and philosophy student at LeMoyne College in Syracuse, he also took up community theater after class. Hoping he could make acting his livelihood, he headed to Rutgers University where he earned an M.F.A. in acting—and met his future wife, Elisa. The couple has been married 23 years. One of the perks of being a well-known actor is getting to walk the occasional red carpet, a stroll Tim enjoys. “I like getting dressed up,” says the trim 50-year-old. “It heightens the event, heightens the day.” His favorite place to assemble outfits is atop a wardrobe island in the couple’s master bath/ dressing room. Topped by Cambria in bold Wellington, it is a perfect canvas on which to test shirt and tie combinations. But no room gets more of a workout in the DeKays’ house than the kitchen. Located at the “bend” of the L-shaped floor plan, the kitchen is the area that Elisa calls “the vortex”—mission control. A nine-foot by seven-foot maple island topped by Cambria in creamy Torquay takes pride of place. (Cambria’s Fieldstone covers the surrounding

countertops.) “The kids love to sit at the island—and on the island,” says Tim. It serves as a dinner party buffet, baking center, homework hub, and crafts table. During one session of the latter, even a hot glue gun and green St. Patrick’s Day paint didn’t leave a mark. The counter was recently put to the test during a birthday party for White Collar cast member Willie Garson. Guests were asked to bring a homemade dessert and they happily complied. At least 50 gooey treats were arrayed atop the island. English toffee pudding, blueberry cobbler, chocolate cream puffs, key lime pie and dozens more—all of it easily wiped clean at the end of the evening. “Nothing penetrates it,” says Tim. Durability and sustainability are at the heart of the DeKays’ lifestyle. This is a family-centered home in the old-fashioned tradition, but with a decidedly modern and ecologically thoughtful bent. It is an unfussy “no coasters” place where the priority is family fun. Outside,

chaise longues with ocean blue cushions trimmed in crisp white piping are lined up at the edge of a pool. A fire pit surrounded by six Adirondack chairs is the site of s’mores parties. A 100-foot by 50-foot level backyard is big enough for regulation team volleyball (Danna plays), baseball games (Jamis’s sport), Thanksgiving football scrums, badminton, croquet—you name it. “My grandfather was a dairy farmer and I grew up next to a forty-acre farm where we played Kick the Can, Hide and Seek. I wanted to recreate some of that,” says Tim. For the run of the series, though, finding family time was a challenge. White Collar shot in New York from March through midAugust, with Tim flying home every weekend or two. With White Collar in its final season, Tim will film Follow the River, a western, and direct a holiday film that he describes as a cross between Noises Off and Soap Dish. But for now, the actor is home and it is not a star-studded day. He’s wearing jeans, an indigo and purple checked shirt with the sleeves rolled up, and a pair of leather sneakers. “See these shoes?” he says, pointing to the supple brown lace-ups. “These are hand-me-downs from my son. My kids have kept me hip.” But things that last are really what resonate. He observes the family room from a relaxed spot in an upholstered linen armchair. Overhead, 25 feet up, thick timber beams support a dramatic vaulted ceiling. “This is the house where our kids will grow up,” Tim says, gazing around the room, then up at the soaring ceiling. “I hope there will be grandkids here someday.” That dream could take a couple of decades to come true, but the DeKays aren’t concerned; they’ve built their home to weather shifting tastes and trends. In design as in fashion, timeless choices never go out of style.

Buy fish at a busy market or at a store like Whole Foods, where you know there’s a lot of product turnover, he says. Look for fresh-smelling fish with firm skin and shiny eyes; live lobsters should be moving around in the tank. At home, store your catch deep in the fridge for no more than two days. Before cooking, rinse any shellfish under cold water, shaking to dislodge any sand or grit.

2 Tbsp. olive oil ½ cup onion, diced ½ cup fennel bulb, diced 3 cloves garlic, peeled, thinly sliced 1 red bell pepper, diced 28 ounces can diced tomatoes 2 Tbsp. tomato paste ½ cup white wine 1 quart chicken stock 1 Tbsp. Kosher salt 1 pound mussels, cleaned 1 pound easy-peel shrimp, deveined, shell left on 1 pound clams, cleaned 1 pound cod, halibut, or sea bass, chopped into large chunks 2 Tbsp. parsley, roughly chopped DIRECTIONS

1. Make broth. In a large saucepot, combine olive oil and garlic. Cook over medium heat until garlic starts to turn brown on the edges. Add kosher salt, onions, peppers, fennel, and tomato paste. Stir to combine. Continue to cook over medium heat until vegetables are tender. Add white wine and reduce by half. Add chicken stock and diced tomatoes. Bring to a rolling simmer and reduce heat. Simmer on medium-low for 30-45 minutes. 2. Add the clams; let simmer for 5 minutes. Add the mussels and shrimp; simmer until the shells begin to open. Add the fish. Cook until the mussels and clams have opened completely and the fish is cooked through. Do not stir once you have added the fish. 3. To serve, ladle into bowls and garnish with parsley. If desired, serve over pasta, or with grilled bread, or both.

INGREDIENTS

1 pound shrimp, peeled and deveined 3 ounces butter 1 Tbsp. roasted garlic 1 tsp. Kosher Salt ½ tsp. black pepper, ground 12 flour tortillas ½ cup mayonnaise ½ cup sour cream 3 Tbsp. lime juice, fresh 1 1/2 tsp. lime zest 1 Fresno chile, seeded, stemmed, diced 1/2 cup cilantro, chopped 2 quart cabbage, shredded 6 green onions, thinly sliced

DIRECTIONS

1. In a large mixing bowl, combine all ingredients except for lobster, rolls, and scallions. Stir to combine. Gently fold in lobster meat. Refrigerate. 2. Preheat oven to 350ºF. Place sliced rolls on a baking sheet and heat for 3 to 5 minutes or until the roll has slightly browned on the surface but is soft to the touch. 3. When ready to serve, spoon out 12 equal portions of lobster mixture onto the bottom half of each roll. Sprinkle scallions over the top of each and place the second half of the roll on top.

1. Preheat oven to 350ºF. Wrap tortillas in foil and place in oven. In a saucepan, heat the butter over medium heat. Add shrimp, salt, pepper, and roasted garlic and sauté for 3 to 5 minutes, or until cooked through. Reserve and keep warm in butter. 2. Make slaw. Combine mayonnaise, sour cream, lime juice, lime zest, chile, cilantro, cabbage, and green onions in a large mixing bowl. 3. Serve by placing 1½ ounces of shrimp on each tortilla, topping with slaw as desired.

Sangria, three ways

As delicious as the classic drink is, a few simple twists can elevate your sangria to fresh new heights. Leslee Miller, Certified Sommelier, of Amusée Wine shared some inspiration.

TRADITIONAL SANGRIA About 1½ quarts INGREDIENTS:

LIVELY MOSCATO SANGRIA

LUSH BLANC DE BLANC SANGRIA

About 1½ quarts INGREDIENTS:

2 oranges, cut crosswise into 1/2-inch wheels

1 mango, peeled, sliced, grilled (see p.46)

2 oranges, cut crosswise into 1/2-inch wheels, grilled

2 lemons, cut crosswise into 1/2-inch wheels

1 peach, halved, stone removed, grilled

2 lemons, cut crosswise into 1/2-inch wheels, grilled

750mL of a lighter-bodied red wine, like Pinot Noir, Grenache, or Tempranillo

1 tangelo, sliced, grilled

1 cup pineapple, peeled, cored, cut into slices, and grilled

4 ounces Cointreau 4 ounces Brandy (something simple, like Korbel or Christian Bros) Ice DIRECTIONS:

Combine everything except the ice in a large pitcher. Chill until cold: 1-2 hours. Add ice before serving. Garnish pitcher with fresh herbs or flowers.

750mL sparkling Moscato (Choose an inexpensive but tasty one from any corner of the globe.)

SIMPLE SYRUP

Add a sweet and flavorful kick to your mix. BASIC SIMPLE SYRUP INGREDIENTS:

1 cup water 2 cup granulated sugar DIRECTIONS:

Add water and sugar to a medium saucepan. Heat over medium high heat, stirring a couple of times to dissolve the sugar, until mixture just boils. Remove from heat and cool to room temperature. Transfer mixture to a sealed container—a glass jar works nicely—and store in the refrigerator.

PINOT NOIR Cherry bomb! Combine with a bright herb like basil and lighter red fruits (cherry, cranberry, raspberry).

SANGIOVESE Combine with sage, oregano, thyme and red fruits (strawberry, raspberry, plum) for a taste of the old world.

CABERNET Bold, with muscular notes that work well with blackberry, whole peppercorns, and cinnamon stick.

SHIRAZ Peppery, with a hint of smoke. Pair with blueberry, raspberry, star anise, vanilla bean, clove, and black pepper.

SAUVIGNON BLANC Light and grassy! Fresh notes of kiwi, lime zest, basil, and honeydew will taste just like summer here.

CHENIN BLANC OR VIOGNIER Floral and supple. Honeycomb, slices of rich apple and peach are great complements.

PROSECCO Citrus splash. Pairs perfectly with tangerine, blood orange, and grilled lemon. Think bubbly!

RIESLING Pretty as a picture: Ginger, white peach, mango, and mint will make the flavors of Riesling come alive.

GINGER SIMPLE SYRUP DIRECTIONS:

Add 1/2 cup of unpeeled, finely chopped ginger to the water and sugar mixture. Boil for 5 minutes. Cool and store syrup with ginger in it; strain before adding to sangria. CITRUS SIMPLE SYRUP DIRECTIONS:

Instead of water, use 1/2 cup orange juice plus 1/2 cup lemon juice. Add the zest of one orange and one lemon. Cool and store syrup with zest in it; strain before adding to sangria.

GRILLING FRUIT

A few minutes over the fire intensifies the juicy sweetness of fresh fruit, caramelizing its natural sugars and adding a smoky depth of flavor you’ll enjoy in everything from salsa to dessert to, yes, sangria. Here’s how to get perfect results every time. PICK YOUR FRUIT | “I can’t think of any fruit that doesn’t grill well,” says cook and food educator Stephanie Meyer. But, there are a few secrets to remember at the fruit stand. First, the fruit should be fresh and ripe—but not too ripe. An overripe peach, for example, will just fall apart. Just barely-ripe fruits are your best bet. DON’T PEEL IT | With a few exceptions, like mangos and pineapples, it’s best to leave the peel on your fruit as you grill it. The peel gives structure that helps the pieces stay together. USE A GRILL PAN FOR SMALL FRUITS | Berries, cherries, and any

small pieces of fruit will fall through the grill’s grates, so you’re best off using a grill pan on your range inside, or set on top of the barbecue grates.

OIL EVERYTHING FIRST | Brush the grates of the grill and the

surfaces of the fruit itself with a neutral vegetable oil before grilling. Don’t use a strongly flavored oil like extra-virgin olive oil unless the fruit will be part of a savory dish.

TIME IT RIGHT | Grilling times will vary for different types of fruit. On average, peaches and other stone fruits take about 2 to 4 minutes per side; oranges, lemons, limes, and pineapples about 3 to 4 minutes per side; bananas about 5 minutes; berries about 2 minutes. Remember that you’re not really trying to cook the fruit, just to warm and sear it. You’ll know it’s done when it’s heated through and slightly soft, but not too mushy. FINISH STRONG | A sprinkle of salt will highlight the sweetness and add salty contrast to grilled fruit. Drizzling it with flavor-infused simple syrup lends rich dimension, as well.

Searing citrus fruits makes them even juicier. Grilled oranges are a great topper for vanilla ice cream, and grilled lemons and limes add smokiness to guacamole.
